By portioning salads in a jar, they keep a couple days in the refrigerator, as long as the dressing is added later, when served. Not only is the salad appealing, it comes across as pure genius. Mmm Mmm Good.

WATERCRESS SPINACH SALAD IN A JAR

Ingredients:

3/4 cup watercress leaves

1 1/2 cups baby spinach leaves

2 hard-boiled eggs, sliced

1/2 red onion, sliced

1 pint cherry tomatoes, sliced

1 cup fresh mushrooms, sliced

4 strips bacon, cooked and crumbled

4 pint-size jars, with lids

Caesar dressing, prepared

Instructions:

Layer each jar beginning with watercress and spinach leaves. Carefully place sliced eggs along the inside. Add layers of sliced red onions, cherry tomatoes, and mushrooms. Finish with crumbled bacon on top. Twist the lid to seal each jar. Refrigerate salads until ready to serve. To serve, empty contents of jar onto a plate or bowl. Add bottled Caesar dressing, per taste.

If you like the spiciness of chili and can’t resist a slice of gooey cheese pizza, prepare yourself for an endorphin rush like no other. Happiness is contagious and I guarantee you, chili pizza will put you in a good mood. Now let me be clear, the pizza itself is not “make you sweat hot”, which is why I listed the hot pepper rings and sriracha as garnishes to taste. To each his own. I probably overdo the spiciness compared to my husband. Just remember, if it’s too spicy, drink milk. It soothes the body much better than soda, beer, or water.

KIDNEY BEAN CHILI PIZZA

Ingredients:

1 pound lean ground beef

1 envelope original chili seasoning mix

14.5-ounce can diced tomatoes, with juice

15-ounce kidney beans, with juice

12-inch prepared pizza crust

1/4 cup red onions, sliced

2 cups mozzarella cheese, shredded

Hot pepper rings, for garnish

Sliced green olives, for garnish

Sriracha Sauce, to taste

Instructions:

Preheat oven to 400°. In a large skillet over medium-high heat, brown ground beef. Drain fat. Stir in chili seasoning mix, diced tomatoes, and kidney beans. Bring to a boil. Reduce heat to low; simmer 10 minutes, stirring occasionally. Place pizza crust on a baking sheet. Spoon chili evenly onto crust. Layer with sliced red onions. I just like the French language and use some terminology whenever I can. Cooking seems to be the logical place to do that. I bet you do, too. Ever hear the words aioli, béchamel sauce, baguette, charcuterie, julienne, pâté, roux, or soufflé? I’m sure you can come up with a few words yourself. We live in that kind of a world. Check out any list of restaurants in your area and you’ll see what I mean. Well, that being said, “haricot vert” translates into “green beans”. And this recipe may transport you to a place you’ve never been.

HARICOT VERT HOT OFF THE GRILL

Ingredients:

1 pound fresh green beans

1 tablespoon olive oil

1 tablespoon garlic herb seasoning

1 teaspoon sea salt

1 cup French fried onions, for garnish

Instructions:

Place a grill pan on the grill. Close the lid and preheat to 400°. Rinse the fresh green beans and pat dry. Trim the ends off the green beans and discard. In a large bowl, toss the green beans and olive oil. Sprinkle with garlic herb seasoning and sea salt. Gently toss. Using grill tongs, transfer the green beans to the grill pan. Close the grill cover and cook for 3 minutes. Open the lid, and toss the green beans. Cook 1-2 minutes longer. They should blister and slightly char. Transfer green beans to a serving dish and garnish with French fried onions before serving.

For my friends who like their veggies, and prefer a meatless diet, here’s a quick way to combine potatoes, carrots, and onions into a very filling meal. It has herbs to enhance flavor, and delicious butter to combat hunger pangs. Plus, butter makes everything taste drool-worthy. Amirite? Did I ever tell you, every time I refill the butter dish, if there is even a sliver of butter in the wrapper, I swipe it across my finger and slip it into my mouth? True confessions. After all, I import the butter from France, so I’m not going to waste one dab.

YUKON GOLD POTATO MEDLEY

Ingredients:

3 Yukon Gold potatoes, skin on and quartered

16-ounce jar Pearl onions, drained

1 pound baby carrots, whole

2 cups vegetable broth

1 teaspoon sea salt

2 tablespoons butter

1/2 teaspoon turmeric

1 teaspoon Italian herbs

1/4 teaspoon black pepper

1/4 teaspoon garlic powder

Instructions:

Combine potatoes, pearl onions, and baby carrots in a 4-quart pan. Cover with vegetable broth. Add sea salt. Bring to boil. Reduce heat to a gentle simmer and cook for 20 minutes. Drain the vegetables in a colander. Warm butter in the pan over medium heat. Add turmeric, Italian herbs, black pepper, and garlic powder. Mix thoroughly. Return the potato medley to the pan. All I have to do is go to my freezer to decide what ingredients to use. In there is often naan flatbread, precooked grilled chicken strips, and previously oven-baked bacon. In lieu of marinara sauce, creamy ranch dressing makes a tasty sauce. People know cheese is always my friend, along with fresh veggies, herbs, and spices. Throw it all together and boom; 20 minutes later it’s ready to eat. I think I deserve a star for that.

WHITE CHICKEN FLATBREAD

Ingredients:

1 Naan flatbread

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup prepared ranch dressing

4 ounces fresh mozzarella, sliced

1 cup precooked, grilled chicken chunks

1/4 cup precooked bacon, crumbled

2 tablespoons sweet onions, chopped

1/8 teaspoon red pepper flakes

1/2 teaspoon Italian seasoning

4 ounces mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Brush the bottom side of the naan flatbread with olive oil; dust with cornmeal. Transfer to a pizza stone. Bake 5 minutes. Remove from oven and assemble the ingredients. Spread the ranch dressing onto the top crust. Layer, in order, the fresh mozzarella slices, grilled chicken chunks, bacon crumbles, and sweet onions. Turmeric can usually be found in the spice aisle of your favorite grocery store. Its golden-orange color makes a quick scan for identification pretty easy. The aroma has an earthiness to it, which is a compliment for vegetables and beef. Once you try it, your mind may wander to curry dishes, chili soup, and beyond.

TURMERIC ROAST BEEF

Ingredients:

1 1/2 pound chuck roast

2 cups beef broth

1 teaspoon turmeric

1 tablespoon Salty Wahine Hawaiian Seasoning*

5-6 potatoes, washed with skin on, cut into bite-size chunks

16 ounces baby carrots, whole

10 ounces pearl onions, whole

1/4 teaspoon parsley flakes

Instructions:

Place the chuck roast in the slow cooker. Pour beef broth over meat. Sprinkle with turmeric and Salty Wahine Hawaiian Seasoning. Set slow cooker on Low heat for 4 hours. After that time, add the potato chunks, baby carrots, and pearl onions. Continue on Low setting for 4 more hours. Remove roast and vegetables to a platter. Garnish with parsley flakes. Reserve juices for au jus, gravy base, or soup starter.

Before you sit down to watch your favorite sports team or series on Netflix, throw together a sheet pan of nachos to snack on. It’s the perfect food for grazing because everyone seems to like them. First of all, nachos are finger food. They’re also snackable ( is that a made-up word?) They feel like a treat or a party’s going on. And there’s enough for everyone. Add some sour cream, guacamole, and sliced jalapeños, if you choose. On second thought, better double the recipe if you’re expecting more than two or four. Be forewarned.

SCOOP CHILI CHEESE NACHOS

Ingredients:

9.25 ounce bag Scoops® corn chips*

15-ounce can chili, any brand

15-ounce can black beans, rinsed and drained

8 ounces sharp cheddar cheese, shredded

2-3 tomatoes, diced

2 green onions, snipped

1 teaspoon red pepper flakes

Sriracha sauce, for drizzling

Instructions:

And if watching your carbs is a thing, your body has a better chance of burning carbs in the morning. At least that’s what my husband tells me. I tend to look more at portion-control and fat content. Then again, I also put a lot of value in metabolism, genetics, and good ole nutrition. No matter how you serve it up, in the end it’s nothing more than a turkey shoot.

ULTIMATE TURKEY HASH

Ingredients:

1 potato, washed with skin on

1-2 tablespoons olive oil

1/4 cup green pepper, chopped

1/4 cup onion, diced

1/2 teaspoon seasoned salt

1/4 teaspoon garlic and herb seasoning blend

1/2 cup seasoned turkey, shredded

2 eggs

Instructions:

Wash potato, pierce with a knife, and microwave on High for 4 minutes. Transfer to a cutting board. Cut into chunks. Warm olive oil in a medium skillet over medium-high heat. Add green peppers and diced onions. Sauté 5 minutes, or until soft. Add potatoes. Sprinkle with seasonings. Cook until potatoes turn golden brown. Add shredded turkey. Heat through. Make two wells. Spray centers with nonstick oil. Drop an egg into each well. Cover pan for one minute. Reduce heat to low. Check eggs. Cover one minute longer or cook until eggs are set. Serve immediately.

I’m still working on that 22-pound turkey I baked some time ago. You’d certainly never know it by the variety of meals we’ve eaten. Soups, sliders, hash, and the daily special are among the numerous ways we reduce food waste while saving money. By adding fresh produce and grains, using leftover turkey simply becomes a brilliant time saving option. You probably utilize leftovers yourself without even giving it a second thought. I’m thinking stir-fry, casseroles, omelets, and basic sammies. See how easy it is? Just don’t tell the kids.

TURKEY BURRITO BOWL

Ingredients:

2 cups cooked turkey, shredded

1/8 teaspoon garlic powder

1 teaspoon kosher salt

1/4 cup orange juice

1/4 cup vinegar

2 tablespoons butter

Sides: Avocado, lettuce, red onion, tomato, rice, yogurt, and tortilla corn chips

Cilantro, for garnish

Instructions:

Preheat oven to 350°. Combine shredded turkey, garlic powder, kosher salt, orange juice, vinegar, and butter. Transfer to an ovenproof covered dish. Bake 30 minutes, or until all liquid is absorbed. If necessary, remove lid after 30 minutes to allow the juices to breathe. Serve seasoned turkey with instant rice, tortilla chips, and fresh produce.
