Whipped Feta Rice Cake

What’s Cooking in Gail’s Kitchen? A Cut Above: Whipped Feta Rice Cake! Every once in a while a craving for a rice cake enters my mind. Sure, I realize they are basically like eating fat-free air pockets with a satisfying crunch, so I can somewhat rationalize this temptation now and then by adding delicious toppings. Feta cheese, when whipped into submission becomes smooth, rich, and creamy. Lemon adds a refreshing zing, which goes well with pitas and veggies like my favorite, cherry tomatoes. Feel free to add fresh herbs or dried peppers. There’s really no limit to what you can do. 

WHIPPED FETA RICE CAKE

Ingredients: 

8 ounces Neufchâtel cheese, room temperature 

8 ounces feta cheese

1/4 cup water

2 1/2 tablespoons natural honey

1 teaspoon black pepper

1/2 teaspoon sea salt

1/2 lemon, zested

5.5 ounce package plain rice cakes

8 ounces cherry tomatoes, halved

Micro greens, for garnish

Instructions: 

In a food processor, combine Neufchâtel cheese, feta cheese, water, natural honey, black pepper, sea salt, and lemon zest. Blend until mixture is smooth and creamy. Spread the whipped feta onto a plain rice cake. Spoon the cherry tomatoes over the top. Garnish with micro greens. Repeat assembly steps for number of servings needed. Enjoy! 

Vinaigrette, Garlic Red Wine-Style

What’s Cooking in Gail’s Kitchen? A Cut Above: Vinaigrette, Garlic Red Wine-Style! Looking for a versatile salad dressing without mustard? Don’t give me that quizzical stare. I know mustard makes a wonderful bonding agent to keep the oil and vinegar from separating too quickly, but there are some people who simply don’t like the taste of it. Honestly, I could practically drink honey mustard salad dressing if the hubs wouldn’t look at me like I’ve gone off the deep end. SSShhh. It’s our little secret. 

VINAIGRETTE, GARLIC RED WINE-STYLE

Ingredients: 

1/4 cup garlic red wine vinegar 

2 tablespoons lemon juice

1 1/4 tablespoons natural honey

1 teaspoon sea salt

1/8 teaspoon black pepper

1/2 cup olive oil

Instructions: 

In a small bowl, combine garlic red wine vinegar, lemon juice, natural honey, sea salt, and black pepper. Whisk until ingredients are combined. Slowly pour in olive oil; continue whisking so create a smooth texture. Store in a covered jar in the refrigerator until ready to use. Before drizzling over a salad, whisk the ingredients to avoid separation of vinegar and oil. 

Red Pepper Shrimp Guac-Tail

What’s Cooking in Gail’s Kitchen? A Cut Above: Red Pepper Shrimp Guac-Tail! Ohmygosh, I had so much fun making this shrimp appetizer for my last social gathering. You know that set of Chinese soup spoons you have tucked away in the buffet drawer? Well, dust them off because this shrimp cocktail recipe may very well be the star attraction when it’s your turn to host the next party. It’s incredibly easy to pull together such an extraordinary presentation. When everyone is raving about it, simply smile and offer them a crafted cocktail as well. Party-On. 

RED PEPPER SHRIMP GUAC-TAIL

Ingredients: 

I pound frozen cooked shrimp, jumbo size with tail on

Fresh lemon juice

1/4 teaspoon dill weed

2 avocados, ripe

1 small tomatillo, chopped

1 teaspoon lime juice

1/8 teaspoon garlic powder 

1/2 teaspoon sea salt

1 mini red pepper, diced

Broccoli Micro Greens, for garnish

Instructions: 

Place the frozen shrimp in a bowl; cover with tap water to defrost. Change out the water every 10 minutes until shrimp is thawed. Transfer shrimp to a paper towel; pat dry. Squeeze fresh lemon juice over all. Sprinkle with dill weed. To make the guacamole, in another bowl mash avocados with a fork. Fold in chopped tomatillos. Add lime juice, garlic powder, and sea salt. Mix well. Place a spoonful of guacamole on each Chinese soup spoon. Place shrimp on top. Sprinkle diced red pepper and garnish with broccoli micro greens. Arrange spoons on a serving tray. Serve chilled. 

Elderflower Raspberry Muffins

What’s Cooking in Gail’s Kitchen? Home Cooking: Elderflower Raspberry Muffins! If you are a citrus lover, you will think you have died and gone to Heaven. The elderflowers from the St. Germain region of France are harvested into a delectable liqueur every Spring. Their delicate flavor is a blend of lemon, peach, and pear with a slight floral nature. When added to the ripe taste of raspberries with lemon zest, this fruity muffin becomes delightfully pleasing to the palate. 

ELDERFLOWER RASPBERRY MUFFINS

Ingredients:

2 cups flour

1 1/2 teaspoons baking powder

1 teaspoon baking soda

1/4 teaspoon sea salt

1 cup Greek yogurt

1/4 cup milk

1/3 cup butter, melted

1 egg

1/2 teaspoon lemon extract

1/2 teaspoon vanilla extract 

1 lemon for zest strips

1/2 cup sugar

1 1/2 cups fresh raspberries 

Instructions:

Preheat oven to 400°. Spray the muffin tin with a nonstick oil. Combine flour, baking powder, baking soda, and salt in a large mixing bowl. Set aside. Using a food processor, combine lemon zest strips and sugar. Pulse to finely chop the zest into the sugar. Add yogurt, milk, butter, egg, and extracts. Pulse until blended. Mix the yogurt mixture into the flour mixture and fold until almost blended. Gently fold in raspberries. Divide the batter into the muffin cups. Bake the muffins 18 to 25 minutes, until the tops are golden brown. Remove from oven and let cool in the pan for five minutes before covering with glaze. Serve warm. 

Elderflower Glaze

Ingredients:

1 3/4 cups powdered sugar

1/4 cup elderflower liqueur*

2 teaspoons unsalted butter 

Directions:

Combine sugar and elderflower liqueur in microwave-safe bowl. Add butter and microwave for 45 seconds. Whisk until smooth, eliminating lumps. Let sit for a minute or two before pouring over warm muffins. 

*Elderflower liqueur may be substituted by using lemon juice instead. 

Pina Colada Pie

What’s Cooking in Gail’s Kitchen? Simple Sensations: Pina Colada Pie! Sometimes it’s necessary to serve your guests a dessert low in sugar. This one is perfect because it boasts tropical flavor with enough fruity sweetness to satisfy that sugar craving which follows at the end of a meal. Please note you may substitute a sugar-free graham cracker crust for the homemade cookie crust. 

PINA COLADA PIE

Ingredients for Homemade Cookie Crust:

2 cups Macadamia Nut Shortbread Cookies, crushed

1/4 cup butter, melted

Instructions:

Preheat oven to 350°. Mix crushed shortbread cookies and melted butter. Press crumb mixture into a pie plate sprayed with nonstick oil. Bake 10 minutes. Cool before filling. 

Ingredients for Filling:

2 8-ounce blocks of Neufchâtel cheese

1 small box Sugar Free/Fat Free Lemon Jello

1 small box Sugar Free/Fat Free Vanilla Instant Pudding 

4-ounce of Lite Cool Whip

1 8-ounce can crushed Pineapple in Natural Juices, do not drain

1 teaspoon Coconut flavor

Instructions:

Soften Neufchâtel cheese and add other ingredients. Stir until well blended. Pour into pie crust and chill for several hours or overnight. 

*Garnish: Toast 1/2 cup flake coconut in 350° oven for 4 minutes. Watch! Set aside to cool. Fresh strawberries also make an appealing garnish. 

Lemon Citrus Cookies

What’s Cooking in Gail’s Kitchen? Lemon Citrus Cookies. With the arrival of Springtime comes the refreshing citrus flavor of this season’s lemons. Even if you’re not a fan, think about the benefits to your immune system. And then have another cookie…..or two. 

LEMON CITRUS COOKIES 

Ingredients:

1 cup butter, softened 

1 1/2 cups sugar

1 egg

1 teaspoon lemon juice

1 tablespoon lemon zest

1 teaspoon vanilla

1/2 teaspoon salt

1/2 teaspoon baking powder

2 1/4 cups flour

Directions:

Preheat oven to 350°. In a large bowl, cream butter and sugar together. Add egg and beat well. Add lemon juice, lemon zest, and vanilla extract. When blended, add salt, baking powder, and flour. Mix together into dough. Roll cookies into 1-inch balls and place 2 inches apart on greased cookie sheet. Bake for 8-10 minutes or until lightly golden on the edges of the cookies.

Lemon Icing:

3 cups sifted powdered sugar

1/3 cup butter, softened 

1 1/2 teaspoons lemon extract

2 tablespoons milk

In a large bowl, beat butter and powdered sugar with electric mixer until light and fluffy. Stir in lemon extract and milk; beat until frosting is smooth and of spreading consistency. Stir in 1/2 teaspoon grated lemon peel. 

Spread evenly on cooled cookies; top with yellow sprinkles. 

Fresh Fruit Salad

What’s Cooking in Gail’s Kitchen?  Fresh Fruit Salad!  Apples, Peaches, Strawberries, Rainer Cherries.  The health benefits are invaluable since most fruits are naturally low in fat, sodium, and calories. Munch on them together for an enticing sweet-tart explosion of delicate flavor.  Partner the golden yellow-colored and red-blushed fruit for a distinctive taste experience with a smooth creamy yogurt dip. In a hurry?  Grab a piece of fruit on-the-go and eat with an individually wrapped portion of string cheese. 

FRESH FRUIT SALAD

2 cups fresh strawberries

2 cups fresh Rainier Cherries

2 Gala apples

2 Georgia Peaches

In a large salad bowl, combine halved strawberries with tops removed, pitted cherries with stems removed, cored apple slices, and cut-up pieces of peach, pit removed.  

DIP

1 cup Greek Yogurt

2 teaspoons lemon juice

1 tablespoon brown sugar

1/2 teaspoon almond extract

In a small bowl, combine Greek yogurt, lemon juice, brown sugar, and 1/2 teaspoon almond extract.  Stir until blended. Serve over fruit in parfait glasses or enjoy as a finger food. 

Zenergy Avocado-Blue Smoothie

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Zenergy Avocado-Blue Smoothie! This recipe will turn you “green with envy”, so to speak. Because the ripe avocado tends to be smooth and creamy, it needs added flavor for pizzazz. Hence, bananas and blueberries enter the picture. I typically have frozen banana slices in the freezer, measured by the “one-banana-per-freezer-bag” method. It not only chills the smoothie, but it actually keeps it cold until you’ve finished drinking it. The touch of sweetness comes from the agave nectar. Before you turn up your nose and head the other way, give it a chance. You may find yourself receiving a pat on the back for such a healthy morning choice. 

ZENERGY AVOCADO-BLUE SMOOTHIE

Ingredients:

1 ripe avocado, pit and skin removed

1 medium banana, cut into slices

1/2 teaspoon lemon juice

1/4 cup broccoli micro-greens

1/4 cup blueberries

1/4 cup milk

1 teaspoon vanilla extract 

1 tablespoon agave nectar

Fresh mint leaves, for garnish

Instructions:

Slice the avocados in half. Put the flesh into a blender. Add banana slices, lemon juice, broccoli micro-greens, blueberries, milk, vanilla extract, and agave nectar. Pulse in blender until smooth. Pour smoothie into two glasses. Top with fresh blueberries; garnish with mint leaves. Serve immediately. 

Oregano Garlic Salad Dressing

What’s Cooking in Gail’s Kitchen? A Symphony of Flavors: Oregano Garlic Salad Dressing! If oregano and garlic were dance partners, they’d begin as a hip-hop two-step and quickly advance to the Argentine tango. Simmer lightly, highlighted with food and drink, for romance later on. Besides pairing well with the taste buds, they provide extraordinary health benefits to boost the body’s immune system. Some people even say this combo increases their energy level and metabolism. I know both spices take first place in my spice cabinet. Perhaps you agree. 

OREGANO GARLIC SALAD DRESSING

Ingredients:

1/2 cup olive oil

2 tablespoons lemon juice

1-2 tablespoons white wine vinegar

1-2 tablespoons Worcestershire sauce 

3 cloves garlic, minced

1 teaspoon dried oregano 

1/4 teaspoon sea salt

1/8 teaspoon cracked black pepper

Instructions:

Quickly whisk together lemon juice, white wine vinegar, Worcestershire sauce, minced garlic, dried oregano, sea salt, and cracked black pepper. Slowly drizzle the olive oil into the mixture. Whisk together until the oil and vinegar are completely blended. After about two minutes, the dressing should appear to be uniform in texture.
