Remember playing outside all day with the neighborhood kids and returning home as hungry as a wolf? One foot in the door told you mother had baked a wonderful surprise. The pleasant aroma of bananas wafted through the house, intermingled with cinnamon spice sweet bread. You knew it had her stamp of approval because permission was granted to have a slice even before dinner was served. Which brings me to reason number two. Banana bread is one of Life’s comfort foods. And that’s all I’m going to say about that.

GRANOLA BANANA BREAD

Ingredients:

1/3 cup butter, softened

1/2 cup sugar

2 ripe bananas, plus 1 banana sliced horizontally

2 cups flour

1 1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 cup milk

1 teaspoon vanilla extract

1/2 cup cinnamon almond granola

1 tablespoon turbinado sugar

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper, overlapping on the sides. Set aside. In a food processor, cream together butter and sugar. Add 2 bananas; mix until bananas are mashed. Stir in flour, baking powder, and baking soda. Pulse, alternating with milk, until mixed. Add vanilla extract. Pour batter into prepared loaf pan. Press both halves of the remaining banana onto the top of the batter. Lightly press the cinnamon almond granola over all. Sprinkle with turbinado sugar. Bake 50 minutes, or until a tester comes out clean. Remove loaf from the pan and allow bread to cool on a wire rack for 30 minutes before slicing.

What do you do when there are too many bananas in the house and everyone turns up their noses at the mere mention of (yet) another loaf of boring banana bread? Spin on your heel and sashay back to the kitchen as they scatter like a flock of birds. Now that it’s quiet, tune into your favorite music station, dance in bare feet, and get cooking. I like to scoop the ice cream into serving bowls and then place them back in the freezer to chill. As the stovetop cooking progresses, a very subtle buttery sweet aroma of cinnamon and bananas will fill the air. And just when you think you’re all alone, you’ll turn around to discover 3 pairs of puppy-like eyes begging for a treat. Now tell me, please, how can I say “No” to faces like that?

BANANAS FOSTER ICE CREAM

Ingredients:

1/4 cup butter

1 cup brown sugar

1/2 teaspoon cinnamon

4 bananas, peeled and sliced

1/4 dark rum

Vanilla Ice Cream

Sugared Pecans, for garnish

Instructions:

In a skillet over low heat, combine butter, brown sugar, and cinnamon. Stir constantly until butter melts and the sugar is dissolved. Gently add the sliced bananas to the pan. Slowly stir to coat the bananas in the sugary syrup. When the bananas begin to soften, add the dark rum. Continue cooking until the sauce is heated through. Scoop the vanilla ice cream into serving bowls. Spoon the banana mixture over the ice cream. Top with sugared pecans and serve immediately.

Yo-Yo Strawberry Froyo

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Yo-Yo Strawberry Froyo! During strawberry season, there are so many ways to serve this jubilant fruit without getting bored. Once one has made a couple jars of jam, a strawberry rhubarb pie, bakery-style muffins, and angel food shortcake, the list goes on. Strawberries are a nice addition to a spinach salad. They also present a festive twist on the classic margarita to offset a platter of tortilla chips and salsa. If you’ve had your fill of strawberries before the season ends, no worries. Wash them, remove the leaves and stems, halve them, then pop them in the freezer for using later on. I like to place them in a single layer on a baking sheet in the freezer for 24 hours before storing them in ziplock bags. That way they don’t end up as a giant blob of frozen strawberries.

YO-YO STRAWBERRY FROYO

Ingredients:

2 bananas, peeled, sliced, and frozen

1 cup frozen strawberries, halved

2 tablespoons sweetened condensed milk

1/4 cup Greek yogurt

1/4 teaspoon coconut extract

1/4 cup frozen strawberry chunks, optional for texture

Fresh mint, for garnish

Instructions:

Using a food processor, combine frozen sliced bananas, frozen strawberry halves, sweetened condensed milk, Greek yogurt, and coconut extract. Blend until smooth and creamy. It will look like softened ice cream. Gently fold in strawberry chunks for color and texture. Transfer mixture to a loaf pan. Cover with aluminum foil. Freeze overnight. To serve, scoop frozen yogurt into dessert bowls. Garnish with fresh mint. Serve immediately.

What’s Cooking in Gail’s Kitchen? Clean Eating: Papaya Banana Boat! When my son and daughter-in-law visited us in Kauai, I wanted to treat them to a special island breakfast. It was a perfect portion for them after greeting the sunrise sipping on macadamia nut coffee. Ripe papaya has such a naturally sweet flavor. It practically melts in your mouth with its creamy, butter-like texture. If you like cantaloupe, I promise you this: Papaya will take you “Somewhere Over the Rainbow”. You may even hear the magical sounds of a ukulele strumming in the background.

PAPAYA BANANA BOAT

Ingredients:

1 ripe papaya, cut in half with seeds removed

1 banana, sliced

1/8 teaspoon cinnamon

2 dollops Greek yogurt

2 teaspoons granola

Drizzle of agave nectar

Instructions:

Split the papaya between two plates. Fill half the cavity with sliced bananas. Sprinkle cinnamon over banana slices. Fill the other half of the papaya with a generous dollop of Greek yogurt. Sprinkle granola over top of yogurt. Drizzle entire papaya boat with agave nectar.

What’s Cooking in Gail’s Kitchen? Talking Points: Yogurt Black Raspberry Smoothie! Blackberries and black raspberries. They’re both the same, right? Guess again. Blackberries are the larger of the two, in cell structure as well as actual size of a single berry. They also have a glossy finish. Blackberries are seen more often at grocery stores as well. Black raspberries, on the other hand, are as coveted as morel mushrooms. Growers typically save them for themselves and very close friends. Their flavor is more unique, not nearly as tart and very fruity. Some consider them the healthiest berries on the planet with three times the antioxidants as other berries. You can recognize black raspberries by their tiny protective hairs. The centers are hollow making them effortless for picking. Black raspberries are popular for cobblers, pies, jams, ice cream toppings, and of course smoothies. Is it any wonder I love you more.

YOGURT BLACK RASPBERRY SMOOTHIE

Ingredients:

3/4 cup black raspberries

3/4 cup blueberries, frozen

1 banana, sliced and frozen

1 teaspoon natural honey

1 teaspoon vanilla extract

1/2 cup Greek yogurt

1/2 cup skim milk

Fresh mint

Instructions:

In a blender, combine black raspberries, frozen blueberries, frozen banana slices, natural honey, vanilla extract, Greek yogurt, and skim milk. Pulse for one minute to chop fruit. Stir, purée until smooth and creamy. Pour into glasses. Garnish with fresh mint. Serve immediately.

Jalapeño Cherry Smoothie Bowl

What’s Cooking in Gail’s Kitchen? Talking Points: Jalapeño Cherry Smoothie Bowl! Get ready to eat well. This morning’s smoothie bowl will energize your body as well as your mind. Feel the easygoing ingredients stimulate your senses with a kick of sass right between the eyes. I mean, just look at the brightness real cherries can make. Begin with frozen fruit. Did you know if you freeze a cut-up banana it doesn’t turn brown? Truth. Each ziplock bag contains an entire sliced banana. Make sure they freeze in a single layer, though. When it’s time to blend the frozen fruit, the smoothie is chilled so there’s no need to add ice cubes. Now to address the elephant in the room, so to speak. Jalapeños. Don’t worry. Their bold flavor is invigorating. It actually adds a nice balance between the sweet and creamy, not to mention the extra vitamins. But don’t take my word for it.

JALAPEÑO CHERRY SMOOTHIE BOWL

Ingredients:

1 cup frozen cherries

1 sliced and frozen banana

3-5 slices of pickled jalapeño peppers, seeds removed and finely chopped

1/4 cup pistachios, chopped

1 cup orange juice

1 tablespoon sherry vinegar

1/4 cup Greek yogurt

1 tablespoon coconut sugar

1 teaspoon vanilla extract

1/4 teaspoon Himalayan pink salt

Cherries, pistachios, and jalapeños for garnish

Instructions:

In a blender combine frozen cherries, frozen banana, chopped jalapeños, chopped pistachios, orange juice, sherry vinegar, and Greek yogurt. Pulse to process. Add coconut sugar, vanilla extract, and Himalayan pink salt. Blend until smooth, 1-2 minutes. Transfer smoothie to a bowl. Garnish with cherries, pistachios, and jalapeños.

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Autumn Spice Banana Bread! Whenever people want to give me a gift of a scented candle, I always choose bakery aromas over floral ones. Buttery Caramel Corn, Pumpkin Pecan Waffles, Vanilla Frosted Cupcake, to name a few. I confess, I could have a love affair with cinnamon, maple, ginger, or cardamom. My knees grow weak just thinking about it. Perhaps that is one reason Autumn spices make me crazy while throwing caution to the wind and willpower out the door. I scrape the bowl leaving just enough batter to taste in a teaspoon. It’s how you know the results will be amazing; at least that’s my story and I’m sticking to it.

AUTUMN SPICE BANANA BREAD

Ingredients:

3 bananas, peeled and mashed

1/2 cup mayonnaise

1 egg

1 1/2 cups flour

3/4 cup sugar

1 teaspoon baking soda

3/4 teaspoon cinnamon

3/4 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

1/4 cup coconut, flaked

1/2 cup carrots, peeled and shredded

Instructions:

Preheat oven to 350°. Line a loaf pan with parchment paper. Set aside. In a bowl, combine mashed bananas, mayonnaise, and egg. Mix well. In another bowl, whisk together flour, sugar, baking soda, cinnamon, ginger, nutmeg, and sea salt. Stir in the banana mixture, just until moistened. Fold in flaked coconut and shredded carrots. Pour into prepared loaf pan. Bake 55-60 minutes, or until a cake tester comes out clean. Rest for 10 minutes. Remove banana bread from pan and allow to cool completely on a wire rack.

Ingredients for Frosting:

2 ounces cream cheese, softened

2 tablespoons butter, unsalted, softened

1 1/2 cups powdered sugar

1/8 teaspoon sea salt

2-3 tablespoons light cream

Roasted pumpkin seeds and crushed pecans, for garnish

Instructions for Frosting:

In a medium bowl, combine cream cheese and unsalted butter until smooth. Add powdered sugar and sea salt. Whisk in 2-3 tablespoons light cream. Frosting will be thick, but spreadable. Spread the frosting over the completely cooled banana bread. Sprinkle generously with roasted pumpkin seeds and crushed pecans.

XENIAL CHUNKY MONKEY BANANA MUFFINS

Ingredients:

1/2 cup shredded coconut

3 ripe bananas, mashed

3 cup old-fashioned oats

1 teaspoon cinnamon

1 1/2 cups milk

2 eggs, whisked

3 tablespoons brown sugar

2 tablespoons vegetable oil

1 teaspoon baking powder

1 teaspoon vanilla extract

1/2 teaspoon sea salt

1 cup walnuts, chopped

1/2 cup mini chocolate chips

Instructions:

Preheat oven to 350°. Spray a muffin tin with nonstick oil. Spread shredded coconut in a single layer on a baking sheet. Bake 2-3 minutes, until lightly golden and fragrant. Remove from heat and set aside. In a large mixing bowl, combine bananas, old-fashioned oats, cinnamon, milk, eggs, brown sugar, vegetable oil, baking powder, vanilla extract, and sea salt. Mix well. Fold in chopped walnuts, chocolate chips, and toasted coconut. Scoop mixture into 12 muffin cups, filling to the top. Bake 30-35 minutes, until tops are golden and a toothpick inserted in the middle comes out clean. Cool 5 minutes; remove from muffin tin. Serve warm.
