What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: BBQ Pork Nachos! Mealtime can be hectic for this reason or that. I admit, some days I am not in the mood for a lavish meal. Perhaps you feel the same way and need a shortcut now and then. That’s when I go to the freezer to pull out fully cooked products, like smoked barbecue pork. When buying, always check the ingredient list for additives. From my experience, it’s the sauce that makes the dish.

BBQ PORK NACHOS

Ingredients:

11-ounce bag tortilla corn chips

1 pound container bbq pork, fully cooked

1/2 cup Queso cheese dip, store-bought

1 tomato, chopped

1 teaspoon red pepper flakes

6 sprigs cilantro, leaves removed

1 bottle Heinz Hawaii sweet and fruity bbq sauce, to taste*

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Places tortilla chips in a single layer on the baking sheet. Randomly drop bbq pork onto chips using a fork. Next spoon prepared queso dip around the pork. It will melt as it bakes. Scatter chopped tomatoes over all. Sprinkle with red pepper flakes, to taste. Bake nachos for 15 minutes. Remove from oven. Garnish with fresh cilantro. Drizzle barbecue sauce over top. Serve immediately.

Splatter Pan Roasted Peppers

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Splatter Pan Roasted Peppers! There’s something comforting about roasted vegetables. Perhaps it’s the amazing flavor as a result of dry oven heat. Ever notice that slightly caramelized texture? Sometimes it results in a toasted nutty-like flavor. Sweetness piques, especially in tomatoes. The soft brown garlic bulbs surprised me most of all. I mashed one against the roof of my mouth. The raw bitterness had been replaced with a savory sweetness that brought sheer pleasure to my taste buds. No wonder people say food can produce a seductive spark. Am I the last one to discover this about roasted garlic?

SPLATTER PAN ROASTED PEPPERS

Ingredients:

3 green bell peppers, seeded and halved lengthwise

2 tablespoons olive oil

1/8 teaspoon sea salt

1/8 teaspoon black pepper

1/2 cup mozzarella cheese, shredded

24 ripe cherry tomatoes, halved

3 cloves garlic, halved

2 tablespoons capers

1 teaspoon basil, crushed

Instructions:

Preheat oven to 400°. Spray a splatter pan with nonstick oil. Arrange green peppers, cut side up to fit. Brush the peppers, inside and out with olive oil. Season with salt and pepper. Divide mozzarella cheese between peppers. Arrange cherry tomatoes so they fill each pepper “boat” to overflowing. As they roast the tomatoes will shrink in size. Tuck garlic cloves in between the tomatoes. Finish with capers. Drizzle with remaining olive oil. Sprinkle crushed basil over all. Bake 40-45 minutes. Allow roasted peppers to cool to room temperature before serving.

Huevos Rancheros Casserole

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Huevos Rancheros Casserole! Looking for a little variety for a weekend breakfast? Take a trip down a rural road for an old classic that was served as “ranchers eggs” on the farms in Mexico. By turning it into a robust casserole, you can give it an American twist. It still has eggs, cheese, salsa, and tortillas in there. I chose street-size corn tortillas just because they were smaller and easier to work with. Obviously any type will do. Feel free to add beans and chorizo if you’re looking for hearty portions. Do ahead and refrigerate overnight so it’s ready to bake first thing in the morning.

HUEVOS RANCHEROS CASSEROLE

Ingredients:

10 street-size corn tortillas

1 cup chunky salsa

1 cup black beans, drain liquid

1 1/2 cups Colby-Monterey Jack cheese, shredded

1/2 pound chorizo sausage, coarsely chopped and cooked; drained

3 poblano peppers, stems and seeds removed, cut into strips

6 eggs

1/2 cup milk

1/2 teaspoon oregano

1/8 teaspoon red pepper flakes

1/8 teaspoon cumin

Sour cream, for garnish

Green onion snips, for garnish

Instructions:

Spray on 8-inch square casserole dish with nonstick oil. Line the sides and bottom with 8 street-size corn tortillas, slightly overlapping. Spread a layer of salsa over the bottom. Next, layer with black beans. Sprinkle on 1/2 cup of shredded cheese. Top with cooked chorizo, poblano peppers, and another 1/2 cup of shredded cheese. Cut the last 2 tortillas into strips and layer over cheese. In a bowl, combine eggs, milk, oregano, red pepper flakes, and cumin powder. Whisk together. Pour egg mixture over all. Sprinkle with remaining shredded cheese. Press lightly into egg mixture. Cover dish. Refrigerate 8 hours or overnight. To bake, preheat oven to 350°. Bake covered casserole 30 minutes. Remove lid and bake 15-20 minutes longer or until center is set. Let stand 5 minutes before serving. Garnish with sour cream and chopped green onions.

Grilled Brats, Onions, and Peppers

As you can see I was so busy sneaking one more meal of grilling outdoors before the weather changes that I almost forgot to take a snapshot. Here’s what’s left of a one-pan supper that is super-easy. Garden green peppers and sweet onions definitely complement the different spices that make up bratwurst. The reason the sausage links are cut up is because my husband and I wanted more of the “stuff” and less of the bun. Problem solved. Go bunless.

GRILLED BRATS, ONIONS, and PEPPERS

Ingredients:

1-pound package German bratwurst

3 green peppers, stem, seeds, and rubbed removed

1 large sweet onion, chopped

1/2 teaspoon seasoned salt

Nonstick oil

Instructions:

Preheat the grill on medium to 350°. Cut the bratwurst into bite-sized chunks. Transfer to a grill pan. Cut the green peppers into bite-sized chunks. Transfer to the grill pan. Cut the sweet onion into bite-sized chunks. Transfer to the grill pan. Give the pan a light coating of nonstick oil. Sprinkle seasoned salt over vegetables. Lightly toss the bratwurst, onions, and peppers. Place grill pan on the grill. Close lid. This infuses the mixture with a nice smoky flavor. Cook 15-20 minutes, turning occasionally for that charred caramelized appearance. Serve immediately.

Rosati’s Pizza in Estero, Florida

Dining Outside the Home: Rosati’s Pizza in Estero, Florida! You learn a lot about a business by talking to the owners. Perhaps that is why I sometimes visit a restaurant in the off hours of the day. You are more apt to find the owners working face-to-face with customers. Rosati’s Pizza is owned and operated by a family who not only strives for perfection, but also cares about the people who walk through their door. When they expanded their business in Estero for dine-in service, Covid hit with a vengeance and caused them to shift to delivery and carry-out service only. That takes a chunk out of overhead, which translates to selling a boatload of pizza. Yet, they endured. And thrived because they do things the old-fashioned way: like sourcing local ingredients, fresh mozzarella, and homemade crusts. Their story goes all the way back to the first pizzerias in Chicago; Italian roots to the core. So proud, they live by the motto, “We don’t cut corners, just slices of pizza.” Dine in, smell the aromas, chat with the staff, and over-order so you have extra servings for leftovers. Don’t forget to add a jar of the Hot Giardiniera. It is ah-mazing!

Marinated Mozzarella Flatbread

What’s Cooking in Gail’s Kitchen? Start Smart: Marinated Mozzarella Flatbread! You’re probably like everyone else right now and could go to the freezer to pull out a prepared flatbread for supper. Another shortcut is to use marinated mozzarella cheese which already comes sliced in a blend of herbs and olive oil. Oftentimes, I freeze a surplus of cooked meat as well. In this case I already had seasoned Italian sausage, but you could certainly switch things up with pepperoni or sun-dried tomatoes. That’s the beauty of cooking at home. The results bring satisfaction. Just be careful of those piping hot stretchy cheese pulls.

MARINATED MOZZARELLA FLATBREAD

Ingredients:

1 prepared naan flatbread

2 tablespoons olive oil

1 tablespoon cornmeal

1 cup cooked and crumbled Italian sausage

16 ounces marinated mozzarella slices

Crushed basil leaves

Red pepper flakes, to taste

Instructions:

Preheat oven to 400°. Rub 1 tablespoon of olive oil on the bottom of the flatbread. Sprinkle with cornmeal. Carefully flip it over onto a pizza stone. Rub the remaining olive oil onto the top of the crust. Make a layer with the crumbled Italian sausage. Arrange marinated mozzarella slices over meat. Bake for 15 -20 minutes for a crispy crust. The longer it bakes, the more gooey the cheese becomes. When finished, remove from the oven and garnish with crushed basil and red pepper flakes.

Date Chile Salad

What’s Cooking in Gail’s Kitchen? Start Smart: Date Chile Salad! One of the best kept secrets in cooking is infused olives oils. It kicks things up a notch. The flavors intensify ordinary ingredients by beginning with organic and aromatic extra virgin olive oils, which in turn, are infused with delightful natural flavors. Some oils contain the essence of herbs, while others may be crushed with fresh citrus or toasted seeds. Be adventurous. Visit a specialty store where premium olive oils and balsamic vinegars are sold. Most stores offer samples to encourage “taste testing”. One of my favorites is Lime Olive Oil and Strawberry Balsamic Vinegar. Another is Sicilian Lemon Olive Oil paired with Pomegranate Balsamic Vinegar. Recently I added an Italian Black Truffle Oil to my collection. I was told it tastes divine drizzled over popcorn or as a finishing oil on pizza. I can’t wait!

DATE CHILE SALAD

Ingredients:

2 navel oranges, pith and peel removed

1/3 cup dried dates, chopped

1/4 cup feta cheese, crumbled

1/2 red or green jalapeño pepper, sliced into rings

1/2 serrano chile pepper, sliced into rings

1/4 cup fresh mint leaves

1-2 tablespoons lime olive oil

Sea salt and cracked black pepper, to taste

Instructions:

Slice oranges into thin rounds. Arrange on two salad plates or bowls. Divide chopped dates between them. Sprinkle on crumbled feta cheese. Add jalapeño and serrano pepper rings. Tuck in mint leaves. Drizzle lime olive oil over salads. Season with sea salt and cracked black pepper. Serve.

Tony Sacco’s Coal Oven Pizza in Estero, Florida

Dining Outside the Home: Tony Sacco’s Coal Oven Pizza in Estero, Florida! You’re probably wondering what the big deal is about mentioning “coal oven” in the name of this pizza joint. Basically, it boils down to the deliciousness of a charred crust enclosing a chewy center without overcooking the toppings. You get this from very high, dry heat contained within the oven walls. The coal oven is a little larger than the others, so it holds more pizzas. Makes sense, amirite? There’s nothing worse than sinking your teeth into a pizza pie loaded with extra cheese only to discover the bottom crust is a bit soggy. That’s not going to happen at Tony Sacco’s. In fact, customize your creation like I do. For cheese-lovers, request shredded mozzarella, smoky provolone, grated parmesan, and fresh mozzarella over authentic Italian marinara. The cheese pulls will practically make your mouth drool in public. Slowly wipe your chin. Then garnish a pizza slice with freshly chopped basil and dig in.

Underrated Summertime Salad

What’s Cooking in Gail’s Kitchen? Fab Foodstuff: Underrated Summertime Supper! Does anyone have a Himalayan Salt Block besides me? Well, one of the things I like about it is, it can take the guesswork out of adding seasoning to food. It’s a block of pink salt, after all. When serving cold foods like salads, fruits, and cheeses, refrigerate the salt block overnight before using. This helps to keep foods chilled for hours when you need it. Simply arrange the ingredients directly on the block, drizzle on the dressing, and you’re good-to-go. Clean up is easy. Never use soap; salt is naturally antibacterial. Remove food residue with a damp cloth or sponge. Rinse it with a clean swipe, then dab dry. Allow the salt block to air-dry before next use. You’re done.

UNDERRATED SUMMERTIME SUPPER

Ingredients:

4 ounces goat’s milk cheese, plain

1 teaspoon Italian dry mix spice blend

1/4 teaspoon red pepper flakes

8 ounces mixed greens, washed

1 Roma tomato, chopped

4 assorted mini sweet peppers, stems and seeds removed, sliced into rings

2 radishes, sliced very thin

1/4 red onion, thinly sliced

1 teaspoon Herbes de Provence

Balsamic Reduction Sauce

Crusty Artisan Bread

Instructions:

On a sheet of waxed paper, sprinkle Italian dry mix spice blend and red pepper flakes. Form the goat’s milk cheese into a ball. Roll it in the spice mix to cover all sides. Place cheese ball on the chilled Himalayan salt block. Next, arrange mixed greens in a single layer. Arrange Roma tomatoes, mini sweet peppers, radish slices, and red onion rings. Sprinkle Herbes de Provence over top. Drizzle balsamic reduction sauce over salad. Serve with crusty artisan bread.
