What’s Cooking in Gail’s Kitchen? Equal Measures: Coconut Curry Chicken! Every once in awhile you cross paths with someone who offers a product to enhance a food blog. Antonio @seasonalityspices offered me a free sample of handcrafted organic Indian Curry. Instantly, I knew the dish I would prepare. One bite of mild and spicy chicken, enhanced with the creamy flavor of organic coconut, is all it took to turn ordinary chicken into a flavorful obsession. Don’t mind if I do. Thanks, Antonio.

COCONUT CURRY CHICKEN

Ingredients:

1 cup water

1 1/4 cup sweet rice

1 tablespoon olive oil

1 tablespoon vegetable oil

1 pound chicken tenders, cut into bite-size pieces

1/2 cup yellow onion, chopped

2 teaspoons curry powder

3/4 teaspoon sea salt

1/4 teaspoon black pepper

13.5-ounce can organic coconut milk

2 tablespoons tomato paste

1 cup sun-dried tomatoes in olive oil, chopped

Cilantro, for garnish

Instructions:

Combine water, sweet rice, and olive oil. Cook in a rice cooker according to directions. (Package rice may be substituted on a stovetop.) In a large skillet, warm vegetable oil over medium-high heat. Sauté chicken and onion until chicken is no longer pink and onions are transparent. Sprinkle chicken mixture with curry powder, sea salt, and black pepper. Stir in organic coconut milk and tomato paste. Bring to a boil. Reduce heat to simmer and cook 5 minutes or until thickened. Add sun-dried tomatoes. Cook 2-3 minutes longer. Serve with sticky rice. Garnish with fresh cilantro.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Peachy Blueberry Parfait! Leave the velvety skin on, but remove the pit first or you’ll regret it later if you chip a tooth. Peaches are tropical and aromatic. Baby-soft, too. They remind you of a warm summer day followed by a romantic evening rendezvous. Pair the peach’s irresistible aroma with the tangy taste of blueberries for a jumpstart breakfast that will leave your friends and coworkers wondering how you mastered the art of true happiness.

PEACHY BLUEBERRY PARFAIT

Ingredients:

2 cups Greek yogurt

1 tablespoon agave nectar

1 ripe peach, pit removed and sliced

1/3 cup fresh blueberries

1/2 cup crunchy granola with oats, almonds, and coconut

Instructions:

Combine Greek yogurt and agave nectar. Mix well. Begin with a spoonful of granola in the bottom of 4 parfait glasses. Layer Greek yogurt on the granola. Top with fresh peach slices, blueberries, and the remaining granola. Chill until ready to serve.

Thai Peanut Sauce

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Thai Peanut Sauce! Known as a popular condiment for skewered meat or seafood in East Asian cuisine, peanut dipping sauce gets all the attention. Homemade Pad Thai is one example. After all, it’s no secret anyone can get addicted to peanut butter. Think about it. We add spicy chili peppers for heat, exotic curry for an earthy taste, coconut milk for authenticity. And depending on the day, there is no substitute for peanut butter and chocolate. Just saying.

THAI PEANUT SAUCE

Ingredients:

1/2 cup natural peanut butter, creamy

3/4 cup coconut milk, unsweetened

1/4 cup agave nectar

1 tablespoon fresh lime juice

1/4 cup soy sauce

1/8 teaspoon garlic powder

1/2 teaspoon ground ginger

1/4 teaspoon kosher salt

1 1/2 tablespoon sesame oil

1 teaspoon red pepper flakes

Instructions:

In a food processor, combine peanut butter, coconut milk, agave nectar, fresh lime juice, soy sauce, garlic powder, ground ginger, kosher salt, sesame oil, and red pepper flakes. Pulse until mixture is smooth and creamy. Pour into a jar. Store in the refrigerator.

*Serving Suggestion: Skewered Shrimp with orange wedges and cilantro.

Frozen Strawberry Yogurt Bark

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Frozen Strawberry Yogurt Bark! When my stepdaughter, Brandi, passed along this healthy summer frozen yogurt idea, I just had to give it a try. One bite and my mouth did a “Happy Dance”!With a plain non-fat yogurt base, practically any fruit can be used. Think about it: raspberries, peaches, blueberries, or bananas. Choose sprinkles or nuts for added crunch, like I have here. The possibilities are endless. Frozen Strawberry Yogurt Bark is cold, it’s refreshing, and it disappears before you know it. Just beware of the eager-eater. You may be witness to a brain-freeze!

FROZEN STRAWBERRY YOGURT BARK

Ingredients:

2 cups Greek yogurt

2 tablespoons natural honey

1/4 teaspoon almond extract

1/4 cup white chocolate chips

2 tablespoons crushed pistachios, separated

5 fresh strawberries, stems removed and sliced

2-3 tablespoons mini chocolate chips

1 teaspoon toasted coconut

Instructions:

In a large bowl, combine Greek yogurt, natural honey, and almond extract. Mix well. Fold in white chocolate chips and 1 tablespoon crushed pistachios. Line a baking sheet with foil. Spread the yogurt mixture evenly to keep the bark 1/2″ thick. Arrange the strawberry slices on top. Sprinkle with mini chocolate chips, the toasted coconut, and remaining crushed pistachios. Place baking sheet in the freezer 4 hours or overnight. Remove frozen strawberry bark and break into pieces. Store in a covered container in the freezer.

Coconut Flour Brownies

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Coconut Flour Brownies! Every once in awhile I need a gluten-free recipe for sharing. The bonus is a healthy alternative to sugary sweets with high caloric count. Coconut flour is high in fiber and lower in carbs, yet free from wheat and grains. I like its hint of coconut with a mild, slightly toasty flavor. Don’t be discouraged by the cost. A little goes a long way.

COCONUT FLOUR BROWNIES

Ingredients:

1/2 cup butter, unsalted, melted

2 tablespoons vegetable oil

1/4 cup cocoa powder, unsweetened

3 large eggs

1/2 cup natural honey

2 tablespoons agave nectar

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1/2 cup minus 1 tablespoon coconut flour

1/2 teaspoon kosher salt

1/3 cup mini chocolate chips

1/3 cup toasted coconut

1/3 cup candied pecans, chopped

1 Toblerone chocolate bar, chopped

Instructions:

Preheat oven to 300°. Line an 10″ glass baking pan with parchment paper. Spray lightly with nonstick oil. In a large bowl, combine butter, vegetable oil, cocoa powder, and eggs. Mix well. Add honey, agave nectar, and vanilla extract. Mix until combined. Add baking soda, coconut flour, and kosher salt. Mix until batter is thoroughly combined. Fold in mini chocolate chips. Spread evenly into prepare baking pan. Top with toasted coconut, candied pecans, and chopped Toblerone pieces. Bake 30-40 minutes or until a toothpick comes out clean. Cool on wire rack. Once room temperature, remove from pan and cut into serving portions. Keep in airtight container.

Island Coconut Shrimp

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Island Coconut Shrimp! After making this popular seafood appetizer at home, I realized what a bargain it was to do it myself. No more puny orders of 4 or 5 shrimp to share like when we go to a restaurant. lol. I’m sure my husband appreciates that little detail. Every ingredient was already on hand in my kitchen, making it a breeze. If you’re a shrimp-lover, like I am, put this recipe in your file entitled, “My Favorites!”

ISLAND COCONUT SHRIMP

Ingredients:

1 pound frozen shrimp, thawed with tails on

1/3 cup coconut flour

1/2 teaspoon sea salt

1/2 teaspoon cracked black pepper

2 eggs, beaten

1/2 cup Panko bread crumbs

1/2 cup shredded coconut, sweetened

Vegetable oil for frying

Jezebel Sauce for dipping*

Fresh Pineapple chunks

Instructions:

Combine coconut flour, sea salt, and cracked black pepper on a sheet of waxed paper. Set aside. In a shallow dish, beat the eggs until blended. Set aside. In a bowl, mix together Panko bread crumbs and shredded coconut. Set aside. Working one at a time, dust the shrimp with the flour mixture. Dip the flour-coated shrimp in the egg batter, then dredge it in the coconut mixture. Coat well. Place the shrimp on a platter. Repeat until all shrimp have been breaded. Using an iron skillet, add enough vegetable oil to cover the entire bottom of the pan. Heat oil on medium heat. Working in batches if 5-6 shrimp, fry the coconut shrimp 2 minutes per side until golden brown. Watch carefully. Remove shrimp and place on a paper towel-lined platter. Repeat until all shrimp have been fried. Serve on skewers with Jezebel Sauce* and pineapple chunks.

Quasi Cherry Almond Macaroon Slab Pie

What’s Cooking in Gail’s Kitchen? After the Holidays: Quasi Cherry Almond Macaroon Slab Pie! Now that’s a mouthful. But truth-be-told when you’re talking about a dessert with mounds of plump cherry clusters, flaked coconut, and sliced nuts…well, nothing else will do. By transforming it all into a slab pie, portions become more manageable over traditional sliced servings. The crust is still flaky, even if there is less of it. Focus instead on a sweet treat with a single shot of Italian espresso or scoop of ice cream. It’s a perfect balance for the taste buds.

QUASI CHERRY ALMOND MACAROON SLAB PIE

Ingredients:

1 prepared pie crust

Ingredients for filling:

21-ounce can cherry pie filling

1/2 teaspoon cinnamon

1/8 teaspoon sea salt

1 teaspoon lemon juice

Ingredients for topping:

1 cup coconut, shredded

1/2 cup almonds, sliced

1/4 cup sugar

1/8 teaspoon sea salt

1/4 cup milk

1 tablespoon butter, melted

1/4 teaspoon almond extract

1/4 teaspoon coconut extract

1 egg, beaten

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Roll the prepared pie crust to fit the baking sheet. Trim the dough to only fit the bottom of the pan. If necessary, use the extra dough pieces to fill in the corners. Pinch to seal. In a large bowl, combine the cherry pie filling, cinnamon, sea salt, and lemon juice. Mix thoroughly. Spoon the filling onto the pie crust. Spread in a single layer. Bake for 20 minutes. Meanwhile, for the topping, fill a mixing bowl with the shredded coconut, sliced almonds, sugar, sea salt, milk, melted butter, almond extract, coconut extract, and beaten egg. Remove the slab pie from the oven. Spread macaroon topping over all. Return slab pie to oven, bake 25 minutes longer, or until bubbly and golden brown. Cut into slices. Serve with vanilla bean ice cream.

Ole Smoky Cherry Drops

Experience the Holidays: Ole Smoky Cherry Drops! For those who think this is a strange name for something sweet, allow me to explain. The Great Smoky Mountains form one of the most beautiful mountain ranges along the Tennessee-North Carolina border. Nestled in “The Holler” is a distillery made famous by its 100-year-old recipe base for signature flavors of moonshine. Can you see where this is going? Stick with me. From the fermenting grains of the moonshine stills come the most extraordinary combinations you can ever imagine. Bottled in quart jars are what appear to be a dozen or more moonshine variations that go by names like Apple Pie, Hunch Punch, Blue Flame, Lemon Drop, Dill Pickles, and Moonshine Cherries. Since I found a jar in my pantry, I thought going into the holidays, this might present an interesting dessert opportunity. It definitely passed the “flame test” in my house.

OLE SMOKY CHERRY DROPS

Ingredients:

1 quart jar Ole Smoky Moonshine Cherries*

12-ounce bag white chocolate chips

4.6-ounce jar rainbow sprinkles

5.2-ounce jar sanding sugar

14-ounce bag sweetened coconut flakes

Instructions:

Several steps are necessary to prepare your workspace. Using a slotted spoon, carefully remove maraschino cherries from jar. Reserve moonshine for another use. Gently pat dry each cherry and set aside. This is important before coating them in white chocolate. Place each topping (rainbow sprinkles, sanding sugar, and coconut flakes) in a separate dish. Line a baking sheet with waxed paper. Set aside. To melt white chocolate, place half a bag of chips in a microwave-proof bowl. Warm at 30-second intervals, stirring after each interval. Repeat until the white chocolate is smooth and no lumps remain. Working quickly, pierce a cherry with a cake tester. Coat it halfway in the white chocolate, then dip it in one of the toppings. Place decorated cherry on the waxed paper-lined baking sheet. Repeat until all cherries are decorated. Chill to set. Two things: As the white chocolate cools, gently warm and stir. When it becomes necessary to use the remaining white chocolate chips, begin with a clean bowl. This will eliminate waste. Cherry Drops should be stored in the refrigerator until ready to serve. Serve with party picks.

No-Bake Lime Coconut Truffles

What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: No-Bake Lime Coconut Truffles! Here’s a festive treat that satisfies the desire for something sweet enough without the overkill. This time white chocolate becomes the confectionery of choice. Instead of nuts, candied ginger and lime zest become key ingredients to complement the tropical tones of coconut. One might suggest these truffles resemble tiny snowballs, if not for the lime zest. To serve, simply place each truffle in a fluted foil or paper candy cup and arrange on a decorative platter. It promises to bring “Oohs” and “Ahhs” as a crowd-pleaser.

NO-BAKE LIME COCONUT TRUFFLES

Ingredients:

1 cup white chocolate chips

2 cups sweetened coconut, shredded

1/2 cup crystallized ginger, chopped

1 1/2 teaspoon lime zest, grated

1 1/2 teaspoon lime juice

Lime zest, for garnish

Instructions:

Melt white chocolate chips in a microwave-safe bowl on 50% for 30 seconds. Stir and repeat until completely smooth. Mix in sweetened shredded coconut. Fold in crystallized ginger and lime zest. Add lime juice to the mixture. Form into 16 small mounds. Garnish with more lime zest. Chill until set.
