Kona Coffee Molten Cake

What’s Cooking in Gail’s Kitchen? Kona Coffee Molten Cake! Gerald and I spend some time on the tropical island of Kauai. While there we sip on freshly brewed coffee uniquely grown in the Hawaiian Islands. The taste is so richly smooth and delicious, I had to blend its flavor with dark chocolate. Each recipe is one serving, unless you share a bite. “Friends are the spice God adds to the cake of life!”

KONA COFFEE MOLTEN CAKE

Ingredients:

1/4 cup all-purpose flour

2 tablespoons Dutch chocolate powder 

1/4 teaspoon baking powder 

2 tablespoons granulated sugar

1/8 teaspoon sea salt

1/4 cup plus 1 tablespoon milk

2 tablespoons vegetable oil

1 tablespoon Kona brewed coffee*

1 tablespoon creamy peanut butter**

Instructions:

Mix dry ingredients together in medium bowl. Add milk, oil, and coffee to the dry ingredients. Stir until smooth. 

Pour batter into a tall microwave-safe mug. Make sure there is room at the top for the cake to rise. Drop the tablespoon of peanut butter in the center of the batter. Do not blend in. Bake in microwave on high for 1 minute. If it is not done, cook in additional 10-second intervals until done. Remove from microwave. BE CAREFUL. Enjoy the warm molten cake topped with a dollop of whipped cream. 

*Any strong brewed coffee may be used. If you omit the coffee, substitute 1/4 teaspoon vanilla extract. 

**The creamy peanut butter may be omitted or substituted with a hazelnut spread or marshmallow creme. 

Dutch Chocolate Profiteroles

What’s Cooking in Gail’s Kitchen?  Dutch Chocolate Profiteroles!  These yummy tender confections have a chocolate filling that will satisfy any sweet tooth.  Once the shells are made, you can utilize a time-saving option.  Simply change the filling to Breyers Dutch Chocolate Ice Cream and sprinkle it with powdered sugar. Your friends will think you spent hours in the kitchen. 

DUTCH CHOCOLATE PROFITEROLES

Cream Puffs:

1/2 cup water

1/4 cup butter

1/2 cup all-purpose flour

2 whole eggs

Heat oven to 400°.  Heat water and butter to rolling boil in saucepan. Stir in flour. Stir vigorously over low heat until mixture forms a ball, about I minute; remove from heat. Beat in eggs, all at once, continue beating until smooth. Drop dough by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet. Bake until puffed and golden, 35-40 minutes. Cool away from draft. Cut off tops; pull out any filaments of soft dough. Fill puffs with chilled cream filling. Replace tops; dust with powdered sugar. Refrigerate until serving time.  Yield: 6 cream puffs.

1/3 cup granulated sugar

3 tablespoons cocoa powder

2 tablespoons cornstarch 

1/8 teaspoon salt

2 cups half-and-half

2 egg yolks, slightly beaten

2 tablespoons butter

2 teaspoons vanilla

Garnish:

1 tablespoon powdered sugar

1/4 c semi-sweet mini chocolate morsels 

Mix sugar, cocoa, cornstarch, and salt in 2-quart saucepan. Stir in half-and-half gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir at least half of the hot mixture gradually into egg yolks. Blend into hot mixture. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla; cool.

The creamy yellow flesh has a slightly nutty flavor that will give you reason enough to make an entire meal out of these gourmet nuggets. In fact, the aroma was so enticing, my husband and I did that exact thing. You see, once you’re an adult, you can make up any rule you want when it comes to meal-planning.

DUTCH BABY BUTTERY POTATOES

Ingredients:

24-ounce bag of Dutch Baby Yellow Potatoes

4 tablespoons butter, melted

1/4 teaspoon garlic powder

1 teaspoon parsley flakes

1 teaspoon dried oregano

1 teaspoon kosher salt

1/2 cup parmesan cheese, grated

Green onion snips, for garnish

Instructions:

Preheat oven to 400°. Boil whole potatoes on the stove in a pan of salted water for 15 minutes. Drain and allow potatoes to cool enough to handle. In a glass baking dish, combine melted butter, garlic powder, parsley flakes, dried oregano, kosher salt, and parmesan cheese. Cut boiled potatoes in half lengthwise. Arrange in a single layer. Using a pastry brush, cover the potatoes with the herbed butter and cheese mixture. Bake, uncovered, for 20 minutes until potato bottoms are crispy. Serve immediately.

What’s Cooking in Gail’s Kitchen? Table Food: Instant Dutch Baby! Be innovative. When my Hawaiian friend, Dillyn, sent me a care package of unique foods from the island, I knew I would make something special to show her. I began with the popular chocolate macadamia nut pancake mix, tweaked it a little, and transformed it into a festive weekend breakfast for two. Everything tastes better with chocolate, doesn’t it? With mini morsels in the batter as well as a sprinkling on top, the flavor was ribboned throughout making one forget about the need for extra syrup. A final dusting of powdered sugar provided a tempting image to share long distance. She approved with glee and open delight. Mahalo!

INSTANT DUTCH BABY

Ingredients:

6 ounces chocolate macadamia nut pancake mix

1 egg

1/2 cup milk

1/3 cup mini chocolate chips, plus 1 tablespoon for topping

Powdered sugar, for garnish

Instructions:

Preheat oven to 375°. Spray a one-quart ovenproof baking dish with nonstick oil. Set aside. Combine pancake mix, egg, and milk in a bowl. Using a wire whisk, mix until the large lumps are gone. Fold in 1/3 cup mini chocolate chips. Pour batter into the prepared dish. Sprinkle remaining mini chocolate chips on top. Bake 25 minutes until golden brown and a cake tester comes out clean. Cool 5 minutes before dusting with powdered sugar. Serve warm.

What’s Cooking in Gail’s Kitchen? Clean Eating: Golden Puff Pancake! When it comes to convenience, this one-dish weekend wonder can save the day. You know how we tend to take it slow and easy for all things breakfast after a good night’s sleep? Yes, we’re worth it. That doesn’t mean, however, that we need to spend all the time in the kitchen flipping pancakes and dredging French toast through an egg batter. A Golden Puff Pancake is pretty much a cousin to the Dutch Baby. Everything gets mixed together and then baked into an airy popover-style pancake that immediately deflates once it’s removed from the oven. At first glance it appears as though someone in the house opened the oven door and then slammed it shut again. No worries. Fill the “well” with fresh fruit and powdered sugar. It looks and tastes fantastic.

GOLDEN PUFF PANCAKE

Ingredients:

3 eggs

1/2 cup flour

1/2 cup milk

2 tablespoons sugar

1/2 teaspoon vanilla extract

1/2 teaspoon sea salt

2 tablespoons butter

Powdered sugar, for sprinkling

Strawberries, blueberries, and fresh mint for garnish

Instructions:

Preheat oven to 425°. Butter a one-quart ovenproof casserole dish. Set aside. In a food processor, combine eggs, flour, milk, sugar, vanilla, and sea salt. Blend until smooth. Let batter rest for 5 minutes. Place butter in casserole dish. Transfer to hot oven to melt. Watch carefully, 1-2 minutes. Do not scorch. Swirl butter to coat pan. Pour in batter. Bake 18-20 minutes, or until pancake is fluffy and deeply golden. Remove from oven and cool 5 minutes. Dust with powdered sugar. Garnish with strawberries, blueberries, and fresh mint. Cut into wedges and serve.
