Fried Goat Cheese Rounds

What’s Cooking in Gail’s Kitchen? Equal Measures: Fried Goat Cheese Rounds! Now you’re speaking my language. Something fried, something cheesy. And throw in a salad for good measure. Goat cheese, to begin with, is similar to feta but with a nuttier tang to it. Does that make sense? When it’s coated with a dusting of Panko breadcrumbs and Italian seasoning, then quick-fried in an olive oil-butter blend, the results are amazing. The outside is crunchy while the inside melts in your mouth. I prefer an oil and vinegar dressing, but certainly you can opt out for your favorite bottled dressing if you’re short on time. Either way, the cheese is the main attraction on a plate of mixed salad greens. You know you wanna try it. Permission granted.

FRIED GOAT CHEESE ROUNDS

Ingredients:

4-ounce log goat cheese, refrigerated

1 egg white, beaten

1/2 tablespoon water

1/2 cup Panko breadcrumbs

1/2 teaspoon Italian seasoning

Mixed Salad Greens

Cherry Tomatoes, cut in half

1/2 tablespoon olive oil, for frying

1 tablespoon butter, for frying

Ingredients for Dressing:

1 tablespoon apple cider vinegar

1 tablespoon garlic wine vinegar

1/8 teaspoon sugar

1/4 teaspoon kosher salt

1/8 teaspoon black pepper

1 egg yolk

1/2 cup olive oil

Instructions:

Cut the cold goat cheese into 1/2” thick slices. Whisk the egg white (save yolk) and water together in a small dish. On a sheet of waxed paper, combine Panko breadcrumbs and Italian seasoning. Dip each slice of cheese in the beaten egg white, then coat both sides with breadcrumbs. Place cheese rounds on a wax paper-lined platter. Refrigerate 15 minutes. To make the dressing, use a small food processor. Combine apple cider vinegar, garlic wine vinegar, sugar, kosher salt, black pepper, and egg yolk. Blend for one minute. With the motor running, slowly pour the olive oil through the top of the lid. As it seeps through the holes, the vinaigrette will thicken. Toss the salad greens and tomato halves with enough dressing to moisten. Divide among salad plates. Warm 1/2 tablespoon olive oil plus one tablespoon butter over medium high heat. Do not scorch. Quickly fry the goat cheese rounds until golden brown on both sides. Do not melt the cheese inside. Top each salad with 2-3 fried goat cheese rounds. Serve immediately.

Balsamic Reduction Sauce

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Balsamic Reduction Sauce-It’s Sweet! This is the elegant dark sauce you find drizzled over salads, cheese, meats, vegetables, and even fruity desserts in restaurants. At home, it can be made in minutes. You’ll feel like a master chef when you swirl it over your favorite dishes. I do.

BALSAMIC REDUCTION SAUCE-IT’S SWEET!

Ingredients:

1 cup imported Italian balsamic vinegar

1/4 cup pure honey

Instructions:

Mix vinegar and honey together in a reduction pan.* (If you do not have one, simply substitute a 2-quart pan instead.) Bring contents to a boil, then reduce to a low simmer. Stir occasionally. You will need to use the exhaust fan on the stove since the aroma of vinegar will fill the kitchen. It will take 10-30 minutes to reduce to half the amount, depending on how thick you want your sauce to be. I prefer it closer to molasses so it stands up when drizzled. Watch carefully so it does not burn. Set the timer every10 minutes to see how it coats the back of a spoon. (It is also helpful to use the markings on the measuring tool.) Once it has reduced to half, remove from heat and set aside to cool. It does thicken up as it cools. Store in the refrigerator. Drizzle on foods in teaspoon-size portions. Enjoy! You’re Welcome!

* A reduction pan tapers from wide at the top to narrow at the base to encourage evaporation when reducing liquids. It often comes with a measuring spoon that has markings on it for accuracy.

ANGEL HAIR PASTA

Ingredients:

6 ounces angel hair pasta, uncooked

1 1/2 tablespoons olive oil

2 cloves garlic, minced

4-6 Roma tomatoes, quartered

1 green pepper, cut up chunks

1/2 teaspoon sea salt

1/4 teaspoon cracked black pepper

1/8 teaspoon basil

1/8 teaspoon marjoram

16 Italian-style meatballs, fully cooked

Parmesan cheese for garnish

Instructions:

Cook and drain pasta per package directions. As pasta is cooking, heat olive oil in 3-quart saucepan over medium heat. Add garlic and green peppers. Cook 2 minutes until tender; remove from heat. Stir in Roma tomatoes and meatballs. Return to low heat and warm through. Add drained pasta and gently toss with basil, marjoram, salt, and pepper. Serve pasta meal sprinkled with Parmesan cheese. Add a side of crusty garlic toast.

ZUPPA TOSCANA

Ingredients:

1 pound Italian sausage, ground

1 sweet onion, chopped

1/4 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes

2 potatoes, washed with peel on and cut into chunks

14-ounce can chicken broth

1 1/2 cups water

2 teaspoons flour

1 cup heavy cream

2 ounces diced pimentos

2 cups kale, gently torn

4 strips of thick-sliced bacon, cooked and crumbled

Instructions:

In a skillet over medium heat, brown Italian sausage until fully cooked and crumbled. Add onion, garlic powder, sea salt, black pepper, and red pepper flakes. Stir and continue cooking until onions are soft. Reduce heat to keep warm. In a 2-quart pan, add potato chunks, chicken broth, and water. Bring to a boil; reduce heat to medium and cook until potatoes are tender, about 20 minutes. Blend flour with enough water to make a paste. Slowly add flour mixture to potatoes, stirring constantly to avoid lumps. Add sausage mixture. Stir to combine. Simmer 15 minutes. Reduce heat to low; add heavy cream, diced pimentos, torn kale, and crumbled bacon. Heat through. Ladle into soup bowls. Serve with breadsticks or focaccia bread.

TORTELLINI SOUP

Ingredients:

1 pound chorizo sausage, ground

1 tablespoon olive oil

1/2 cup sweet onion, chopped

1/3 cup green pepper, diced

28-ounce can Roma tomatoes, crushed

1/2 teaspoon garlic powder

1 teaspoon sea salt

1/8 teaspoon black pepper

1/4 teaspoon oregano

1/4 teaspoon basil

1/4 teaspoon marjoram

14 ounces vegetable broth

8.8 ounce package porcini mushroom tortellini

1 cup fresh spinach leaves, torn

Parmesan cheese for garnish

Instructions:

Brown chorizo sausage until fully cooked. Meat will be crumbly. Drain well. Set aside. In a large skillet over medium-high heat, combine olive oil, chopped onions, and diced green peppers. Cook until soft. Add crumbled chorizo. Stir. Add Roma tomatoes, garlic powder, sea salt, black pepper, oregano, basil, and marjoram. Stir well to mix ingredients. Add vegetable broth and bring to a boil. Reduce heat, cover, and simmer 30 minutes. Gently fold in tortellini and spinach. Cover and simmer 10 minutes longer until tortellini is tender. Ladle into bowls. Garnish with shredded parmesan cheese. Serve with crostini.

I stumbled onto this decadent cheese with the soft creamy center at first bite when my husband and I visited Little Italy in Boston. Hearing the excitement in the voice of our waiter piqued my interest. Oh my, this has to be the best cheese ever! The easiest way to describe it is to say that it’s a type of fresh mozzarella cheese with a hollow center filled with thick cream that boasts of a rich buttery taste. Make sense? It’s meant to be eaten at room temperature, so don’t waste your money melting it on a pizza.

UPTOWN BURRATA MASTERPIECE SALAD

Ingredients:

1 bunch fresh arugula leaves

3-4 Campari tomatoes, quartered

6-ounces artichoke hearts, marinated

6-ounces Burrata mozzarella cheese

Balsamic Reduction

Cracked black pepper to taste

Instructions:

Arrange arugula leaves in a shallow bowl. Place tomatoes and artichokes around decoratively. Place a portion of the Burrata mozzarella at center stage. Drizzle balsamic reduction sauce over all. Garnish with cracked peppercorns to taste. Yes, please!

What’s Cooking in Gail’s Kitchen? The Daily Special: Noodle Rigatoni! When time is of the essence, and you need a fulfilling meal, this dish can be made in minutes. While the wine is slightly chilling, and you wish to keep the kitchen cool, everything works together between stovetop and microwave. Your tastebuds will be satisfied without salad or bread as well since this meal-in-a-bowl hits the spot.

NOODLE RIGATONI

Ingredients:

1 pound Italian sausage, ground

1/8 teaspoon garlic powder

1/8 teaspoon cracked black pepper

1/4 teaspoon sea salt

1/4 teaspoon fennel

1/4 teaspoon oregano

1/4 teaspoon basil

1/8 teaspoon red pepper flakes

1/8 teaspoon marjoram

1 8-ounce jar marinated artichoke hearts, cut-up

2 cups of Italian Roma tomatoes in sauce, cut-up

1/4 cup feta cheese, crumbled

16 ounces rigatoni noodles

Instructions:

In a large skillet, brown Italian sausage until crumbled and cooked through. Drain and add garlic powder, pepper, salt, fennel, oregano, basil, red pepper flakes, and marjoram. Keep warm over low heat, stirring occasionally. Warm separately the cut up tomatoes and the marinated artichoke hearts. Keep warm. Meanwhile, bring a 4-quart pan of salted water to a boil. Cook pasta until tender; about 10 minutes. Stir often. It should be firm. Drain pasta. Place portions of rigatoni in individual serving bowls. Spoon tomatoes in sauce over noodles. Arrange artichoke hearts around edges. Lastly add crumbled Italian sausage over top. Garnish with feta cheese.

Every once in awhile you have to pause and share the inspiration of fellow bloggers. Today is that day for me. My friend, Andrea, of http://oliveandpastel.wordpress.com/2015/06/24

posted a wonderful recipe for shrimp fettuccine recently. I used her recipe with the ingredients I had on hand in my pantry and created a different version of an old favorite. You can do the same with recipes you find on my blog. It’s really very simple, and the results are tastefully rewarding. Here’s my version.

GOURMET SHRIMP CONCHIGLIE PASTA

Conchiglie is an Italian word which translates to “seashells”, which describes the shape of this pasta. The gourmet part is the color wheel of flavors: spinach, tomato, squid ink, wheat.

Ingredients:

1 cup Conchiglie Gourmet Pasta

1 pound shrimp, cooked, peeled, and tail shells removed

2 tablespoons olive oil

1/2 teaspoon Chesapeake Bay Style Seasoning

1/4 teaspoon dill

1/2 cup mushrooms, sliced

1 jar Bertolli Parmesan Alfredo sauce

Instructions:

In a deep skillet over medium heat, add olive oil and sauté shrimp in seasoning and dill. Remove from pan and brown mushrooms in pan drippings. Do not let pan go dry. If you need moisture, add a tablespoon of lemon juice or lime juice. (Water can be substituted.) Return shrimp to the mushrooms. Add Alfredo sauce and gently stir. Simmer while the pasta is cooking. Meanwhile, cook Conchiglie according to package directions. Drain well and add to the sauce. Mix completely. Simmer 5 minutes longer and then serve. Garnish with shaved Parmesan cheese.
