What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Yeast Cinnamon Rolls! Don’t you just love modern kitchen appliances? My husband already owned a countertop Bread Machine when we got married four years ago, so today I decided to try it out. (First I had to find it. When combining two households, things get shuffled around.) The recipe booklet boasted the best glazed cinnamon rolls and the photo bolstered my confidence enough to put it to the test. I’m glad I did. The house smelled like a family-owned bakery and the warm, gooey cinnamon buns were phenomenal. The challenge came at only eating one.
YEAST CINNAMON ROLLS
Ingredients for Dough:

1 cup water

2 tablespoons butter, softened

3 cups bread flour

1/4 cup sugar

1 teaspoon salt

2 1/2 teaspoons active dry yeast

Ingredients for Filling:

2 tablespoons butter, softened

1/2 cup sugar

2 teaspoons cinnamon

Ingredients for Glaze:

1 cup powdered sugar

1/2 teaspoon vanilla extract

2 tablespoons milk
Instructions:

Measure all dough ingredients carefully and place in the bread machine in the order they are listed: water, butter, flour, sugar, salt, and yeast. Select “Dough” cycle and “Start”. When the timer rings, remove the dough and flatten with a rolling pin into a 9-inch square on a lightly floured surface. Spread with 2 tablespoons of butter. Sprinkle the sugar and cinnamon filling over the buttered dough. Roll the dough up tightly; pinch the ends to seal. Cut the dough into 1-inch slices. Place in a 9″x9″ square pan. Cover with a wet tea towel and let rise in a warm place for 1 1/2 hours or until double. Preheat oven to 350°. Bake 25 minutes or until golden brown. Combine Glaze ingredients mixing powdered sugar, vanilla, and milk until smooth and thin enough to drizzle. Remove from pan to wire rack. Drizzle glaze over warm rolls. Serve warm.

Add a few extras like pure vanilla and fresh fruit to turn an ordinary waffle into a spectacular one. Make a batch for breakfast, brunch, or dinner. Let the cheers begin!

Dining Outside the Home: Kalaheo Café and Coffee Company in Kalaheo, Kauai

Dining Outside the Home: Kalaheo Café and Coffee Company in Kalaheo, Kauai. “Aloha. Please pick up a menu, choose a table where you wish to dine, and then come up to the counter to place your order. You’re in coffee country now”, chirped an energetic waitress in corked platform heels. From the ship-lapped walls to the peak of the cathedral ceiling, this upcountry café featured oodles of local art. And the aromas kick-started my taste buds for a hearty breakfast. The House Specialty boasted the “Bagel Benny” in a single or double serving. My heartstrings were pulling me toward the bakery items where the griddle wafted the essence of vanilla buttermilk pancakes. Add fresh fruit and two slices of meat. Yes, please!

6 large eggs

6 teaspoons Gouda cheese, shredded

1 green onion

Seasoned salt and cracked pepper to taste

Preheat oven to 400°. Lightly coat six muffin cups with nonstick cooking spray. Place one slice of ham into each cup forming a bowl. Layer one teaspoon of cheese on top of ham. Sprinkle with seasoned salt and pepper. Divide the green onion by slicing it between all six cups. This is easily done with a kitchen shears. Next crack one egg into each cup, being careful not to break the yolk. Bake in the oven for 15 minutes and broil on High for one minute. The whites should be cooked, but the yolks a little runny. What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Ina Garten’s Fruit Crunch Sundae! The Barefoot Contessa is a familiar face on the Food Network these days. Not only does she offer great ideas for any meal, but she makes them seem incredibly simple. Today’s recipe comes from a recent episode where Ina wanted to serve up a special breakfast for her husband. I like the idea of taking everyday food and turning it into something extraordinary. By baking a batch of crunchy granola and storing it in an airtight container, single servings can be assembled in a flash. Use whatever fruit is on hand to make it unique.

1/2 cup shredded coconut

1/4 cup blueberries

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Not-Your-Momma’s Scrambled Eggs! Do you have a fussy eater? Sometimes it takes a lot of energy to keep things interesting and fun. Here’s your answer for simplifying breakfast or dinner: put the scrambled egg mixture in a hollowed out pepper shell. Bake it in the oven while the bread is toasting. The aromas alone will grab their attention. Trust me, it’s worth the wait.
NOT-YOUR-MOMMA’S SCRAMBLED EGGS
Ingredients:

3 sweet peppers, seeded and ribs removed

1/4 cup dry aged prosciutto, cubed

2 tablespoons sweet red pepper, diced

2 tablespoons onion, diced

1 tablespoon olive oil

smidgen of seasoned salt

nip of cracked black pepper

1/2 cup cheddar cheese, finely shredded

2 eggs

1 tablespoon milk
Instructions:

Preheat oven to 350°. Coat oven-proof baking dish with nonstick spray. Place peppers upright in bottom of dish, like a boat. They need to sit flat in order to keep the eggs from running out. In a small skillet, add olive oil, red pepper, onion, and prosciutto. Sauté in seasonings. In a small bowl, whisk together eggs and milk. Beat well. Layer the pepper boats with cheese and prosciutto mixture. Pour eggs over all to fill. Bake for 30 minutes or until set. Serve with buttered toast and salad.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Daily Diet of Papaya! OMG, the first time I had this in Kauai, I knew I had tasted the fruit of Paradise. It was like eating sunshine. Did you know Christopher Columbus called it “the fruit of angels”? If I had to describe the taste, I guess I would say papaya has a natural sweetness that feels like butter in your mouth. With a squeeze of lime, it is refreshingly nectarous. I could go on and on about its nutritional value, but I’d rather you taste it first. I can tell you this-just one single papaya provides 224% of your daily needs. Eat it for breakfast and you’re good to go!
DAILY DIET OF PAPAYA
Ingredients:

1 medium sized ripe papaya

1 avocado, peeled and sliced

Strawberries, halved

2 lime wedges
Instructions:

Cut papaya in half. Remove seeds. Squeeze lime juice over each half. Fill center with fresh strawberries. Serve with avocado slices.
