MEATBALL LOLLIPOPS

Ingredients:

10 precooked frozen Italian meatballs, thawed

15 ounces of prepared marina sauce

1 cup mozzarella cheese, shredded

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

10 party picks

Instructions:

Cook meatballs in a microwave-safe dish, with lid, according to package directions. Drain. Add prepared marina sauce. Cook on 40% power in microwave-safe covered dish for 10 minutes. Pierce each meatball with a party pick and transfer to a platter, or 5 per serving. Spoon marinara sauce over meatballs. Sprinkle with oregano, basil, marjoram, and garlic powder. Divide the shredded mozzarella cheese between portions. Serve immediately.

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Noel Charcuterie Tray! Everyone loves a party. As the host or hostess, you should too. Instead of picking up a ho-hum relish tray at the local supermarket, make a charcuterie tray because they’re fun…and easy entertaining. Basically, it consists of cured meats, cheeses, nuts, fruit, and olives. And there’s no rhyme or reason for arranging things on a tray or platter. The more random the pattern, the better. Fresh herbs can add an aromatic ambiance making your guests feel special. Candles have the same effect, as long as they are away from the direct line to finger food. Crackers or artisan bread are a nice platform for spreadable cheeses or gourmet jams. Getting ideas? I see you nodding your head in agreement, so let’s get this party started.

NOEL CHARCUTERIE TRAY

Ingredients:

4-ounce assorted Antipasto Italiano sliced meats

8-ounces Bleu cheese, wedge

8-ounces Colby Jack cheese cubes

6-ounces Wasabi & Soy Sauce almonds

6-ounce jar Kalamata olives, pitted

1 cup moonshine maraschino cherries

1 cup candied orange peel*

4.25-ounces sea salt snack crackers

4.25-ounces sesame artisan crackers

Fresh Rosemary, for garnish

Instructions:

First, arrange some items in small bowls, like olives, nuts, and fruits. It keeps them contained for easy replenishment. Cured meats and cheese wedges are often the spotlight. As larger items, place then on the tray once you have the bowls in place. Crackers or bread go next. Don’t be afraid to pile them on. Feel free to fill in the “spaces” with salty nuts, cheese cubes, and fresh rosemary sprigs. Enhance your presentation with knotted bamboo picks or cocktail toothpicks for spearing small bites.

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Feta Morning Fried Egg! Thank goodness this is a healthy way to begin my day. Honestly, I think I might be seriously addicted to it. Remember when your kids were little and could go days eating nothing but peanut butter sandwiches? We’d roll our eyes as the pediatrician assured us they would be fine. “It’s a phase”, he’d say, “You’ll see.” And he was right. My kids grew up to be healthy, active teens, and so on. But I’m an adult. And I’ve been making this breakfast for 3 weeks now. Granted, the avocados are in abundance along with the price of eggs being so affordable I feel as though the grocery store is practically paying me to take them home. Do me a favor, try this recipe yourself and give me your feedback. I’d like to know it’s just not me going through a midlife crisis.

FETA MORNING FRIED EGG

Ingredients: (Serves two)

2 slices quinoa multigrain bread, toasted and buttered

1 avocado, pitted and sliced

2 eggs, sunny side up

1 tablespoon butter, melted (optional)

2 tablespoons herbed feta cheese, crumbled

1 Roma tomato, sliced

1/2 teaspoon Italian seasoning

Green onion, for garnish

Instructions:

While quinoa bread is toasting, cook two eggs in melted butter or nonstick oil, over medium heat, according to taste. Set aside. Butter toast. Divide avocado slices between toast. Slide cooked egg onto avocado toast. Sprinkle with herbed feta cheese. Garnish with green onion strips. Serve with sliced Roma tomatoes sprinkled with Italian seasoning.

Dang Good Mac & Cheese

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Dang Good Mac & Cheese! I just cranked up this all-time favorite dish a notch, maybe two. Cheddar cheesy? It’s in there. Mozzarella madness? Oh, yeah. Palatable parmesan? Absolutely. Sooo, what’s the big deal, you wonder. Well…I kinda switched out the macaroni pasta noodles for gnocchi’s pillow-like tender dumplings that swaddle themselves in a blanket of creamy cheese sauce. Hold on. Then I topped it all with a buttery crunch topping of panko and Italian bread crumbs. Mmmwah! Life doesn’t get any better that this.

DANG GOOD MAC & CHEESE

Ingredients:

1-pound package gnocchi

1 1/2 tablespoons cornstarch

1/2 cup chicken broth

1 tablespoon olive oil

1 clove garlic, chopped

1/2 cup milk, warmed

3/4 cup mozzarella cheese, shredded

1/2 cup sharp cheddar cheese, shredded

1/4 cup parmesan cheese, grated

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/4 cup panko and Italian bread crumbs

1 tablespoon butter, melted

Parsley, for garnish

Instructions:

Preheat oven to 325°. Spray a casserole dish with nonstick oil. Set aside. Cook the gnocchi, according to package directions. Drain, transfer to a large bowl, and set aside. Whisk together cornstarch and chicken broth in a measuring cup until completely dissolved. Set aside. Warm olive oil in a large saucepan over medium heat. Add garlic. Sauté 1-2 minutes until fragrant. Slowly add cornstarch mixture, stirring constantly to make a light brown roux. Add warm milk, stirring until smooth as the mixture reaches a low boil. Remove pan from heat; stir in mozzarella, cheddar, and parmesan cheeses until melted and smooth. Season with sea salt and black pepper. Pour the cheese sauce over the gnocchi until evenly coated. Transfer to the prepared casserole dish. Combine panko and Italian seasoned breadcrumbs with the melted butter. Sprinkle over the cheesy gnocchi. Bake 15 minutes to brown the topping. Garnish with fresh parsley. Serve immediately.

Dining Outside the Home: Rosati’s Pizza in Estero, Florida! You learn a lot about a business by talking to the owners. Perhaps that is why I sometimes visit a restaurant in the off hours of the day. You are more apt to find the owners working face-to-face with customers. Rosati’s Pizza is owned and operated by a family who not only strives for perfection, but also cares about the people who walk through their door. When they expanded their business in Estero for dine-in service, Covid hit with a vengeance and caused them to shift to delivery and carry-out service only. That takes a chunk out of overhead, which translates to selling a boatload of pizza. Yet, they endured. And thrived because they do things the old-fashioned way: like sourcing local ingredients, fresh mozzarella, and homemade crusts. Their story goes all the way back to the first pizzerias in Chicago; Italian roots to the core. So proud, they live by the motto, “We don’t cut corners, just slices of pizza.” Dine in, smell the aromas, chat with the staff, and over-order so you have extra servings for leftovers. Don’t forget to add a jar of the Hot Giardiniera. It is ah-mazing!

Located on 5th Avenue, a few steps away from the Sugden Civic Theater, is a great place for meeting people. It’s known as Vergina’s. The neo-classic architecture provides lovely patio dining as well as intimate gatherings inside along the u-shaped bar or at tables located throughout. Vergina’s crafted martinis by personable bartenders, an euphoric wine list, memorable cocktails, and leisurely Italian courses are reasons enough to stop by for social interaction or that weekly “date night”. Unwind where the music is lively, without drowning out personal conversations, and the appetite is fully sated.

L’Olivo Ristorante in Naples, Florida

Dining Outside the Home: L’Olivo Ristorante in Naples, Florida! Located in the heart of Fifth Avenue is an authentic Italian restaurant where Happy Hour, Three-Course Specials, and Featured Entrees make it a memorable place. Although there is a main menu, sometimes it’s a good idea to go with the flow, especially when the chef suggests preset combinations. The portions were reasonable in order to keep a steady pace from one specialty to another. The Bruschetta Prosciutto with shaved parmesan cheese was an easy start, allowing time for sipping on an Aperol Spritzer. The oven-baked Lasagna with bolognese sauce and melted mozzarella cheese was hearty, down to the very last dredge of crusty bread across the marinara. As a finale, there’s always room for dessert when it’s Tiramisu. The espresso-soaked ladyfingers are like eating air. Grazie!

What’s Cooking in Gail’s Kitchen? Start Smart: Marinated Mozzarella Flatbread! You’re probably like everyone else right now and could go to the freezer to pull out a prepared flatbread for supper. Another shortcut is to use marinated mozzarella cheese which already comes sliced in a blend of herbs and olive oil. Oftentimes, I freeze a surplus of cooked meat as well. In this case I already had seasoned Italian sausage, but you could certainly switch things up with pepperoni or sun-dried tomatoes. That’s the beauty of cooking at home. The results bring satisfaction. Just be careful of those piping hot stretchy cheese pulls.

MARINATED MOZZARELLA FLATBREAD

Ingredients:

1 prepared naan flatbread

2 tablespoons olive oil

1 tablespoon cornmeal

1 cup cooked and crumbled Italian sausage

16 ounces marinated mozzarella slices

Crushed basil leaves

Red pepper flakes, to taste

Instructions:

Preheat oven to 400°. Rub 1 tablespoon of olive oil on the bottom of the flatbread. Sprinkle with cornmeal. Carefully flip it over onto a pizza stone. Rub the remaining olive oil onto the top of the crust. Make a layer with the crumbled Italian sausage. Arrange marinated mozzarella slices over meat. Bake for 15 -20 minutes for a crispy crust. The longer it bakes, the more gooey the cheese becomes. When finished, remove from the oven and garnish with crushed basil and red pepper flakes.

Now, imagine this table in the mountainous part of Northern Italy where the chef is transforming ordinary food into spectacular dishes. The secret, you wonder? Fresh, local vegetables, pasta, and seafood with fewer processed ingredients. Traditions are important, cutting corners is not. Each dish is a form of art. Creamy mozzarella, salty prosciutto, and fresh basil leaves will literally drive your tastebuds crazy. Listen to the chatter. Crowd-pleasers are everywhere. Linger over the delicious Italian balsamic vinaigrette drizzled over a garden salad. The aromas seduce the palate with a slightly spicy taste. Aging is the secret, of course.
