Something to Savor

Food is delightful and brings pleasure. We savor the flavors of food, just as we do our friendships. Recently I received a new apron and hand-made pot holders. Aren’t they super-cute? Special thanks go out to Nancy and Judy! I appreciate friends like them who like fresh ingredients, garden herbs, rich chocolate, and French butter. It’s as simple as A-B-C. I love to cook, and my husband loves that I do it often. I adore time-honored traditions using tried-and-true recipes. Yet, I seldom think twice about tweaking old favorites or modifying others to suit the inner craving of the moment. Most recipes serve 2-4 people, but can be modified. Leftovers are golden morsels to be eaten later or shared with others. Seeing a smile in gratitude keeps me going. The recipes you find here in the next several weeks can be prepared with ease. Dining Outside the Home: Oasis on the Beach in Kapaa, Kauai!  Warm up to the spice in Fresh Fish Tacos. After all, you’re at the beach and the fish doesn’t get any fresher than this. Ask the waiter for the special condiment caddy. Among others, you’ll get a trio of Hawaiian Chili Pepper Sauces for a gratifying south-of-the-border taste extravaganza. These sauces are made locally by the Kauai Juice Company in the heart of Kapaa. Sample between the Chocolate Habanero, the Kiawe Smoked, and the Mango Garlic Ghost. Trust me, you’ll know. The grilled flour tortillas come with shredded cabbage and an avocado mousse to balance out the heat. Go strong…or go home!

Dining Outside the Home: Duke’s Canoe Club on Kalapaki Beach in Lihue, Kauai.  Sometimes the biggest challenge of being on vacation can be resisting all those tempting foods that lead us away from our daily diet. No worries here. Duke’s Canoe Club has included gluten-free menu items that satisfy those vacation cravings. Take, for example, the Caramelized Beet Salad loaded with savory roasted beets, pickled red onion, crumbled goat cheese, and farm-fresh arugula. It’s topped off with a macadamia nut brittle that is out of this world. Not only is the salad bursting with flavor, it comes with that rewarding feeling at the end of the meal. You know what I’m talking about; the one where you can still slip into that bathing suit afterwards and walk the beach like a seasoned athlete. Well done, Duke’s Canoe Club!

Dining Outside the Home: House of Noodles in Old Kapaa Town, Kauai!  Ever get a craving for a sweet and savory dish with a kick of spicy chili sauce and the crunch of cashews? If so, look no further than the House of Noodles in Kapaa. Inside you’ll find everything from classic Thai food, with just the right amount of fish sauce, to popular island pork, bathed in fresh herbs. Let your palate be the judge. For starters, check out the crispy pork wontons paired with a sweet dipping sauce. Mmmmm. It’s not only sinful, it’s delightful. Move on to your choice of homemade noodle soups, fresh salads, stir-fry vegetables, or buttered entrées. Whatever you choose, one thing’s for sure. You won’t walk away hungry!

Dining Outside the Home: Sushi Bushido in Kapaa, Kauai!  Is it a Japanese art gallery in a restaurant or a Japanese restaurant in an art gallery? Take a peek inside and see. You will be amazed! Located in the center of Old Kapaa Town in a place known as the “Dragon Building”, Sushi Bushido is a blend of everything traditional in local-style sushi through contemporary creations in dinner entrées. And the art, you wonder? The artist has a tiny studio next door, which is why an entire red wall inside Sushi Bushido is dedicated to her paintings. That’s what I call a “Win! Win!” for both parties. Check out the Sushi Bar, specialty rolls, and Tempura dishes along with a nice selection of beer and Sake. Trust me, you’ll be in good company.

Dining Outside the Home: Mariachi’s Mexican Restaurant in Kapaa, Kauai!  Twice the taste, second to none. Mariachi’s Mexican Restaurant is a very popular place on Kauai. Perhaps that is why there are two convenient locations on the East Shore. On the main drag of Old Town Kapaa, Mariachi’s is at the center of activity. You can’t miss the brightly colored building. Grab a window seat for people-watching and open air. Pay no attention to the birds that flap their wings. They know how to behave. Before the tortilla chips and tomato salsa disappear, a sizzling platter of crazy fajitas arrives to take its place. No worries. There’s plenty of food to share at a table for two. Bienvenidos!

Dining Outside the Home: Kalaheo Cafe & Coffee Company in Kalaheo, Kauai!  Breakfast is the most important meal of the day, according to the generous portions served up at the Kalaheo Café. Stick to the favorites: a Very Veggie Omelette with melted cheese or add some Portuguese sausage for the Kahili Breakfast. Choose between a side of rice or potatoes, your way. And don’t forget the buttered toast or incredibly delicious cornbread muffins. Top it off with flavored coffee to rev up your engine. Now you’re beginning to see what I mean. Dine inside or on the front porch with a view of the mountains. Take a deep breath and dig in.

Dining Outside the Home: JO2 Natural Cuisine in Kapaa, Kauai!  Step across the threshold of this clean, crisp restaurant and you will find the atmosphere extraordinary. Peruse the specialized menu. There is little doubt the French chef will create anything less than a masterpiece, using nature’s freshest ingredients arranged on a plate. Your eyes will feast on the artistic presentation before a forkful of food ever touches your lips. Take it slow to appreciate every bite. Linger between Appetizer and Entrée, giving yourself time for quiet conversation over signature cocktails. Perhaps you’ll share a nibble of super sweet Baby Corn grown exclusively on the island. Or a taste of Mushroom Risotto lashed into perfection with freshly grated Parmesan cheese and sea salted French butter. Do you see where I’m going with this? Dining Outside the Home: Monico’s Taqueria in Wailua, Kauai!  Word is out. The pork Carnitas Plate is unbelievable. It is so incredibly good, even the staff has no idea how Chef Monico works his magic. He begins with cubes of fresh, tender pork meat, seasoned just right, and then cooks them in a way that presents a crisp crunchy outside with a burst of moist spicy pork on the inside. It will practically have you rolling your eyes in delirium. Where’s the photo, you wonder? I forgot to take one. I got so excited when Megan brought the Carnitas Plate that I dove right in. But my husband ordered the Chicken Taquitos and said they were “Muy Bien!”
