GREEK OVEN POTATOES

Ingredients:

1/2 teaspoon seasoned salt

1/2 teaspoon black pepper

1/2 teaspoon smoky paprika

1/2 teaspoon dried rosemary

4 red potatoes, peeled and cut into wedges

4 garlic cloves, chopped

2 tablespoons olive oil

1/2 lemon, juiced

2/3 cup vegetable broth

1/3 cup parmesan cheese, grated

Fresh basil, for garnish

Instructions:

Preheat oven to 400°. Spray a small baking dish with nonstick oil. Set aside. In a small bowl, combine seasoned salt, black pepper, smoky paprika, and dried rosemary. Set aside. Arrange red potato wedges in the prepared baking dish. Sprinkle with spice mix. Toss briefly to cover all. In a bowl, whisk together garlic cloves, olive oil, lemon juice, and vegetable broth. More than likely, you have all the ingredients on hand. I think you’ll be surprised. In a few minutes, the kitchen will draw curiosity-seekers who put down their electronic devices to see what smells so good. Then go one step further, serve them with a slather of cream cheese, cocktail sauce, and baby shrimp. It can transform these buttery snacks into a culinary appetizer your family will remember. Better make more and hide them in the freezer.

ZESTY BUTTER-BAKED CRACKERS

Ingredients:

1/4 cup butter

1/4 cup olive oil

1 teaspoon onion powder

1 teaspoon red pepper flakes

1/2 teaspoon garlic powder

1/2 teaspoon seasoned salt

1/4 teaspoon cayenne pepper

1/4 teaspoon dill weed

1 sleeve saltine crackers

Instructions:

Preheat oven to 325°. Lightly mist a baking sheet with nonstick oil. Set aside. In a microwave-safe bowl, warm butter on Low setting for 20 seconds. Then they go one step further and manufacture it so everyone can experience the authentic flavor. My friend, Leighton, is from Jamaica. He’s a pretty cool bartender in a downtown hotspot. When he gets a little homesick, he either hops on a plane to his native island or does a bit of traditional cooking until he can visit his extended family in person. JAMAICAN SEASONED FISH

Ingredients:

2 tilapia fillets

1 1/2 teaspoons Jamaican gourmet seasoning

1/8 teaspoon black pepper

1 tablespoon olive oil

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. Rinse tilapia fillets and pat dry. Sprinkle each piece with half the Jamaican gourmet seasoning and black pepper. Flip and repeat. Warm olive oil in a skillet over medium-high heat. Sear each fish fillet 2-3 minutes per side, or until golden brown. Transfer fillets to the prepared baking sheet. Bake 5-6 minutes per side. Serve immediately.

Mashed Potato Cakes

What’s Cooking in Gail’s Kitchen? Time To Eat: Mashed Potato Cakes! Remember when you were a kid and you went to the beach to build sandcastles? Sometimes they molded and other times they crumbled. Well, today is a day for you to try again and get it right. There is one exception, though. Instead of using sand, we are going to use mashed potatoes. The results are crispy on the outside and perfection on the inside. Let the fun begin.

MASHED POTATO CAKES

Ingredients:

3 medium potatoes, peeled, rinsed, and quartered

1 egg, beaten

1 tablespoon onion, finely chopped

1/2 teaspoon sea salt

1/8 teaspoon black pepper

1 tablespoon butter

1-2 tablespoons milk

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper; set aside. Cook potatoes in plenty of salted water until thoroughly cooked; then drain. Meanwhile, sauté the onions until translucent; set aside. In a large bowl, combine cooked potatoes, beaten egg, sautéed onions, sea salt, black pepper, and butter. Adjust the texture with milk, as needed. On the baking sheet, using a ring mold, scoop mashed potato mixture to shape the cakes, about 1 1/2” thick. Press down slightly with the back of a spatula. Remove the ring mold and repeat the process for remaining mashed potatoes. Bake in the preheated oven for 10 minutes, or until golden brown. Transfer the potato cakes to a platter and top with a dollop or two of butter. Serve immediately.

Tomatillo Tilapia

Sure, I could go through the process of boiling, grilling, or roasting fresh tomatillos with garlic and spices to transform them into a smoky, spicy, and tender salsa. But since I already had a jarred version in the refrigerator, I thought taking the easier route for dinner would be a better idea. You may, too.

TOMATILLO TILAPIA

Ingredients:

2 tilapia fillets

1/2 cup roasted tomatillo salsa

1/4 red onion slices

1 mini sweet red pepper, chopped

1/2 cup cherry tomatoes, halved

Instructions:

Preheat oven to 375°. Lay two sheets of aluminum foil on a work surface. Place one tilapia fillet in the center of each piece of foil. Divide the tomatillo sauce between the two foil packs. Place red onion slices over fish. Top with chopped red peppers and cherry tomato halves. Fold foil over top and roll up edges to create a sealed packet. Place on a baking sheet. Bake in the preheated oven for 20 minutes, or until fish flakes easily with a fork. Serve immediately.

GINGER GLAZED BAKED TILAPIA

Ingredients:

2 tilapia fish filets

1/3 cup orange juice

3 tablespoons soy sauce

2 tablespoons olive oil

1 teaspoon ground ginger

1 teaspoon brown sugar

Instructions:

Season tilapia filets with sea salt and black pepper. Place in a shallow baking dish. In a small bowl, whisk together orange juice, soy sauce, olive oil, ginger, and brown sugar. Pour over tilapia. Cover; marinate in refrigerator for 20 minutes. Preheat oven to 400°. Place baking dish in oven. Bake fish for 13-15 minutes, or until fish flakes easily with a fork.

Take a walk on the wild side by turning dumpling-style pasta dough into a flavorful, tart, and cheesy appetizer. Panko breadcrumbs provide a crunchier coating that taste more like a fried shell when baked. This is due to the fact that panko breadcrumbs are made from crustless bread, thereby making them have an airier texture. The results are amazing.

TOASTED CHEESE RAVIOLI

Ingredients:

8-ounces fresh cheese ravioli, found in the refrigerated section of the grocery store

1 egg

1 tablespoon milk

1/2 cup plain panko breadcrumbs

2 tablespoons grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Marinara sauce, for dipping

Instructions:

Preheat oven to 425°. Spray a wire rack with nonstick oil. Place rack on a baking sheet. Set aside. In a shallow dish, whisk together egg and milk until fully incorporated. In another shallow dish, combine panko breadcrumbs, grated parmesan cheese, Italian seasoning, garlic powder, and kosher salt. Mix well. Working one at a time, dip ravioli in egg mixture. Allow excess to drip off before generously coating both sides with breadcrumb mixture. Place ravioli on prepared wired rack. Leave spaces between ravioli to allow even browning. Could it be I’m a control freak? Maybe I want a healthier version? Or is it because my adult son says he recalls fond memories of the blue and yellow box from his childhood? Truth be told, I was too lazy to drive into town to buy the store-bought variety. Good thing I keep a well-stocked pantry.

COPYCAT JIFFY CORNBREAD

Ingredients:

2/3 cup flour

1/2 cup organic cornmeal

1/3 cup sugar

1 tablespoon baking powder

1/2 teaspoon sea salt

2 tablespoons vegetable oil

1 egg

1/3 cup milk

Instructions:

Preheat oven to 400°. Spray a square pan with non-stick oil. Set aside. In a bowl, combine flour, organic cornmeal, sugar, baking powder, and sea salt. Mix well. Whisk in vegetable oil until smooth. Add egg and milk. Stir only until lumps no longer remain. Do not over-beat. Transfer batter to prepared pan. Bake 15-20 minutes, or until a cake tester comes out clean. Serve warm.

Whether you’re making this amazing pizza dip as an afternoon snack, midday appetizer, or late-night dinner, you will impress yourself with the chewy bread dough base. That is, until the mouthwatering moment you feast your eyes on the gooey strands of pizza cheese. Melted mozzarella cheese pulls can stretch from the iron skillet to your mouth like a tightrope stretched across Niagara Falls. Either snap it off in one bite or twirl it around your index finger for satisfying nibbling. Did I fail to mention the layers of deliciousness? Read on to see what I mean.

HALF-BAKED SKILLET PIZZA DIP

Ingredients for Crust:

12 frozen dinner roll dough balls

4 tablespoons butter, melted

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/8 teaspoon sea salt

1/8 teaspoon red pepper flakes

1 teaspoon parsley flakes

Ingredients for Dip:

8 ounces cream cheese, softened

1/2 cup mayonnaise

1 teaspoon zesty Italian salad dressing mix

1/2 cup parmesan cheese, grated

1/2 cup provolone cheese, shredded

2 cups mozzarella cheese, shredded

1/2 cup prepared pizza sauce

5 slices deli-style hard salami, cut into triangles (or mini pepperoni slices)

Fresh Parsley, for garnish

Instructions:

Preheat oven to 400°. Spray an iron skillet with nonstick oil. Remove frozen bread dough rolls from the freezer. Set aside. In a small bowl, combine melted butter, garlic powder, black pepper, sea salt, red pepper flakes, and parsley flakes. Mix well. Coat each frozen bread dough roll with butter mixture and arrange around the outside edge of the iron skillet. Cover pan with a tea towel, place in a warm area, and allow the dough to rise for 20 minutes for a half-baked doughy crust. Meanwhile, to prepare dip filling, combine cream cheese, mayonnaise, Italian seasoning, and grated parmesan cheese. Mix well. Fold in shredded provolone cheese and 1 1/2 cups shredded mozzarella cheese. Spoon half the filling into the center of the iron skillet. Add a layer of pizza sauce. Spoon the remaining cheese filling on top. Sprinkle the rest of the mozzarella cheese over all. Arrange with salami or pepperoni slices. Place the iron skillet in the preheated oven. Bake for 20-25 minutes, or until crust is golden brown and pizza dip is bubbly. Remove from oven. Garnish with fresh parsley. Serve warm.
