What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Leftover Turkey Tower! Upscale your Thanksgiving meal leftovers with this stylish presentation that makes everyone go “Ahhhh”. It’s easily doable by using a ring mold. Who knew? Restaurants have kept this tip to themselves for the longest time. But no more. You can make it at home to impress out-of-town guests as well as privileged family members and friends. I find it’s best to have a set of four ring molds the same size on hand. 

LEFTOVER TURKEY TOWER

Ingredients:

1/2 cup leftover stuffing, precooked

1/3 cup roasted turkey, chopped

1 celery rib, chopped

2 tablespoons mayonnaise 

1/8 teaspoon celery seed

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

1 tablespoon cranberry sauce

Sprig of fresh thyme, for garnish

Instructions:

Warm the leftover stuffing in the microwave for about 30 seconds. Place the ring mold on a salad plate. Gently pack the warmed stuffing into the bottom of the mold, keeping the layer as level as possible. Set aside. In a bowl, combine the roasted turkey, chopped celery, mayonnaise, celery seed, sea salt, and white pepper. Mix thoroughly. There should be enough mayonnaise to keep the turkey salad together. Spoon the turkey mixture into the ring mold, pressing lightly to form a layer on top of the dressing. Gently lift the ring mold, without force, pulling straight up to reveal the tower of food. Place a dollop of cranberry sauce on top. Garnish with fresh thyme. Serve immediately.

JELL-O SHOTS WITH SUGARED CRANBERRIES 

For Make-Ahead Sugared Cranberries:

2 cups sugar, divided

1/2 cup filtered water

12-ounce bag fresh cranberries 

1 cinnamon stick

1 tablespoon lemon juice

Instructions:

Combine 1/2 cup sugar and 1/2 cup filtered water in a saucepan over medium heat. Stir until sugar is dissolved, about 3-5 minutes. Add cranberries. To prevent cranberries from bursting, do not boil. Stir until well coated. Using a slotted spoon, transfer cranberries to a wire rack. Let dry for one hour. Working in batches, roll cranberries in remaining sugar until well coated. Refrigerate for one hour or overnight. Store in airtight container. 

Ingredients for Jell-o Shots:

3-ounce package raspberry gelatin 

1 cup boiling water

1/2 cup amaretto liqueur 

1/2 cup ice water

Sugared cranberries Rosemary sprigs

Instructions:

Empty contents of raspberry gelatin packet into a mixing bowl. Add boiling water. Stir until completely dissolved, approximately 2-3 minutes. Add iced water and amaretto liqueur and iced water. Stir well. Pour into shot glasses. Refrigerate until set, 4 hours or overnight. Garnish with sugared cranberries and rosemary sprigs just before serving. 

White Chocolate Cranberry Spice Bars

1 cup white chocolate chips

1 cup powdered sugar

2 tablespoons milk

Preheat oven to 350°. Cream together sugar and butter. Mix flour, salt, and baking soda together. Add dry ingredients together. Spread 3/4 of batter into a 9″x13″ greased dish.  Gently press down with a spoon to level. Divide cranberry sauce over top.  Sprinkle white chocolate chips over cranberry mixture.  Fill in with chopped crystallized ginger.  Crumble remaining batter on top. Bake for 30-35 minutes.  Cool slightly and cut into squares or triangles. To make glaze, mix powdered sugar with milk, stirring until smooth. Drizzle over bars.

Go ahead and make the sauce anyway. Here’s why. It can be a special treat for other meals, besides Thanksgiving. Plus it freezes well. For example, swirl it into your morning yogurt, then top with crunchy granola. Or add a little maple syrup and slather it onto a stack of pancakes. Turn your morning fruit smoothie into a delicious beverage-on-the-go. As an appetizer or late night snack, toast baguette slices, smear on softened goat cheese, and add a dollop of cranberry sauce sprinkled with orange zest. Are you getting the idea? When the family asks what you’re eating, just smile and say, “Oh, don’t worry….you wouldn’t like it.”

YEARLY CRANBERRY SAUCE

Ingredients:

12 ounces fresh cranberries

1 cup sugar

1 cup water

1 tablespoon lemon juice

2 cinnamon sticks

1 tablespoon Grand Marnier, optional

Instructions:

Rinse cranberries thoroughly. Drain; set aside. In a large saucepan over medium heat, combine sugar, water, lemon juice, and cinnamon sticks. Bring to a boil, stirring occasionally. Add cranberries. Return to a boil, stirring occasionally. Cranberries will soften as the skins begin to pop. Cook 10 minutes longer. Add Grand Marnier. Remove from heat and allow mixture to cool. Sauce will thicken. Remove cinnamon sticks; discard. Transfer cranberry sauce to a covered storage container. Refrigerate sauce until ready to serve.

It can be anything from a buffet table of skewered meat, tempura veggies, raw fish, and other finger foods to simple cold trays of tropical fruits, deviled eggs, edamame, and smoked salmon. Remember to make everything bite-size when planning an informal gathering. Because pear trees live such a long time, their fruit is very symbolic during the holiday season. The pear often represents immortality, wisdom, and health; a treat fit for royalty. By creating a pear pupu platter, you’re giving your guests a gift of intangibles they may treasure for years to come. Get the conversation started. Serve freshly sliced ripe pears and cinnamon dusted pear chips with a wheel of warm Brie. How festive!

XMAS PEAR PUPUS

Ingredients:

2 pears, thinly sliced for baking

1 tablespoon sugar

1/2 teaspoon cinnamon

1 wheel Brie cheese, warmed

2 tablespoons cranberry relish

2 tablespoons sugared pecans

2 pears, cut into wedges for eating

Instructions:

Cinnamon Dusted Pear Chips must be made in advance. Preheat oven to 225°. Line a rimmed baking sheet with parchment paper. Combine sugar and cinnamon. Pat dry sliced pears. Place them on the parchment paper in a single layer. Dust with cinnamon-sugar mixture. Bake 3 hours until dried and crisp. Allow to cool on a wire rack.

For Pear Pupus, warm a wheel of Brie cheese in a 350°oven for 5-10 minutes to soften. Spread cranberry relish over top. Sprinkle with sugared pecans and chopped pears. Serve with pear wedges and cinnamon dusted pear chips.

ZESTED ORANGE CRANBERRY SAUCE

Ingredients:

1/2 cup orange marmalade

2 tablespoons grated orange rind

1/8 teaspoon granulated lemon zest

3/4 cup sugar

2 cinnamon sticks

1 cup fresh orange juice, from 2 oranges

1 12-ounce package fresh cranberries

Instructions:

Combine marmalade, orange rind, and lemon zest. Set aside. Combine juice, sugar, and cinnamon sticks in a medium saucepan. Bring to a boil. Add cranberries and return to boil. Reduce heat. Simmer for 10 minutes or until cranberries pop and sauce begins to thicken. Remove from heat. Stir in marmalade mixture. Cover and chill.
