What’s Cooking in Gail’s Kitchen? Palatable Possibilities: Naan Italian Meatball Wraps! Don’t you just love naan? It is a nice alternative to a sub bun or slice of bread when desiring a sandwich. For those who haven’t tried it yet, naan is a soft flatbread which typically has any airy-like texture. I find it more appealing than pita bread, which tends to be a little drier. Because this recipe included a marinara sauce, naan helps to soak up the flavors and keep the sauce from dripping out, most likely due to the small pockets of air. Looks like it’s time for you to give it the taste test and tell me what YOU think.

NAAN ITALIAN MEATBALL WRAPS

Ingredients:

16 Italian meatballs, frozen pre-made variety; thawed

16 ounces pizza sauce

8 ounces mozzarella cheese, shredded

4 mini naan portions

Baker’s twine

Instructions:

Place Italian meatballs in a microwave-safe covered dish. Heat on High for 3-4 minutes. Drain excess liquid, if any. Add pizza sauce and heat in microwave on 50% for 3 minutes. Remove and set aside. Layer one mini naan on a microwave-safe plate. Sprinkle with a few drops of water; cover with parchment paper. Repeat others to form a stack. Warm naan in the microwave on 40% power for 30 seconds. Repeat, if needed. This will soften the naan in order to make it pliable. Working quickly, arrange 4 meatballs and sauce in each mini naan. Sprinkle with shredded mozzarella cheese. Secure the stuffed wrap with bakers twine. Transfer meatball wrap to a plate. Repeat until all four are complete. Microwave again on 20% power for 30 seconds or until cheese is melted. Serve warm.

MEATBALL LOLLIPOPS

Ingredients:

10 precooked frozen Italian meatballs, thawed

15 ounces of prepared marina sauce

1 cup mozzarella cheese, shredded

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

10 party picks

Instructions:

Cook meatballs in a microwave-safe dish, with lid, according to package directions. Drain. Add prepared marina sauce. Cook on 40% power in microwave-safe covered dish for 10 minutes. Pierce each meatball with a party pick and transfer to a platter, or 5 per serving. Spoon marinara sauce over meatballs. Sprinkle with oregano, basil, marjoram, and garlic powder. Divide the shredded mozzarella cheese between portions. Serve immediately.

Italian Meatball Manicotti

Pasta tubes, known as manicotti, are mere vessels for holding melted cheese, savory meat, Italian herbs, and certain vegetables like spinach or mushrooms. The marinara sauce is spread on the bottom of the dish to prevent the pasta from sticking, or tearing, which would ruin the whole idea of creating the perfect pocket of delicious fillings. With a crowning layer of marinara sauce on top, it deserves a round of applause for the extra cheese sprinkled there for good measure. Cray, Cray!

ITALIAN MEATBALL MANICOTTI

Ingredients:

6 dried manicotti shells

1 tablespoon olive oil

1 clove garlic

12 Italian meatballs, cut in quarters

1/2 teaspoon sea salt

1/8 teaspoon cracked black pepper

1/2 teaspoon dried Italian herb blend

8 ounces marinara sauce, prepared

1/2 cup ricotta cheese

1/2 cup parmesan cheese, shredded

2 tablespoons parmesan cheese, shredded

Instructions:

Preheat oven to 400°. Spray an 8.5”x5.5” baking dish with nonstick oil. Set aside. Cook manicotti shells in boiling water for 9 minutes. Drain and cool on a baking sheet pan. Set aside. In a skillet, warm olive oil over medium heat. Add garlic clove, meatballs, sea salt, cracked black pepper, and Italian herb blend. Cook until heated through, stirring occasionally. Remove and set aside to cool slightly for 5 minutes. Meanwhile, spread half the marinara sauce in the bottom of the prepared baking dish. In a bowl, mix ricotta cheese and 1/2 cup parmesan cheese. Gently fold in meatball mixture. Fill each manicotti shell with meat and cheese mixture; place in the prepared baking dish over the marinara layer. Top with remaining marinara sauce. Cover dish with foil. Bake 30 minutes. Serve immediately.

By using everyday ingredients, mix and shape a giant meatball with your own two hands to feel like a gourmet chef. Smother the meatballs in a jar of marinara sauce, store-bought or made-from-scratch for perfection. And my secret, you ask? Tucked in the top of the meatball, like snow on a mountaintop, is a creamy mozzarella ball. Bet you can’t wait to bite into that!

MOUNTAINOUS MEATBALL

Ingredients:

1 medium onion, chopped

1 tablespoon olive oil

1 cup Italian bread, soaked in milk and squeezed out

1 pound ground sirloin

1/2 teaspoon garlic powder

2 eggs

1/4 cup dry Italian breadcrumbs

1/2 teaspoon sea salt

1/8 teaspoon black pepper

3 sprigs Italian parsley, chopped

3 Ciliegine mozzarella balls (cherry size)

2 cups marinara sauce

3/4 cup Parmesan cheese, grated

3/4 cup ricotta

Fresh basil for garnish

Instructions:

Preheat oven to 400°. Sauté onions in olive oil over medium heat. Set aside. Tear Italian bread into chunks. Add enough milk to cover. Set aside. In a medium bowl, combine ground sirloin, garlic powder, eggs, dry Italian breadcrumbs, sea salt, black pepper, Italian parsley, and the milk-soaked breadcrumbs (with the liquid squeezed out). Mix well. Form into three meatballs the size of a tennis ball. Make an indentation in the top of each meatball. Stuff with a Ciliegine mozzarella ball. Press meat around the cheese leaving only a small bit visible. Place meatballs on a baking sheet covered with parchment paper. Bake 30 minutes until brown and firm. Remove from oven and place each meatball in an individual oven-proof serving dish. Reduce oven temperature to 375°. Spoon marinara sauce over meatballs, dividing it equally between the serving dishes. Top with 1/2 cup of grated Parmesan cheese, between the three dishes. Bake 15 minutes longer. Remove from oven. Sprinkle on the remaining parmesan cheese. Add a dollop of ricotta cheese. Drizzle with olive oil and garnish with fresh basil. Serve with garlic toast.

After all, some days the family schedule runs tight between daily obligations and evening commitments. In the time it takes to cook the pasta, everything else can be thrown together. Utilize the microwave in conjunction with the stovetop for time-saving results. Ready-Set-Go!

FLORENTINE MEATBALL PASTA

Ingredients:

1/2 pound rigatoni pasta

6-8 Italian meatballs, pre-cooked

12 ounces spaghetti sauce, any chunky style

2 cups baby spinach

1/2 cup Parmesan cheese, shaved

Instructions:

Cook rigatoni pasta according to package directions. Drain and set aside. While the pasta is cooking, microwave Italian meatballs according to package directions. In a large skillet on medium heat, combine chunky spaghetti sauce and Italian meatballs. Cook until bubbly, then reduce heat to simmer, stirring gently. Add cooked rigatoni; toss to coat pasta. Turn off heat. Add baby spinach to the skillet. Toss to combine and cover. The steam will wilt the spinach. Right before serving, add Parmesan shavings.

What’s Cooking in Gail’s Kitchen? The Daily Special: Meatball Marinara Moat! Lately we’ve been having some maintenance and home improvements done on the house. Whenever I have workmen around, I tend to offer them a bite to eat without hindering the project at hand. I needed something hearty and filling without anchoring them down afterwards. This savory sandwich sealed the deal when served with a portion of potato salad on the side.

MEATBALL MARINARA MOAT

Ingredients:

1 4-pack hoagie rolls, top cut

16 Italian meatballs, pre-cooked

8 slices provolone cheese

24-ounce jar of all-natural tomato and basil sauce

1/4 cup Parmesan cheese, shredded

Instructions:

Place meatballs in a covered casserole dish. Add tomato and basil sauce. Heat through on 30% power for 10 minutes in the microwave. Slice an opening in the top of the hoagie roll, hollowing out a portion to create a “moat” for the fillings. Place two slices of cheese in each hoagie, allowing them to overlap. Spoon 4 meatballs with sauce into each sandwich, lining them in a row. Sprinkle Parmesan cheese on top. Carefully wrap each hoagie in foil and place in a warm oven until ready to serve.
