Jalapeño Celery Crack

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Jalapeño Celery Crack! I’m not ashamed to say I’ve found a new addiction. Hence the name. By the time I wrote this post, I had already made this recipe 3 times and shared it once with a close friend. Jalapeño Celery Crack has a spicy creaminess that screams, “just one more bite”. When I ran out of celery, I discovered it tastes amazing on tortilla corn chips. Sometimes you need an appetizer. Sometimes you want a snack. And sometimes making it part of a meal is justification enough. Perhaps you should try it. You know you want some.

JALAPEÑO CELERY CRACK

1/2 teaspoon parsley

2/3 cup pickled jalapeños, chopped

Vietnamese Dipping Sauce

What’s Cooking in Gail’s Kitchen? Something to Savor: Vietnamese Dipping Sauce! Like any good dish, the sauce can make or break it. Some like it sweet and mild, others prefer hot and tangy. As you pull everything together, don’t be shy about taking a taste test. If you prefer less sweetness, adjust accordingly. Do the same to crank up the heat a notch or two. I took the advice from a friend of mine who puts this sauce on everything from spring rolls to noodles to salads to fish. It’s amazing!

VIETNAMESE DIPPING SAUCE

Ingredients:

1 cup water

1 cup rice vinegar

1 cup fish sauce

2 cups sugar

10 red chili peppers, chopped fine

1 clove garlic, crushed

Instructions:

Combine water, rice vinegar, fish sauce, sugar, chili peppers, and garlic in a pan over medium-high heat. Stir to dissolve sugar. Bring to a boil; reduce heat and cook 5 minutes, stirring occasionally. Cool. Store in a covered container in the refrigerator.

Olive Oil Herb Potatoes

What’s Cooking in Gail’s Kitchen? Something to Savor: Olive Oil Herb Potatoes! Being raised in the Midwest, practically every evening meal consisted of meat, potato, and vegetable. Perhaps that is why I love potatoes so much. I learned how to make homemade potato soup at the hem of my mother’s apron, without measuring or a recipe. But that’s a story for another day. I like the baby potatoes available now at the supermarket. By slicing them, with the skin on, and drizzling them with herbs and olive oil, the taste is unbelievable! Who wouldn’t fall in love with these tasty little nuggets?

OLIVE OIL HERB POTATOES

Ingredients:

5 baby potatoes, washed and sliced

2 tablespoons olive oil

1/8 teaspoon garlic powder

1/4 teaspoon Herbes de Provence

2 tablespoons rosemary, chopped

1 teaspoon sea salt

Instructions:

Preheat oven to 400°. Leaving skin on potatoes, wash thoroughly and pat dry. Put one potato on a soup spoon. Beginning at one end, slice in strips, being careful to stop before slicing the bottom skin. The knife will hit the spoon to prevent it from cutting through. Transfer to a shallow baking dish. Continue until all potatoes are sliced. In a small bowl, mix olive oil, garlic powder, Herbes de Provence, and chopped rosemary leaves. Brush each potato with herbed olive oil, separating slices to coat both sides. Drizzle remaining oil over all. Sprinkle with sea salt. Bake potatoes one hour until crispy, basting occasionally. Serve immediately.

Habanero Hot Sauce

What’s Cooking in Gail’s Kitchen? Timeless Classics: Habanero Hot Sauce! Let’s kick things up a notch or two with one of the hottest known chili peppers legally sold in grocery stores. And I mean REALLY hot, compared to the average pepperoncini. The adorable orange lantern with its sweet-looking dimples can be deceiving. Its sting may feel as strong as a viper while simultaneously releasing an endorphin rush that’ll knock you off your feet. This is my fourth batch from the garden harvest. I’m hooked! However, it comes with a few words of caution: Wear gloves and avoid the juices near your face and eyes. While oven roasting, set the exhaust fan on High. When taste-testing, keep a wedge of white cheese nearby. It actually cuts the heat almost instantly. Be brave, my Peeps. Heed these simple rules. Then and only then, will you become the master of your own domain.

HABANERO HOT SAUCE

Ingredients:

16-20 habanero peppers, halved, stems, and seeds removed

3 cloves garlic, minced

1/3 cup orange juice

3 tablespoons grapefruit juice

1/8 teaspoon lime juice

Sea salt to taste

Instructions:

Place habanero pepper halves, skin side up in a single layer, on a baking sheet sprayed with nonstick oil. Roast habanero peppers on High for 10 minutes, or until black spots appear. Remove. Using tongs, transfer habanero peppers to a covered bowl and allow to steam for 15 minutes. Using gloves, remove any loose skins; discard. Add peppers to a food processor. Pulse to a slightly coarse texture. Add minced garlic, orange juice, grapefruit juice, and lime juice. Pulse until desired consistency. Season with sea salt. Store in a jar in the refrigerator. Serve in dips, as a condiment, paired with ripe fruits in salsas, or on grilled meats.

Splatter Pan Roasted Peppers

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Splatter Pan Roasted Peppers! There’s something comforting about roasted vegetables. Perhaps it’s the amazing flavor as a result of dry oven heat. Ever notice that slightly caramelized texture? Sometimes it results in a toasted nutty-like flavor. Sweetness piques, especially in tomatoes. The soft brown garlic bulbs surprised me most of all. I mashed one against the roof of my mouth. The raw bitterness had been replaced with a savory sweetness that brought sheer pleasure to my taste buds. No wonder people say food can produce a seductive spark. Am I the last one to discover this about roasted garlic?

SPLATTER PAN ROASTED PEPPERS

Ingredients:

3 green bell peppers, seeded and halved lengthwise

2 tablespoons olive oil

1/8 teaspoon sea salt

1/8 teaspoon black pepper

1/2 cup mozzarella cheese, shredded

24 ripe cherry tomatoes, halved

3 cloves garlic, halved

2 tablespoons capers

1 teaspoon basil, crushed

Instructions:

Preheat oven to 400°. Spray a splatter pan with nonstick oil. Arrange green peppers, cut side up to fit. Brush the peppers, inside and out with olive oil. Season with salt and pepper. Divide mozzarella cheese between peppers. Arrange cherry tomatoes so they fill each pepper “boat” to overflowing. As they roast the tomatoes will shrink in size. Tuck garlic cloves in between the tomatoes. Finish with capers. Drizzle with remaining olive oil. Sprinkle crushed basil over all. Bake 40-45 minutes. Allow roasted peppers to cool to room temperature before serving.

Jalisco Pico de Gallo

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Jalisco Pico de Gallo! It wasn’t until recently I dined at a family-owned Mexican cantina where the recipes truly originated from Guadalajara. I know this because the waitress explained that Jalisco-style dishes might taste different than anything else I tried before. “For starters,” she explained, “only fresh vegetables are used. We use Mexican oregano for flavor.” I was intrigued. So much so, I made a batch of pico de gallo when I returned home. The Jalisco-style street tacos come later. Stick around and tell me what you think.

JALISCO PICO DE GALLO

Ingredients:

7 Roma tomatoes, sliced and chopped

1 1/2 tablespoon kosher salt

6 Serrano chile, stems removed

3 jalapeño peppers, stems removed

1 sweet onion, chopped

2 tablespoons Mexican oregano, dried

2 teaspoons garlic powder

3 teaspoons cumin powder

1 cup cilantro leaves, chopped

1 tablespoon orange/mango juice

1 tablespoon lime juice

Instructions:

In a large bowl, place Roma tomato chunks. Sprinkle with kosher salt. Using a mini chopper, pulse Serrano peppers until finely chopped. Add to the bowl. Next, place jalapeño peppers in the mini chopper; pulse until finely chopped. Scrape sides and add to the bowl. Add chopped sweet onion to tomato mixture. Sprinkle on Mexican oregano, garlic powder, and cumin powder. Mix well. Fold in chopped cilantro leaves. Drizzle with orange/mango juice and lime juice. Gently stir. Transfer pico de gallo and liquid to covered jars and refrigerate. The flavors intensify as they marinate. Serve with tortilla chips or as a topping for Mexican dishes.

Dang Good Mac & Cheese

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Dang Good Mac & Cheese! I just cranked up this all-time favorite dish a notch, maybe two. Cheddar cheesy? It’s in there. Mozzarella madness? Oh, yeah. Palatable parmesan? Absolutely. Sooo, what’s the big deal, you wonder. Well…I kinda switched out the macaroni pasta noodles for gnocchi’s pillow-like tender dumplings that swaddle themselves in a blanket of creamy cheese sauce. Hold on. Then I topped it all with a buttery crunch topping of panko and Italian bread crumbs. Mmmwah! Life doesn’t get any better that this.

DANG GOOD MAC & CHEESE

Ingredients:

1-pound package gnocchi

1 1/2 tablespoons cornstarch

1/2 cup chicken broth

1 tablespoon olive oil

1 clove garlic, chopped

1/2 cup milk, warmed

3/4 cup mozzarella cheese, shredded

1/2 cup sharp cheddar cheese, shredded

1/4 cup parmesan cheese, grated

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/4 cup panko and Italian bread crumbs

1 tablespoon butter, melted

Parsley, for garnish

Instructions:

Preheat oven to 325°. Spray a casserole dish with nonstick oil. Set aside. Cook the gnocchi, according to package directions. Drain, transfer to a large bowl, and set aside. Whisk together cornstarch and chicken broth in a measuring cup until completely dissolved. Set aside. Warm olive oil in a large saucepan over medium heat. Add garlic. Sauté 1-2 minutes until fragrant. Slowly add cornstarch mixture, stirring constantly to make a light brown roux. Add warm milk, stirring until smooth as the mixture reaches a low boil. Remove pan from heat; stir in mozzarella, cheddar, and parmesan cheeses until melted and smooth. Season with sea salt and black pepper. Pour the cheese sauce over the gnocchi until evenly coated. Transfer to the prepared casserole dish. Combine panko and Italian seasoned breadcrumbs with the melted butter. Sprinkle over the cheesy gnocchi. Bake 15 minutes to brown the topping. Garnish with fresh parsley. Serve immediately.

Basil Pesto Pasta

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Basil Pesto Pasta! I’m tired. And I’m hungry. What in the world can I cook for dinner that doesn’t take forever? But I want the taste to make me feel like I’m someone special. First of all, go over to the wine rack and open a nice bottle of Cabernet Sauvignon. Pour a little into a stemmed glass. Swirl and take a sip. This will put you in the mood. The wonderfully sweet herbal notes of the fresh basil will complement the flavor of the wine. Plus, the olive oil and parmesan cheese in the pesto sauce enhance the richness of fruit in the Cab. Take another sip. Now let’s get started. (Footnote: Obviously if you already have a jar of your favorite Basil Pesto in the kitchen pantry, you’re one step ahead.)

BASIL PESTO PASTA

Ingredients:

10.5 ounce package of cherry tomatoes

12 large basil leaves

1/3 cup almonds, slightly toasted

1 garlic clove, peeled and minced

1 pound spaghetti

1 tablespoon sea salt

Transfer spaghetti to a bowl. Quickly toss with pesto sauce. Sprinkle parmesan cheese over all. Garnish with basil leaves.
