What’s Cooking in Gail’s Kitchen? Home Cooking: Jarlsburg Grilled Cheese! This is a perfect fusion of buttery, crisp, lightly salted Swiss-style cheese and dense artisan bread. Grilling at the correct temperature is crucial. It will result in a golden-brown crunch followed by a warm flow of oozing cheese with a sweet-tangy finish. Sounds simple, doesn’t it? It really is!

Ingredients:

8 ounces of Jarlsburg cheese, grated

4 tablespoons mayonnaise

2 tablespoons red onion, chopped

Artisan bread of choice, sliced (sesame bread is pictured)

Salted Butter for browning

Instructions:

Combine cheese, mayonnaise, and red onion in a medium bowl. Mix well. Refrigerate in a covered container for one hour. Slowly melt a dab of butter in the skillet over medium-low heat before adding the bread. Do not let the butter burn. If you brown the bread on both sides first, it will hasten the melting process of the cheese inside. Once the bread is browned on both sides, spread a spoonful of the Jarlsburg cheese mixture over one piece of bread and then place the other slice on top of the sandwich. Apply light pressure being careful not to squeeze the filling out onto the pan. Swirl the sandwich to get a nice brown color, about 2 minutes. Gently flip and repeat. Serve immediately.

Eating My Way Through the Holidays! Yuletide Favs: Gruyère Onion Soup!

Eating My Way Through the Holidays! Yuletide Favs: Gruyère Onion Soup! Everyone, sooner or later, falls in love with French Onion Soup, in my opinion. After all, who can resist the savory taste of caramelized onions, buttered croutons, and gooey melted cheese smothered in a beef broth that’s been splashed with a well-aged cognac? I wish I could tell you it’s as easy to make as opening a can of soup, but it isn’t. Don’t hate me. Let’s just say this…..if you are looking for an evening of mystery, romance, and excitement, then read on. This “soup de jour” may be the love potion that’ll woo the night away. Bon Appetît!

GRUYÈRE ONION SOUP

Ingredients:

3 Vidalia onions, peeled and sliced

2 tablespoons butter

1/2 teaspoon sea salt

1/2 teaspoon Herbs de Provence

1 cup white wine

1 teaspoon honey

1/2 cup apple cider vinegar

10 ounces beef consommé

1 cup low-sodium chicken broth

2 tablespoons Lea & Perrins Worcestershire sauce

4 ounces Montamoré cheese, crumbled

Splash of cognac

4 slices baguette, toasted

4 tablespoons Parmesan cheese, grated

4 slices Gruyère cheese

Parsley flakes to garnish

Instructions:

In a shallow bowl, microwave sliced onions on HIGH for 2 minutes. In a large skillet, melt butter on low setting. Do not scorch. Layer onions over butter. Sprinkle with sea salt and Herbs de Provence. Cover and do not stir for 10 minutes. Remove lid and stir occasionally until onions are dark in color, another 10 minutes. Turn heat to High and add white wine and honey. Cook until wine is reduced and consistency is thick. Reduce heat to Simmer. Add apple cider vinegar, beef consommé, low-sodium chicken broth, and worcestershire sauce. Simmer for 15 minutes. Ladle soup into four oven-proof crocks placed on a heavy baking sheet. Add Montamoré crumbled cheese. Top with a splash of cognac. Place a toasted baguette slice on top of soup. Sprinkle with Parmesan cheese. Lay one slice of Gruyère cheese over each bowl, with corners slightly overlapping sides. Broil on High for 2 minutes until cheese is bubbly and golden. Remove carefully! Garnish with parsley flakes and serve immediately.

Eating My Way Through the Holidays! Yuletide Favs: Golden Oyster Stew!

Eating My Way Through the Holidays! Yuletide Favs: Golden Oyster Stew! I knew it was something special when my father requested this savory stew once a year. Now I’m sharing it with you. Carry on the tradition.

GOLDEN OYSTER STEW

Ingredients:

1 medium potato, peeled and diced

1 tablespoon onion, chopped

4 tablespoons butter

1/2 teaspoon sea salt

1 cup light cream

1/2 cup of cheddar cheese, finely shredded

Oyster crackers

Instructions:

In a 2-quart pan over medium high heat, combine potatoes, onion, butter, sea salt, black pepper, and red pepper flakes. Add just enough water to cover. Cook until tender, about 20 minutes. Reduce heat to simmer and add oysters with liquor, cream, and cheese. Stir occasionally for cheese to melt. Gently bubble until the edges of the oysters begin to curl. Do not boil over. Serve the golden oyster stew immediately with oyster crackers.

Dining Outside the Home: Guy Fieri’s Vegas Kitchen in Las Vegas, Nevada

Dining Outside the Home: Guy Fieri’s Vegas Kitchen in Las Vegas, Nevada! Gigantic words hit you before ever setting foot inside the door, “Go Big or Go Home”. And this is no joke. Whether it be boasting or a warning, heed these words. We shared the Original Ringer Burger, a mountain of juicy meat, gooey cheese, crispy onion rings, and donkey sauce (you don’t want to know). It came with a generous side of quad fries. Exactly. Naturally we needed to wash it down with a 52-ounce stemmed punch bowl listed as the Kicked Up Caddy. And it was. The specialty margarita was a perfect blend of tequila, Cointreau, agave, lime, and jalapeño. It came with two straws. Being Vegas, we got a “to go” container and walked around afterwards sipping on it. Be bold, go hungry.

Eating My Way Through the Holidays! Yuletide Favs: Yellow Bloomin’ Onion!

Eating My Way Through the Holidays! Yuletide Favs: Yellow Bloomin’ Onion! Nothing is more fitting for cold weather than an appealing appetizer that resembles a winter flower, in my opinion. Now you can make a healthy version at home by baking the breaded onion instead of deep-frying it. The last few minutes under the broiler give it a crispy finish that adds extra crunch to the delicious petals. And the dipping sauce….oh my gosh, you have to try it!

YELLOW BLOOMIN’ ONION

Ingredients:

1 large yellow onion

2 tablespoons flour

1/4 cup Italian bread crumbs

1/4 cup Panko crumbs

1/4 cup Parmesan cheese, grated

1 tablespoon Cajun spices

2 eggs, beaten

1 tablespoon milk

1-2 tablespoons butter, melted

Seasoning salt to taste

Instructions:

Preheat oven to 400°. In one bowl, combine the flour, bread crumbs, Panko crumbs, Parmesan cheese, and Cajun spice. Mix well. Set aside. In another bowl, combine beaten eggs and milk. Whisk together. Set aside. Cut the top side of the onion. Turn over and carefully cut the root side just enough to peel the outer skin of the onion. Leave the root intact as this will be the base and hold the onion together. Discard onion skins. In order to give the appearance of an open flower, 16 sections are made. With the root side up, place the knife 1/8″ away from the core and slice straight down. It is best to begin with quarters and then make 3 slices in each quadrant all the way around. Carefully turn the onion over and spread the “petals” apart. Dip the onion in the milk bath and wash it completely using a pastry brush. Carefully transfer the onion to the bowl filled with breading. Beginning at the bottom, cover each petal with dry coating. Again using the pastry brush, continue coating the petals until the egg wash is gone. You may alternate the egg mixture and dry coating to cover the petals. Transfer the onion to an oven-safe pie plate or dish. Cover with foil and bake for 15 minutes. Using hot pads, take the pan from the oven and remove the foil. Using a pastry brush, coat the onion with melted butter. Return to the oven. Bake 10 minutes longer, or until crispy. I set the broiler on High and broiled it for 4-5 minutes to make it extra-crunchy. Watch carefully so it does not burn. Remove from oven. Sprinkle with seasoned salt. Place on a serving platter. Serve with dipping sauce.

DIPPING SAUCE

Ingredients:

1/4 cup mayonnaise

1/4 cup Greek yogurt

3 teaspoons ketchup

2 teaspoons Lea and Perrins

2 tablespoons horseradish

1/2 teaspoon paprika

1/8 teaspoon cayenne

Instructions:

Combine mayonnaise, yogurt, ketchup, Lea and Perrins, horseradish, paprika, and cayenne. Mix well and refrigerate for one hour. Pour into a small cup and place in the center of the onion.

What’s Cooking in Gail’s Kitchen? The Chow Down: Zingy Weeknight Pasta! Don’t you love it when everything you need for a quick meal is right at your fingertips? Well, I do. This was one of those nights when everything in the fridge “must-go” simply because we were leaving on a trip the next day. I already had a jar of homemade marinara sauce, but feel free to substitute a store bought variety you probably keep in your pantry, next to the package of spaghetti. The chicken strips are frozen, grilled, and precooked. Don’t judge me. It works. Oh, and I actually served freshly grated parmesan cheese as a garnish, but we sprinkled it on at the table.
ZINGY WEEKNIGHT PASTA
Ingredients:

1 tablespoon olive oil

1 green pepper, chopped

1 small onion, chopped

1 clove garlic, minced

3 cups prepared marinara

2 cups precooked grilled chicken strips, cut into chunks

1/2 pound sliced salami, cut into pieces

4 ounces spaghetti, cooked

Parmesan cheese for garnish
Instructions:

In a large skillet, warm olive oil over medium heat. Add chopped green pepper, chopped onion, and minced garlic. Sauté until tender, about 10 minutes. Reduce heat to simmer and add marinara sauce. Meanwhile, microwave frozen chicken to thaw. Cut into chunks. Add chicken and salami to sauce. Stir to mix. Cook spaghetti according to package directions, but remove the pasta 4 minutes earlier than directed since we are going to add the spaghetti to the sauce to finish cooking. Once the spaghetti is prepared to that point, ladle some of the pasta water into the sauce, about 1/3 cup. This will add wonderful flavor and help thicken the sauce nicely. Now drain the spaghetti and add it to the sauce mixture, without rinsing. Let the spaghetti finish cooking until it is al dente. Serve in pasta bowls. Garnish with parmesan cheese. (Freeze any leftovers to serve when you return from a day of travel.)
