Ingredients:

8-ounces fresh cheese ravioli, found in the refrigerated section of the grocery store

1 egg

1 tablespoon milk

1/2 cup plain panko breadcrumbs

2 tablespoons grated parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1/2 teaspoon kosher salt

Marinara sauce, for dipping

Instructions:

Preheat oven to 425°. Spray a wire rack with nonstick oil. Place rack on a baking sheet. Set aside. In a shallow dish, whisk together egg and milk until fully incorporated. COPYCAT JIFFY CORNBREAD

Ingredients:

2/3 cup flour

1/2 cup organic cornmeal

1/3 cup sugar

1 tablespoon baking powder

1/2 teaspoon sea salt

2 tablespoons vegetable oil

1 egg

1/3 cup milk

Instructions:

Preheat oven to 400°. Spray a square pan with non-stick oil. Set aside. In a bowl, combine flour, organic cornmeal, sugar, baking powder, and sea salt. Mix well. Whisk in vegetable oil until smooth. Whether you’re making this amazing pizza dip as an afternoon snack, midday appetizer, or late-night dinner, you will impress yourself with the chewy bread dough base. That is, until the mouthwatering moment you feast your eyes on the gooey strands of pizza cheese. Melted mozzarella cheese pulls can stretch from the iron skillet to your mouth like a tightrope stretched across Niagara Falls. Either snap it off in one bite or twirl it around your index finger for satisfying nibbling. Did I fail to mention the layers of deliciousness? Read on to see what I mean.

HALF-BAKED SKILLET PIZZA DIP

Ingredients for Crust:

12 frozen dinner roll dough balls

4 tablespoons butter, melted

1/4 teaspoon garlic powder

1/4 teaspoon black pepper

1/8 teaspoon sea salt

1/8 teaspoon red pepper flakes

1 teaspoon parsley flakes

Ingredients for Dip:

8 ounces cream cheese, softened

1/2 cup mayonnaise

1 teaspoon zesty Italian salad dressing mix

1/2 cup parmesan cheese, grated

1/2 cup provolone cheese, shredded

2 cups mozzarella cheese, shredded

1/2 cup prepared pizza sauce

5 slices deli-style hard salami, cut into triangles (or mini pepperoni slices)

Fresh Parsley, for garnish

Instructions:

Preheat oven to 400°. Spray an iron skillet with nonstick oil. Remove frozen bread dough rolls from the freezer. Set aside. In a small bowl, combine melted butter, garlic powder, black pepper, sea salt, red pepper flakes, and parsley flakes. Mix well. Coat each frozen bread dough roll with butter mixture and arrange around the outside edge of the iron skillet. Cover pan with a tea towel, place in a warm area, and allow the dough to rise for 20 minutes for a half-baked doughy crust. Meanwhile, to prepare dip filling, combine cream cheese, mayonnaise, Italian seasoning, and grated parmesan cheese. Mix well. Fold in shredded provolone cheese and 1 1/2 cups shredded mozzarella cheese. Spoon half the filling into the center of the iron skillet. Add a layer of pizza sauce. That fact alone ups your intake of vitamins and minerals without leaving you feeling meh and bloated. Digestion improves as energy levels rise, which leaves me asking one final question: Which superhero are you?

EGG & SWEET POTATO BOATS

Ingredients:

1 large sweet potato, halved, washed and patted dry

1/2 teaspoon olive oil

1/4 teaspoon sea salt

2 large eggs

2 strips bacon, cooked and crumbled

Sriracha, to taste

Fresh oregano, for garnish

Instructions:

Preheat oven to 350°. Once the sweet potatoes have been washed and patted dry, rub skins with olive oil, sprinkle with sea salt, and place cut side down in a shallow pan that has been sprayed with nonstick oil. Bake for about one hour, or until tender. Remove sweet potatoes from oven. With tongs, flip sweet potatoes over so skin side is down. Using a spoon, carefully scoop out the center to form a well for one egg. Crack an egg into each sweet potato boat. Return pan to oven; bake 20 minutes, or until eggs are set. Remove from oven. Crumble bacon over top. Drizzle with sriracha sauce. Garnish with fresh oregano leaves. Serve warm.

The naturally sweet, earthy aromas trigger the tastebuds the same way rotisserie chicken and sizzling bacon do. You want it and gotta have it. Wait until you bite into the creamy texture infused with oregano and cinnamon. Sounds like a sensual adventure, doesn’t it?

OREGANO HASSELBACK SWEET POTATO

Ingredients:

2 sweet potatoes, skin on

2 tablespoons olive oil

1/4 teaspoon oregano, crushed

1/4 teaspoon seasoned salt

1/8 teaspoon cinnamon

Instructions:

Preheat oven to 350°. Leaving skin on potatoes, wash thoroughly and pat dry. Put one potato on a cutting board. Beginning at one end, slice in strips, being careful to stop before slicing the bottom skin. Transfer to a shallow baking dish. Continue until both potatoes are sliced. In a small bowl, mix olive oil, crushed oregano, seasoned salt, and cinnamon. Brush each potato with olive oil mixture, separating slices to coat both sides. Drizzle remaining oil over all. I used to think I only had only two choices when it came time for a homemade fish dinner: either bake it or fry it. Now that I have easier access to fresh fish, I’ve expanded my thought process beyond the ordinary. While I’m having fun with the outdoor kitchen, sometimes I want a little more than that as well. I’m here to say that stuffing is no longer just for turkey. Fish offers options like mixing in shrimp, crab, vegetables, herbs, or rice. How crazy is that? Stick around; I’ll show you how it’s done.

BUTTERY STUFFED HADDOCK

Ingredients for Haddock:

2 – 6 ounce haddock fillets

5 tablespoons butter, melted

2 tablespoons lemon juice

1 teaspoon parsley, minced

1/2 teaspoon paprika

Ingredients for Stuffing:

6 tablespoons butter, cubed

1 onion, finely chopped

1/4 cup celery, finely chopped

1/4 cup green pepper, finely chopped

1 pound precooked shrimp, peeled, deveined, and chopped

1/4 cup beef broth

1 teaspoon diced pimentos

1 teaspoon Worcestershire sauce

1/2 teaspoon dill weed

1/2 teaspoon chives, minced

When my sister-in-law worked in a fine dining restaurant years ago, she shared with me an amazing secret for perfectly seasoned baked potatoes. “Wash the skins, then butter them up before sprinkling with sea salt,” she instructed. The skins become as tasty as a savory cracker. I thanked her and with enthusiasm have been making them that way ever since. It’s pretty much fool-proof. There’s no need for extra butter or salt since they are baked into the skin. She went on to share another tidbit of information with me. “Leftover baked potatoes prepared this way become the best shredded hash browns.” Bonus!

SEA SALT-RUBBED BAKED POTATOES

2 russet potatoes, washed and pierced

2 tablespoons butter, softened

1 teaspoon sea salt

Dollop of sour cream

Green onions, for garnish

Sprinkling of crushed oregano

Instructions;

Preheat oven to 350°. Wash potatoes and pat dry. Pierce the top with a paring knife. Holding the potato in one hand, apply softened butter all over the outer skin. Then sprinkle with sea salt. Place the potatoes on a stone, or directly on the oven rack, in the preheated oven. Be sure the pierce mark is facing up. Bake one hour, or until tender. To serve, split the potato open on a plate. Dollop with a generous spoonful of sour cream. Garnish with green onions and sprinkle with crushed oregano.

Pork Tenderloin Chimichanga

If you want to step up your game from an ordinary burrito, but really prefer the flavor of crispy fried foods, there are healthier ways to accomplish it without a deep fryer. Anyone who owns an air fryer will attest to that. I haven’t purchased this countertop convection yet, although my new kitchen does have the option on the built-in wall unit. The one time I tested it produced a charred burn mark on the wooden cutting board afterwards. The jury is still out if I’ll make another attempt at it. These chimichangas are baked in the oven and deliver golden brown crunchy results. Tried-and-True techniques go a long way in my book.

PORK TENDERLOIN CHIMICHANGA

Ingredients:

2 1/2 cups pork tenderloin, cooked and shredded

2/3 cup medium picante sauce, prepared

1/3 cup green onions

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

8 flour tortillas

1/4 cup melted butter

1 cup Mexican blend cheeses, shredded

Lettuce, tomatoes, onions

Ranch dressing, prepared

Fresh lime wedges, for garnish

Instructions:

Preheat oven to 425°. Spray a 9”x13” baking dish with nonstick oil. Set aside. In a large skillet, combine shredded pork tenderloin, picante sauce, green onion, ground cumin, dried oregano, and sea salt. Simmer 5 minutes to heat through and allow most of the liquid to evaporate. Remove from heat. Brush both sides of a flour tortilla with melted butter. Spoon 1/3 cup meat mixture into the center; top with 2 tablespoons Mexican blend cheese. Fold 2 sides over filling; fold ends down. Place seam side down in prepared baking dish. Repeat with remaining ingredients. Bake 15 minutes or until crisp and golden brown. Serve lettuce fixings drizzled with ranch dressing. Garnish with lime wedges.

The end result is tenderness and flavorful, an extraordinary combination. It sounds like a lot of liquid, but trust me, the potatoes literally soak up the moisture. They can handle it. The spice mix does a great job of penetrating the potatoes while teasing the senses with a whiff of aromatic pleasantness. For a side dish that is anything but hum-drum, give this one a whirl. No regrets.

GREEK OVEN POTATOES

Ingredients:

1/2 teaspoon seasoned salt

1/2 teaspoon black pepper

1/2 teaspoon smoky paprika

1/2 teaspoon dried rosemary

4 red potatoes, peeled and cut into wedges

4 garlic cloves, chopped

2 tablespoons olive oil

1/2 lemon, juiced

2/3 cup vegetable broth

1/3 cup parmesan cheese, grated

Fresh basil, for garnish

Instructions:

Preheat oven to 400°. Spray a small baking dish with nonstick oil. Set aside. In a small bowl, combine seasoned salt, black pepper, smoky paprika, and dried rosemary. Set aside. Arrange red potato wedges in the prepared baking dish. Sprinkle with spice mix. Toss briefly to cover all. In a bowl, whisk together garlic cloves, olive oil, lemon juice, and vegetable broth. Pour over potatoes. Cover with foil and bake for 40 minutes. Carefully take the baking dish from the oven, remove the foil, and sprinkle the potatoes with parmesan cheese. Return dish to oven and bake, uncovered, for 15 minutes longer. Potatoes will be cooked through and golden brown in color. Garnish with fresh basil. Serve immediately.
