Lemon Citrus Cookies

What’s Cooking in Gail’s Kitchen? Lemon Citrus Cookies. With the arrival of Springtime comes the refreshing citrus flavor of this season’s lemons. Even if you’re not a fan, think about the benefits to your immune system. And then have another cookie…..or two. 

LEMON CITRUS COOKIES 

Ingredients:

1 cup butter, softened 

1 1/2 cups sugar

1 egg

1 teaspoon lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla

1/2 teaspoon salt

1/2 teaspoon baking powder

2 1/4 cups flour

Directions:

Preheat oven to 350°. In a large bowl, cream butter and sugar together. Add egg and beat well. Add lemon juice, lemon zest, and vanilla extract. When blended, add salt, baking powder, and flour. Mix together into dough. Roll cookies into 1-inch balls and place 2 inches apart on greased cookie sheet. Bake for 8-10 minutes or until lightly golden on the edges of the cookies.

Lemon Icing:

3 cups sifted powdered sugar

1/3 cup butter, softened 

1 1/2 teaspoons lemon extract

2 tablespoons milk

In a large bowl, beat butter and powdered sugar with electric mixer until light and fluffy. Stir in lemon extract and milk; beat until frosting is smooth and of spreading consistency. Stir in 1/2 teaspoon grated lemon peel. 

Spread evenly on cooled cookies; top with yellow sprinkles. 

Fresh Fruit Salad

What’s Cooking in Gail’s Kitchen?  Fresh Fruit Salad!  Apples, Peaches, Strawberries, Rainer Cherries.  The health benefits are invaluable since most fruits are naturally low in fat, sodium, and calories. Munch on them together for an enticing sweet-tart explosion of delicate flavor.  Partner the golden yellow-colored and red-blushed fruit for a distinctive taste experience with a smooth creamy yogurt dip. In a hurry?  Grab a piece of fruit on-the-go and eat with an individually wrapped portion of string cheese. 

FRESH FRUIT SALAD

2 cups fresh strawberries

2 cups fresh Rainier Cherries

2 Gala apples

2 Georgia Peaches

In a large salad bowl, combine halved strawberries with tops removed, pitted cherries with stems removed, cored apple slices, and cut-up pieces of peach, pit removed.  

DIP

1 cup Greek Yogurt

2 teaspoons lemon juice

1 tablespoon brown sugar

1/2 teaspoon almond extract

In a small bowl, combine Greek yogurt, lemon juice, brown sugar, and 1/2 teaspoon almond extract.  Stir until blended. Serve over fruit in parfait glasses or enjoy as a finger food. 

Zenergy Avocado-Blue Smoothie

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Zenergy Avocado-Blue Smoothie! This recipe will turn you “green with envy”, so to speak. Because the ripe avocado tends to be smooth and creamy, it needs added flavor for pizzazz. Hence, bananas and blueberries enter the picture. I typically have frozen banana slices in the freezer, measured by the “one-banana-per-freezer-bag” method. It not only chills the smoothie, but it actually keeps it cold until you’ve finished drinking it. The touch of sweetness comes from the agave nectar. Before you turn up your nose and head the other way, give it a chance. You may find yourself receiving a pat on the back for such a healthy morning choice. 

ZENERGY AVOCADO-BLUE SMOOTHIE

Ingredients:

1 ripe avocado, pit and skin removed

1 medium banana, cut into slices

1/2 teaspoon lemon juice

1/4 cup broccoli micro-greens

1/4 cup blueberries

1/4 cup milk

1 teaspoon vanilla extract 

1 tablespoon agave nectar

Fresh mint leaves, for garnish

Instructions:

Slice the avocados in half. Put the flesh into a blender. Add banana slices, lemon juice, broccoli micro-greens, blueberries, milk, vanilla extract, and agave nectar. Pulse in blender until smooth. Pour smoothie into two glasses. Top with fresh blueberries; garnish with mint leaves. Serve immediately. 

Oregano Garlic Salad Dressing

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Oregano Garlic Salad Dressing! If oregano and garlic were dance partners, they’d begin as a hip-hop two-step and quickly advance to the Argentine tango. Simmer lightly, highlighted with food and drink, for romance later on. Besides pairing well with the taste buds, they provide extraordinary health benefits to boost the body’s immune system. Some people even say this combo increases their energy level and metabolism. I know both spices take first place in my spice cabinet. Perhaps you agree. 

OREGANO GARLIC SALAD DRESSING

Ingredients:

1/2 cup olive oil

2 tablespoons lemon juice

1-2 tablespoons white wine vinegar

1-2 tablespoons Worcestershire sauce 

3 cloves garlic, minced

1 teaspoon dried oregano 

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Quickly whisk together lemon juice, white wine vinegar, Worcestershire sauce, minced garlic, dried oregano, sea salt, and cracked black pepper. Slowly drizzle the olive oil into the mixture. Whisk together until the oil and vinegar are completely blended. After about two minutes, the dressing should appear to be uniform in texture. 

Fire-Roasted Strawberries

What’s Cooking in Gail’s Kitchen? Uplifting Aromas: Fire-Roasted Strawberries! Try something different with those exceptionally large strawberries you couldn’t resist buying (or picking). You want to choose berries which are firm to the touch, have an appealing aroma, are bright red in color, and taste naturally sweet. Some may elect to use stainless steel skewers to keep the fruit from tipping over or simply to have the appearance of charred grill marks. Kabobs have a charming finish as well. They’re all Strawberrylicious! 

FIRE-ROASTED STRAWBERRIES 

Ingredients:

1 quart fresh strawberries, washed whole

1 tablespoon butter, unsalted

2 tablespoons lemon olive oil

1 tablespoon natural honey

1 tablespoon balsamic vinegar

Instructions:

Preheat a gas grill to 300°. Grease a grill pan with unsalted butter. Set aside. Arrange strawberries in a single layer of a baking dish. Whisk together lemon olive oil, natural honey, and balsamic vinegar. Brush onto strawberries, turning to coat. Transfer the strawberries to the prepared grill pan. Place the pan over the direct heat; close lid, and cook 5 minutes. Turn and repeat until the strawberries are bubbly and beginning to slump. Remove from grill and transfer strawberries to a serving platter. 

Jell-O Shots with Sugared Cranberries

Eating My Way Through the Holidays! Special Edition: Jell-O Shots With Sugared Cranberries! The holidays ring in the cheer with festive activities, enticing food, and snappy beverages. Make things awesome with dressed up Jell-O shots that cap off any occasion. Not only do they have an elegant look, but they satisfy the sweet tooth as a miniature dessert. By creating a garnish of fresh fruit with the sugared cranberries, it’s a classy finish with a gourmet twist! 

JELL-O SHOTS WITH SUGARED CRANBERRIES 

For Make-Ahead Sugared Cranberries:

2 cups sugar, divided

1/2 cup filtered water

12-ounce bag fresh cranberries 

1 cinnamon stick

1 tablespoon lemon juice

Instructions:

Combine 1/2 cup sugar and 1/2 cup filtered water in a saucepan over medium heat. Stir until sugar is dissolved, about 3-5 minutes. Add cranberries. To prevent cranberries from bursting, do not boil. Stir until well coated. Using a slotted spoon, transfer cranberries to a wire rack. Let dry for one hour. Working in batches, roll cranberries in remaining sugar until well coated. Refrigerate for one hour or overnight. Store in airtight container. 

Ingredients for Jell-o Shots:

3-ounce package raspberry gelatin 

1 cup boiling water

1/2 cup amaretto liqueur 

1/2 cup ice water

Sugared cranberries Rosemary sprigs

Instructions:

Empty contents of raspberry gelatin packet into a mixing bowl. Add boiling water. Stir until completely dissolved, approximately 2-3 minutes. Add iced water and amaretto liqueur and iced water. Stir well. Pour into shot glasses. Refrigerate until set, 4 hours or overnight. Garnish with sugared cranberries and rosemary sprigs just before serving. 

Zoodle Zalad

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Zoodle Zalad! Did you know zucchini can be eaten raw the same way carrot sticks became a popular snack? It’s true. To make it interesting and fun, I used the spiralizer attachment to my stand mixer to make curly-cues of color with the fresh zucchini and carrots. Be sure to wash the vegetables to remove dirt beforehand if you plan to leave the skins on. In this case, I peeled the carrots, but left the zucchini skin on. Granted, removing the skins can reduce the nutritional value, so it’s a personal choice left up to you. The spiralizer is a unique tool because some say by making the food attractive and unique, they eat more veggies. I’d have to agree. Many vegetables are high in water content and fiber, so by making a meal of this nature definitely satisfies the body with a full feeling without the sluggish drop in energy. 

ZOODLE ZALAD

Ingredients:

2 medium zucchini’s, spiralized

2 medium carrots, spiralized 

1 pound frozen shrimp, precooked with tails removed

1/4 teaspoon dill weed

Lemon Vinaigrette, for serving

Instructions:

Place spiralized zucchini and carrots in a bowl. Gently toss. Arrange shrimp over all. Sprinkle with dill weed. Serve with a lemon vinaigrette. Enjoy! 

Naked Lobster Tails

What’s Cooking in Gail’s Kitchen? Fabulous Fixings: Naked Lobster Tails! No doubt you’ve heard the expression, “Presentation is everything”. I’m here to say I wholeheartedly agree. The next time you serve lobster, try something different and elevate these tasty morsels to new heights by removing the shells first. The delicate meat smothered in lemon butter can be a rewarding culinary experience. It’s less messy if you do the work beforehand. The lobster tastes just as sweet and succulent for all who partake. Look and see. 

NAKED LOBSTER TAILS

Ingredients:

3 4-ounce lobster tails

5 tablespoons unsalted butter

1 teaspoon Cajun seasoning 

Lemon wedges, for garnish

Dill, for garnish

Instructions:

Preheat the gas grill to 400°. Using a kitchen shears, cut straight down the top of the shell, stopping just before the fins. Slightly release the lobster meat from the shell. Gently pull the lobster up through the top so it rests puffed out on top of the shell. Melt unsalted butter in a microwave-safe dish. Add Cajun seasoning. Stir well. Generously coat the tails with half the butter mixture. Set aside remaining butter to use as a dipping sauce. Place the lobster tails on the grill, meat side down. Close the cover. Grill the lobster for 5 minutes, or until slightly charred with grill marks. Using tongs, gently flip them over and grill for 3 minutes longer until the flesh turns opaque. Internal temperature must reach 140°. Once the lobsters are finished cooking, remove meat from shells. Serve on a platter with remaining butter mixture, a squeeze of lemon, and fresh dill weed. Enjoy!

Kumquat Pineapple Chutney

What’s Cooking in Gail’s Kitchen? Graze or Gobble: Kumquat Pineapple Chutney! Nowadays there’s always a use for something as unique as chutney. Don’t believe me? Check out charcuterie boards filled with meats, cheeses, breads, nuts, and pickles. There always seems to be a nice little bowl of spreadable chunky fruit to balance out the briny flavors. I also added a dollop to roasted pork loin and grilled chicken breasts. Someone even told me they slathered it on a grilled cheese sandwich. Who knew chutney would be your new best friend?!

KUMQUAT PINEAPPLE CHUTNEY 

Ingredients:

5 ounces kumquats 

1 cup crushed pineapple 

3 tablespoons lemon juice

3 tablespoons brown sugar

2 tablespoons orange juice

2 tablespoons orange liqueur 

Instructions:

In a small saucepan of boiling water, blanch the kumquats for one minute. Drain and repeat three more times. Halve each kumquat. Squeeze the juice into a bowl. Discard the pulp and seeds before finely dicing the skin.  In the same saucepan, combine the diced kumquats, crushed pineapple, lemon juice, brown sugar, orange juice, kumquat juice, and orange liqueur. Bring to a boil. Simmer the chutney over medium heat, stirring occasionally. The sauce will thicken in approximately eight minutes. Allow mixture to cool before transferring to a jar. Store covered in the refrigerator.
