To my family, there’s nothing worse that a soggy tortilla chip, even if it is covered in melted cheese. I experimented by spraying the top and bottom of the chips with nonstick oil and then sprinkling them with sea salt. The method below works very well. It really made a difference. In my defense, I typically buy an off-brand of tortilla chips, which can have more of the natural corn flavor and a sturdiness to support extra toppings. As always, check the ingredient list to make sure you’re getting what you want. I prefer no preservatives.

SHEET PAN CILANTRO NACHOS

Ingredients:

Layer of Corn Tortilla Chips

Nonstick oil

Sea Salt, to taste

8 ounces Mexican Cheese Blend, shredded

2 Roma tomatoes, chopped

2 green onions, chopped

1 teaspoon red pepper flakes

Fresh cilantro, for topping

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Sprinkle with sea salt. Arrange a single layer of corn tortilla chips on the sheet pan. Repeat with a coating of nonstick oil and sea salt. Evenly distribute the Mexican Cheese Blend over the tortilla chips. Add chopped tomatoes and green onions. Sprinkle with red pepper flakes. Bake 15 minutes or until the cheese is melted and gooey. Remove nachos from the oven and garnish with fresh cilantro leaves. Serve immediately.

Jollof Spaghetti

Just when you thought you’ve heard of everything, along comes another version of spaghetti night that just made your life a little easier. Gone is the method of boiling water to cook the pasta, worrying about how to keep the starch from building up, or the fact that oil makes the sauce slide right off. Sound familiar? Been there, done that. With this technique, the spaghetti cooks slowly in the marinara sauce. No advanced parboiling required. The results are moist, definitely al dente, and paired with the meatballs…out of this world. I see this in your future.

JOLLOF SPAGHETTI

Ingredients:

28-ounce can Roma tomatoes in basil sauce, cut-up

1/4 teaspoon oregano

1/4 teaspoon garlic powder

1/4 teaspoon basil

1/4 teaspoon marjoram

1 teaspoon olive oil

1 teaspoon agave nectar

1 teaspoon kosher salt

1/8 teaspoon red pepper flakes

1/2 cup sweet onion, chopped

1/2 cup green pepper, chopped

8 ounces spaghetti

1 pound frozen large Italian-style meatballs, precooked and thawed

Parmesan cheese, for garnish

Instructions:

In a large bowl, combine Roma tomatoes in sauce, oregano, garlic powder, basil, marjoram, olive oil, agave nectar, kosher salt, and red pepper flakes. Mix well. In a microwave-safe dish, combine sweet onion and green peppers. Microwave on High for 2 minutes. Add to marinara sauce. Transfer mixture to a Dutch oven. Bring to a boil over medium-high heat. Add spaghetti; stir. Reduce heat to simmer for 15 minutes or until spaghetti is cooked. Stir occasionally to separate pasta. In a microwave-safe dish, add the Italian-style meatballs. Cook on High setting, according to package directions. When cooked, add to the spaghetti mixture. Gently stir. Simmer 5 minutes longer to combine flavors, or keep warm until ready-to-serve. Spoon into bowls and garnish with parmesan cheese.

What’s Cooking in Gail’s Kitchen? Clean Eating: Frittata Egg White Muffins! Egg whites are probably the most misunderstood superfood. They alone are responsible for muscle gain and brain function. The high protein content can boost immunity levels as well. So why is it people turn up their noses when you mention egg whites? Personally, I think it may have something to do with the extra work involved in separating the yolk from the white. As we have teeter-tottered back and forth between the medical community urging us to ditch the yolk because of its fatty content and then backpedaled with discoveries that perhaps now it had nothing to do with heart disease, is it any wonder we stand around scratching our heads? Long story short. Eggs aren’t unhealthy, so do what you want.

FRITTATA EGG WHITE MUFFINS

Ingredients:

1 1/4 cups egg whites

2 tablespoons green peppers, diced

2 tablespoons red peppers, diced

2 tablespoons sweet onion, diced

1/4 teaspoon seasoned salt

1/8 teaspoon black pepper

2 thick slices bacon, precooked and crumbled

1/4 cup cheddar cheese, finely shredded

1 tablespoon chives, chopped

Alfalfa sprouts, for garnish

Instructions:

Preheat oven to 350°. Spray a mini muffin tin with nonstick oil. Set aside. In a bowl, whisk together egg whites, green peppers, red peppers, sweet onion, seasoned salt, and black pepper. Fold in crumbled bacon and cheddar cheese. Divide the mixture evenly among the mini muffin pan cups. Bake 15-20 minutes, or until egg whites are fully cooked. Remove the muffins from the oven and allow to cool for 5 minutes. Loosen and remove from pan. Top each egg white frittata with chopped chives and alfalfa sprouts. Serve immediately.

What’s Cooking in Gail’s Kitchen? Clean Eating: Egg Roll in a Bowl! For once in my life I’m taking the easy route to an old favorite. Making eggs rolls, using store bought wrappers, can be quite a labor-intensive ordeal. There’s the cutting of vegetables, marinating of meat, separating the wrappers and covering them with a moist towel, then heating the oil for deep-fried results. And there’s nothing wrong with that. I just wasn’t up to the task when what I really wanted was more of the amazing filling to devour. Don’t get me wrong, I still drizzled on the duck sauce, probably more than was necessary. But it’s all a matter of individual taste. Lean in and I’ll tell you a secret. I’d do it again.

EGG ROLL IN A BOWL

Ingredients:

2 tablespoons sesame oil

1 onion, diced

3 cloves garlic, minced

1 pound shredded pork, precooked

1/2 teaspoon ginger

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon sriracha sauce

14-ounce bag coleslaw mix

3 tablespoons soy sauce

1 tablespoon rice vinegar

2 tablespoons toasted sesame seeds, for garnish

Drizzle of sriracha

Green onions, for garnish

Duck Sauce, if desired

Instructions:

Warm the sesame oil in a large skillet over medium-high heat. Add the chopped onion and minced garlic. Sauté until the onions are translucent and the garlic is fragrant. Add the shredded pork, ginger, sea salt, black pepper, and sriracha sauce. Mix well. Cook until the pork is heated through. Add the coleslaw mix, soy sauce, and rice vinegar. Sauté until the coleslaw is slightly tender. Divide into serving bowls. Garnish with toasted sesame seeds, drizzle of sriracha, and chopped green onions. Spoon prepared Duck Sauce over top, if desired.

Caesar Cilantro Steak Salad

If you’ve ever gone through a salad bar, you know exactly what I’m talking about. When thinking of lettuce or greens, begin small, as in “fewer”. Otherwise, in the process of adding ingredients, suddenly what started out as a manageable portion can transform into an enormous bowl-of-plenty. Trust me, I know. Sometimes I get so carried away, my husband has to dump everything into a larger bowl just to toss the salad. And it really doesn’t do me any good to start fresh with the larger bowl because…well, I think you’ve got me figured out. Creature of habit.

CAESAR CILANTRO STEAK SALAD

Ingredients:

2 cups lettuce leaves, gently torn

1 Roma tomato, chopped

2 green onions, chopped

6 ounces grilled steak, cut into bite-sized pieces

2 tablespoons Caesar dressing, bottled

2 teaspoons parmesan cheese, grated

1/8 teaspoon oregano

1/8 teaspoon sea salt

Cilantro leaves, for garnish

Instructions:

Begin with two salad plates. Divide the lettuce between them. Arrange tomato chunks and chopped green onions over top. Warm the grilled steak in the microwave for 30 seconds on 50% power. Repeat, if necessary. Divide steak between the two salads. Drizzle with Caesar salad dressing. Sprinkle with parmesan cheese, oregano, and sea salt. Garnish with cilantro leaves.

Vegetarian Bread ‘n Butter Pudding

What’s Cooking in Gail’s Kitchen? Talking Points: Vegetarian Bread ‘n Butter Pudding! If I’ve said it once, I’ve said it a hundred times. One of the privileges of being part of the blogosphere is benefiting from the vast friendships beyond my little corner of the world. Not only is it a creative outlet for expressing my love of food, it also challenges me to stretch my palate and try new things. Today’s recipe comes from Corrie, a Brit, who thrives on a vegetarian diet. She has a fabulous blog entitled http://corriesrabbitfood.com where food looks so amazing it makes you forget about being a meat-lover. To clear up any confusion, “bread pudding” is more commonly known as a dessert. But “bread and butter pudding” is made by buttering the bread before adding any liquid. Now you see the difference, which is why this makes a fabulous breakfast dish. Are you ready to eat more? Then let’s get started.

VEGETARIAN BREAD ‘N BUTTER PUDDING

Ingredients:

1/2 loaf baguette bread, sliced

4 tablespoons butter, softened

1/2 cup red onion, sliced

3 gloves garlic, sliced

1/3 cup parmesan cheese, shredded

1/3 cup gruyère cheese, shredded

2 tablespoons cheddar cheese, shredded

3 eggs

1 cup skim milk

1/2 teaspoon seasoned salt

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon oregano

2 tablespoons cheddar cheese, shredded

Thyme sprigs, for garnish

Instructions:

Preheat oven to 400°. Butter a 5”x7” baking dish with softened butter. Set aside. Lightly butter both sides of a baguette slice, then place in the baking dish. Repeat until all pieces of baguette are buttered. When placing them in the baking dish, arrange in a zigzag pattern. This leaves room for the spaces to be filled in with ingredients. Next evenly divide the red onion slices and garlic pieces between the bread. Generously sprinkle the entire loaf with shredded parmesan, gruyère, and 2 tablespoons of cheddar cheese, with attention given to lightly packing the cheese in areas where spaces exist. In a bowl, whisk together eggs, skim milk, seasoned salt, basil, marjoram, and oregano. Slowly pour over the pudding, soaking each slice of bread. Top with remaining 2 tablespoons of shredded cheddar cheese. Bake in the oven for 25-30, or until set Remove from oven. Garnish with fresh thyme sprigs. Serve warm.

Knee-Jerk Chicken Wings

What’s Cooking in Gail’s Kitchen? Talking Points: Knee-Jerk Chicken Wings! Look ahead for a weekend meal that is Mmm Mmm Good. It takes a minute of advanced planning, but is, oh, so worth it. As with any marinade, its main purpose is to tenderize the chicken while bathing it with flavor and moisture. In the end you have chicken wings so juicy you won’t be able to put them down. As always, store the marinated chicken in the refrigerator. I don’t recommend reusing the marinade once you transfer the meat to a baking pan. As a general rule, any sauces that come into contact with uncooked meat should be disposed of properly to prevent harmful bacteria exposure. I’m good with that. In most cases an extra sauce or dressing can be offered instead.

KNEE-JERK CHICKEN WINGS

Ingredients:

1/4 cup vinegar

1 tablespoon dark rum

2 habanero peppers, chopped

1/2 red onion, chopped

2 green onions, chopped

1/2 tablespoon thyme

1 tablespoon olive oil

1 teaspoon sea salt

1 teaspoon black pepper

2 teaspoons allspice

2 teaspoons cinnamon

2 teaspoons nutmeg

2 teaspoons ginger

1 teaspoon molasses

2 pounds chicken wings

1/4 cup lime juice

1/2 cup ketchup

3 tablespoons soy sauce

1 tablespoon spicy honey

Chives, for garnish

Instructions:

To make the jerk paste marinade, combine vinegar, dark rum, habanero peppers, red onion, green onions, thyme, olive oil, sea salt, black pepper, allspice, cinnamon, nutmeg, ginger, and molasses in a blender. Pulse to mix until smooth. Place the chicken in a baking dish. Pour lime juice over chicken to coat on both sides. Wearing gloves, rub the jerk paste over both sides of the chicken wings, covering well. Transfer chicken to a gallon freezer bag. Use a rubber spatula to transfer all the marinade to the bag. Seal the bag and refrigerate overnight. When ready to bake, preheat the oven to 400°. Spray a rimmed baking pan with nonstick oil. Place chicken wings in a single layer, skin side up. Roast the chicken for 30 minutes, then flip to bake for another 20 minutes. Combine ketchup, soy sauce, and spicy honey in a small bowl. Mix well. Turn the chicken back over so the skin side is up. Brush with ketchup sauce. Bake 10 minutes longer. When chicken is done, transfer to a platter. Garnish with chopped chives. Serve with celery sticks and bleu cheese dressing.

French Fried Onion ‘n Pork Flatbread

Don’t wait all year to sink your teeth into those crispy onion toppers sprinkled over holiday green bean casserole. Be creative. The onion crunch can be added to soups, salads, burgers, and pizza, too. Simply use your imagination and I guarantee you can talk yourself into something delicious. Barbecue pork, with its sweet and tangy sauce, had me longing for a side order of onion rings. Social distancing and restrictions meant that wasn’t going to happen. So, I opened the pantry door and there on the shelf was a can of the next best thing. French Fried Onions saved the day. Set your wheels in motion, then fork it over.

FRENCH FRIED ONION ‘N PORK FLATBREAD

Ingredients:

1 prepared flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/8 teaspoon garlic powder

1/3 cup sweet and tangy barbecue sauce, plus 1 tablespoon for garnish

1 cup seasoned pork, cooked and shredded

2 tablespoons green pepper, chopped

2 tablespoons red pepper, chopped

2 tablespoons yellow onion, chopped

1 cup mozzarella cheese, finely shredded

1/2 cup French fried onions

1 tablespoon ranch dressing, for garnish

Instructions:

Preheat oven to 400°. Brush bottom of flatbread with olive oil. Sprinkle with cornmeal and garlic powder. Bake 5 minutes. Remove from oven. Spread the barbecue sauce over the flatbread. Layer the shredded pork on top. Add the green pepper, red pepper, and yellow onion. Top flatbread with mozzarella cheese. Bake for 8 minutes, then top with French fried onions. Bake 2-3 minutes longer. Remove from oven, slice accordingly, then drizzle reserve barbecue sauce and ranch dressing over all. Serve immediately.

What’s Cooking in Gail’s Kitchen? Food With Soul: Zapiekanka Polish Pizza! Open-faced sandwiches, especially made with crusty artisan breads, are incredibly satisfying when craving a pizza-like meal. Although now there are a bazillion variations of the traditional Polish snack originally sold by street vendors, this recipe serves as a starting point for something new and different. Sauces may range from tomato ketchup to spicy sriracha to garlic mayo. It’s all about the cravings of the moment.

ZAPIEKANKA POLISH PIZZA

Ingredients:

1 baguette, sliced lengthwise

8 ounces button mushrooms, chopped

1 onion, peeled and chopped

2 tablespoons olive oil

1 teaspoon seasoned salt

1/4 teaspoon black pepper

4 ounces provolone cheese, sliced

4 ounces sharp cheddar cheese, sliced

2 tablespoons tomato ketchup

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Place baguettes on baking sheet. Scoop out a well in each baguette slice; discard filling. Set aside. In a large skillet, warm olive oil. Sauté chopped mushrooms and onions for 10 minutes, until browned. Sprinkle with seasoned salt and black pepper. Layer the provolone and sharp cheddar cheeses over baguettes. Arrange the sautéed mushrooms and onions over top. Bake 10 minutes, or until cheese is melted and bread is golden brown. Drizzle tomato ketchup over all. Serve hot.
