There’s something charming and romantic about choosing a jar of private-label olive oil, flavored balsamic vinegar, house roasted red pepper bruschetta, or four-fruit jam. An extensive collection of imported products can send my mind spinning as I begin to salivate with serving ideas. There are often aromas of freshly baked bread, smoked and cured meats, unique deli offerings, an antipasto bar, pizza nook, and fresh burrata station. San Marzano tomatoes always seem to make it into my cart as well as olive tapenades and basil pesto or marinated artichoke hearts. Before you leave, don’t forget a nice bottle of Chianti.

RED PEPPER BRUSCHETTA PASTA

Ingredients:

8 ounces spaghetti pasta

1 tablespoon kosher salt

1/3-1/2 cup red pepper bruschetta, prepared

Basil leaves, for garnish

Instructions:

Bring a large pot of water to boil. Cook pasta in salted water for 8-10 minutes or until al dente, stirring occasionally. Drain pasta in a colander. Transfer cooked pasta back to the pot. Add prepared red pepper bruschetta mixture. Gently toss; heat through. Using tongs, place spaghetti clusters into a serving bowl. Garnish with fresh basil leaves. Serve immediately.

Zucchini Meatball Bateaux

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Zucchini Meatball Bateaux! Call me “Fancy Shmancy” today since the title of this recipe makes it gourmet all-the-way. Bateaux means Boat. And in the world of food, nothing looks more like a boat than zucchini, especially when it’s sliced horizontally and scooped out. Amirite? Actually, I like this recipe because I always seem to have a bag of frozen Italian meatballs on hand in my freezer. Most days I make my own homemade marinara sauce because I like to stock my pantry with a variety of Italian Roma tomatoes that are imported from Italy. Obviously you can do the same. Recipes are designed to modify in ways that bring accolades to you for the extra effort. If time is of the essence, follow the instructions below. I promise you won’t be disappointed.

ZUCCHINI MEATBALL BATEAUX

Ingredients:

2 medium zucchini, sliced in half lengthwise

16 precooked frozen Italian meatballs, thawed

15-ounce jar prepared marinara sauce

1/2 cup mozzarella cheese, shredded

1/2 cup parmesan cheese, shredded

8 ounces fresh burrata cheese

1 tablespoon olive oil

1/4 teaspoon Italian herb blend

Fresh basil, for garnish

Instructions:

Preheat oven to 400°. Arrange sliced zucchini halves on a baking sheet that has been sprayed with nonstick oil. Scoop out the center of each zucchini, using a spoon, to remove seeds and create a well to hold the fillings. Spread a little marinara in each zucchini. Place 4 Italian meatballs in each. Divide the remaining marinara between them. Top with mozzarella and parmesan cheeses. Bake 20 minutes, or until cheese is melted and bubbly. Transfer zucchini boats to a platter. Place fresh basil leaves on each end. Divide the burrata into four sections and arrange dollops as desired. Drizzle each dollop with olive oil and sprinkle with Italian herbs. Serve immediately.

Yellow Squash Panko

What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Yellow Squash Panko! Many of you already know this particular vegetable is a second cousin to zucchini. The skin is tender, glossy smooth, and edible which makes it a no-fuss dinner companion. Although its flavor is mild, when cooked it actually becomes buttery sweet with a slightly nutty nuance. Try to buy yellow squash that is 6”-8” in size. You’ll know because the larger it is, the more likely the skin will appear bumpy and less tender. You’ll also notice a lot of seeds, once you cut into it. By then you’ll need to rethink dinner and purée it for soup. Hindsight is 20/20 after all.

YELLOW SQUASH PANKO

Ingredients:

2 yellow squash

1-2 tablespoons olive oil, for sauté

Ingredients for Herbed Oil:

1 tablespoon lemon juice

1 tablespoon olive oil

1/8 teaspoon garlic powder

1 teaspoon dried parsley

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Ingredients for Crumb Topping:

1/4 cup panko bread crumbs

1/4 cup parmesan cheese, grated

1 teaspoon dried parsley

1/4 teaspoon sea salt

1/8 teaspoon red pepper flakes

Instructions:

Wash and pat dry yellow squash. Slice into 1/4” rounds; set aside. To make the herbed oil, whisk together lemon juice, olive oil, garlic powder, dried parsley, sea salt, and cracked black pepper. Set aside. To make the crumb topping, toss panko bread crumbs, grated parmesan cheese, dried parsley, sea salt, and red pepper flakes into a bowl. Mix well; set aside. To prepare yellow squash, warm olive oil in a large skillet over medium heat. Add the yellow squash and sauté for 8 minutes. Turn occasionally to cook both sides. Squash should be soft, but not mushy. Remove from heat. Drizzle herbed oil over yellow squash. Transfer to a platter. Top with panko crumb topping mixture. Garnish with fresh basil leaves, if desired. Serve immediately.

Xalapa Party Punch

It does contain alcohol, so drink responsibly. Big-batch cocktails, or party punch, are nice to have on hand for last minute gatherings or friends who drop by unannounced. I keep a pitcher in the refrigerator for just that reason. If you do the same, choose a container that has an airtight lid. There’s nothing worse than sipping on an icy cold cocktail that smells like garlic or grilled leftovers. With the subtle fruity notes of apple, orange, cherry, and apricot, Xalapa Party Punch will get everyone talking. Carry On.

XALAPA PARTY PUNCH

Ingredients:

1 cup hot black tea

1/2 cup Tupelo honey

1 orange rind, grated

2 cups dark rum

2 cups apple brandy

2 cups dry red wine

Crushed Ice

Basil or Mint, for garnish

Instructions:

In a saucepan over low heat, combine hot black tea, Tupelo honey, and grated orange rind. Heat for 5 minutes. Stir occasionally. Remove from heat; set aside to cool. Add dark rum, apple brandy, and dry red wine. Refrigerate until ready to serve. Pour into glasses filled with crushed ice. Garnish with fresh basil or mint.

Nosh Crostini and Oranges

When you’re not exactly hungry, but could use a snack between meals or to satisfy a late night craving for “something”….crostini fits the bill, so to speak. Crostini adds the crunch of potato chips and the flavor of croutons, only better. Fresh mozzarella melts incredibly well because it contains less moisture. You can thank fresh mozzarella for those ah-mazing cheese pulls that become gooey strands of seductiveness. Uh-huh, I see you nodding your head in total agreement. Better grab a napkin.

NOSH CROSTINI AND ORANGES

Ingredients:

1 large tomato, diced

1/2 teaspoon kosher salt

1/4 teaspoon oregano

1/2 loaf baguette bread, sliced

1-2 tablespoons olive oil

1/8 teaspoon garlic powder

6 slices fresh mozzarella cheese

1 navel orange, peeled with each segment cut in half

Fresh basil leaves, for garnish

Instructions:

Preheat oven to 350°. Arrange diced tomatoes in a single layer on the cutting board. Sprinkle with kosher salt and oregano. Allow to rest for 10 minutes. Meanwhile, place baguette slices on a baking sheet. Brush each slice with olive oil. Sprinkle garlic powder on top. Place one slice of fresh mozzarella on each piece of baguette. Spoon diced tomatoes over cheese. Bake for 10 minutes, or until cheese is bubbly. Remove from oven. Garnish crostini with fresh basil. Serve with navel orange segments.

I see you scratching your head with a puzzled look on your face thinking…”When did hard boiled eggs become a substitute for slider buns?” The answer: It happened when carb-counting became a thing and bread became a dieter’s no-no. Now, not everyone needs to crank up their body’s energy into fat-burning mode. You may just happen to like hard boiled eggs. That’s my story and I’m sticking to it. Don’t you love it when things work out?

KETO EGG SLIDERS

Ingredients:

6 hard boiled eggs, peeled and cut in half lengthwise

6-12 basil leaves

6 slices of Roma tomatoes

3 pieces of candied bacon, cooked crispy and cut in half

Everything But Bagel seasoning

Micro greens, for garnish

Instructions:

Place two basil leaves on the bottom half of each egg. Top with one slice of Roma tomato. Next, layer with one half slice of cooked bacon. Put the other half of the egg face down on top to create a little sandwich. Secure the egg slider with a party pick inserted down the center. Sprinkle with everything but bagel seasoning. Repeat until all ingredients have been assembled. Garnish with micro greens. Serve.

Tomato Herb Cheese Naan

What’s Cooking in Gail’s Kitchen? Cheerful Choices: Tomato Herb Cheese Naan! The other day I sent my husband to the grocery store with a short list of produce items. Sounds simple, right? Within 15 minutes, I had several frantic texts asking me to clarify the type of tomatoes I needed him to buy. Perhaps you can understand his quandary. Years ago, a shopper had their choice of garden tomatoes or cherry tomatoes. Nowadays, you practically need an Old Farmer’s Almanac to clarify all the different varieties like Cherry, Grape, Green, Roma, Beefsteak, Campari, Cocktail, San Marzano, and Vine-Ripened tomatoes. Sheesh! All I really wanted were fresh tomatoes.

TOMATO HERB CHEESE NAAN

Ingredients:

1 prepared naan, store bought

1 tablespoon olive oil

1 tablespoon cornmeal

6-8 cocktail tomatoes, sliced

1 teaspoon kosher salt

8 ounces fresh mozzarella, sliced

1/4 teaspoon garlic powder

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

Fresh oregano leaves, for garnish

Instructions:

Preheat oven 400°. Spray a baking sheet with nonstick oil. Set aside. Brush the bottom of the naan. Sprinkle with cornmeal. Transfer naan to the baking sheet, bottom side down. Bake 5 minutes. Remove pan and set aside. Meanwhile, to prepare tomatoes, arrange sliced cocktail tomatoes on a cutting board; sprinkle with kosher sea salt. Allow to rest for 5 minutes. Arrange sliced fresh mozzarella over naan. Layer with cocktail tomatoes. Sprinkle with garlic powder, oregano, basil, and marjoram. Bake 15 minutes longer, or until cheese is melted and golden. Cool slightly, cut into portions. Garnish with fresh oregano leaves. Serve warm.

1 cup baby spinach leaves

2 large flour tortillas

1/4 cup basil pesto

1/4 cup mozzarella cheese, shredded

1 small avocado, sliced

1 tomato, chopped

2 slices crispy bacon

1/2 cup precooked chicken, cut into chunks

2 slices applewood smoked ham

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a bowl, whisk together eggs, Everything But Bagel seasoning, sea salt, and black pepper. In a skillet over medium heat, warm the butter. Pour in the eggs and cook until the bottom is set, approximately 1-2 minutes. Sprinkle on the cheddar cheese. Layer the spinach leaves over top, and cook one minute longer. Remove from heat. Place one tortilla in the microwave for 20 seconds. Spread with a layer of basil pesto. Add the scrambled egg mixture, mozzarella cheese, sliced avocado, chopped tomatoes, bacon strip, chicken chunks, and a slice of smoked ham. Fold sides and ends over filling; roll forward. Repeat for second serving. Place the two burritos, seam side down, on the prepared baking sheet. Bake 10-15 minutes, or until the cheese is melted and the tortilla is slightly charred. I like the idea of something different and can often imagine the skilled cheesemakers concocting special blends with creamy textures, dried herbs, buttery hints, and natural aging. This cheese in particular has the qualities of cheddar and gruyère giving it a complex buttery nut flavor. Is it any wonder the earthy garden tomatoes pair so well with it. Some might say it’s on its way to becoming a time-honored tradition.

HEIRLOOM TOMATO CHEESE TART

Ingredients:

2 heirloom tomatoes, sliced

1 cup cherry tomatoes, halved

1 tablespoon kosher salt

I sheet frozen puff pastry, thawed

1/2 pound gourmet pesto cheese, grated

2 tablespoons fresh oregano, chopped

Olive oil, for drizzling

Instructions:

Arrange tomatoes in a single layer on a baking sheet lined with paper towels. Sprinkle with kosher salt. Allow to rest for 20 minutes to release juices. Pat dry. Preheat oven to 400°. On a lightly floured surface, roll out puff pastry into a 10”x13” rectangle. Transfer dough to a parchment paper-lined baking sheet. Using a paring knife, lightly trace a shallow border one inch from the edge. Do not cut through. Prick the inner rectangle all over with a fork. Refrigerate 15 minutes. Bake until lightly golden, 12-15 minutes. Remove from oven. Scatter cheese over dough, stopping at the perforated edge. Arrange large and small tomatoes over top.
