HONEY BUTTER SHRIMP

Ingredients:

1 1/2 pounds jumbo shrimp, peeled and deveined

1/4 teaspoon seasoned salt

1/8 teaspoon white pepper

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon ginger

1/8 teaspoon cayenne pepper

2 tablespoons butter

3 ounces coconut milk

1 tablespoon soy sauce

2 tablespoons raw honey

Zest and juice from one lime

2 tablespoons cilantro, chopped

Instructions:

Pat the shrimp dry with a paper towel. Sprinkle with seasoned salt and white pepper. Warm olive oil in an iron skillet over medium heat. Add shrimp and cook until pink, about 2 minutes per side. Add minced garlic, ginger, cayenne pepper, and butter. Cook the shrimp in the butter until the garlic caramelizes, about 2 minutes. Add coconut milk, soy sauce, and raw honey. Stir to combine. Simmer 2-3 minutes until completely warmed. Remove from heat. Stir in lime juice, zest, and cilantro. Serve warm over rice.

If garlic is your friend, get ready for a road trip you will long remember. Roasted garlic cloves could make you feel extra special. Especially slathered across a slice of crusty artisan bread. When garlic bulbs are slow-roasted in the oven, they become soft, caramelized, and almost sweet. The tantalizing aroma will practically drive you crazy. As you wait with anticipation, don’t be surprised if you find your mouth watering just a bit. Be patient. Once done, the tender golden cloves collapse and spread like butter. It is definitely worth the time spent in expectation.

GARLIC BULBS ROASTED

Ingredients:

3 garlic bulbs

3 teaspoons olive oil

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

1/8 teaspoon rosemary leaves

Instructions:

Preheat oven to 400°. Peel away outside loose layers. Slice 1/4 off the top of each garlic bulb to expose the cloves. Place cut side up on a sheet of foil. Drizzle olive oil over each. Season with sea salt, cracked black pepper, and rosemary leaves. Fold foil overtop the garlic, and place in an ovenproof dish. Roast for 45 minutes. Cloves will begin to soften and turn golden in color. Remove from oven. Cool slightly. Gently squeeze the cloves to push them out or use a pointed butter knife. Spread mashed garlic on crusty artisan breads and crackers.

Jollof Spaghetti

Just when you thought you’ve heard of everything, along comes another version of spaghetti night that just made your life a little easier. Gone is the method of boiling water to cook the pasta, worrying about how to keep the starch from building up, or the fact that oil makes the sauce slide right off. Sound familiar? Been there, done that. With this technique, the spaghetti cooks slowly in the marinara sauce. No advanced parboiling required. The results are moist, definitely al dente, and paired with the meatballs…out of this world. I see this in your future.

JOLLOF SPAGHETTI

Ingredients:

28-ounce can Roma tomatoes in basil sauce, cut-up

1/4 teaspoon oregano

1/4 teaspoon garlic powder

1/4 teaspoon basil

1/4 teaspoon marjoram

1 teaspoon olive oil

1 teaspoon agave nectar

1 teaspoon kosher salt

1/8 teaspoon red pepper flakes

1/2 cup sweet onion, chopped

1/2 cup green pepper, chopped

8 ounces spaghetti

1 pound frozen large Italian-style meatballs, precooked and thawed

Parmesan cheese, for garnish

Instructions:

In a large bowl, combine Roma tomatoes in sauce, oregano, garlic powder, basil, marjoram, olive oil, agave nectar, kosher salt, and red pepper flakes. Mix well. In a microwave-safe dish, combine sweet onion and green peppers. Microwave on High for 2 minutes. Add to marinara sauce. Transfer mixture to a Dutch oven. Bring to a boil over medium-high heat. Add spaghetti; stir. Reduce heat to simmer for 15 minutes or until spaghetti is cooked. Stir occasionally to separate pasta. In a microwave-safe dish, add the Italian-style meatballs. Cook on High setting, according to package directions. When cooked, add to the spaghetti mixture. Gently stir. Simmer 5 minutes longer to combine flavors, or keep warm until ready-to-serve. Spoon into bowls and garnish with parmesan cheese.

What’s Cooking in Gail’s Kitchen? Clean Eating: Egg Roll in a Bowl! For once in my life I’m taking the easy route to an old favorite. Making eggs rolls, using store bought wrappers, can be quite a labor-intensive ordeal. There’s the cutting of vegetables, marinating of meat, separating the wrappers and covering them with a moist towel, then heating the oil for deep-fried results. And there’s nothing wrong with that. I just wasn’t up to the task when what I really wanted was more of the amazing filling to devour. Don’t get me wrong, I still drizzled on the duck sauce, probably more than was necessary. But it’s all a matter of individual taste. Lean in and I’ll tell you a secret. I’d do it again.

EGG ROLL IN A BOWL

Ingredients:

2 tablespoons sesame oil

1 onion, diced

3 cloves garlic, minced

1 pound shredded pork, precooked

1/2 teaspoon ginger

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon sriracha sauce

14-ounce bag coleslaw mix

3 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons toasted sesame seeds, for garnish

Drizzle of sriracha

Green onions, for garnish

Duck Sauce, if desired

Instructions:

Warm the sesame oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic. Sauté until the onions are translucent and the garlic is fragrant. Add the shredded pork, ginger, sea salt, black pepper, and sriracha sauce. Mix well. Cook until the pork is heated through. Add the coleslaw mix, soy sauce, and rice vinegar. Sauté until the coleslaw is slightly tender. Divide into serving bowls. Garnish with toasted sesame seeds, drizzle of sriracha, and chopped green onions. Spoon prepared Duck Sauce over top, if desired.

X-Treme Everything Deviled Eggs

When it comes to deviled eggs, you hear a plethora of descriptions ranging from “world’s best” to “million dollar” to “dangerously good” deviled eggs. But here’s the catch: Everyone has a different number of taste buds. They extend beyond your tongue to include the roof of your mouth as well as the inner cheeks and throat. What you find appealing may not interest me in the least. Here’s a good example. Everything But Bagel Seasoning contains garlic, onion, poppy seeds, and sesame seeds. While it may make your heart flutter sprinkled all over a freshly baked bagel, it may sound completely gross mixed in a deviled egg. On the other hand, when I topped the deviled egg with a clump of newly grown alfalfa sprouts, my taste buds did something similar to a TikTok dance. Just saying.

X-TREME EVERYTHING DEVILED EGGS

Ingredients:

6 hard-boiled eggs

2 tablespoons mayonnaise

2 tablespoons cream cheese, room temperature

1 tablespoon Everything But Bagel Seasoning

Alfalfa sprouts, for garnish

Instructions:

Peel the prepared hard-boiled eggs. Slice in half horizontally. Carefully remove the solid yolks and transfer to a small bowl. Place the egg whites on a serving platter. Using a fork, mash the egg yolks into a fine crumble. Add mayonnaise and softened cream cheese. Mix until smooth and creamy. Fold in Everything But Bagel Seasoning. Spoon the yolk filling into the egg whites. Sprinkle more seasoning on top, if desired. Garnish deviled eggs with a crown of fresh alfalfa sprouts.

Wings Beans Shoyu

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Wing Beans Shoyu! Have you ever seen a four-angled bean? It actually has four corners. The rough texture looks a little odd, all jagged and such. Since they grow in tropical climates where there is plenty of humidity, rainfall, and warmth, there’s a pretty good chance you won’t find them at your local grocery store. However, they are readily available at Farmers Markets in the Hawaiian Islands, which is where I got these delectable little jewels. They taste similar to a snow pea with a slightly sweet crunch. Then there’s the sauce. YUM!

WING BEANS SHOYU

Ingredients:

1/2 pound wing beans, washed, ends trimmed, and cut into bite-size pieces

1/4 cup soy sauce, Japanese-style

2 tablespoons agave nectar

1/2 teaspoon garlic powder

1 teaspoon red pepper flakes

1 strip bacon, cooked and crumbled

Instructions:

Place prepared wing beans in a covered casserole dish. Add 2 tablespoons water. Microwave on High setting for 3 minutes until crisp-tender. Do not cook until mushy. Drain. Add crumbled bacon. Combine soy sauce, agave nectar, garlic powder, and red pepper flakes in a bowl. Whisk to blend flavors. Drizzle over wing bean mixture. Toss to coat. Serve warm.

Ultimate Turkey Hash

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Ultimate Turkey Hash! There’s something about eating a forkful of savory potatoes for breakfast. And if watching your carbs is a thing, your body has a better chance of burning carbs in the morning. At least that’s what my husband tells me. I tend to look more at portion-control and fat content. Then again, I also put a lot of value in metabolism, genetics, and good ole nutrition. No matter how you serve it up, in the end it’s nothing more than a turkey shoot.

ULTIMATE TURKEY HASH

Ingredients:

1 potato, washed with skin on

1-2 tablespoons olive oil

1/4 cup green pepper, chopped

1/4 cup onion, diced

1/2 teaspoon seasoned salt

1/4 teaspoon garlic and herb seasoning blend

1/2 cup seasoned turkey, shredded

2 eggs

Instructions:

Wash potato, pierce with a knife, and microwave on High for 4 minutes. Transfer to a cutting board. Cut into chunks. Warm olive oil in a medium skillet over medium-high heat. Add green peppers and diced onions. Sauté 5 minutes, or until soft. Add potatoes. Sprinkle with seasonings. Cook until potatoes turn golden brown. Add shredded turkey. Heat through. Make two wells. Spray centers with nonstick oil. Drop an egg into each well. Cover pan for one minute. Reduce heat to low. Check eggs. Cover one minute longer or cook until eggs are set. Serve immediately.

By adding fresh ingredients, it definitely kicks things up a notch. When people cram into the kitchen to watch, assign them a minor task such as chopping fruit into chunks or snipping cilantro into small sprigs. Real conversations happen in the kitchen. Everyone benefits and memories are created. After all, being involved is natural and welcoming. It’s how we all stay connected.

SEASONED SHRIMP PINEAPPLE PUPUS

Ingredients:

1/2 cup papaya, cut into chunks

1/2 cup pineapple, cut into chunks

12 jumbo frozen shrimp, precooked and thawed

1 tablespoon olive oil

1/2 teaspoon seasoned salt

1/2 teaspoon oregano

1/8 teaspoon garlic powder

1/8 teaspoon red pepper flakes

Fresh cilantro

Instructions:

Arrange papaya chunks on a decorative platter. Set aside. Spray a skillet with nonstick oil. Heat pan on medium-high heat. When the skillet is hot, arrange pineapple chunks in a single layer. They will sizzle and char. Flip over to darken both sides. Remove and add to the platter. Warm olive oil in the same skillet. Layer shrimp without overlapping. Sprinkle with half the seasoned salt, oregano, garlic powder, and red pepper flakes. Slightly sear, then flip over. Sprinkle with remaining seasoning. When shrimp is golden brown, transfer to the pupu platter. Garnish with fresh cilantro.

Pinto Bean Cottage Ham Stew

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Pinto Bean Cottage Ham Stew! Whenever I make a main course meat, I usually have enough excess to freeze a portion or two for recipes down the road. It keeps us from growing weary of eating the same thing over and over until it’s gone. This recipe is one of those “second meals” from the cottage ham dinner recently. It can easily be substituted with ham or completely omitted for a vegetarian meal. It’s nice to have options, isn’t it?

PINTO BEAN COTTAGE HAM STEW

Ingredients:

1 teaspoon olive oil

1/4 cup onion, chopped

1/4 cup celery, diced

6 mini carrots, sliced

15-ounce can pinto beans, with liquid

1/2 teaspoon garlic powder

1/2 teaspoon marjoram

1/2 teaspoon thyme

2 teaspoons liquid smoke

1/4 teaspoon black pepper

2 cups water or broth from cottage ham*

1 cup cottage ham, cooked and cut into bite-sized pieces

1-2 bay leaves

Instructions:

In an iron skillet, warm olive oil over medium heat. Add chopped onion, diced celery, and sliced carrots. Cook 10 minutes, or until tender. Add the pinto beans with liquid, garlic powder, marjoram, thyme, liquid smoke, and black pepper. Stir. Slowly add water and cottage ham pieces. Stir to combine. Place the bay leaves on top. Bring to boil, then reduce to a simmer. Cover. Cook for 30 minutes. For a thicker stew, lightly mash some of the pinto beans. Remove bay leaves before serving.

*Broth was saved from the original preparation of the cottage ham.
