Unbelievable Fudge Brownies

What’s Cooking in Gail’s Kitchen? A Cut Above: Unbelievable Fudge Brownies! If brownies fall into the category of “comfort food”, you’re going to appreciate this recipe. The rich dark chocolate is due to the cocoa powder as well as the semi-sweet dark chocolate morsels. The espresso powder gives it a slight taste of coffee without the jittery side effects of your morning cuppa joe. Keep a tall glass of cold milk in the refrigerator to wash down all the chocolate decadence.

UNBELIEVABLE FUDGE BROWNIES

Ingredients:

3 eggs

1/3 cup oil

1/2 teaspoon sea salt

1 teaspoon pure vanilla

1 teaspoon espresso powder

1 cup sugar

1/2 cup cocoa powder

3/4 cup plus 2 tablespoons flour

1 cup chocolate chips, divided

Sea Salt, for garnish

Instructions:

Preheat oven to 350°. Spray a 9”x9” square baking pan with nonstick oil. Set aside. In a large bowl, combine eggs, oil, sea salt, vanilla, espresso powder, sugar, cocoa powder, and flour. Mix well. Fold in 1/2 cup chocolate chips. Pour mixture into the prepared pan. Bake 30-40 minutes, or until a pick inserted into the batter comes out clean. While brownies are warm, sprinkle the remaining 1/2 cup of chocolate chips over top.  Cover pan with a baking sheet for 2-3 minutes. Remove baking sheet and spread melted chocolate evenly over the brownies as a frosting. Sprinkle with sea salt, for garnish.

Loco Moco

What’s Cooking in Gail’s Kitchen? Home Cooking: Loco Moco! Living up to its name, this breakfast food is actually one of Hawaii’s local favorites. The serving size is so generous you might think it’s way too much for breakfast. I didn’t eat the rest of the day after trying it at a local restaurant there. However, when you prepare it at home, you have more control over serving sizes as well as the time of day for this meal. Basically, it is composed of four layers. The bottom is fried rice, the middle is a beef patty, the next is an egg over easy. And the top layer is a ladle of gravy. Don’t knock it till you try it!

LOCO MOCO

Ingredients for Rice Layer:

1 cup prepared brown rice

1 strips bacon, crisp and crumbled

1 beef patty, crumbed*

2 ounces smoked sausage,

cut-up

2 tablespoons sesame oil

2 tablespoons onion, cut-up

*Hawaiians favor SPAM.

Instructions for Rice Layer:

In large skillet add sesame oil and sauté onions. Add remaining ingredients. Stir fry to blend flavors. Set aside.

Ingredients for Beef Patty Layer:

4 1/4-pound beef patties

1 can beef consommé

Dash of pepper

Instructions for Beef Patty Layer:

Cook beef in consommé until tender. I did this the day before in my slow-cooker. It’s worth the effort! Save the broth for turning into gravy.

Ingredients for Egg Layer:

4 fresh eggs

Instructions for Egg Layer:

Cook on stove to make eggs over-easy (or sunny-side up) so the yolks are still runny.

Ingredients for Gravy Layer:

1 cup beef consommé*

2 tablespoons flour

2 tablespoons butter

*Add water if necessary to make one cup of liquid.

Instructions for Gravy Layer:

Melt butter in saucepan. Add flour to the butter and stir to make a roux. Cook over medium-low heat until the flour is lightly browned, about 1 minute. Slowly whisk in the consommé juices and stir until thickened.

Now serve by assembling the layers in a shallow bowl: rice, beef, egg, and gravy. Loco Moco!

1 tablespoon milk

1 tablespoon sugar

1 egg yolk, beaten

1 1/2 cups flour

1/2 teaspoon baking powder

1 can pie filling, any flavor

1/2 cups semi-sweet mini chocolate morsels

Powdered sugar for dusting

Instructions:

Cream together butter, Neufchâtel cheese, milk, and sugar. Add beaten egg yolk. Sift together flour and baking powder. Add to the creamed mixture and blend well. Refrigerate until the dough is thoroughly chilled (4 hours or overnight).  Preheat oven to 400°. Roll out dough to 1/4″ thick on well-floured board. Cut with a 2″ round cookie cutter, or small glass. Place cut-outs on an ungreased cookie sheet. Make a depression with the back of a spoon in the center of each round. Fill the center with a dollop of fruit filling. Sprinkle chocolate morsels on top. Bake 10-15 minutes or until lightly browned. Cool on a wire rack. Dust with powdered sugar before serving.

Egg Cup Jambon

What’s Cooking in Gail’s Kitchen? Simple Sensations: Egg Cup Jambon! What’s black and white and crunchy to the taste? It’s the dense little chia seed. This highly nutritional nut is a member of the mint family boasting fiber, antioxidants, and even iron. Sprinkle it on everything from popcorn to yogurt. Today I topped off the Egg Cup Jambon for a nice chewy finish.

EGG CUP JAMBON

Ingredients:

Nonstick Cooking Spray

6 slices Smoked Virginia Ham

6 large eggs

6 teaspoons Gouda cheese, shredded

1 green onion

Seasoned salt and cracked pepper to taste

1 tablespoon chia seeds

Instructions:

Preheat oven to 400°. Lightly coat six muffin cups with nonstick cooking spray. Place one slice of ham into each cup forming a bowl. Layer one teaspoon of cheese on top of ham. Sprinkle with seasoned salt and pepper. Divide the green onion by slicing it between all six cups. This is easily done with a kitchen shears. Next crack one egg into each cup, being careful not to break the yolk. Bake in the oven for 15 minutes and broil on High for one minute. The whites should be cooked, but the yolks a little runny. Watch! Remove egg cups onto serving platter and sprinkle chia seeds on top before serving.  Enjoy!

*TIP: Make ahead and gently reheat in the microwave on 20% power for those mornings-on-the-run.

If you like salad, you will find yourself saying, “OMG, I want a second helping!”  My husband and I can literally eat this dinner salad until we think we will burst! And then we’ll have one bite more! (P.S. Spring is the best time of year to pick up watercress at the Farmer’s Market.)

WATERCRESS BACON DINNER SALAD

Ingredients:

3 Eggs

7 slices Bacon

1 Vidalia Onion, Small

1 cup sliced Mushrooms

10 ounce package Grape Tomatoes

6 ounces Watercress

1 heart of Romaine Lettuce

1 cup seasoned croutons

1/2 cup Parmesan cheese

5 Tablespoons Reserved Bacon Grease (*or substitute with olive oil)

3 Tablespoons Garlic Wine Vinegar

2 teaspoons Honey

1/2 teaspoon Dijon Mustard

Instructions:

Cook eggs: cover with water, bring to a boil, then turn off heat and allow to sit in water for 20 minutes. Drain off water and add ice on top of eggs. Fry bacon until crisp. Drain on a paper towel. Remove 5 tablespoons grease and set aside. Use 2 tablespoons of grease in a separate skillet over medium heat. Slice thin the Vidalia onion, then add to skillet. Cook slowly until onions are caramelized and reduced. Remove to a plate and set aside. Add mushrooms to the same skillet. Cook slowly until caramelized and brown. Remove to a plate and set aside. Cut bacon into pieces. Peel and slice eggs. Mix romaine and watercress in a large bowl. Arrange onions, mushrooms, tomatoes, and bacon on top.

Hot Bacon Dressing: Add 3 tablespoons bacon grease, vinegar, honey, and Dijon to a small saucepan or skillet over medium-low heat. Whisk mixture together and heat thoroughly.

Pour hot dressing over the salad; toss to combine. Arrange eggs over the top, add croutons, sprinkle on grated Parmesan cheese, and Voilà! Dinner is served!

Multi-Grain Avocado Toast

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Multigrain Avocado Toast! Have you heard that eating eggs are no longer bad for you? Well, that’s the story I told my doctor and I’m sticking to it. He actually agreed, after looking at my bloodwork. Now, as a disclaimer, I’m going to clarify that I usually eat one egg a day, for breakfast, and I prepare it in the microwave, without butter. I also buy organic eggs with that Florida-sunset orange yolk. Farmers here tell me that deep color means more vitamins because free range hens get to enjoy the “greener pastures of grass and clover by foraging the great outdoors.” All I know is, way back in the day when I was a country girl growing up, we didn’t have GMOs and food modifications that make an ingredient list look like it came out of a chemistry book. Rant over.

MULTIGRAIN AVOCADO TOAST

Ingredients:

2 pieces multigrain bread, toasted

1 avocado, halved and pitted

1 teaspoon lime juice

2 eggs, sunny side up

1/4 teaspoon everything but bagel seasoning

Fresh blueberries and orange segments

Cinnamon dusting, for garnish

Instructions:

Mash the avocado, drizzle with lime juice, and spread onto the toasted bread, or simply use the toast to “dip” into the avocado/egg mixture. Spice it up with everything but bagel seasoning. Toss fresh blueberries and orange segments. Sprinkle with cinnamon. Quick and Tasty!
