Jello Strawberry Cake

What’s Cooking in Gail’s Kitchen? Table Food: Jello Strawberry Cake! Take advantage of the price of strawberries when the opportunity arises. Whether it be a local Farmer’s Market, grocery store featured item, or pick-your-own berry field celebrating years of family history, run don’t walk to fill your basket without plans to what comes next. Everyone loves strawberries. The sun-kissed fruit kindles childhood memories of joyous occasions when we would eat our weight in berries as juice ran down our chins. Never mind the red stained fingers or dewy rows from early morning fog. In a week or so, strawberries need to be eaten, canned, or frozen. Anything goes.

JELLO STRAWBERRY CAKE

Ingredients:

16.25 ounce box of yellow cake mix

1 1/4 cups water

1/3 cup vegetable oil

2 eggs

3 ounces strawberry gelatin mix

1 1/2 cups water, divided

8 ounces whipped topping

2 cups strawberries, sliced

Instructions:

Preheat oven to 350°. Grease and flour a 9”x13” cake pan. Set aside. Combine cake mix, water, vegetable oil, and eggs. Mix well. Pour batter into prepared cake pan. Bake for 30 minutes, or until golden brown. Remove pan from oven and allow cake to cool at room temperature. Using a fork, poke many holes in the cake. This will allow the liquid jello to fill the gaps creating a ribbon effect. Bring one cup of water to boiling. Remove from heat. Add gelatin mix. Stir 2 minutes to completely dissolve flavoring. Add 1/2 cup ice water to mixture. Stir. Slowly pour the liquid strawberry jello into the holes on the top of the cake. Cover the cake and refrigerate 4 hours or overnight. Once chilled, “frost” the cake with whipped topping. Garnish with sliced strawberries. Serve. Refrigerate any leftovers.

Flaky Strawberry Turnovers

What’s Cooking in Gail’s Kitchen? Table Food: Flaky Strawberry Turnovers! Let the experts do what they do best, I always say. That’s the reason I begin with a prepared puff pastry easily found in the freezer section of the grocery store. The flaky light dough is filled with yummy butter and then repeatedly folded and rolled before baking. For you, my peeps, it simply involves thawing at room temperature for about 45 minutes. Pure genius, if you ask me, making the rest of the recipe is a walk in the park.

FLAKY STRAWBERRY TURNOVERS

Ingredients:

1 sheet puff pastry, prepared

2 ounces cream cheese, softened

2 tablespoons powdered sugar

1/4 teaspoon almond extract

3/4 cup strawberries, chopped

1 tablespoon sugar

1/2 tablespoon cornstarch

1 egg white, beaten

For the glaze:

1/2 cup powdered sugar

1 tablespoon milk

1/4 teaspoon almond extract

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Set aside. Unroll thawed puff pastry. Cut into four squares. Set aside. In a bowl, beat cream cheese with an electric mixer until smooth. Add powdered sugar and almond extract. Mix well. In another bowl, combine chopped strawberries, sugar, and cornstarch. Gently toss until coated. Spread the cream cheese onto the squares of dough, keeping it towards one corner, forming a diagonal. Spoon strawberries over cream cheese. Gently fold the corner over the mixture. Crimp the edges with a fork to seal. Brush each turnover with beaten egg white. Transfer to baking sheet. Bake for 20 minutes, or until golden brown. Remove from oven and cool on a wire rack for 10 minutes. To make the glaze, combine powdered sugar, milk, and almond extract. Stir until smooth. Drizzle over strawberry turnovers.

Dalgona Espresso Shots

What’s Cooking in Gail’s Kitchen? Table Food: Dalgona Espresso Shots! If it’s one thing I learned during our time of self-isolation, it was how to make each day something special to look forward to. So every afternoon, in the middle of our day, I’d stop what I was doing and pad off to the kitchen for a delightful diversion. Thanks to my virtual friends, Jyothi* and Judy**, I became a connoisseur of the “Coffee Break”. Both women perfected the art of Dalgona Coffee, a form of whipped coffee that requires only a few simple ingredients: instant coffee, sugar, and milk. (Feel free to click on their links at the bottom of the page.) I became quite lazy about whipping the topping into a mountain of fluff by allowing the milk frother on my espresso machine to become the workhorse. At the press of a button, it became thick, frothy, and ready to pour. Although the aroma would waft throughout the house announcing my arrival, I’d still carry the espresso shots into my husband’s office and proclaim with a smile, “Time for coffee.”

DALGONA ESPRESSO SHOTS

Ingredients:

4 teaspoons sugar

4 teaspoons instant Mexican espresso coffee

4 teaspoons cold water

Light cream, for serving

Dark chocolate espresso beans, crushed, for garnish

Instructions:

Using a milk frother, combine sugar, instant espresso coffee, and cold water. Press the setting for a cold beverage. Let the machine run through two cycles to thicken the whipped coffee. Fill two espresso shot glasses 3/4 full with light cream. Carefully spoon the whipped espresso topping over the cream. Garnish with a sprinkling of crushed chocolate-covered espresso beans. Serve immediately.

X-otic Black Raspberry Swirl Ice Cream

What’s Cooking in Gail’s Kitchen? Clean Eating: X-otic Black Raspberry Swirl Ice Cream! Creamy concoctions are so decadent with swirls of tangy sweetness mixed in. You control the tart flavor among the smooth texture by making this version of gourmet ice cream at home. No special gadgets required, except that counter workhorse stand mixer. But how hard can it be to flip a switch and scrape down the sides of the bowl? This “tried and true” no-churn ice cream recipe has been reliable on more than one occasion. The secret to my success is chilling the utensils overnight in the freezer. Also, begin with ingredients that are refrigerator cold. The greatest hardship is waiting 24 hours for the ice cream to chill. Don’t believe me? Guess you need to see for yourself.

X-OTIC BLACK RASPBERRY SWIRL ICE CREAM

Ingredients:

2 cups heavy cream

14 ounces sweetened condensed milk

1 tablespoon Mexican vanilla extract

1/2 cup black raspberry sauce*

Instructions:

Using a stand mixer, whip the heavy cream, sweetened condensed milk, and vanilla extract on medium-high speed for 4-5 minutes. Transfer half to the chilled loaf pan. Smooth with a spatula. Add dollops of black raspberry sauce on top. Swirl the sauce with a knife to create a design. Pour the remaining ice cream mixture over top. Smooth. Repeat swirling process. Cover tightly. Place loaf pan in the freezer overnight. To serve, scoop ice cream into bowls and garnish with fresh mint leaves.

Sea Salt-Rubbed Baked Potato

What’s Cooking in Gail’s Kitchen? Clean Eating: Sea Salt-Rubbed Baked Potato! When my sister-in-law worked in a fine dining restaurant years ago, she shared with me an amazing secret for perfectly seasoned baked potatoes. “Wash the skins, then butter them up before sprinkling with sea salt,” she instructed. The skins become as tasty as a savory cracker. I thanked her and with enthusiasm have been making them that way ever since. It’s pretty much fool-proof. There’s no need for extra butter or salt since they are baked into the skin. She went on to share another tidbit of information with me. “Leftover baked potatoes prepared this way become the best shredded hash browns.” Bonus!

SEA SALT-RUBBED BAKED POTATOES

2 russet potatoes, washed and pierced

2 tablespoons butter, softened

1 teaspoon sea salt

Dollop of sour cream

Green onions, for garnish

Sprinkling of crushed oregano

Instructions;

Preheat oven to 350°. Wash potatoes and pat dry. Pierce the top with a paring knife. Holding the potato in one hand, apply softened butter all over the outer skin. Then sprinkle with sea salt. Place the potatoes on a stone, or directly on the oven rack, in the preheated oven. Be sure the pierce mark is facing up. Bake one hour, or until tender. To serve, split the potato open on a plate. Dollop with a generous spoonful of sour cream. Garnish with green onions and sprinkle with crushed oregano.

Ice Cream Grilled Pineapple

What’s Cooking in Gail’s Kitchen? Clean Eating: Ice Cream Grilled Pineapple! If you’ve decided it’s better to unplug with a “staycation” this year, there’s no need to give up guilty pleasures. Minimizing expenses with less stress is smart living. Take advantage of the leisure activities and points of interest in your own community. When was the last time you popped in to the local Welcome Center or Chamber of Commerce? You may see things through a fresh pair of eyes. Others do. Make a tropical dessert that will transport you to your very own private island. Dress it up with colorful parasol party picks.

ICE CREAM GRILLED PINEAPPLE

Ingredients:

1 cup brown sugar

1/2 teaspoon cinnamon

4-6 fresh pineapple rings

Vanilla Bean Ice Cream

Maraschino Cherry, for garnish

Instructions:

Preheat a gas grill to medium-high temperature. Combine brown sugar and cinnamon in a shallow dish. Mix well. Rub both sides of pineapple rings with brown sugar mixture. Transfer to a large baking dish for 10 minutes. Using a heat-proof brush, lightly grease the grill with vegetable oil. Place pineapple slices directly on grill, leaving space between fruit slices. Cook 1-2 minutes per side to sear the pineapple rings. You should see grill marks. The pineapple will turn a golden yellow. Remove from grill. Allow pineapple rings to cool before adding a scoop of vanilla bean ice cream. Garnish with maraschino cherry. Serve immediately.

X-Treme Everything Deviled Eggs

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: X-treme Everything Deviled Eggs! When it comes to deviled eggs, you hear a plethora of descriptions ranging from “world’s best” to “million dollar” to “dangerously good” deviled eggs. But here’s the catch: Everyone has a different number of taste buds. They extend beyond your tongue to include the roof of your mouth as well as the inner cheeks and throat. What you find appealing may not interest me in the least. Here’s a good example. Everything But Bagel Seasoning contains garlic, onion, poppy seeds, and sesame seeds. While it may make your heart flutter sprinkled all over a freshly baked bagel, it may sound completely gross mixed in a deviled egg. On the other hand, when I topped the deviled egg with a clump of newly grown alfalfa sprouts, my taste buds did something similar to a TikTok dance. Just saying.

X-TREME EVERYTHING DEVILED EGGS

Ingredients:

6 hard-boiled eggs

2 tablespoons mayonnaise

2 tablespoons cream cheese, room temperature

1 tablespoon Everything But Bagel Seasoning

Alfalfa sprouts, for garnish

Instructions:

Peel the prepared hard-boiled eggs. Slice in half horizontally. Carefully remove the solid yolks and transfer to a small bowl. Place the egg whites on a serving platter. Using a fork, mash the egg yolks into a fine crumble. Add mayonnaise and softened cream cheese. Mix until smooth and creamy. Fold in Everything But Bagel Seasoning. Spoon the yolk filling into the egg whites. Sprinkle more seasoning on top, if desired. Garnish deviled eggs with a crown of fresh alfalfa sprouts.

Jalapeño Celery Crack

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Jalapeño Celery Crack! I’m not ashamed to say I’ve found a new addiction. Hence the name. By the time I wrote this post, I had already made this recipe 3 times and shared it once with a close friend. Jalapeño Celery Crack has a spicy creaminess that screams, “just one more bite”. When I ran out of celery, I discovered it tastes amazing on tortilla corn chips. Sometimes you need an appetizer. Sometimes you want a snack. And sometimes making it part of a meal is justification enough. Perhaps you should try it. You know you want some.

JALAPEÑO CELERY CRACK

Ingredients:

1 bunch of celery, cut into 4” pieces

8-ounce cream cheese, room temperature

3 tablespoons mayonnaise

1/4 teaspoon sea salt

1/4 teaspoon dill

1/2 teaspoon onion powder

1/2 teaspoon garlic powder

1/2 teaspoon parsley

2/3 cup pickled jalapeños, chopped

1 tablespoon pickled jalapeño juice

2 strips of applewood smoked bacon, cooked and crumbled

Instructions:

Cut celery into 4” pieces. Set aside.

Combine softened cream cheese and mayonnaise in a medium bowl. Mix until smooth. Add sea salt, dill, onion powder, garlic powder, and parsley. Mix thoroughly. Add chopped jalapeños, pickled jalapeño juice, and crumbled bacon. Stir well to blend. Refrigerate one hour. Arrange celery stalks on a platter. Fill with jalapeño mixture. Garnish with extra dill. Serve.

Zakarian Chocolate Pudding

What’s Cooking in Gail’s Kitchen? Something to Savor: Zakarian Chocolate Pudding! Sometimes you look to a celebrity chef for inspiration. Today’s feature recipe is brought to you by “Iron Chef”, Geoffrey Zakarian. Although it is filed under Dark Chocolate Pudding, its decadent taste and smooth consistency remind me more of a French Silk Pie. Do I have your undivided attention? Can you hear me now? This is most definitely a chocolate-lovers dream! By serving it in shot glasses, you control the portion and everyone gets a taste. Mr. Zakarian serves it with whipped sour cream. I modified it a bit by adding crushed pistachios and a slice of strawberry.

ZAKARIAN CHOCOLATE PUDDING

Ingredients:

6 ounces semisweet baking chocolate, chopped

3/4 cup heavy cream

1/2 cup light cream

1/3 cup sugar

1 teaspoon vanilla extract

1 pinch sea salt

4 large egg yolks

Whipped sour cream, optional

Strawberries for garnish

Pistachios for garnish

Instructions:

Melt the chocolate in a double boiler over low heat. In a medium saucepan, bring the heavy cream and light cream to a bare simmer. In a large bowl, whisk together the sugar, vanilla extract, sea salt, and egg yolks. Slowly pour the milk mixture into the egg mixture to temper it, whisking all the while. Return the mixture to the saucepan and cook over low heat until the mixture coats the back of a spoon, about 4 minutes. Pour in the melted chocolate and whisk until smooth. Pour into glasses or custard cups. Refrigerate until chief and set, about 3 hours. Serve with whipped sour cream, if desired. Garnish with fresh strawberry slice and chopped pistachios.
