What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Winner, Winner, Chicken Dinner! What I love about this recipe is any type of chicken will do. If you prefer wings, thighs, drumsticks, breasts, or all of the above, it works! The lemony citrus accent is perfect with a side salad and a piece of warm crusty bread. If you can get your hands on a lemon infused olive oil, you may want to take the plunge. It’s also a great way to jazz up an ordinary salad with the bright, tangy flavor of citrus. Balance it out with a pomegranate balsamic vinegar for a winning combination. Who knows, you may have found a new favorite. 
WINNER, WINNER, CHICKEN DINNER 
Ingredients:

6 chicken fillets

2 tablespoons olive oil

1 teaspoon sea salt

1/8 teaspoon black pepper

1 tablespoon thyme, chopped 

1/8 teaspoon garlic powder 

1/4 teaspoon red pepper flakes

1/4 teaspoon granulated lemon zest

1 tablespoon lemon juice

1 lemon, sliced and quartered 

6 green onions
Instructions:

Preheat oven to 400°. Trim and pat dry the chicken fillets. In an iron skillet over medium heat, add olive oil. When hot, carefully place chicken in pan. Season with salt, pepper, thyme leaves, garlic powder, red pepper flakes, lemon zest, and lemon juice. Sear both sides for 3-4 minutes each. Add lemon slices, wedges, and green onions. Transfer skillet to oven. Bake for 15-20 minutes. Serve chicken with roasted lemons and onions.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Veal Parmesan! Actually, this recipe works really well with chicken, if you choose to substitute. Either way, it’s a gourmet dinner entrée that deserves a friendly nod of approval. By first browning the coated veal in a skillet, the crust seals in the rustic Italian flavor. Top it with Muenster cheese instead of mozzarella for a tangy smooth complement to the savory tomato sauce. 
VEAL PARMESAN 
Ingredients:

1 pound veal cutlets or chicken breasts

1/3 cup Italian dry bread crumbs

1/3 cup Panko seasoned dry bread crumbs

1/3 cup Parmesan cheese, grated

1 egg, beaten

2 tablespoons milk

1/4 cup vegetable oil

2 cups Italian tomato pasta sauce, chunky

2 cups Muenster cheese, sliced
Instructions:

Preheat oven to 350°. Between plastic wrap, flatten each cutlet to a disc. In a shallow dish, whisk egg and milk together to blend. On a sheet of waxed paper, combine Italian bread crumbs, Panko bread crumbs, and Parmesan cheese. Dip veal into egg mixture, then coat with bread crumb mixture. Heat vegetable oil in a large skillet over medium heat. Cook the veal 4-5 minutes per side until golden brown. Drain on paper towels. In a greased baking dish spoon half the pasta sauce on the bottom. Next layer the veal cutlets. Spoon remaining sauce over veal. Top with Muenster cheese overlapping the meat. Bake uncovered for 25 minutes until sauce is bubbly and cheese is golden brown in spots. Garnish with fresh basil.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Oyster Snack Crackers! When you get that craving for something slightly salty partnered with a crunchy snack, turn to these little gems made from basic oyster crackers. Add seasonings and oil; bake and store in an airtight container. I literally sprinkle them on homemade soups, organic salads, and sometimes the palm of my hand. In a pinch, I’ve crushed them as a coating for baked chicken or fish. It’s all up to you. 
OYSTER SNACK CRACKERS 
Ingredients:

16-ounce package of oyster crackers

1/2 cup butter, melted

1/2 cup olive oil

1 envelope dry ranch dressing mix

1/2 teaspoon dill weed

1/4 teaspoon onion powder

1/2 teaspoon lemon pepper
Instructions:

Preheat oven to 325°. Take a one gallon ziplock bag. Pour oyster crackers into bag. In a glass measuring cup, combine butter, olive oil, ranch seasoning mix, dill weed, onion powder, and lemon pepper. Stir well. Pour over crackers. Seal the bag and toss to coat, alternating every 5 minutes until all liquid is absorbed. Transfer to a baking sheet. Form single layer. Bake 10 minutes; toss and bake 10 minutes longer. Do not burn. Let cool and then store in an airtight container. Will keep for weeks.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Mushroom Beef Tips! The biggest challenge you’ll have today is deciding if you’re going to serve this over buttery egg noodles or garlic mashed potatoes! I know, right? Some days I take the way of least resistance and use a slow-cook method, but this recipe can certainly be pulled together in minutes as well. I really enjoy using my French Le Creuset cast-iron Dutch oven because it seals in the juices the way a crockpot enhances results. It just goes to show you how creative cooking can be. 
MUSHROOM BEEF TIPS
Ingredients:

1 pound sirloin steak, boneless, cut into 1-inch pieces 

10-ounce can beef consommé 

1/4 cup red wine

1/4 cup Lea and Perrins sauce

1 tablespoon French Dijon mustard

1/8 teaspoon tarragon 

1/8 teaspoon garlic powder 

1/8 teaspoon seasoned salt

1/8 teaspoon black pepper

1 cup mushrooms, sliced

2 tablespoons flour

2 tablespoons water
Instructions:

Place beef tips in a covered roaster. Add beef consommé, wine, Lea and Perrins sauce, mustard, tarragon, garlic powder, salt, and pepper. Place sliced mushrooms over all. Cover and bake at 275° for 6-8 hours. Then To mix water and flour in a small bowl, to thicken sauce, and stir into beef mixture. Cover and cook another half hour until thickened. Serve over noodles or potatoes.

This dish is fast and easy to prepare, while managing portion-control at the same time. If you are looking for a meatless meal, simply adjust the recipe to suit your needs. The taste is unbelievable and leftovers will have you looking forward to a savory dinner later in the week. Mama Mia, that’s amazing!
LASAGNA LOVERS
Ingredients:

1 pound Italian sausage, bulk

1/4 cup onion, chopped

1 clove garlic, minced

1 teaspoon fennel

1/8 teaspoon basil

1/8 teaspoon oregano 

1/8 teaspoon marjoram 

4 ounces mushrooms, sliced

24 ounces pasta sauce

1 cup water

2 cups ricotta cheese

2 cups mozzarella cheese

1/2 cup Parmesan cheese

2 eggs

1 tablespoon parsley flakes

16 ounces lasagna noodles 

Baby Kale Leaves, stems removed
Instructions:

Preheat oven to 350°. In a large skillet brown Italian sausage until crumbly. Drain. Add onion, garlic, fennel, basil, oregano, marjoram, and mushrooms. Mix well. Add pasta sauce and water to the browned meat mixture. Simmer 10 minutes. Set aside. In a medium bowl, stir together ricotta cheese, 1 1/2 cups mozzarella cheese, Parmesan cheese, eggs, and parsley. Prepare lasagna noodles per package directions. Drain. When cooked, place the noodles lengthwise in a single layer on two sheets of aluminum foil. This makes it very easy to fill and roll up. Grease a 9″x13″ baking dish. Spread one half of the meat mixture on the bottom of the dish. To assemble lasagna rolls, spread 2-3 heaping tablespoons of ricotta cheese filling along noodle. Top with baby kale leaves. Beginning at one end, roll the noodle up. Transfer to baking dish. Repeat until all ingredients are assembled and arranged. Finish by pouring the remaining pasta sauce over lasagna rolls. Sprinkle 1/2 cup of mozzarella cheese over top. Cover with foil. Bake 45 minutes. Remove foil and bake 10 minutes longer until hot and bubbly. Serve immediately.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Roasted Turkey Breast! Life just got a little easier. Instead of cooking an entire holiday bird, it is just as rewarding to roast a turkey breast. You still get the herb seasonings and butter-basted juicy portions, along with drippings for a savory pan gravy, without all the time and effort. It’s simple, economical, and carves up nicely. One more reason to serve turkey for any occasion.  
ROASTED TURKEY BREAST 
Ingredients:

5-pound bone-in turkey breast, thawed

1/8 teaspoon parsley 

1/8 teaspoon thyme

1/8 teaspoon rosemary 

1/8 teaspoon sage 

1/8 teaspoon white pepper

1 teaspoon sea salt

2 tablespoons butter, softened
Instructions:

Preheat oven to 325°. Place turkey breast side up in a roaster. Insert meat thermometer so the tip is at the thickest part of the breast meat. Brush the bird with butter. Sprinkle seasonings over all. Add enough water to cover the bottom of the pan. Do not use a lid. Every hour, baste the breast with butter or pan drippings. Turkey is done when the thermometer reads 185°, approximately 2 1/2 hours. There is no substitute for a meat thermometer for determining the doneness of a turkey, in my opinion. Remove from oven and allow it to stand for 15-20 minutes before carving. The skin will be crisp and the breast meat will be moist.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Havarti Mashed Potatoes! The best kept secret for staying organized during the flurry of activity of family gatherings is “make-ahead” recipes that have the oven doing most of the work. By creating this side dish the day before you eliminate everyone hovering in the kitchen while you whip it up at the last minute. And leftovers are a breeze because they automatically become Divine Duchess Potatoes.* Do yourself a favor, enjoy that glass of wine with your guests while the mashed potatoes bake in the oven. 
HAVARTI MASHED POTATOES 
Ingredients:

10 potatoes, peeled and cut up

4 tablespoons butter, softened 

1/2 cup milk

1/2 cup yogurt 

1/2 teaspoon rosemary 

1/2 teaspoon sea salt

1/8 teaspoon cracked black pepper 

1 cup Havarti cheese, shredded

1/2 cup extra sharp cheddar cheese, finely shredded 

1 tablespoon parsley
Instructions:

Preheat oven to 350°. Grease a 1 1/2 quart casserole dish. Place potatoes in a 4 quart pan. Cover with water. Salt if desired. Heat to boiling; reduce heat to medium-low and cook potatoes until tender, about 15 minutes. Drain well. Add butter and mash. Slowly add milk beating slowly to eliminate lumps. Add yogurt, rosemary, salt, and pepper. Beat vigorously until potatoes are fluffy. Fold in Havarti cheese. Transfer to casserole dish and top with cheddar cheese. Bake uncovered 30-35 minutes. Garnish with parsley.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Ziti Baked Spinach! Four simple ingredients are baked together to create a timeless Italian favorite: ziti pasta, tomato sauce, spinach, and cheese. The rest is simply embellishment for the palate. The short tubular shape of ziti grabs onto chunky sauces, making it a distant cousin to penne, which may be easier to find in the grocery aisle. However, I visited a specialty store where I chose an authentic organic brand of ziti pasta made in Italy. Buona Saluté!
ZITI BAKED SPINACH 
Ingredients:

8 ounces ziti

1 10-ounce package frozen spinach, thawed

1/4 cup Italian bread crumbs

1 egg, beaten

2 tablespoons olive oil

3/4 cup mozzarella cheese, finely shredded 

16 Italian style meatballs, halved

8 ounces mushrooms, sliced and sautéed

24 ounce jar of basil spaghetti sauce

1/8 teaspoon oregano 

1/8 teaspoon marjoram 

1/8 teaspoon garlic powder
Instructions:

Preheat oven to 350°. Lightly grease an 8″x8″ casserole dish. Cook pasta according to package directions, al dente. Drain in a colander. Sauté mushrooms in a tablespoon of olive oil. Cook spinach according to package directions. Drain and transfer to a medium bowl. Combine spinach, bread crumbs, egg, olive oil, 1/4 cup cheese, and ziti. In a large skillet, mix spaghetti sauce, mushrooms, Italian sausage, oregano, marjoram, and garlic powder. Simmer for 10 minutes until heated through. Layer a third of the meat sauce on the bottom of the casserole dish. Fill the next layer with the spinach ziti mixture. Top with remaining spaghetti sauce. Sprinkle 1/2 cup mozzarella cheese over all. Bake for 30 minutes. Let rest for 10 minutes and serve.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Understated Stuffed Stromboli! Everyone likes finger food. Take a ready-made French bread dough, add your favorite meats, and cheeses….and Voilà, you have a speedy sandwich assembled in minutes. I often serve it with a side of marinara sauce for dipping. Leftovers make a tasty midnight snack, whether you warm it up or eat it cold. Either way, you won’t see this understated grinder hang around very long. 
UNDERSTATED STUFFED STROMBOLI
Ingredients:

1 tube refrigerated crusty French bread

1 cup mozzarella cheese, finely shredded

1 cup cheddar cheese, finely shredded

1/4 pound deli smoked ham, thinly sliced

1/4 pound deli salami, thinly sliced

1 tablespoon butter, melted

3 tablespoons Parmesan cheese, grated

1/8 teaspoon dill weed
Instructions:

Preheat the oven to 375°. Unroll the dough and pat into a rectangle about 12″ x 14″. Sprinkle with mozzarella to within half an inch from the edges. Layer ham over mozzarella cheese. Top ham with cheddar cheese. Then layer salami over the cheddar cheese. Roll up lengthwise; seam side down on an ungreased baking sheet. Tuck ends under. Brush with melted butter. Sprinkle with Parmesan cheese. Garnish with dill weed. Bake for 25-30 minutes or until golden brown. Slice into four servings.
