Wayward Wedge Salad

What’s Cooking in Gail’s Kitchen? The Daily Special: Wayward Wedge Salad!  I get so excited when I come across bleu cheese at the Farmers Market!  Recently, I was fortunate enough to lay my hands on a nice creamy chunk of Amish Bleu Cheese. And rather than nibble the entire portion away, I thought I better do something healthy with it. Does anyone else struggle with an internal tug-of-war?

WAYWARD WEDGE SALAD

Ingredients:

1 head iceberg lettuce

6 slices bacon, precooked

2 eggs, hard cooked and chopped

Blue cheese crumbles

Blue cheese dressing

2 Campari tomatoes on the vine, quartered

Instructions:

Chill 4 salad plates in refrigerator. Cook bacon until crisp; let cool and crumble. Set aside. Quarter and core lettuce. Place one wedge on each chilled plate. Top with dressing, bacon, tomatoes, and chopped egg. Garnish with cheese crumbles. Serve immediately. 

Tzatziki Egg Salad

What’s Cooking in Gail’s Kitchen? A Cut Above: Tzatziki Egg Salad! When I had a garden, while raising my children, I used to eat homegrown cherry tomatoes by the handful. The few times the tomatoes actually made it to the kitchen, I would always count out 10 cherry tomatoes for MY salad and then smother them with cucumber salad dressing. It was heaven-in-a-bowl for me. And then, all of a sudden, the bottled cucumber dressing disappeared off the store shelves, never to be seen again. What happened, I wondered. I was devastated, to say the least. Years later, the buzz was all about tzatziki sauce. I already knew I loved Greek gyros smothered in the stuff, so I went back to the deli and bought some. Guest what I do with it now. You know. 

TZATZIKI EGG SALAD

Ingredients: 

6 eggs

5 tablespoons Greek yogurt

1/4 medium cucumber, peeled and grated

1 teaspoon garlic powder

1 1/2 teaspoon olive oil

1/2 cup celery, finely chopped

1 teaspoon sea salt

1/8 teaspoon black pepper

1 teaspoon dill weed

Instructions:

Place the 6 eggs in a medium pot filled with water. Bring to a boil; reduce heat and simmer for 15 minutes. Drain. Place the eggs in an ice bath for 10 minutes to cool. Peel and dice the eggs. Set aside. To make the tzatziki sauce, combine Greek yogurt, grated cucumber, garlic powder, olive oil, finely chopped celery, sea salt, black pepper, and dill weed. Mix well. Set aside. For the egg salad, begin by adding small portions of tzatziki sauce to the chopped eggs until you achieve the desired consistency. Chill tzatziki egg salad for 30 minutes. When ready to serve, make an “x” in the top of an artisan roll. Fill the center with egg salad. Serve with micro greens and fresh dill sprig. 

Deviled Eggs

What’s Cooking in Gail’s Kitchen? Home Cooking: Deviled Eggs!  People ask me all the time how I can eat everything I make and not weigh 100 pounds more than I do. Well, portion control has a lot to do with it……plus the fact that I truly DO share much of what I make. And then there are days when I know I’m going to pig out, so I eat a lunch that looks like this! Trust me, it works. 

DEVILED EGGS

Ingredients:

6 hard-cooked eggs, peeled and halved

1/4 cup real mayonnaise 

1 teaspoon Dijon mustard

1/4 teaspoon sea salt

Dash white pepper

Paprika 

Instructions:

Separate egg whites from egg yolks. Smash egg yolks with a fork in a small bowl. Stir in mayonnaise, mustard, salt, and pepper. Spoon yolk filling into egg white halves. Garnish with paprika. Chill, if desired. 

Rainbow Cookies

What’s Cooking in Gail’s Kitchen? Simple Sensations: Rainbow Cookies! Wouldn’t it be nice to tap your ruby slippers together and have a super-easy delicious dessert? You can. Even Dorothy and her friends would find these yummy morsels “no-place-like-home” irresistible.  What a great kid-friendly recipe when school’s out for summer!

RAINBOW COOKIES 

Ingredients:

1 box yellow cake mix

2 eggs

1/2 cup vegetable oil

12-ounce bag of mini M&M candies

15.6-ounce can Buttercream icing

Instructions:

Preheat oven to 350°. In a large bowl, mix together the cake mix, eggs, and oil until moistened. Reserve 1/2 cup M&M candies for decorating. Then gently fold in remaining mini morsels. Form little balls with the dough and place 2-inches apart on ungreased cookie sheet. Bake 5-8 minutes until edges are lightly golden. Remove from cookie sheet and cool slightly on wire racks. Spread frosting over warm cookies and immediately sprinkle each cookie with remaining mini M&M candies. 

Crêpe Expectations

What’s Cooking in Gail’s Kitchen? Simple Sensations: Crêpe Expectations! From sweet to savory, appetizers to dessert, this amazing little confection will not disappoint. It is the French cousin to the American pancake. Stack it, roll it, or fold it into a triangle. No matter how you fill it, the result is a pleasure for the palate. Make a batch to keep on hand. Then get creative!

CRÊPE EXPECTATIONS 

Ingredients:

4 eggs, beaten 

1 cup flour

1 cup 1/2 & 1/2

2 tablespoons butter, melted 

1/2 teaspoon sea salt

Filling:

8 ounce Neufchâtel cheese

1/4 cup butter, melted

1/2 cup marshmallow creme 

1 cup powdered sugar

1/4 teaspoon almond extract 

1/2 cup sliced almonds

Directions:

Combine eggs, flour, 1/2 & 1/2, butter, and sea salt.  Beat until smooth. Let stand 30 minutes. For each crêpe, pour scant 1/4 cup batter into hot, greased 8-inch skillet rotating to distribute batter evenly. Cook on one side. Flip and lightly brown. Stack on plate to cool. 

For filling combine softened Neufchâtel cheese and butter; mix well. Stir in marshmallow creme. Add sugar and extract; mix well. Fold in nuts. Fill each crêpe with 3 tablespoons cream cheese mixture; roll up. Add sliced strawberries, raspberries, seedless grapes. Top with whipped cream.  

Quiche Lorraine

What’s Cooking in Gail’s Kitchen? Quiche Lorraine!  Pie for Breakfast? Or Brunch or a light Dinner?  Without a doubt!  This flaky rim pastry tart filled with a rich, creamy filling is a classic French staple that boasts tradition in every bite. 

QUICHE LORRAINE

Pastry:

1 1/3 cup flour

Pinch of salt

3 ounces Neufchâtel cheese

1/2 cup butter

Sift together flour and salt. Add softened butter and Neufchâtel cheese. Mixture becomes crumbly but eventually forms a single large ball. Set aside for 30 minutes to an hour. Roll out and line a deep 9-10″ pie dish. 

Filling:

8 thin slices cooked ham or crisp smoked bacon

8 ounces Gruyère cheese*

2 cups sour cream

3 eggs and 1 yolk

1/2 teaspoon salt

1 tablespoon melted butter

Cover pastry alternating ham and cheese. Combine remaining ingredients. Pour over ham and cheese. Sprinkle with nutmeg. Bake at 375° 50-60 minutes until set. 

*May substitute Gruyère cheese for thinly sliced Swiss cheese. 

Dutch Chocolate Profiteroles

What’s Cooking in Gail’s Kitchen?  Dutch Chocolate Profiteroles!  These yummy tender confections have a chocolate filling that will satisfy any sweet tooth.  Once the shells are made, you can utilize a time-saving option.  Simply change the filling to Breyers Dutch Chocolate Ice Cream and sprinkle it with powdered sugar. Your friends will think you spent hours in the kitchen. 

DUTCH CHOCOLATE PROFITEROLES

Cream Puffs:

1/2 cup water

1/4 cup butter

1/2 cup all-purpose flour

2 whole eggs

Heat oven to 400°.  Heat water and butter to rolling boil in saucepan. Stir in flour. Stir vigorously over low heat until mixture forms a ball, about I minute; remove from heat. Beat in eggs, all at once, continue beating until smooth. Drop dough by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet. Bake until puffed and golden, 35-40 minutes. Cool away from draft. Cut off tops; pull out any filaments of soft dough. Fill puffs with chilled cream filling. Replace tops; dust with powdered sugar. Refrigerate until serving time.  Yield: 6 cream puffs. 

Cream Filling:

1/3 cup granulated sugar

3 tablespoons cocoa powder

2 tablespoons cornstarch 

1/8 teaspoon salt

2 cups half-and-half

2 egg yolks, slightly beaten

2 tablespoons butter

2 teaspoons vanilla

Garnish:

1 tablespoon powdered sugar

1/4 c semi-sweet mini chocolate morsels 

Mix sugar, cocoa, cornstarch, and salt in 2-quart saucepan. Stir in half-and-half gradually. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Stir at least half of the hot mixture gradually into egg yolks. Blend into hot mixture. Boil and stir 1 minute. Remove from heat; stir in butter and vanilla; cool. 

Yellow & White Cake Mix Cookies

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Yellow & White Cake Mix Cookies! I never want to live in a world where there are no cookies. I’m one of those people who insist on tasting a freshly baked cookie, still warm from the oven. My kitchen, my rules. I also like the idea of choices. By taking a simple cake mix and ramping up the extra ingredients, I was able to offer my family plain, powdered sugar, and turbinado sugar cookies. Does that mean I needed three taste-tests? I’ll never tell. 

YELLOW & WHITE CAKE MIX COOKIES

Ingredients:

15-ounce box yellow cake mix

2 eggs

1/3 cup oil

1 cup white chocolate chips

1/2 cup macadamia nuts, chopped

Powdered sugar, for rolling

Turbinado sugar, for rolling

Instructions:

Preheat the oven to 350°. Combine the yellow cake mix, eggs, and oil together in a large bowl; stir. The batter will be thick. Fold in the white chocolate chips and chopped macadamia nuts. Use a cookie scoop to form the cookies. Place them two inches apart on a nonstick baking sheet. Bake 8-10 minutes until the cookies appear slightly brown on the edges. Allow them to cool slightly before rolling in powdered sugar or turbinado sugar. Cool on a wire rack. Repeat baking steps until all the cookie dough has been used. 

Peruvian Cheese Potatoes

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Peruvian Cheese Potatoes! My friend, Gian, encouraged me to try a dish from his native land, Peru. He described it as a traditional appetizer so popular it has become the national dish: Papa a là Huancaína. Because it’s basically boiled potatoes covered in a spicy cheese sauce, he explained it as chile-warm, delicious, creamy, and satisfying. Strangely enough, this appetizer is served cold, similar to the American Potato Salad. It taste nothing like it, though. The jury is still out on whether I will make it at home again. I’m thinking the next step is to order it in an authentic Peruvian restaurant. Perhaps they’ll share a secret or two. 

PERUVIAN CHEESE POTATOES 

Ingredients:

8 yellow potatoes, whole

4 lettuce leaves

Huancaína Sauce (see recipe below)*

2 hard-boiled eggs, quartered

Mixed olives, pitted

Instructions for Potatoes:

Heat a pot of salted water to boiling. Add the potatoes. Boil the potatoes until tender when pierced with a fork, approximately 20 minutes. Drain the water and allow potatoes to cool. Arrange lettuce leaves on a platter. Halve the potatoes and place on top of the lettuce. Pour Huancaína sauce over the potatoes. Garnish with hard-boiled eggs and pitted olives. 

*Ingredients for Huancaína Sauce:

1/2 cup aji amarillo paste

4 tablespoons vegetable oil

1/2 cup onion, chopped

2 cloves garlic, minced

3/4 cup evaporated milk

2 cups white queso fresco cheese

4 saltine crackers 

Sea salt and black pepper, to taste

*Instructions for Huancaína Sauce:

Warm oil in a skillet over medium heat. Add the aji amarillo paste, chopped onion, and minced garlic. Sauté approximately 3 minutes, or until the onions have softened. Remove pan from heat and set aside to cool. In a food processor, combine the chile/onion mixture, and evaporated milk. Blend well. Add the queso fresco cheese and saltine crackers; blend until smooth. The sauce should be thick. Season with sea salt and black pepper. Refrigerate until ready to serve.
