Eating My Way Through the Holidays! Yuletide Favs: Cocktail Shrimp Minis!

Eating My Way Through the Holidays! Yuletide Favs: Cocktail Shrimp Minis! Being a “grazer” can reap advantageous health benefits, in my opinion. Not only are the portions much smaller, but you get to eat every few hours which keeps hunger pangs under control. The rule of thumb is to choose foods high in nutrients and low in sugar, salt, and fat. The key to successful grazing is to prepare things ahead of time. That way when you open the refrigerator, you are drawn to easy choices. Sounds pretty simple, doesn’t it?

COCKTAIL SHRIMP MINIS

Ingredients:

1 dozen fresh shrimp, precooked

1 cup fresh salad greens

8 ounces Neufchâtel cheese, softened

1/2 cup seafood cocktail sauce

1 tablespoon horseradish

Instructions:

Place salad greens in the bottom of a single serving glass. Divide the block of Neufchâtel cheese into 12 equal portions. Roll each portion into a ball. Place one cheese ball in each glass. Combine seafood cocktail sauce with horseradish. Drizzle sauce evenly over each cheese ball. Skewer one shrimp and insert into each glass, piercing the cheese ball. Refrigerate until ready to serve.

Eating My Way Through the Holidays! Yuletide Favs: Thyme for Brie!

Eating My Way Through the Holidays! Yuletide Favs: Thyme for Brie! Serving baked cheese is always a good idea, in my book. It’s like granting permission to have an appetizer as a meal plus, you get to eat with your fingers. By adding fresh herbs and natural honey, suddenly cheese becomes an elegant appetizer that even has men succumbing to its allure and gooey texture. Grab a bottle of wine or sparkling beverage, ease onto the back porch, and watch the sun sink into the shadowy horizon.

THYME FOR BRIE

Ingredients:

1 wheel of Brie

2 tablespoons Savannah Bee raw acacia honey*, or natural honey

4-5 sprigs of fresh thyme

Sea salt crackers

Crispy Parmesan cheese rounds

Instructions:

Preheat oven to 350°. Spray a nonstick ovenproof dish with nonstick oil. Slice the rind off the top of the wheel of Brie. Place the wheel in the dish with skin side down. Drizzle acacia honey over the top of the Brie. Place fresh thyme over honey. Bake for 10-12 minutes until cheese is gooey and completely melted. Serve immediately with any assortment of crackers.

*I receive no recompense for recommending Savannah Bee raw acacia honey.

Eating My Way Through the Holidays! Yuletide Favs: Olive Tapenade!

Eating My Way Through the Holidays! Yuletide Favs: Olive Tapenade! Here’s a nice prelude to an evening meal. Forego the usual focaccia bread and herbed olive oil for a southern France hors d’oeuvre instead. By using an exotic mixture of olives and spices, it creates a versatile condiment for crackers, bread, cheese, and vegetables. Later on, serve it over pasta or fish as another option. Whatever you choose, seek adventure. You won’t be disappointed in the mellow salty garlic flavor lingering long into the night.

OLIVE TAPENADE

Ingredients:

1/2 cup green olives with pimentos

1/2 cup black olives, pitted

1/2 cup kalamata olives, pitted

2 tablespoons capers

4 tablespoons olive oil

1 garlic clove, minced

1/8 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Combine all ingredients. Pulse in a food processor for several minutes. Scrape sides and repeat. Cover and chill in the refrigerator for one hour. Serve with crusty artisan bread or pita chips. Tastes great spread over cream cheese for party flavor.

Eating My Way Through the Holidays! Yuletide Favs: Garlic Clove Little Smokies! I know people often wait for the holidays to serve this spicy little appetizer, but I recently discovered its popularity as a lunch box companion. Dining Outside the Home: T.G.I. Fridays in Indianapolis, Indiana

Dining Outside the Hone: T.G.I. Fridays in Indianapolis, Indiana! It’s not often you hear the story of a restaurant owner opening a bar that would help him meet women. But that’s exactly what happened in 1965 when Alan Stillman opened the first T.G.I. Friday’s in New York City. He probably figured a cocktail-style atmosphere with a unique décor would be more appealing than a dark tavern. He was right. Today, no matter the location, everyone has a good time for drinks and a casual meal. An upscale menu provides tempting appetizers that are a meal in itself, like the Spinach Florentine Flatbread. It’s A+, in my opinion. For a heartier appetite choose a popular entree such as the Half Rack of BBQ Ribs. Either way, you may find yourself unable to resist a nibble of everything on the table. Just remember to save room for dessert. The Brownie Obsession is exactly that!
