Island Sweet Potato Salad

What’s Cooking in Gail’s Kitchen? The Next Step: Island Sweet Potato Salad! There is nothing wrong with your smart phone screen. The colors of Hawaiian sweet potatoes range from orange to green to purple. Notice the creamy texture. The slightly sweet taste may remind you more of a piece of fruit than a root vegetable. Sure it’s popular among the Asian markets, and it can be a little drier than its American cousin, but didn’t someone once say, “Variety is the spice of life”? Go ahead, add your version of seasonings. The results will amaze you.

ISLAND SWEET POTATO SALAD

Ingredients:

3 sweet potatoes, Hawaiian assortment, cooked with skin on and cubed

1/2 cup mayonnaise

1 tablespoon parmesan cheese, grated

1/8 teaspoon black pepper

1/8 teaspoon Himalayan sea salt

3 strips bacon, crumbled

2 green onions, chopped

Instructions:

In a small bowl, combine mayonnaise, parmesan cheese, black pepper, and Himalayan sea salt. Place cubed sweet potatoes in a large bowl. Coat with mayonnaise mixture. Fold in bacon crumbles and green onion. Chill for one hour. Serve.

Hungry Man Potato Skins

What’s Cooking in Gail’s Kitchen? The Next Step: Hungry Man Potato Skins! Shrug off that old myth about ditching potato skins because they’re high in carbohydrates and low in nutrition. My grandma used to say “if you’re gonna eat the skin, you may as well eat a handful of dirt!”. Thank goodness times have changed and we’ve learned that the skin of the potato is loaded with calcium, iron, and fiber. When baking instead of frying, the nutritional value gets kicked up a notch. Now that you’re on a roll, go ahead and add toppings like fresh broccoli, bacon, and cheese. Whaaat? Hear me out. By choosing small russet potatoes, the calories are drastically reduced. One piece of bacon is divided over four skins, just enough for flavor. And reduced-fat cheddar cheese is a good choice, one you’ll barely notice in taste. When it’s all said and done, two potato skins are about 200 calories. Not bad.

HUNGRY MAN POTATO SKINS

Ingredients:

2 small russet potatoes, washed and patted dry

1/2 cup broccoli florets

1 strip thick bacon, precooked

1/2 cup cheddar cheese, finely shredded

1 tablespoon olive oil

1/4 cup panko crumbs

Ranch dressing, for dipping sauce

Green onion, for garnish

Instructions:

Preheat oven to 350°. Pierce each potato for steam to escape during baking. Lightly spray potatoes with nonstick oil. Sprinkle lightly with sea salt. Place them directly on the oven rack. Bake until tender, about one hour. Remove potatoes from oven and allow to cool for 15 minutes. Place broccoli florets into a microwave-safe bowl, sprinkle with droplets of water, and microwave on High for one minute. Set aside. If you need to cook bacon, place one strip of bacon on a paper towel-lined plate. Cover with another paper towel. Microwave on High for two minutes. Remove and set aside. When cool enough to handle, crumble into small pieces. For potato skins, cut each potato in half lengthwise. Scoop out flesh leaving a shell 1/4” thick. Reserve potato flesh for another use. Brush around the rim of potato shells with olive oil. Place skins upright on a baking sheet. Broil in oven on High for one minute. Remove to fill. In a bowl, combine broccoli florets, cheddar cheese, and bacon crumbles. Divide broccoli mixture evenly between potato shells. In a small pan, warm olive oil over medium heat. Add panko crumbs, stirring often until golden brown, about 3 minutes. Sprinkle over loaded potato skins. Return to oven and bake at 400° until cheese is bubbly and topping is crisp, about 15 minutes. Serve with ranch dressing garnished with green onion snips.

Green Chile Soup

What’s Cooking in Gail’s Kitchen? The Next Step: Green Chile Soup! I was rushing through an airport recently and knew I wanted something to eat. The waitress at the Mexican restaurant recommended the full bodied taste of Green Chile Soup. It hit the spot. From the first tangy spoonful of mild green chiles to the gentle creaminess on my tongue, I knew this wasn’t your typical soup. It may have been a regional delicacy, but by making it at home, I saved myself a round trip ticket to Colorado.

GREEN CHILE SOUP

Ingredients:

20 green chiles, large

1 yellow onion, chopped

1 tablespoon butter

1/2 teaspoon sea salt

1/4 teaspoon garlic powder

3 cups chicken broth

1 cup heavy cream

1/3 cup Greek yogurt

Monterey Jack cheese and cilantro, for garnish

Instructions:

Place green chiles on a wire rack over a foil-lined baking sheet. Roast on Broil until blistered and charred. Remove from oven. Cool. Discard stems and seeds. In a large pan, warm butter over medium heat. Add chopped onion. Sprinkle with sea salt and garlic powder. Cook until soft. Add roasted chiles and chicken broth. Reduce heat and simmer for 20 minutes. Transfer to a food processor and blend until smooth. Transfer mixture back to pan. Stir in cream and Greek yogurt. Gently warm mixture until soup is heated through. Serve with fresh cilantro and Monterey Jack cheese.

Dill Pickle Cheese Spread

What’s Cooking in Gail’s Kitchen? The Next Step: Dill Pickle Cheese Spread! You’ve heard of pregnant women craving dill pickles, toddlers munching on them, bar patrons dunking a spear in a mug of beer, and families gobbling down an order of fried dill pickle chips. So what’s the buzz? Why is everyone going crazy over dill pickles? First of all, they practically have no calories at all. They have a crunch that makes your mouth smile. Dill pickles ease in digestion, heartburn, and bloating. Plus, their saltiness helps the body absorb water. I’m sure you can come up with a few reasons of your own.

DILL PICKLE CHEESE SPREAD

8 ounces cream cheese, softened

Culinary Crab Rolls

What’s Cooking in Gail’s Kitchen? The Next Step: Culinary Crab Rolls! Seafood lovers will look for any excuse to substitute chicken or beef. Do we really need a reason? Building healthy lifestyle choices could be enough to make me try new things. Seafood is a lean protein option which does fill me up the way fruit, vegetables, and nuts do. The fact remains that I truly like the taste of seafood. Pairing it with bread is practically a bonus. Need I say more?

CULINARY CRAB ROLLS

Ingredients:

6 frozen bread dough rolls, thawed according to package instructions

3/4 cup crabmeat, precooked and chopped

2 tablespoons mayonnaise

1 tablespoon green onion, chopped

1/8 teaspoon red pepper flakes

1 egg, beaten

Instructions:

Preheat oven to 350°. Spray muffin tin with nonstick oil. Set aside. In a bowl, combine crabmeat, mayonnaise, green onion, and red pepper flakes. Once dough has risen, press into a 3-4” circle. Fill the center of each circle of dough with a heaping tablespoon of crabmeat filling. Gently pull the edges around the filling to form a ball, lightly brushing the seam with beaten egg, then pinching the edges to seal. Place in muffin cup, seam side down. Brush tops with beaten egg. Repeat with remaining rolls. Set aside to rise until puffy. Dough should be nearly doubled, about 30 minutes. Bake 15-20 minutes until golden brown. Serve warm.

Whitewashed Egg Pizza

What’s Cooking in Gail’s Kitchen? All the Buzz: Whitewashed Egg Pizza! Putting an egg on pizza? Seriously? I know this might sound a little weird, but take a baby step out of your comfort zone. The first time I saw fried egg on a pizza, I was visiting the south of France. It’s really quite common there. In fact, you’re the fortunate one if you get the egg on your slice at a takeaway stand. You really must give it a whirl. I find as long as I bake in stages, the end result is a crispy crust with an egg over easy. Just imagine how fun it will be to pop the egg yolk and spread it around so everyone gets a taste.

WHITEWASHED EGG PIZZA

Ingredients:

1 naan

2 tablespoons olive oil

1/8 teaspoon garlic powder

4 tablespoons chunky pasta sauce

1 tablespoon fresh basil, chopped

3/4 cup gruyere cheese, shredded

2 onion rings, nested

1 egg

1/3 cup mozzarella cheese

2-3 tablespoons Greek yogurt

1/8 teaspoon sea salt

Dash of pepper

2 tablespoons fresh basil, for garnish

Instructions:

Preheat oven to 425°. Set oven rack on middle setting. (For the last step you will raise it up one setting.) Rub olive oil over surface of naan. Sprinkle with garlic powder. Bake 5 minutes. Remove from oven. Spoon chunky pasta sauce evenly over naan. Use 1 tablespoon fresh basil over sauce. Sprinkle with gruyere cheese. Bake 5 minutes until slightly melted. Remove from oven. Raise the oven rack up one setting. Place the nested onions on a flat portion of the crust. Gently crack an egg into the center of the onion rings. Distribute the mozzarella cheese over the pizza, excluding the egg area. Dollop the Greek yogurt over the cheese. Season with salt and pepper. Bake 5 minutes longer or until egg is set. If the crust becomes too brown, cover it with foil, leaving the egg portion uncovered. When cheese is gooey and egg is cooked, remove from oven. Garnish with fresh basil.

Thai Peanut Noodles

What’s Cooking in Gail’s Kitchen? All the Buzz: Thai Peanut Noodles! Take advantage of that extra serving, or two, of leftover spaghetti noodles in the fridge right now. As long as you kept them separate from the sauce, you have the option to eliminate one step in making Thai Peanut Noodles to eat with a sandwich for lunch. If not, then boil up a batch of spaghetti first and let it cool a bit. Meanwhile, prepare the sauce. I like the spicy kick of red pepper flakes blended with the smooth creaminess of chunky peanut butter. The fresh green onion bits give it an added crunch. Have I piqued your taste buds?

THAI PEANUT NOODLES

Ingredients:

2 servings of plain spaghetti, cooked and drained

1/3 cup chunky peanut butter

2 tablespoons honey

2 teaspoons vinegar

1/8 teaspoon garlic powder

1/8 teaspoon ginger powder

2 teaspoons sesame oil

1-2 teaspoons red pepper flakes

6 tablespoons green onions, sliced

Instructions:

Make spaghetti according to package directions. Drain and cool. Set aside. In a medium bowl combine chunky peanut butter, soy sauce, honey, and vinegar. Stir with a whisk until smooth. Add garlic powder, ginger, sesame oil, and red pepper flakes. Blend well. Add noodles and toss gently to coat. Sprinkle with green onion bits and serve.

What’s Cooking in Gail’s Kitchen? All the Buzz: Sweet Strawberry Salad! Whenever you feel the need to change things up a bit from your ordinary salad, think strawberries! Did you know the strawberry is actually a cousin to the rose family? Truth. In history, they represent love, purity, and perfection. Hmmm. And of course, everyone knows how deliciously sweet they are. Okay, I’m in. Serve a strawberry salad and watch everyone’s face break into a smile. Think strawberries! 🍓

Yellow Bloomin’ Onion

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Yellow Bloomin’ Onion! Nothing is more fitting for Spring than an appealing appetizer that resembles a flower, in my opinion. Now you can make a healthy version at home by baking the breaded onion instead of deep-frying it. The last few minutes under the broiler give it a crispy finish that adds extra crunch to the delicious petals. And the dipping sauce….oh my gosh, you have to try it!

YELLOW BLOOMIN’ ONION

Ingredients:

1 large yellow onion

2 tablespoons flour

1/4 cup Italian bread crumbs

1/4 cup Panko crumbs

1/4 cup Parmesan cheese, grated

1 tablespoon Cajun spices

2 eggs, beaten

1 tablespoon milk

1-2 tablespoons butter, melted

Seasoning salt to taste

Instructions:

Preheat oven to 400°. In one bowl, combine the flour, bread crumbs, Panko crumbs, Parmesan cheese, and Cajun spice. Mix well. Set aside. In another bowl, combine beaten eggs and milk. Whisk together. Set aside. Cut the top side of the onion. Turn over and carefully cut the root side just enough to peel the outer skin of the onion. Leave the root intact as this will be the base and hold the onion together. Discard onion skins. In order to give the appearance of an open flower, 16 sections are made. With the root side up, place the knife 1/8″ away from the core and slice straight down. It is best to begin with quarters and then make 3 slices in each quadrant all the way around. Carefully turn the onion over and spread the “petals” apart. Dip the onion in the milk bath and wash it completely using a pastry brush. Carefully transfer the onion to the bowl filled with breading. Beginning at the bottom, cover each petal with dry coating. Again using the pastry brush, continue coating the petals until the egg wash is gone. You may alternate the egg mixture and dry coating to cover the petals. Transfer the onion to an oven-safe pie plate or dish. Cover with foil and bake for 15 minutes. Using hot pads, take the pan from the oven and remove the foil. Using a pastry brush, coat the onion with melted butter. Return to the oven. Bake 10 minutes longer, or until crispy. I set the broiler on High and broiled it for 4-5 minutes to make it extra-crunchy. Watch carefully so it does not burn. Remove from oven. Sprinkle with seasoned salt. Place on a serving platter. Serve with dipping sauce.
