What’s Cooking in Gail’s Kitchen? Home Cooking: Sombrero Bread Bowl! OMG, this is the best kept secret! Go to your nearby Bakery and choose a savory artisan bread, small loaf. I chose Rosemary Olive Oil. From there, the biggest challenge is waiting for your mouth-watering seasoned creation to come out of the oven! Repeat after me, “All good things come to those who wait!” You can thank me later.

SOMBRERO BREAD BOWL

Ingredients:

4 ounces Neufchâtel cheese

1/2 cup ranch salad dressing

1 cup extra-sharp cheddar cheese, shredded

2 green onions

1 teaspoon crushed red pepper flakes

6 strips bacon, cooked and crumbled

14.5-ounce round loaf of artisan loaf

Instructions:

Preheat oven to 300°. In medium bowl, blend Neufchâtel cheese, ranch dressing, cheddar cheese, red pepper flakes, and bacon until well mixed. Stir in onion snips. Cut off top of bread bowl. Hollow out insides. These may be used for dipping later. Fill center cavity with creamy mixture. Replace top. Wrap entire loaf in foil. Bake for 90 minutes. Peel back foil to expose bread bowl. Bake 30 minutes longer. Serve warm with bread cubes, multi-colored tortilla chips, and green onions. Enjoy!

As the bacon sizzles in the skillet, your will-power needs to shift into high gear to restrain you from taste-testing before it’s finished. Trust me, this is worth the wait.

BACON BITES

Ingredients:

9 slices of bacon

1/2 pound chicken chunks, pre-cooked

1/4 cup soy sauce

1 tablespoon sugar

1/8 teaspoon ground ginger

1 8-ounce can water chestnuts, drained and sliced

Instructions:

Preheat oven to 450°. Partially cook bacon; drain on paper towels. Combine chicken, soy sauce, sugar, ginger, and water chestnuts. Marinate for 20 minutes. Drain. Wrap one piece of chicken and two water chestnuts in 1/3 slice of bacon. Secure with a wooden toothpick. Place on a baking sheet and bake in the oven 10-12 minutes or until the bacon is crisp.

Eating My Way Through the Holidays! Yuletide Favs: Beet Bacon Bleu Salad! Remember when you were a kid and your mother made you eat beets? And you hated them? Well, thank goodness as we age, our taste buds change. Perhaps it’s time to give them a second chance. I did and the results made me wonder why I waited so long.

BEET BACON BLEU SALAD

Ingredients:

15-ounce can sliced beets, drained

3 tablespoons lemon olive oil

1/8 teaspoon seasoned salt

1 teaspoon Herbes de Provence

2 cups mixed salad greens

1 egg, hard-cooked and sliced

3 slices applewood bacon, cooked crispy and crumbled

1/4 cup bleu cheese, crumbled

2 tablespoons balsamic reduction

Garnish with croutons

Instructions:

In a shallow dish, combine lemon olive oil, seasoned salt, and Herbes de Provence. Add sliced beets. Marinate 10 minutes, turn and marinate 10 minutes longer. Arrange salad greens in a bowl. Add beets, reserving marinade. Arrange egg slices on greens. Top with bacon pieces. Sprinkle with bleu cheese crumbles. Drizzle all with reserve marinade plus balsamic reduction. Garnish with croutons.

The list goes on and on. We like donuts for breakfast, snack, parties, celebrations, dessert, just about any time of day or night. That is the reason Gibson’s Donuts is such a landmark on Mt. Moriah Road in Memphis, Tennessee. Their reputation for 24-hour service requires no advertising. It’s all word-of-mouth, if you catch my drift. And they’ve been going strong for over 50 years. The donut-filled display cases keep customers pretty satisfied. You may drop by for a donut break and find yourself walking out with a boxed dozen…or two. The aromas are so amazing due to an energetic staff who work round the clock. In the end, it means the freshest donuts around.

What’s Cooking in Gail’s Kitchen? The Chow Down: Positively Popular Poutine! While traveling to Canada recently, I was taken aback by a friendly waitress who recommended a very popular dish on the menu made with crispy French fries, fresh cheese curds, and rich brown gravy. She called it Poutine. Like a deer in the headlights, I was completely frozen at the thought. So I shook my head no, thanked her, and ordered my fries plain. By the end of the meal I was convinced I had missed out on something spectacular. Practically every restaurant listed Poutine as their specialty. Some Poutine platters were loaded with bacon, others chunk lobster, beef brisket, jerk chicken, or sautéed veggies. One place even boasted “Award Winning Poutine” and stayed open til 4:00 a.m. just to meet the late-night cravings of college students. Maybe this dish will catch on, after all. 
POSITIVELY POPULAR POUTINE 
Ingredients:

2 pound bag of frozen extra crispy seasoned crinkle fries

Sea salt and black pepper, to taste

2 cups cheddar cheese curds, white and yellow 

1-2 tablespoons butter

2 tablespoons cornstarch 

1/4 cup cold water

2 cups beef broth 

Fresh parsley to garnish 
Instructions:

Preheat oven to 425°. Arrange frozen French fries in a single layer on a baking sheet. Bake 25-30 minutes until golden brown. Season with sea salt and black pepper, to taste. For the gravy, melt butter in a saucepan over medium heat. Do not scorch. Whisk together cornstarch and cold water until no lumps remain. Add cornstarch mixture to melted butter, stirring constantly. Gradually add beef broth, continuing to stir until all broth is used. Bring gravy to a boil, as you stir. Allow gravy to boil at least one minute to dissolve thickener. Reduce heat to low, stirring occasionally. Divide the crinkle fries among serving bowls. Cover each bowl with cheese curds. Ladle rich brown gravy over each portion. Garnish with fresh parsley. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Chow Down: Garlic Smashed Potatoes! Now you, too, can have the same potato side dish at home which you often choose in popular eateries. It’s so incredibly easy you’ll find yourself wondering why you didn’t think of it before now. My simple recipe requires only three key ingredients: Idaho Russet Potatoes, Boursin Garlic Cheese, and of course, French Butter with sea salt. A sprinkling of bacon bits and fresh cut chives for garnish merely enhances an already phenomenal taste. With the holidays on the horizon, be kind to yourself. Keep it simple and WOW your friends and family without spending endless hours in the kitchen. You deserve it. 
GARLIC SMASHED POTATOES 
Ingredients:

2 large Idaho Russet Potatoes 

5.2 ounces package Boursin Garlic and Herb Gournay cheese

2 tablespoons butter, salted

Bacon bits, for garnish 

Fresh cut chives, for garnish 
Instructions:

Peel potatoes and cut into chunks. Place potatoes in a 2-quart pan. Cover with cold water. Add about a teaspoon of salt. Bring to a boil. Reduce heat to medium and cook potatoes for 15-18 minutes or until tender when pierced with a knife. Empty pan of potatoes into a colander to remove water. Transfer potatoes back to the pan, add butter and Boursin garlic cheese. Cover for 2-3 minutes. Take a hand mixer and smash the ingredients together until slightly chunky. Potatoes will be stiff but creamy. Transfer potatoes to a serving dish. Top with bacon bits and fresh cut chives for garnish. Serve immediately with gravy, if desired.

If you’ve ever drooled over the thought of a dill pickle appetizer, be prepared to reward yourself with this amazing recipe you can make at home. For the perfect zing of flavor, choose zesty garlic dill pickle spears. I recommend visiting the butcher department at your favorite grocers to buy a pound of thick sliced hickory-smoked bacon. You only need a half a pound for these appetizers, but trust me, you’ll finish it later on. Not only is the flavor unsurpassed, but the mere texture of thick bacon combined with the garlic pickles is highly addictive. Go ahead, slather them in creamy buttermilk ranch dressing for an unbeatable combination. You’re Welcome!
DILL PICKLE BACON SPEARS 
Ingredients:

12 dill pickle spears, zesty garlic

6 slices thick bacon, cut in half lengthwise 

1/3 cup buttermilk ranch dressing

Chives for garnish 
Instructions:

Preheat oven to 350°. Arrange the 12 bacon strips on a wire rack that is placed on a foiled-lined baking sheet. Bake 25 minutes. Remove from oven and cool until easy to handle. Wrap each dill pickle spear with one strip of bacon, seam side down. Secure with 1-2 toothpicks. Return dill pickles to wire rack and bake 25-30 minutes longer until bacon is crisp. Remove from oven and arrange on a platter. Pour buttermilk ranch dressing into a dip bowl. Garnish with fresh chives. Serve warm.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Quinoa BLTE Sandwich! What exactly is quinoa; does anyone know for sure? I took a trip down Wikipedia Lane and discovered “it is an experimental crop in NASA’s Controlled Ecological Life Support System for long-duration human occupied space flights.” It’s also gluten-free and easy to digest. That’s pretty important stuff in my book. Oh yeah, it’s been around for human consumption for at least 3,000 years. Maybe it’s time to give it a whirl. 
QUINOA BLTE SANDWICH 
Ingredients:

2 slices organic quinoa multigrain bread, toasted

1-2 tablespoons mayonnaise 

2 slices tomato

2 romaine lettuce leaves

2-4 slices thick bacon, cooked crisp 

1 large egg, cooked over-easy

Pinch seasoned salt

Black pepper to taste

Garnish with parsley 
Instructions:

Microwave bacon on paper-towel-lined plate for 5 minutes on High or until crisp. Set aside. In a small skillet sprayed with nonstick oil, crack an egg over medium-high heat. Sprinkle with seasoned salt and black pepper. Fry until set, then carefully flip over. Turn off heat. Continue cooking until white is set, but yolk is still runny. To assemble sandwich, slather both pieces of quinoa toast with mayonnaise. Layer ripe tomatoes, romaine lettuce leaves, and bacon strips on one slice. Slide the fried egg onto the bacon. Top the sandwich with the remaining slice of quinoa toast. Garnish with parsley. Serve immediately.
