Vine-Ripened Tomato Pie

What’s Cooking in Gail’s Kitchen? Start Smart: Vine-Ripened Tomato Pie! Oddly enough, I’ve had a couple people tell me they’ve never heard of tomato pie. It may be more of a southern dish, or perhaps its more familiar to those of us who live in the country and can’t figure out what to do with the abundance of garden tomatoes. Who knows? I must admit there is a secret ingredient that I discovered from the Savannah restauranteur and popular chef, Paula Deen. Maybe you can pick it out, too.

VINE-RIPENED TOMATO PIE

Ingredients:

1 prepared deep-dish pie shell

4-6 Roma tomatoes, sliced

1 tablespoon kosher salt

1/8 teaspoon oregano

1/8 teaspoon marjoram

1/8 teaspoon basil

1/8 teaspoon garlic powder

1/2 cup sweet onion, chopped

1 cup mozzarella cheese, shredded

3/4 cup cheddar cheese, shredded

1/2 cup pepper jack cheese, shredded

1/4 cup parmesan cheese, grated

1 cup mayonnaise

Cherry tomatoes, for garnish

Basil leaves, for garnish

Instructions:

Preheat oven to 350°. Bake the pie shell according to package directions. Remove from oven and set aside. In a bowl, combine sliced tomatoes, kosher salt, oregano, marjoram, basil, and garlic powder. Allow tomatoes to “weep” for 10 minutes. Using a slotted spoon, transfer seasoned tomatoes to the pie shell. Layer sweet onion over tomatoes. In another bowl, combine mozzarella cheese, cheddar cheese, pepper jack cheese, and parmesan cheese with mayonnaise. Mix well. Spread cheese mixture over top of tomatoes and onions. Bake 30 minutes, or until lightly browned. Garnish with cherry tomatoes and basil leaves.

Uruguayan Chorizo Cheese Dip

What’s Cooking in Gail’s Kitchen? Start Smart: Uruguayan Chorizo Cheese Dip! Traveling exposes you to all kinds of different foods, especially nowadays. I can’t tell you how often we are hundreds of miles from home and end up running into someone who used to live down the road from us. It’s a small world, isn’t it? Striking up a conversation with strangers, who have become city residents, brings out the best places in local hot spots. After all, when asked, “What restaurants do you favor in your free time”, they begin rattling off a list of specialties worthy of remembering. At that point I’m making notes on my cell phone to further explore reviews and websites for our next meal. That’s what happened the day we ate at a fusion restaurant and discovered how tasty hot melted cheese can be. Pass it on.

URUGUAYAN CHORIZO CHEESE DIP

Ingredients:

1 tablespoon vegetable oil

1/4 pound smoky provolone cheese, sliced

1/4 pound montamoré cheese, crumbled

1/4 pound parmesan cheese, shredded

1 teaspoon oregano

1/2 teaspoon kosher salt

1/8 teaspoon red pepper flakes

1/4 cup chorizo, cooked and crumbled

2 tablespoons pickled jalapeño slices

Instructions:

Preheat oven to 400°. Place an iron skillet, rubbed with vegetable oil, into the oven while it is preheating. Carefully remove it after 4-5 minutes, or when the buzzer indicates the oven has reached that temperature. Layer the sliced provolone cheese in the bottom of the skillet. Be sure to cover the bottom completely. Next, cover the provolone with crumbled montamoré cheese. Finally, top with grated parmesan cheese. Sprinkle dried oregano, kosher salt, and red pepper flakes over all. Bake for 15-20 minutes, or until the edges are crispy and the cheese is melted. The bottom of the cheese dip will be slightly seared. Remove from the oven and garnish with warmed chorizo and jalapeño slices. Serve with corn tortilla chips.

Presto, Pesto

What’s Cooking in Gail’s Kitchen? Start Smart: Presto, Pesto! The garden went wild this year with an abundance of basil. I mean, you can only dry so much. Granted, I happen to like fresh basil with anything tomato, but not everyone agrees. So, this time I threw together a couple cups of basil leaves with my favorite pairing: parmesan cheese! Pesto freezes well, so it can be stored in an airtight container, or initially, ice cube trays. Once it’s frozen, transfer the cubes to airtight freezer bags for later on. Always defrost in advance. Pesto tastes best served at room temperature or only slightly warmed. Keep in mind, a little goes a long way. Mix it into salad dressing or guacamole; the olive oil creates a smooth texture. Add a dollop to your evening vegetables, pasta noodles, or meat dish. Get creative and go Pesto!

PRESTO, PESTO

Ingredients:

2 cups fresh basil leaves, packed

2 cloves garlic, peeled and chopped

1/3 cup pine nuts, finely chopped

1 teaspoon sea salt

1/4 teaspoon black pepper

1/2 cup parmesan cheese, grated

1/3 cup olive oil

Instructions:

In a mini chopper, combine basil leaves, chopped garlic, pine nuts, sea salt, black pepper, and parmesan cheese. Pulse to blend; approximately 30 seconds. Slowly pour the olive oil into the top of the lid while the blade is on the Low setting. The olive oil will drizzle through the little hole for smooth results. Remove the lid and scrape down the sides with a spatula. Stir. Transfer pesto to a covered jar. Store in the refrigerator.

Mealtime Crab Cocottes

What’s Cooking in Gail’s Kitchen? Fab Foodstuff: Mealtime Crab Cocottes! Seafood can be my obsession and I’m not afraid to be a glutton of it, especially if I’m visiting a locale that is a coastal destination. In my defense, how can anyone resist signs and billboards openly declaring “Best Seafood in Town!”? But eventually one returns home to a land-locked State where seafood is as scarce as hen’s teeth. So when the cravings continue, I head over to the local supermarket in search of a packaged substitute. Maybe it’s the succulent crabmeat or perhaps it’s the French butter, but I have to admit this recipe isn’t half bad.

MEALTIME CRAB COCOTTES

Ingredients:

1 cup mayonnaise

3/4 cup parmesan cheese, grated

1 1/4 teaspoon seafood seasoning

1/2 teaspoon garlic powder

1/4 teaspoon sea salt

1/8 teaspoon black pepper

8 ounces jumbo lump crabmeat

8 ounces imitation crabmeat, flaked

1 tablespoon pimento, diced

1/2 cup Panko bread crumbs

1 teaspoon ground paprika

1-2 tablespoons French butter, melted

Instructions:

Preheat oven to 350°. Coat bottoms and edges of two ramekins with nonstick oil. Set aside. In a large bowl, combine mayonnaise, parmesan cheese, seafood seasoning, garlic powder, sea salt, and black pepper. Mix well. Gently fold in lump crabmeat, imitation flaked crabmeat, and diced pimento. Divide crabmeat mixture evenly between ramekins. Top with Panko breadcrumbs. Sprinkle paprika over all. Drizzle melted butter on top. Bake uncovered for 25 minutes, or until lightly browned and bubbly. Serve with artisan bread and side salad.

Yellow Squash Bolognese

What’s Cooking in Gail’s Kitchen? Eat More: Yellow Squash Bolognese! I’m at it again. The Spiralizer has become my new best friend. This time the star attraction is yellow squash noodles in place of pasta. But first, prepare the Bolognese sauce. It not only takes a bit longer, but it will turn your kitchen into an aromatic sensation. The rich Italian Bolognese sauce is a time-honored tradition that can take up to four hours to duplicate. This version, however, requires less than an hour from start to finish. I knew you would appreciate that fact.

YELLOW SQUASH BOLOGNESE

Ingredients for Bolognese Sauce:

1/4 cup olive oil

1 Vidalia onion, chopped

2 cloves garlic, minced

1 stalk celery, chopped

1 carrot, diced

4 ounces mushrooms, sliced

1 pound ground Sweet Italian sausage

1 teaspoon fennel seed

1/8 teaspoon marjoram

1/8 teaspoon oregano

1 28-ounce can San Marzano tomatoes

1/4 cup parsley, chopped

8 basil leaves, chopped

1 teaspoon sea salt

1/8 teaspoon black pepper

1/4 cup Parmesan cheese, grated

Instructions:

In an iron skillet over medium heat, combine olive oil, Vidalia onion, and minced garlic. Add celery, carrot, and mushrooms. Sauté 5 minutes. Increase heat and add ground Italian sausage, fennel, marjoram, and oregano. Cook until meat is no longer pink and appears crumbled, approximately 10 minutes. Lower heat and add tomatoes, parsley, basil, sea salt, and pepper. Cook until sauce thickens, stirring occasionally, approximately 30 minutes.

Ingredients for Noodles:

1-2 yellow squash

1-2 tablespoons olive oil

Instructions:

Spiralize the yellow squash into noodles. In a medium skillet, heat olive oil. Add yellow squash noodles; toss gently. Sauté no longer than two minutes. The noodles will turn soft, but not translucent. Serve with Bolognese sauce garnished with Parmesan cheese and fresh basil.

Quattro Formaggio Ravioli

What’s Cooking in Gail’s Kitchen? Eat More: Quattro Formaggio Ravioli! Four different cheeses in one dish make me think I died and went to Heaven. Or at the very least, I did something right. Let me share with you a little secret. It doesn’t matter that you use store-bought ravioli because it’s the cheese sauce you practically slurp with a spoon!

QUATTRO FORMAGGIO RAVIOLI

Ingredients:

2 tablespoons Bleu cheese, crumbled

1/4 cup Parmesan cheese, shredded

1/4 cup Mozzarella cheese, shredded

1/4 cup butter

1 cup light cream

4 ounces Neufchâtel cream cheese

1 teaspoon herbs de Provence

Fresh Basil

1 cup marinara sauce

Stuffed Ravioli, any variety

Instructions:

Combine Bleu, Parmesan, and Mozzarella cheeses in a bowl. Set aside. In a medium saucepan, over low heat, melt butter. Do not scorch. Add light cream and bring to boil. Slowly add Neufchâtel cream cheese in chunks, stirring until melted. Reduce heat to medium-low. Gradually add remaining cheeses, stirring constantly until smooth. While stirring return to boil for one minute. Add herbs de Provence. Reduce to simmer. Warm marinara sauce in another pan or microwave-safe dish. Cook ravioli as directed on package. Drain ravioli and divide into portions. Spoon cheese sauce and marinara sauce over cooked ravioli. Sprinkle with extra cheese. Garnish with fresh basil. Serve with garlic bread drizzled with olive oil.

Nature’s Tomato Naan

What’s Cooking in Gail’s Kitchen? The Next Step: Nature’s Tomato Naan. Who likes ooey gooey melted mozzarella cheese? I do, I do! Now add nature’s juicy ripened tomatoes for fresh garden flavor that will have you wiping your chin after the first bite. Be careful of those cheese pulls, though. Steam may be trapped between the naan crust and the pizza stone. Besides, there’s nothing worse than burning the roof of your mouth from lack of patience. Let your eyes create desire. After all, everyone wants eating to be an enjoyable experience.

NATURE’S TOMATO NAAN

Ingredients:

One prepared naan crust

1-2 tablespoons olive oil

1 tablespoon cornmeal

1/4 teaspoon garlic powder

3 Campari tomatoes, sliced

5 grape tomatoes, sliced

1/2 teaspoon sea salt

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

8 ounces fresh mozzarella, sliced

1/8 teaspoon red pepper flakes

1/4 cup parmesan cheese, shaved

Instructions:

Preheat oven to 400°. Spread olive oil on both sides of naan bread. Sprinkle cornmeal over bottom crust. Sprinkle garlic powder over top crust. Place cornmeal side down on a pizza stone. Bake for 5 minutes. Meanwhile, slice tomatoes on a cutting board. Sprinkle tomatoes with sea salt, oregano, basil, and marjoram. Remove naan from oven. Carefully layer mozzarella cheese over crust. Then arrange sliced tomatoes. Sprinkle with red pepper flakes. Bake 15 minutes longer or until cheese is melted and bubbly. Top with parmesan cheese before serving.

Island Sweet Potato Salad

What’s Cooking in Gail’s Kitchen? The Next Step: Island Sweet Potato Salad! There is nothing wrong with your smart phone screen. The colors of Hawaiian sweet potatoes range from orange to green to purple. Notice the creamy texture. The slightly sweet taste may remind you more of a piece of fruit than a root vegetable. Sure it’s popular among the Asian markets, and it can be a little drier than its American cousin, but didn’t someone once say, “Variety is the spice of life”? Go ahead, add your version of seasonings. The results will amaze you.

ISLAND SWEET POTATO SALAD

Ingredients:

3 sweet potatoes, Hawaiian assortment, cooked with skin on and cubed

1/2 cup mayonnaise

1 tablespoon parmesan cheese, grated

1/8 teaspoon black pepper

1/8 teaspoon Himalayan sea salt

3 strips bacon, crumbled

2 green onions, chopped

Instructions:

In a small bowl, combine mayonnaise, parmesan cheese, black pepper, and Himalayan sea salt. Place cubed sweet potatoes in a large bowl. Coat with mayonnaise mixture. Fold in bacon crumbles and green onion. Chill for one hour. Serve.

Egg Brekkie Pizza

What’s Cooking in Gail’s Kitchen? The Next Step: Egg Brekkie Pizza! Ever get the feeling you just aren’t in the mood to cook? I’ve been there. While you’re standing at the refrigerator, leaning on the door like it’s your best friend, don’t ignore last night’s leftover pizza. Butter up the iron skillet, toss in a couple slices of pizza, crack an egg on top, and put a lid on it. There’s gotta be an extra packet of red pepper flakes and parmesan cheese, not to mention, crushed oregano somewhere. Bingo! You’re done.

EGG BREKKIE PIZZA

Ingredients:

2 slices leftover pizza, any variety

1/8 teaspoon garlic powder

1 tablespoon butter

2 large eggs

Sprinkling of parmesan cheese, red pepper flakes, and oregano

Instructions:

Warm butter in an iron skillet over medium heat. Sprinkle garlic powder into butter. Place pizza slices in pan. Crack an egg onto each slice. Cover. Cook until bottom of pizza is crispy and eggs are barely set, about 5-7 minutes. Transfer to a plate. Sprinkle with parmesan cheese, red pepper flakes, and crushed oregano.
