Before you sit down to watch your favorite sports team or series on Netflix, throw together a sheet pan of nachos to snack on. It’s the perfect food for grazing because everyone seems to like them. First of all, nachos are finger food. They’re also snackable ( is that a made-up word?) They feel like a treat or a party’s going on. And there’s enough for everyone. Add some sour cream, guacamole, and sliced jalapeños, if you choose. On second thought, better double the recipe if you’re expecting more than two or four. Be forewarned.

SCOOP CHILI CHEESE NACHOS

Ingredients:

9.25 ounce bag Scoops® corn chips*

15-ounce can chili, any brand

15-ounce can black beans, rinsed and drained

8 ounces sharp cheddar cheese, shredded

2-3 tomatoes, diced

2 green onions, snipped

1 teaspoon red pepper flakes

Sriracha sauce, for drizzling

Instructions:

Preheat the oven to 400°. Spray a baking sheet with nonstick oil. Set aside. In a glass mixing bowl, combine chili with black beans. Warm slightly in the microwave. Fill each corn chip with a tablespoon of filling. Place chili chip on the prepared baking sheet, forming a single layer. Repeat until the tray is full. Layer the shredded cheese over all. Place diced tomatoes onto cheese. Finish with green onion snips and red pepper flakes. Bake 15-20 minutes until cheese is melted. Serve with sriracha sauce for extra zing.

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Ultimate Turkey Hash! There’s something about eating a forkful of savory potatoes for breakfast. And if watching your carbs is a thing, your body has a better chance of burning carbs in the morning. At least that’s what my husband tells me. I tend to look more at portion-control and fat content. Then again, I also put a lot of value in metabolism, genetics, and good ole nutrition. No matter how you serve it up, in the end it’s nothing more than a turkey shoot.

ULTIMATE TURKEY HASH

Ingredients:

1 potato, washed with skin on

1-2 tablespoons olive oil

1/4 cup green pepper, chopped

1/4 cup onion, diced

1/2 teaspoon seasoned salt

1/4 teaspoon garlic and herb seasoning blend

1/2 cup seasoned turkey, shredded

2 eggs

Instructions:

Wash potato, pierce with a knife, and microwave on High for 4 minutes. Transfer to a cutting board. Cut into chunks. Warm olive oil in a medium skillet over medium-high heat. Add green peppers and diced onions. Sauté 5 minutes, or until soft. Add potatoes. Sprinkle with seasonings. Cook until potatoes turn golden brown. Add shredded turkey. Heat through. Make two wells. Spray centers with nonstick oil. Drop an egg into each well. Cover pan for one minute. Reduce heat to low. Check eggs. Cover one minute longer or cook until eggs are set. Serve immediately.

Turkey Burrito Bowl

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Turkey Burrito Bowl! If I’ve said it once, I’ve said it a hundred times…freeze leftover meat for another day. I’m still working on that 22-pound turkey I baked some time ago. You’d certainly never know it by the variety of meals we’ve eaten. Soups, sliders, hash, and the daily special are among the numerous ways we reduce food waste while saving money. By adding fresh produce and grains, using leftover turkey simply becomes a brilliant time saving option. You probably utilize leftovers yourself without even giving it a second thought. I’m thinking stir-fry, casseroles, omelets, and basic sammies. See how easy it is? Just don’t tell the kids.

TURKEY BURRITO BOWL

Ingredients:

2 cups cooked turkey, shredded

1/8 teaspoon garlic powder

1 teaspoon kosher salt

1/4 cup orange juice

1/4 cup vinegar

2 tablespoons butter

Sides: Avocado, lettuce, red onion, tomato, rice, yogurt, and tortilla corn chips

Cilantro, for garnish

Instructions:

Preheat oven to 350°. Combine shredded turkey, garlic powder, kosher salt, orange juice, vinegar, and butter. Transfer to an ovenproof covered dish. Bake 30 minutes, or until all liquid is absorbed. If necessary, remove lid after 30 minutes to allow the juices to breathe. Serve seasoned turkey with instant rice, tortilla chips, and fresh produce.

Pinto Bean Cottage Ham Stew

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Pinto Bean Cottage Ham Stew! Whenever I make a main course meat, I usually have enough excess to freeze a portion or two for recipes down the road. It keeps us from growing weary of eating the same thing over and over until it’s gone. This recipe is one of those “second meals” from the cottage ham dinner recently. It can easily be substituted with ham or completely omitted for a vegetarian meal. It’s nice to have options, isn’t it?

PINTO BEAN COTTAGE HAM STEW

Ingredients:

1 teaspoon olive oil

1/4 cup onion, chopped

1/4 cup celery, diced

6 mini carrots, sliced

15-ounce can pinto beans, with liquid

1/2 teaspoon garlic powder

1/2 teaspoon marjoram

1/2 teaspoon thyme

2 teaspoons liquid smoke

1/4 teaspoon black pepper

2 cups water or broth from cottage ham*

1 cup cottage ham, cooked and cut into bite-sized pieces

1-2 bay leaves

Instructions:

In an iron skillet, warm olive oil over medium heat. Add chopped onion, diced celery, and sliced carrots. Cook 10 minutes, or until tender. Add the pinto beans with liquid, garlic powder, marjoram, thyme, liquid smoke, and black pepper. Stir. Slowly add water and cottage ham pieces. Stir to combine. Place the bay leaves on top. Bring to boil, then reduce to a simmer. Cover. Cook for 30 minutes. For a thicker stew, lightly mash some of the pinto beans. Remove bay leaves before serving.

Okinawan Sweet Potato Medley

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Okinawan Sweet Potato Medley! Way back when I was in middle school, my home economics teacher actually graded us on how colorful the foods looked on the plate. Her thoughts were “If it tempts your eyes, your stomach will want it.” I never forgot that message. She was pretty adamant about food presentation. So having mashed potatoes, rolls, and cauliflower was kind of a no-no when meal planning. That’s one of the reasons I was intrigued by Okinawan sweet potatoes when visiting Kauai. They are buff-skinned on the outside with a violet-purple flesh inside. It’s not as sweet as the orange variety I’m accustomed to, but nonetheless, it’s pretty tasty. And as you can see, it passes the color test.

OKINAWAN SWEET POTATO MEDLEY

Ingredients:

1 large Okinawan sweet potato, skin on, washed and sliced

1 medium sweet onion, sliced

2 each of mini sweet peppers in red, yellow, and orange; stems and seeds removed, cut in wedges

1 teaspoon seasoned salt

1 teaspoon oregano

1/2 teaspoon cinnamon

4 tablespoons butter

Instructions:

Spray a sheet of heavy aluminum foil with nonstick oil. Arrange Okinawan sweet potatoes on foil. Add sweet onion slices and mini sweet pepper wedges. Sprinkle with seasoned salt, oregano, and cinnamon. Dot with pats of butter. Place another sheet of heavy aluminum foil over top of vegetables. Fold sides twice to seal. Fold ends twice to seal. Avoid puncturing foil. Place packet on a 425° preheated grill. Close lid. Cook 25 minutes, or until vegetables are fork tender. Remove from grill. Carefully open one corner of foil packet to release steam. Then remove top layer of foil. Transfer sweet potatoes and vegetables in the herbed butter to a platter. Serve immediately.

Leftover Turkey Orzo Soup

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Leftover Turkey Orzo Soup! You can always tell when I’m going down a road of mealtime shortcuts. It might be because I stayed up late the night before binge-watching Netflix, or I suddenly got a burst of energy to work in the outdoor herb garden instead. Life in the country is always filled with distractions, that’s for sure. But that doesn’t mean we sacrifice healthy meals for fast-food. Leftover turkey roast can be magically transformed into a bowl of hearty, delicious soup loaded with vegetables, orzo pasta, and earthy herbs. Be good to yourself. You’re worth it.

LEFTOVER TURKEY ORZO SOUP

Ingredients:

1-2 tablespoons olive oil

1/2 sweet onion, diced

1 stalk celery, chopped

6-7 mini carrots, sliced

1/4 teaspoon garlic powder

1/4 teaspoon thyme

1/2 teaspoon oregano

4 cups chicken broth

1/2 cup orzo pasta

2 cups cooked leftover turkey, shredded

Instructions:

In a large deep skillet, warm olive oil over medium heat. Sauté diced onion, chopped celery, and sliced carrots until softened, 5-6 minutes. Add garlic powder, thyme, and oregano. Cook for one minute longer until fragrant. Stir occasionally. Add chicken broth. Bring to a boil. Add uncooked orzo pasta and shredded turkey. Bring back to a boil, then reduce heat to simmer. Cover. Cook 15 minutes until orzo is tender. Remove from heat; stir. Ladle soup into bowls and serve.

Fajita Tortilla Soup

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Fajita Tortilla Soup! Last summer when my garden was at its peak, I spent what felt like hours preparing veggies for the freezer. Among them were poblano, bell, and jalapeño peppers. Poblanos were cut into strips, bell peppers were chopped, and jalapeño peppers were sliced. It turns out, they are ideal for using in stir fry, cooked, or baked recipes. By storing the peppers in ziplock bags, I can take out what I need and reseal the rest for later. I also roasted a turkey and froze the surplus in manageable portions, which kept us from getting tired of eating it several days in a row. Now I get to reap the rewards.

FAJITA TORTILLA SOUP

Ingredients:

1-2 tablespoons olive oil

1 yellow onion, chopped

4 poblano peppers, cored, seeded, and cut into strips

1 green bell pepper, chopped with stem and seeds removed

2 cloves garlic, minced

1 tablespoon oregano

1/8 teaspoon red pepper flakes

32 ounces chicken broth

2 Roma tomatoes, diced

2 cups shredded turkey, precooked

14-ounce can black beans, drained

14-ounce can refried beans (optional)

2 cups Monterey Jack cheese, shredded

Tortilla chips

Jalapeño peppers, sliced

Instructions:

In a deep large skillet, warm olive oil over medium heat. Sauté yellow onion slices, poblano pepper slices, green peppers, and minced garlic. After five minutes, sprinkle oregano and red pepper flakes over all. Add chicken broth, diced tomatoes, shredded turkey, and black beans. Stir well to combine ingredients. Lower heat, cover, and simmer soup for 20 minutes. For a thicker consistency, gradually stir in refried beans. You may not need an entire can. If the soup becomes too thick, add a little water. Continue warming soup until heated through. Top with Monterey Jack shredded cheese. Place the lid over the pan to melt the cheese. Spoon into bowls. Serve immediately with tortilla chips and sliced jalapeño peppers.

Everything Turkey Sliders

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Everything Turkey Sliders! These miniature sandwiches are anything but small, when it comes to flavor. In a world of “supersize” portions, having something more manageable is always a good thing. It’s like when my husband and I eat out at a restaurant. We split a portion and then if we’re still hungry, we can order something else. More often than not, we are completely full and satisfied with smaller portions. It works for us. These sliders follow the same concept. Eat one and if you’re still hungry, have another. Permission granted.

EVERYTHING TURKEY SLIDERS

Ingredients:

4 tablespoons unsalted butter, melted

1 tablespoon Dijon mustard

1 teaspoon natural honey

1/2 tablespoon Worcestershire sauce

2 teaspoons poppyseeds

1 teaspoon dried minced onion

6 slider rolls, split

2 tablespoons mayonnaise

2 cups shredded turkey, precooked

6 slices Havarti cheese

Instructions:

Preheat oven to 350°. Combine melted butter, Dijon mustard, natural honey, Worcestershire sauce, poppyseeds, and minced onion in a small bowl. Whisk until mixed. Set aside. In a 6”x10” baking dish, place the bottom halves of the slider buns in a single layer, sides touching. Spread a thin layer of mayonnaise over them. Divide the shredded turkey between the buns. Place one slice of Havarti cheese over the shredded turkey. Carefully place the bun lids on top of each slider. Pour the glaze evenly over the top of the sliders. Bake for 18-20 minutes until the cheese is melted and the buns are toasted. Remove from oven. Cool for 10 minutes before serving.

Double-Decker Shrimp Nachos

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: Double-Decker Shrimp Nachos! Get set for a taste extravaganza that will implode inside your mouth. Talk about a nacho upgrade. It just may kick the ordinary version to the curb. Look at the ingredient list: sautéed shrimp, gooey cheeses, cayenne peppers, and fresh veggies. Double-Decker means two layers of mouthwatering goodness. Better add a side of plain yogurt or sour cream to control the fire, just in case. Keep ingredients on hand. You’re going to end up making it twice!

DOUBLE-DECKER SHRIMP NACHOS

Ingredients:

11-ounce bag corn tortilla chips

12-ounce bag large cooked shrimp, peeled, deveined, and tails removed

1-2 tablespoons olive oil

1/2 teaspoon red pepper flakes

1 teaspoon crushed oregano

1/2 teaspoon garlic salt

8-ounces Mexican cheese blend, finely shredded

2 Roma tomatoes, chopped

1/2 cup corn, frozen and thawed

4-5 green onions, snipped

1 avocado, sliced

1 cup sour cream or plain yogurt

Instructions:

Preheat oven to 400°. Spray a 9”x13” glass dish with nonstick oil. Set aside. In a large skillet over medium heat, warm olive oil. Arrange shrimp in a single layer. Sprinkle with red pepper flakes, crushed oregano, and garlic salt. Turn shrimp to brown both sides. Remove from heat. Repeat if necessary until all shrimp is sautéed. Line bottom of glass dish with a single layer of corn tortilla chips, slightly overlapping. Place half the shrimp over chips. You may cut the shrimp into bite-size pieces. Sprinkle 1 cup of Mexican cheese blend over shrimp. Next top cheeses with one chopped tomato and corn. Using a kitchen shears, snip 2 green onions into bite-size pieces randomly over top. Repeat process for second layer, beginning with tortilla chips. Bake in preheated oven for 15-20 minutes or until cheese is melted. Remove from oven. Garnish with sliced avocado and a dollop of sour cream. Sprinkle with red pepper flakes for extra flavor. Serve warm.
