What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Dijon Deviled Eggs! Those who know me well fondly refer to me as a Francophile, someone who loves everything French. It goes all the way back to my school days when a sixth grade Social Studies teacher introduced the class to France, after having traveled there herself. From that moment on, it became a dream of mine to take a trip there someday. I studied the French language and Impressionist art. I admired the historical connection, the romantic countryside, and most of all the incredible food! Is it any surprise I chose to share today’s recipe of something a little French?
DIJON DEVILED EGGS
Ingredients:

6 hard boiled eggs

1 tablespoon French Dijon mustard

1 tablespoon Greek yogurt

1 teaspoon light cream

1 tablespoon mayonnaise 

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

1-2 tablespoons red onion, thinly sliced and chopped 

Fresh Basil for garnish 
Instructions:

Once the eggs have cooled, remove the shells, and slice each egg in half lengthwise. Gently remove yolk and place in a bowl. Arrange the egg on a plate. Repeat until all eggs are divided. Lightly mash the egg yolks until crumbly, leaving a few chunks. Add Dijon mustard, Greek yogurt, light cream, mayonnaise, sea salt, and white pepper. Mix until almost smooth. Fold in a few red onion pieces. Spoon yolk mixture into egg halves. Garnish with chopped red onion and fresh basil snips. Refrigerate until ready to serve.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Picnic Pork and Beans! Tradition speaks loud and clear at family gatherings and picnics, especially in the summer. No matter the cookout, barbecue, or pitch-in, certain foods are expected on the buffet table. One of them is the coveted baked beans. Usually the unmarried auntie or the matriarch is the keeper of the cherished recipes. The “grande dame” knows all the ingredients, especially the heavily-guarded secret ones. It might be a dab of this or a pinch of that. My advice? Time, patience, and integrity. After all, there’s a lot of responsibility in carrying on the Secret Family Recipes. In the end, it’s all worth it!
PICNIC PORK AND BEANS
Ingredients:

3 slices uncured bacon, thick

1/4 cup sweet onion, sliced

1 tablespoon bacon drippings

28-ounce can pork and beans

1/8 teaspoon seasoned salt

1/8 teaspoon red pepper flakes 

2 tablespoons pimento, diced

1/4 cup barbecue sauce

2 tablespoons brown sugar

1 tablespoon apple cider vinegar 

1 teaspoon Dijon mustard 
Instructions:

Preheat oven to 350°. Fry bacon in a large skillet until partially cooked. Remove bacon from pan and dab on paper towels. Let cool and then break into pieces. Discard all but one tablespoon bacon drippings. Add sweet onion to pan; sauté until tender, about 5 minutes. Combine sweet onion, pork and beans, seasoned salt, red pepper flakes, diced pimento, barbecue sauce, brown sugar, apple cider vinegar, and Dijon mustard. Mix well. Transfer to an ovenproof dish. Top with bacon pieces. Bake uncovered for one hour, or until beans are bubbly and sauce is thick. Let stand 10 minutes for sauce to thicken slightly. Serve warm.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: New Potato Salad! If I said it once, I’ve said it a hundred times: the French have it going on! The more I explore their recipes, the more I feel like a gourmet chef. You can, too. Trust me. When I tell you I’m going to have you make potato salad by skipping the mayo, just pretend you didn’t hear me and forge ahead. The results are worth it. Don’t make a big deal when you serve it as a side dish. You’re husband will do that for you. Husband-tested, rave reviews!
NEW POTATO SALAD 
1 pound red-skinned new potatoes 

1 teaspoon sea salt

3 tablespoons olive oil

2 tablespoons garlic red wine vinegar 

1 tablespoon Dijon mustard

1/2 teaspoon kosher salt

Cracked black pepper, to taste

1/2 cup celery hearts, thinly sliced

1/4 cup fresh chervil, coarsely chopped 
Instructions: 

Place quartered potatoes, skin on, in a large saucepan with enough water to cover. Add sea salt. Bring to a boil over high heat, reduce to medium-low, and simmer until potatoes are tender when pierced with a knife, about 15-20 minutes. For dressing, combine olive oil, garlic red wine vinegar, Dijon mustard, kosher salt, and cracked black pepper. Whisk until blended. When potatoes are cooked, drain well. Transfer them to a bowl to cool. Pour the dressing over the potatoes. Add celery and chervil, gently folding to blend flavors. Serve warm or at room temperature.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Eggs Deviled with Salmon! Have you noticed? Variations of deviled eggs are all the rage on the appetizer menus. Known once as a classic staple for every summer gathering, the deviled egg has been reinvented in countless ways. Creativity knows no bounds. Whether you choose spicy jalapeño*, creamy tuna salad, or low-cal Greek yogurt, the spin-off creations are definitely show-stoppers. Don’t believe me? Try these Smoked Salmon beauties at your next party or pitch-in picnic.  
EGGS DEVILED WITH SALMON 
Ingredients:

6 hard boiled eggs, cooked and peeled

1/4 cup cream cheese

2 tablespoons mayonnaise 

1 teaspoon Dijon mustard

1 teaspoon white vinegar 

1 tablespoon red onion, diced

1/8 teaspoon dill weed

1/8 teaspoon sea salt

1/8 teaspoon white pepper 

4 ounces Applewood Smoked Salmon

1 teaspoon capers, for garnish 

Fresh dill sprigs, for garnish

Paprika, if desired
Instructions:

Halve the eggs lengthwise. Carefully remove yolks and place in a medium bowl. Gently place white portions on a platter. Arrange dill sprigs. These will help to keep the eggs from rocking. Set aside. Cut the salmon slices into 12 thin strips. Roll each strip to make a tight rosebud. Transfer to a plate. Cover with plastic wrap and refrigerate until ready to use. Chop the remaining salmon into small pieces. Mash the egg yolks with a fork until crumbly. Add cream cheese, mayonnaise, Dijon mustard, white vinegar, red onion, dill weed, sea salt, white pepper, and remaining salmon. Stir until combined. Spoon mixture into hollowed out egg white shells. Place a salmon “rosebud” on top. Garnish with one caper in the center of each salmon piece. Sprinkle with paprika, if desired. Refrigerate for one hour before serving. Store leftovers in a covered container.

What’s Cooking in Gail’s Kitchen? Something to Savor: Jellylike Jezebel Sauce! I first heard about this sassy southern sauce with a spicy kick from fellow blogger, Camellia.* She piqued my interest since I sometimes crave the heat of horseradish to liven up ordinary foods. Talk about eye-popping sizzle! Yes, Ma’am! Then recently my husband and I travelled to South Carolina where I had a first-hand opportunity to taste it at a waterfront restaurant there. One bite of Coconut Shrimp dipped in Jezebel Sauce aroused my taste buds and the rest was history. Bless your heart, Camellia!
JELLYLIKE JEZEBEL SAUCE
Ingredients:

18-ounce apple jelly

13-ounce jar apricot preserves 

8-ounce can crushed pineapple, drained

8-ounce jar creamy horseradish, double strength 

2 tablespoons dry mustard

2 teaspoons black cracked pepper
Instructions:

Warm apple jelly in microwave for 30 seconds. Combine apple juice, apricot preserves, crushed pineapple, Creamy horseradish, dry mustard, and cracked black pepper. Stir to blend well. Pour into jars. Chill one hour to enhance flavors. Store in the refrigerator.

What’s Cooking in Gail’s Kitchen? Virginia Smoked Ham Sandwich! The wonderful thing about baking a Virginia smoked ham is the assortment of menu options you glean from a three-pound ham purchase. And with picnic season upon us, this is a quick and easy meal to enjoy at the park. 
VIRGINIA SMOKED HAM SANDWICH 
Ingredients:

1/2 pound shaved precooked smoked Virginia ham pieces

4 slices sesame seed artisan bakery-fresh bread

2 tablespoons butter

2 slices Baby Swiss cheese

Mayonnaise or Mustard, optional to taste

Dill Pickle wedge for garnish
Instructions: 

Butter top sides of bread all the way to the edge. Put two slices into a heated skillet over medium-low heat. Assemble ham and Swiss cheese; top with remaining bread slices. Cook until golden brown on each side, turning once. Serve with the slightly tart taste of a dill pickle. Add a tossed salad and sea salt Kettle chips for the perfect meal!

What’s Cooking in Gail’s Kitchen? Food for Sharing: Iowa Loose Meat Sliders! If you’ve ever taken a road trip through Iowa, or are fortunate enough to live there, you’re already familiar with its popular loose meat sandwich found at local diners. Made of 100% freshly ground beef, the Midwest tradition began around 1926. Bypassing the form of a patty and omitting the sauce of a sloppy joe, what you saw was what you got—all loose meat. The steaming technique plus the combination of spices remain a trade secret. But if you’re willing to come pretty close, give this recipe a try. Just remember to hold the ketchup. 
IOWA LOOSE MEAT SLIDERS
Ingredients:

1 tablespoon olive oil

1 Vidalia onion, minced

1 pound lean ground beef

1 tablespoon yellow mustard

1 tablespoon vinegar

1 tablespoon Lea & Perrins sauce

2 teaspoons brown sugar

1/4 teaspoon garlic powder

1/8 teaspoon seasoned salt

1/8 teaspoon cracked black pepper 

1 1/2 cups beer

1 teaspoon beef bouillon granules 

6 slider buns

Sliced dill pickles

Minced onions
Instructions:

In a large skillet over medium heat, sauté onions in olive oil until translucent. Add ground beef. Cook until brown and crumbly. Add yellow mustard, vinegar, Worcestershire sauce, brown sugar, garlic powder, seasoned salt, and black pepper. Mix well. Stir in beer. Bring to boil. Add beef bouillon. Reduce to low heat. Simmer uncovered until all liquid is absorbed. Serve on toasted slider buns. Top with dill pickles, mustard, and minced onions.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Hot Dog Heaven! Summer brings visions of baseball games, afternoons at the pool, picnics in the park, roasting marshmallows over the fire pit, and hot dogs any way you like them. Some people prefer premium Angus franks, others want fat-free turkey, German brats, or Italian sausage. Hold the ketchup? Maybe. Mustard only? Sometimes. Sweet relish? Extra onion? No bun? There have to be a bazillion ways to serve up a hot dog. For your back yard cookout, save yourself the agony of being a people-pleaser. Bring out the kid in everyone. Offer a condiment bar where the guests can congregate and “build-your-own” version of bliss. 
HOT DOG HEAVEN
Ingredients:

1 pound wieners, standard beef

Condiments of your choosing

Hot Dog Buns
Instructions:

Heat the grill to medium temperature. Grill franks 5-7 minutes, turning occasionally, until heated through and slightly charred. Remove with grill tongs and let sit for a minute or two to retain juices. For a toasted bun, toss the buns, cut side down, onto the grill for about 15-20 seconds; longer if you want them slightly charred. Watch carefully.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Traditional Four-Bean Combo! This is an amazing side dish you can slow cook in the crockpot and forget about it. The end result is a sweet and savory baked bean assortment that will explode with flavor and compliment anything you plan to pair with it, especially grilled meats. The presentation is a color wheel of enticing hues giving it center-stage on the dinner plate. Leftovers only taste better and better as the flavors get swallowed up in each other. The next time you crave something different and nutritious, give this recipe a whirl. 

TRADITIONAL FOUR-BEAN COMBO
Ingredients:

1/2 pound bacon, sautéd and diced

1 cup onion, chopped

1/2 teaspoon dry mustard

1/2 cup cider vinegar

3/4 cup brown sugar

15 ounces kidney beans, drained

15 1/2 ounces yellow waxed beans, drained

42 ounces pork and beans, with sauce

3 cups garden green beans, cooked al dente
Instructions:

Combine bacon, onion, mustard, vinegar, and brown sugar. Mix well. Add the beans and stir together to blend the colors and flavors. Transfer to a crock pot. Cook on HIGH until beans are bubbly. Turn to LOW setting and simmer for 5-7 hours. Unplug crock pot. Let stand 15-20 minutes before serving.
