What’s Cooking in Gail’s Kitchen? Splurge-Worthy Goodness: Vanilla Bee Pollen Ice Cream! What’s all the “buzz” about? The jury is still out on the benefits of bee pollen. Some claim amazing health results while others blame it for side effects. Bee pollen is actually intensified plant pollen picked up by honeybees and brought back to the hive as a source of food for the colony. So obviously, its characteristics depend solely on the geographic location of where it is collected. Just like honey, some say if you struggle with seasonal allergies, the best way to combat that is to take a teaspoon of raw honey every day from the area where you live. Bee pollen is made up of carbs, fat, protein, vitamins, minerals, and antioxidants. You can certainly see why naturalists call it a superfood. As with any herbal supplement, contact your health care provider before beginning something new. Many foodies like to add a teaspoon of bee pollen to their morning smoothie. Here it is sprinkled over no-churn ice cream.

VANILLA BEE POLLEN ICE CREAM

Ingredients:

2 cups heavy cream

14-ounce can sweetened condensed milk

1 vanilla bean pod, sliced horizontally, seeds extracted

2 tablespoons raw honey

1 teaspoon bee pollen

Agave nectar, for drizzling

Lemon thyme, for garnish

Instructions:

Be sure the mixing bowl, whisk, and loaf pan are chilled before using. (I placed mine in the freezer overnight. If the ingredients are warm, the mixture won’t thicken to desired texture. I also put the can of sweetened condensed milk in the refrigerator the night before.) In the chilled bowl of the stand mixer, combine heavy cream, sweetened condensed milk, vanilla bean seeds, and raw honey. Whip on medium-high speed until soft peaks form, about 4-5 minutes. Transfer to the chilled loaf pan. Freeze 6 hours or overnight. To serve, place three rounded ice cream scoops in a dish. Sprinkle bee pollen over top. Drizzle with agave nectar ribbons. Garnish with a sprig of lemon thyme.

It may not be something you use everyday, but special occasions call for special ingredients. Homemade cookies are chocked full of sweetness in chocolate morsels, flaked coconut, and chopped pecans. How delightful and different. That’s what I call exciting. Create your own magical moment for the next festive gathering, after school snack, or weekend party-for-two.

EAGLE BRAND MAGIC COOKIES

Ingredients:

3/4 cup flour

1/2 teaspoon baking powder

1/8 teaspoon sea salt

7 tablespoons butter, room temperature

1 tablespoon sugar

1/4 cup sweetened condensed milk

1/4 cup mini chocolate chips

1/4 cup butterscotch chips

3 tablespoons sweetened coconut flakes

2 tablespoons pecans, finely chopped

Sugar, for dusting

Instructions:

In a bowl, whisk together flour, baking powder, and sea salt. Set aside. Using a hand mixer, beat the butter and sugar together until creamy. Add the sweetened condensed milk. Beat until combined. Slowly add the flour mixture until thoroughly combined. Fold in the mini chocolate chips, butterscotch chips, flaked coconut, and chopped pecans. Cover dough and refrigerate for 20 minutes. Preheat oven to 350°. Line a baking sheet with parchment paper. Take a heaping teaspoon of cookie dough, roll into a ball, and place on the parchment paper-lined baking sheet. Repeat. Bake 8-10 minutes; cool 2 minutes. Dust cookies with sugar and transfer to a wire rack. Enjoy!

What’s Cooking in Gail’s Kitchen? Clean Eating: X-otic Black Raspberry Swirl Ice Cream! Creamy concoctions are so decadent with swirls of tangy sweetness mixed in. You control the tart flavor among the smooth texture by making this version of gourmet ice cream at home. No special gadgets required, except that counter workhorse stand mixer. But how hard can it be to flip a switch and scrape down the sides of the bowl? This “tried and true” no-churn ice cream recipe has been reliable on more than one occasion. The secret to my success is chilling the utensils overnight in the freezer. Also, begin with ingredients that are refrigerator cold. The greatest hardship is waiting 24 hours for the ice cream to chill. Don’t believe me? Guess you need to see for yourself.

X-OTIC BLACK RASPBERRY SWIRL ICE CREAM

Ingredients:

2 cups heavy cream

14 ounces sweetened condensed milk

1 tablespoon Mexican vanilla extract

1/2 cup black raspberry sauce*

Instructions:

Using a stand mixer, whip the heavy cream, sweetened condensed milk, and vanilla extract on medium-high speed for 4-5 minutes. Transfer half to the chilled loaf pan. Smooth with a spatula. Add dollops of black raspberry sauce on top. Swirl the sauce with a knife to create a design. Pour the remaining ice cream mixture over top. Smooth. Repeat swirling process. Cover tightly. Place loaf pan in the freezer overnight. To serve, scoop ice cream into bowls and garnish with fresh mint leaves.

It’s rich, it’s thick, it’s buttery, and it’s laced with a hint of dark rum that gets the party started. Take a moment to tick off the countless ways you can drizzle caramel sauce over food. Spread it on toast, then sprinkle with cinnamon. Add it to coffee for a smooth latte. Turn it into an apple dip coated with salted peanuts. Whip it into pudding or smoothies. Top off a bowl of ice cream. You get the idea. If your imagination stalls out, simply dip a teaspoon into the jar and enjoy the caramel sauce all by itself.

EAGLE BRAND CARAMEL RUM SAUCE

Ingredients:

14-ounce can Eagle Brand Sweetened Condensed Milk

2 tablespoons dark rum

2 teaspoons vanilla extract

Instructions:

Preheat oven to 425°. Pour sweetened condensed milk into a 9-inch pie plate. Cover with foil. Carefully place the pie plate into a shallow pan. Fill the larger pan with 1/2 inch hot water. It will surround the pie plate. Bake 2 hours or until sauce is thick and caramel in color. Remove larger pan from oven. Take the pie plate out; remove foil and pour caramel into a large bowl. Using a hand mixer, beat on LOW speed for one minute. Add dark rum and vanilla extract. Continue beating on LOW speed until liquid is blended. Increase speed to HIGH for one minute longer. Caramel will appear smooth and creamy. Cool 15 minutes before serving. Store in the refrigerator.

No-Churn Coffee Ice Cream

What’s Cooking in Gail’s Kitchen? Fab Foodstuff: No-Churn Coffee Ice Cream! Years ago my best friend was a specialty brand of Turkish coffee ice cream. I was working two jobs, averaging mostly 70-hour work weeks, seven days nonstop to support myself, and help my kids through college. I also admit I was hiding out from “Life”. Many evenings I’d come home, crash on the sofa, and open a pint of the creamiest concoction laced with butterscotch topping I’d ever tasted. It was bliss. Since then, the company stopped making it in favor of more popular flavors like banana chocolate chunk and coconut almond chip. Seriously? Oh well, that left me with no recourse but to make it myself. Between you and me…I think I knocked it out of the park!

NO-CHURN COFFEE ICE CREAM

Ingredients:

2 1/2 tablespoons espresso instant coffee

2 tablespoons warm water

2 cups heavy cream

14 ounces sweetened condensed milk

1 teaspoon vanilla extract

1/3 cup dark chocolate covered espresso beans, chopped

Butterscotch Ice Cream Topping

Instructions:

In a small bowl, dissolve instant coffee in warm water. Stir well. Set aside. Using a stand mixer, beat the heavy cream, sweetened condensed milk, and vanilla extract on High speed for 4 minutes until smooth and thick. Reduce speed to Low. Add the prepared coffee; continue until blended. Fold in chopped espresso beans. Spoon ice cream into a loaf pan. Cover tightly and freeze overnight. Scoop into bowls and sprinkle with espresso before serving. Drizzle with butterscotch topping, to taste.

*The secret to my success was chilling the utensils overnight in the freezer and making sure all the ingredients were refrigerator cold.

What’s Cooking in Gail’s Kitchen? The Daily Special: Xylocarp Coconut Bars! Although it’s not typically a word in my vocabulary, I discovered the word xylocarp means “a fruit, such as a coconut, having a hard woody pericarp.” Bingo! It’s the answer to my alphabet challenge when I get to this letter. Everyone is already aware coconut has health benefits. Some even classify it as a superfood. Personally, I just like the taste of it. It can magically transport me to a tropical island with swaying palm trees and hypnotic reggae music. Ahhhhh.

XYLOCARP COCONUT BARS

Ingredients:

1/2 cup butter, melted

1 1/2 cups graham cracker crumbs

1 14-ounce can of sweetened condensed milk

1 cup semi-sweet chocolate morsels

1 1/3 cups of coconut, flaked

1 cup pecans, chopped

Instructions:

Preheat oven to 350°. Spray a 9″x13″ baking pan lightly with nonstick oil. Pour butter in pan to cover the bottom. Sprinkle graham cracker crumbs evenly over butter. Slowly pour the sweetened condensed milk to form another layer. Top evenly with chocolate morsels, coconut, and pecans. Press down firmly. Bake 25-30 minutes or until lightly browned. Cool thoroughly before cutting.
