What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Peanut Butter Chocolate Hummus! You don’t have to be vegan to appreciate the benefits of hummus, especially this version. It’s more like a reward than a punishment. The peanut-ty taste combined with dark chocolate makes it only a few steps removed from eating a candy bar. But that’s where the dippers come in handy to turn it into a healthy appetizer or afternoon snack. Think celery, gluten-free pretzels, and juicy apple slices. I couldn’t resist a dollop of hummus between two shortbread cookies. Graham crackers would work just as well. Think of the fun you’ll have coming up with more ways to “spread the joy”!

PEANUT BUTTER CHOCOLATE HUMMUS

Ingredients:

15-ounce chickpeas, drained and rinsed

1/4 cup natural peanut butter, creamy

1/4 cup pure maple syrup

3 tablespoons milk

2 tablespoons cocoa powder

2 teaspoons vanilla extract

Instructions:

Once chickpeas are drained and rinsed well, add to a food processor. Pulse to mix. Combine remaining ingredients: natural peanut butter, pure maple syrup, milk, cocoa powder, and vanilla extract. Blend together until hummus is smooth, scraping down the sides as needed. Transfer mixture to a covered dish. Refrigerate one hour. Serve with pretzel sticks, apple slices, shortbread cookies, and celery.

What’s Cooking in Gail’s Kitchen? The Clean Plate Club: Icing Glazed French Toast! This is one of those days where little effort produces extraordinary results. I recently purchased a loaf of homemade raisin bread at the Amish Market, the kind smothered in gooey white icing. Later on, I plumped some raisins to add to the glaze, beat a couple eggs, and Voilà. Within minutes, it was transformed into a bakery-fresh gourmet breakfast. The best part, in my opinion, is being able to slice and eat as the craving hits. You can thank me later.

ICING GLAZED FRENCH TOAST

Ingredients:

1/4 cup raisins

Boiling water

1/2 cup powdered sugar

1-2 tablespoons boiling water

2 large eggs, beaten

1 tablespoon milk

1/2 teaspoon cinnamon

1-2 tablespoons vegetable oil

2 slices raisin bread, cut into quarter triangles

Instructions:

Place raisins in a heatproof dish. Boil water. Pour just enough water over raisins to cover. Stir. Let raisins sit 10 minutes to absorb liquid. Drain, if necessary. Meanwhile, sift powdered sugar into a bowl. Gradually add enough boiling water, stirring constantly, until mixture is smooth and appears like thick cream. It should coat the back of the spoon. Fold the raisins into the icing glaze. Set aside. In a shallow dish, whisk beaten eggs, milk, and cinnamon. In a large skillet over medium heat, warm vegetable oil. Dip each portion of raisin bread into the egg batter. Flip to soak bread completely; coat both sides evenly. Transfer to skillet; cook 3-4 minutes per side until golden brown. Drizzle with raisin icing glaze. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Color of Food: Yukon Gold Mashed Potatoes! You say pō-tay-toe, I say pō-tah-toe, but either way we all love mashed potatoes. My husband would forego the milk completely and focus instead on more French butter. So we compromise. By choosing the beautifully yellow Yukon Gold variety, you’re already getting an earthy, buttery flavor to begin with, thus leaving room for milk, cream cheese, or sour cream additions. Mash up Yukons for the fluffiest, smoothest mound of creaminess. Mmmm. Just don’t forget the gravy.

YUKON GOLD MASHED POTATOES

Ingredients:

2 pounds yellow-skinned Yukon Gold potatoes, peeled and cut into chunks

1 teaspoon sea salt

4 tablespoons butter, room temperature

1/2-3/4 cup milk, warmed

Instructions:

Place cut potatoes into a 2-quart pan with enough water to cover the potatoes. Add sea salt. Bring to a boil; reduce to medium heat and cook 20 minutes or until potatoes are tender. Remove pan from heat. Drain potatoes, leaving them in the pan. Add butter. Cover the pan with the lid. Warm the milk slightly in the microwave. Using a hand mixer, begin adding milk in 1/4 cup increments. Beat potatoes until slightly chunky texture is reached. Continue on for a smoother consistency. Season with salt and pepper. Serve with brown gravy.

What’s Cooking in Gail’s Kitchen? The Color of Food: Crockpot Mac ‘n Cheese! I find this is seriously the best way to make macaroni and cheese for a crowd without all the fuss. It is so kid-friendly, in fact, you may discover you have an extra pair of helping hands without even asking. When using a slow cooker, the pasta softens as the sauce thickens into a hot, creamy, extra-cheesy youthful delight. Top it off with crushed potato chips for a heart-warming side dish.

CROCKPOT MAC ‘N CHEESE

Ingredients:

1 pound cellentani pasta, also known as cavatappi, uncooked

4 tablespoons butter, cut into tablespoon pieces

4 ounces cream cheese, cut into cubes

3/4 cup mayonnaise

1 teaspoon kosher salt

1/2 teaspoon cayenne pepper

1/2 teaspoon black pepper

3 cups milk

1/2 cup heavy cream

2 cups sharp cheddar cheese, shredded

1/2 cup pepper jack cheese, shredded

1 cup potato chips, crushed

Instructions:

Spray the crockpot with nonstick oil. Pour the uncooked pasta into the bottom of the slow cooker. Layer the butter and cream cheese chunks over the pasta. In a large bowl, combine mayonnaise, kosher salt, cayenne pepper, black pepper, milk, and cream. Mix well. Pour over pasta. Stir to blend. Spread pasta into an even layer, being sure to coat everything in sauce. Cover and cook on LOW for 1-2 hours, stirring every 30 minutes. Be sure to spread macaroni into one layer after stirring to keep pasta coated with sauce. When pasta is done, sprinkle shredded cheddar and pepper jack over all. Stir to combine. Replace cover and cook 10 minutes until cheese is creamy and melted. Sprinkle with crushed potato chips before serving.

What’s Cooking in Gail’s Kitchen? The Daily Special: Xylocarp Coconut Bars! Although it’s not typically a word in my vocabulary, I discovered the word xylocarp means “a fruit, such as a coconut, having a hard woody pericarp.” Bingo! It’s the answer to my alphabet challenge when I get to this letter. Everyone is already aware coconut has health benefits. Some even classify it as a superfood. Personally, I just like the taste of it. It can magically transport me to a tropical island with swaying palm trees and hypnotic reggae music. Ahhhhh.

XYLOCARP COCONUT BARS

Ingredients:

1/2 cup butter, melted

1 1/2 cups graham cracker crumbs

1 14-ounce can of sweetened condensed milk

1 cup semi-sweet chocolate morsels

1 1/3 cups of coconut, flaked

1 cup pecans, chopped

Instructions:

Preheat oven to 350°. Spray a 9″x13″ baking pan lightly with nonstick oil. Pour butter in pan to cover the bottom. Sprinkle graham cracker crumbs evenly over butter. Slowly pour the sweetened condensed milk to form another layer. Top evenly with chocolate morsels, coconut, and pecans. Press down firmly. Bake 25-30 minutes or until lightly browned. Cool thoroughly before cutting.

What’s Cooking in Gail’s Kitchen? Home Cooking: X-tra Thick Mango Crush! Is it fresh fruit? Is it ice cream? Or is it a sparkling Italian beverage? Surprise! It’s all three. The intensity of this mid-day treat is so refreshing and thirst quenching, you’ll find yourself asking, “Is it a delightful dessert or a tangy beverage?” My thoughts? I don’t need a reason to enjoy the citrusy intense flavors. After all, it’s Yumolicious and anything is possible!

X-TRA THICK MANGO CRUSH

Ingredients:

2 medium mangoes, peeled and sliced

1/4 cup powdered sugar

1/2 cup heavy cream, very icy cold

1 11.15-ounce can of San Pellegrino Aranciata Rossa Blood Orange Sparkling Beverage

Directions:

Combine the ripe fresh fruit and sugar in a food processor or blender. Process on “Pulse” until the fruit is roughly chopped. With the processor running, slowly add the heavy cream until fully mixed. Transfer fruit ice cream to a plastic storage container with lid. Place in the freezer for 2-3 hours or until firm. To serve, use a melon ball scoop to fill a tall glass. Slowly pour the sparkling blood orange beverage over all, being careful not to foam over. Garnish with toasted coconut.

Eating My Way Through the Holidays! Yuletide Favs: Quiche Fromage! If you’ve ever been to Paris, you can’t help but be charmed by the street vendors near Norte Dame along the Seine River. One in particular featured homemade quiche specialties for picnicking tourists. There’s nothing more charming than grabbing a spot on the nearest bench for a lunchtime picnic in the midst of people-watching, that’s for sure. You can relive the moment with today’s version of cheese quiche made with a puff pastry crust. Ooh là là!

QUICHE FROMAGE

Ingredients:

One puff pastry sheet

5 eggs

1/3 cup crème fraîche or Greek yogurt

1/2 cup light cream

1 teaspoon Herbes de Provence

1/4 teaspoon seasoned salt

1/8 teaspoon cracked black pepper

6-7 ounces Sartori Montamoré cheese, crumbled

Instructions:

Thaw the puff pastry for 40 minutes. Roll out to fit a 10 1/2″ pie plate. Crimp the edges and pierce the bottom with a fork. Place pie plate in the freezer for 30 minutes. Preheat the oven to 425°. Line the pastry with foil and place pastry weights in the bottom. Bake 15 minutes. Remove from oven. Remove the foil and pastry weights, pierce dough again if needed, and bake 5 minutes longer until bottom is golden. Set aside. In a bowl, whisk together eggs, crème fraîche, light cream, Herbes de Provence, seasoned salt, and black pepper. Fold in cheese crumbles. Spoon mixture into the pastry crust. Bake 30 minutes until the filling is golden and the crust is puffed. To test for doneness, insert cake tester. If pick comes out clean, the quiche is baked through. Serve immediately. Enjoy with a glass of Pinot Noir.

Eating My Way Through the Holidays! Yuletide Favs: Pumpkin Spice Pie! It wouldn’t be the a feast without family traditions, whether it’s a circle of loved ones, heirloom tableware, aromatic side dishes, or pumpkin spice pie. No matter how stuffed we are from the bountiful spread, there’s always room for dessert. Am I right? Indeed! Besides, who can resist a touch of creamy custard sweetness surrounded by a golden, buttery crust, even if it is prepared by someone else.

PUMPKIN SPICE PIE

Ingredients:

1 prepared 9” pie crust

15-ounce can puréed pumpkin

2 eggs

15-ounce can sweetened condensed milk

1/2 teaspoon cinnamon

1/2 teaspoon ginger

1/2 teaspoon nutmeg

1/2 teaspoon sea salt

Whipped Cream for garnish

Instructions:

Preheat oven to 425°. Place prepared pie dough in an ungreased pie plate. Crimp edges as desired. Set aside. Combine puréed pumpkin, eggs, sweetened condensed milk, cinnamon, ginger, nutmeg, and sea salt. Beat until smooth. Pour into prepared pie crust. Bake 15 minutes. Reduce oven temperature to 350° and continue baking 40-50 minutes until center is firm. If necessary, cover the edges of the pie crust with aluminum foil to avoid over browning. A knife inserted will come out clean. Remove from oven. Cool. Garnish with whipped cream, as desired.

What’s Cooking in Gail’s Kitchen? The Chow Down: Vanilla Laced French Toast! Here’s a twist on ordinary French toast. If you prefer the outside to be crispy, don’t be ashamed to coat the bread with crushed cracker crumbs before dropping it into the buttered skillet. It not only seals in the flavor, but also produces a “to-die-for” custard filling. Forget soggy bread, go instead for a golden brown crunch drizzled in dark maple syrup and topped with the rich flavor of vanilla glazed pears. Have I got your attention?
VANILLA LACED FRENCH TOAST 
Ingredients:

2 eggs

1/2 cup light cream

2 tablespoons sugar

1 tablespoon pure vanilla extract

1/4 teaspoon cinnamon

1 cup Ritz crackers, crushed*

1/4 teaspoon cinnamon 

1/8 teaspoon nutmeg 

1-2 tablespoons butter

6 slices Hawaiian sweet bread

Glazed Pear Topping, if desired**

Powdered sugar, sprinkling

Pecan halves, as garnish
Instructions:

Whisk eggs, light cream, sugar, vanilla extract, and cinnamon in a shallow bowl. Set aside. On a sheet of waxed paper, combine crushed crackers, cinnamon, and nutmeg with a fork. Melt butter on low heat in an iron skillet. Do not burn. Increase heat to medium. Dip bread slices in egg mixture, coat both sides in cracker crumbs, and place in the skillet. Cook 3 minutes until brown. Turn. Cook 3 minutes longer. Remove to a platter. Repeat until all slices are used. Serve with butter, maple syrup, and fruit, if desired. Garnish with a sprinkling of powdered sugar and pecans.
