Goodness knows we carry around enough guilt these days between the gourmet coffee addiction and the lack of gym time workouts. So here’s a logical snack that not only provides protein, carbs, and fiber, it feels like a treat! Honestly, anything with natural honey gets my stamp of approval. The fruit, nuts, and coconut are an added bonus, in my opinion. Go ahead, make up a batch and see how rewarding it is.

ZERO-GUILT HONEY & NUT DATE BITES

Ingredients:

3/4 cup dates, chopped

1/4 cup raisins

2 eggs, beaten

1/2 cup honey

1/4 cup natural peanut butter, crunchy

1 teaspoon vanilla extract

1/2 teaspoon sea salt crystals

3/4 cup walnuts, chopped

3/4 cup pecans, chopped

1 cup coconut, flaked

Instructions:

In a medium saucepan over medium-low heat, combine dates, raisins, eggs, honey, and peanut butter. Bring to a boil, stirring constantly for 4 minutes. The eggs need to cook thoroughly, but not scramble. Do not scorch. Remove from heat. Stir in vanilla extract and sea salt crystals. Fold in chopped walnuts and pecans. Mix well. Form into small bite-size balls, uniform in shape. Roll each ball in coconut flakes. Refrigerate an hour or until firm. Store in an air-tight container.

EASY ENERGY BALLS

Ingredients:

1 cup organic creamy dark roasted peanut butter

2/3 cup pure honey

2 cups flaked coconut

2 cups old fashioned whole grain oats

1 cup organic flaxseed

1 cup dark chocolate chips

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 cup ground nuts

Instructions:

Warm peanut butter just enough to blend well with the honey. Remove from heat and add coconut, oats, flaxseed, and chocolate chips. Mix well. Sprinkle in cinnamon and vanilla extract. Mix thoroughly. Roll into 30 bite-size balls, coat in ground nuts, and store in the refrigerator in a sealed container.

What’s Cooking in Gail’s Kitchen? The Color of Food: Sensational Stuffing Balls! Two words: OMG, YUM! Seriously, this is the answer to a prayer when asked, “What is a good side dish to serve with meat?” Personally, I like the make-ahead option of having a bag of Stuffing Balls on hand in the freezer. I guess you could even serve them as an appetizer for your next gathering. They’re that tasty. As usual, you can opt out of the shortcut version provided here and make your own stuffing with 5 cups of cubed cornbread, wheat bread, or day-old white bread crumbs. You decide. Go crazy with garden herbs, diced apples, or skip the meat completely. I chose golf ball-size over baseball-size, but that’s totally up to you. After all, you’re the one who will reap the accolades.

SENSATIONAL STUFFING BALLS

Ingredients:

1/3 cup butter

1/4 cup yellow onion, finely chopped

1/2 cup celery, finely chopped

1/2 cup parsley, chopped

1/4 teaspoon black pepper

1 teaspoon sea salt

1/2 teaspoon poultry seasoning

1 egg, well beaten

1/4 cup chicken broth

12.5 ounce can cooked chicken breast, drained and flaked

6-ounce box chicken stuffing mix

Instructions:

Preheat oven to 375°. Line a baking sheet with foil that has been sprayed with nonstick oil. Set aside. In a large skillet, melt butter over medium-low heat. Do not scorch. Add chopped onion and celery. Sauté until soft. Add chopped parsley, black pepper, sea salt, poultry seasoning, beaten egg, chicken broth, flaked chicken, and dry stuffing mix. Stir well to combine. Shape into golf ball-size portions. Place stuffing balls on the prepared baking sheet. Bake for 20 minutes until set.

Eating My Way Through the Holidays! Yuletide Favs: Bourbon Balls! Remember the scene from “The Grinch Stole Christmas” where the adults in Whoville are throwing a key party? Well, I’m convinced they may have been nibbling on holiday Bourbon Balls based on the way they were flirting and having a crazy-fun time. Be forewarned. This recipe does contain chocolate and alcohol. You may want to mention it.

BOURBON BALLS

Ingredients:

1 cup semi-sweet chocolate morsels

3 tablespoons corn syrup

1/2 cup bourbon

2 1/2 cups vanilla wafer crumbs

1/2 cup powdered sugar

1 cup pecans, finely chopped

Granulated sugar

Instructions:

Pulse vanilla wafers in a food processor to make crumbs. Set aside. Over hot (not boiling) water, melt chocolate morsels; remove from heat. Blend in corn syrup and bourbon. In a large bowl, combine vanilla wafer crumbs, powdered sugar, and nuts. Add chocolate mixture. Blend well. Chill 30 minutes. Using a melon ball utensil, scoop dough into 1″ balls. Roll in granulated sugar. Store in covered container for several days to season flavor.
