It’s simple. And it makes everyone smile. Bake in a square cake pan or muffin tin. I like the option of using ramekins for pillowy results. Simply invert them upside down before drizzling with juicy sliced strawberries that practically melt in your mouth. How’s that for an all-American favorite dessert? I find it Strawberrylicious!

STRAWBERRY SHORTCAKE

Ingredients:

1/2 cup butter, room temperature

1 cup sugar

1/2 cup buttermilk

2 eggs

1 teaspoon vanilla extract

1 1/2 cups flour

1/2 teaspoon sea salt

2 teaspoons baking powder

1 pint strawberries, sliced

Whipped cream

Fresh mint leaves for garnish

Instructions:

Preheat oven to 350°. Lightly grease 6 ramekins. Set aside. Cream butter and sugar until mixture is light and fluffy. Add buttermilk, eggs, and vanilla extract. Stir well. Sift together flour, sea salt, and baking powder. Gradually add dry ingredients to wet ingredients. Mix to combine until batter is smooth and no lumps remain. Pour into prepared ramekins. Transfer to oven on a baking sheet. Bake 25-30 minutes until cake springs back and cake tester comes out clean. Invert ramekins on a wire rack to cool for 10 minutes. Wash, hull, and slice strawberries. Arrange berries on each shortcake. Serve with a dollop of whipped cream and mint leaf garnish.

Xiangjiao Banana Bread

What’s Cooking in Gail’s Kitchen? The Color of Food: Xiangjiao Banana Bread! How’s this for a fancy word? For those who haven’t a clue, “xiangjiao” is actually Chinese for banana. And who doesn’t love bananas? A few years ago my grandson came to my house for a sleepover. I had been to the grocery store to get some of his favorite foods, in addition to a couple of new choices. Imagine my surprise when I presented him with a half-peeled yellow banana. He got a puzzled look on his face as he eagerly grabbed it and said, “Nana. Ba-Nana?” I smiled and gave him a giant hug before the air exploded into peals of laughter. There’s nothing sweeter than a toddler’s giggle.

XIANGJIAO BANANA BREAD

Ingredients:

1/2 cup butter, room temperature

1 cup sugar

2 eggs

1/4 cup Greek yogurt

1 teaspoon vanilla extract

3 ripe bananas, peeled and crushed

2 cups flour

1/2 teaspoon baking powder

1 teaspoon baking soda

1/8 teaspoon sea salt

1/4 cup pecans, chopped

Topping: (optional)

1 ripe banana, sliced lengthwise

1 tablespoon chopped pecans

Instructions:

Preheat oven to 350°. Spray a loaf pan with a nonstick oil containing flour. Set aside. Cream together butter and sugar. Add eggs, Greek yogurt, vanilla extract, and crushed bananas. Mix well. Combine flour, baking powder, baking soda, and sea salt. Add to the creamed mixture. Stir just until batter is combined. Do not over mix. Fold in chopped pecans. Pour into prepared pan. For topping, place the two halves of a ripe banana on top of the batter. Sprinkle with remaining chopped pecans. Bake one hour or until tester comes out clean. Cool 5 minutes and then remove banana bread from loaf pan. Cool longer on a wire rack.

Unleavened Bread

What’s Cooking in Gail’s Kitchen? The Color of Food: Unleavened Bread! Nothing is more appetizing than the aroma of fresh bread baking in the oven, in my opinion. Unleavened Bread is a quick and easy flatbread made with flour, salt, olive oil, and water. No yeast needed. Choose between a crispy texture, like I have here for that luscious golden color, or shorten the baking time for softer, more chewy results. Eat it plain, slather it with French butter, or turn it into a personal-size pizza flatbread. You can thank me later.

UNLEAVENED BREAD

Ingredients:

1 1/3 cup flour

1/4 teaspoon sea salt

1/4 cup olive oil

1/4 cup water

Dill weed for garnish (optional)

Instructions:

Preheat oven to 400°. Brush a baking sheet with olive oil. Set aside. Combine flour and salt in a food processor. Pulse to mix. Gradually drizzle in the oil on Low speed. Dough will resemble crumbs. Continuing on Low speed, gradually add water until dough forms a ball. Turn dough onto a lightly floured surface. Knead until dough is elastic and smooth, but not sticky. Divide into 6 equal balls. Pat each ball into a circle, using a rolling pin or your hands. Transfer flattened dough onto prepared baking sheet. Do not crowd. Bake in two steps, if necessary. Use a fork to lightly prick the dough. Brush each flatbread round with olive oil and sprinkle with dill weed. Bake 15 minutes until golden brown. Cool on wire rack.

Yumolicious GF Harvest Muffins

What’s Cooking in Gail’s Kitchen? The Chow Down: Yumolicious GF Harvest Muffins! Have you discovered the silky taste of almond butter lately? I recently came across a gourmet item that enhanced the almond butter with cinnamon and chia seeds. Because it works with this muffin recipe, I went ahead and used it. Obviously, if chia seeds are not your thing, no worries. The butternut squash is the star attraction, in my opinion. It has a natural sweet flavor that surpasses the pumpkin patch variety that is more common. Since I recently made a batch of glazed pears, they were added to the “harvest”, but you can certainly substitute with a delicious apple instead. If I haven’t piqued your interest by now, let me further add the fact that these yumolicious muffins are gluten-free. See? It works. You learn something new everyday.

YUMOLICIOUS GF HARVEST MUFFINS

Ingredients:

3/4 cup butternut squash purée

1 cup almond butter

1/3 cup maple syrup

1 egg, beaten

1 teaspoon cinnamon

1 teaspoon baking soda

1 pear, finely chopped

1/4 cup brown sugar

1/4 cup butter, softened

1 tablespoon almond flour

2-3 tablespoons old fashioned oats

2 tablespoons sunflower seeds

Instructions:

Preheat oven to 325°. Use muffin cup liners for 12 muffins. Line the muffin tin; set aside. In a mixing bowl, combine butternut squash purée, almond butter, maple syrup, beaten egg, cinnamon, and baking soda. Mix well. Fold in the chopped pears. Fill each muffin cup 3/4 full. For the topping, mix brown sugar, softened butter, almond flour, and old fashioned oats. Mixture will be crumbly. Sprinkle each muffin with streusel topping. Top with sunflower seeds. Bake 30-35 minutes or until muffins pull away from paper liner. Watch carefully.

Marble Loaf Quick Bread

What’s Cooking in Gail’s Kitchen? The Chow Down: Marble Loaf Quick Bread! When I was a little girl one of my favorite memories was making marble cake from a box mix. Not necessarily the ease of preparation, but the fact that I could be very artistic with the chocolate and vanilla swirls. There’s no way to get it wrong. And it’s pretty. Today’s version is a buttery classic with a moist center using plain yogurt. Just remember to have the melted butter, eggs, and yogurt at room temperature. If not, they won’t blend properly and you may end up with slightly cooked eggs and chunky batter. Nobody wants that, especially the one who licks the bowl.

MARBLE LOAF QUICK BREAD

Ingredients:

2 cups flour

3/4 cup sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon sea salt

2 eggs, room temperature

2 teaspoons vanilla extract

1/2 cup butter, melted

1 cup Greek yogurt, room temperature

2 tablespoons cocoa powder

Instructions:

Preheat oven to 350°. Spray a loaf pan with nonstick oil. In a large bowl, combine flour, sugar, baking powder, baking soda, and sea salt. Mix well. Set aside. In another bowl, combine the eggs, vanilla extract, butter, and Greek yogurt. Whisk until blended. Pour the wet ingredients into the dry ingredients. Stir just until combined. Do not over mix. Pour half the batter into a medium bowl. Gently fold in cocoa powder until mixed. Alternate spoonfuls of plain batter and cocoa batter into the prepared loaf pan. Take a table knife and swirl the two mixtures together. Bake 45-55 minutes, or until a cake tester comes out clean. Do not burn. Remove from oven and cool slightly on a wire rack before removing from pan.

Java Chip Cookies

What’s Cooking in Gail’s Kitchen? The Chow Down: Java Chip Cookies! Anyone will tell you the aroma of coffee triggers good feelings. If you don’t believe me, check out the neighborhood coffee shops and you’ll find a local place where people hang out. It’s not just the free Wi-Fi either. Coffee is one of the most popular beverages around, especially now with intense flavorings topped with a mound of whipped cream. Transform the blend of coffee and sugar into a cookie, charged with caffeine, and you’ll be as popular as the Pied Piper. People will follow you anywhere!

JAVA CHIP COOKIES

Ingredients:

1 cup butter, room temperature

1 1/2 cups sugar

1/2 cup brown sugar, firmly packed

3 tablespoons espresso instant coffee

1 tablespoon vanilla extract

2 eggs

3 1/2 cups flour

1/2 teaspoon baking soda

1/2 teaspoon sea salt

1 cup toffee bits

1/4 cup chocolate covered espresso beans, roughly chopped

1/4 cup mini chocolate chips

Instructions:

Preheat oven to 350°. Line two baking sheets with parchment paper. Set aside. In a food processor beat butter, sugar, brown sugar, espresso instant coffee, and vanilla extract until fluffy. Add eggs, one at a time, until blended. Combine flour, baking soda, and sea salt in a separate bowl. Gradually add flour mixture to butter mixture until it forms a dough. Fold in toffee bits, chopped espresso beans, and mini chocolate chips. Chill dough slightly. Using a melon ball scoop, drop cookie dough onto a baking sheet. Bake 10-12 minutes. Do not burn. Remove from oven. Let cool for 2 minutes. Dredge java chip cookies in sugar, if desired, before transferring them to a wire rack. Repeat with remaining dough. Yield: 3 dozen, large cookies.

Corn Fritter Flapjacks

What’s Cooking in Gail’s Kitchen? The Chow Down: Corn Fritter Flapjacks! Add variety to your meals now that hearty comfort soups are on the menu as we stroll leisurely into Autumn. Old-fashioned corn fritters can be as simple as baked or pan fried cornbread. For variety, add sweet corn niblets, dried herbs and spices, or even shredded cheese. You may even be bold and cover them in maple syrup. As always, the key to great taste is in using natural and organic ingredients. I pulled out the old reliable cast iron skillet for frying simply because it maintains a more even heat exchange. Since it is already seasoned, the results mean no sticking and less oil is needed. Get cooking. Try something new tonight!

CORN FRITTER FLAPJACKS

Ingredients:

3/4 cup cornmeal

1/2 cup flour

1/4 cup sugar

1/2 tablespoon baking powder

1/4 teaspoon sea salt

1/2 cup milk

1 teaspoon white vinegar

1 egg

2 tablespoons olive oil

1 cup sweet corn kernels

Vegetable oil for frying

Instructions:

In a large mixing bowl, combine cornmeal, flour, sugar, baking powder, and sea salt. Mix well. Set aside. Pour milk into a small bowl; add white vinegar. Whisk the two together. Set aside for a few minutes to allow the milk to thicken. Add egg and olive oil. Whisk to blend wet ingredients. Add the wet ingredients to the bowl of dry ingredients. Stir just until batter is moistened. Fold in sweet corn. Warm an iron skillet on the stovetop over medium heat. Brush the bottom with vegetable oil. Drop batter by spoonfuls onto the greased skillet. Cook until bubbles form around the edges, about 2 minutes. Reduce heat slightly, if necessary. Flip the flapjacks to cook the other side. Cook about 2 minutes longer so the outsides are crispy and the insides are fluffy. The corn fritters should be golden-to deep brown without burning. Repeat with remaining batter. Apply more oil as needed. Keep warm until ready to serve. Makes one dozen fritters.

Coconut Flour Brownies

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Coconut Flour Brownies! Every once in awhile I need a gluten-free recipe for sharing. The bonus is a healthy alternative to sugary sweets with high caloric count. Coconut flour is high in fiber and lower in carbs, yet free from wheat and grains. I like its hint of coconut with a mild, slightly toasty flavor. Don’t be discouraged by the cost. A little goes a long way.

COCONUT FLOUR BROWNIES

Ingredients:

1/2 cup butter, unsalted, melted

2 tablespoons vegetable oil

1/4 cup cocoa powder, unsweetened

3 large eggs

1/2 cup natural honey

2 tablespoons agave nectar

1 teaspoon pure vanilla extract

1/2 teaspoon baking soda

1/2 cup minus 1 tablespoon coconut flour

1/2 teaspoon kosher salt

1/3 cup mini chocolate chips

1/3 cup toasted coconut

1/3 cup candied pecans, chopped

1 Toblerone chocolate bar, chopped

Instructions:

Preheat oven to 300°. Line an 10″ glass baking pan with parchment paper. Spray lightly with nonstick oil. In a large bowl, combine butter, vegetable oil, cocoa powder, and eggs. Mix well. Add honey, agave nectar, and vanilla extract. Mix until combined. Add baking soda, coconut flour, and kosher salt. Mix until batter is thoroughly combined. Fold in mini chocolate chips. Spread evenly into prepare baking pan. Top with toasted coconut, candied pecans, and chopped Toblerone pieces. Bake 30-40 minutes or until a toothpick comes out clean. Cool on wire rack. Once room temperature, remove from pan and cut into serving portions. Keep in airtight container.

Zucchini Cornbread

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Zucchini Cornbread! Jazz up the breadbasket with homemade cornbread that has been enhanced with garden-fresh chopped zucchini and jalapeño peppers. Mix it together in a blend of cornmeal and cheddar cheese before popping it in the oven. Thirty minutes later the aromas rev up your appetite. Can you say “Yum”? Zucchini Cornbread goes especially well with grilled barbecue meats and seafood. Now this is how we kick off the summertime months.

ZUCCHINI CORNBREAD

Ingredients:

1 zucchini, chopped

1 1/2 cups yellow cornmeal

1 1/2 cups flour

1 tablespoon baking powder

1/4 teaspoon salt

1/4 cup sugar

2 eggs, beaten

1/2 cup vegetable oil

1 1/4 cup skim milk

2-3 jalapeño peppers, seeded and chopped

1 teaspoon red pepper flakes

1 cup cheddar cheese, shredded

For garnish, reserve a few zucchini slices, jalapeño pepper slices, and shredded cheese for topping

Instructions:

Preheat oven to 400°. Spray a nonstick ovenproof dish or iron skillet with nonstick oil. Mix together cornmeal, flour, baking powder, salt, and sugar. Set aside. Blend beaten eggs, vegetable oil, and skim milk. Add liquid ingredients to dry ingredients. Sir just until blended. Fold in chopped zucchini, chopped jalapeño peppers, red pepper flakes, and cheddar cheese. Pour into prepared iron skillet. If you prefer a garnish, place a couple zucchini slices and jalapeño pepper slices on top. Sprinkle with cheddar cheese. Bake 30-35 minutes until center is set and edges are crisp.
