You know that bloated feeling you can get after a meal…even three hours later? Well, pineapple is actually your friend in speeding up the natural digestion of foods. It helps to break down proteins, which in turn eases that uncomfortable feeling that may keep you up at night. By pairing pineapple with pork, which is high in protein, your increased metabolism will thank you. With that being said, let’s “Dig In” for an appetizing main course.

EXOTIC PINEAPPLE PORK LOIN

Ingredients:

2.5 pounds pork loin

1 can pineapple rings, cut in half, juices reserved

2 cups prepared barbecue sauce

1 green pepper, chopped

1 jalapeño, seeds removed, minced

3 cloves garlic, minced

1/4 cup red onion, finely chopped

Instructions:

Preheat oven to 450°. Place pork loin on a cutting board. Make parallel incisions along the length of the meat without cutting all the way through. Carefully transfer the pork loin to a baking pan. Fill each slot with a pineapple ring half. Combine barbecue sauce and reserved pineapple juice in a bowl. Add chopped green pepper, minced jalapeño, minced garlic, and chopped red onions. Stir to combine. Pour sauce over pork loin. Bake for 10 minutes, then reduce oven temperature to 350°. Bake 50 minutes longer, or until done. Test the internal temperature with a meat thermometer. It should read 160° when done. Remove from oven and serve immediately.

If you want to step up your game from an ordinary burrito, but really prefer the flavor of crispy fried foods, there are healthier ways to accomplish it without a deep fryer. Anyone who owns an air fryer will attest to that. I haven’t purchased this countertop convection yet, although my new kitchen does have the option on the built-in wall unit. The one time I tested it produced a charred burn mark on the wooden cutting board afterwards. The jury is still out if I’ll make another attempt at it. These chimichangas are baked in the oven and deliver golden brown crunchy results. Tried-and-True techniques go a long way in my book.

PORK TENDERLOIN CHIMICHANGA

Ingredients:

2 1/2 cups pork tenderloin, cooked and shredded

2/3 cup medium picante sauce, prepared

1/3 cup green onions

1 teaspoon ground cumin

1/2 teaspoon dried oregano

1/2 teaspoon sea salt

8 flour tortillas

1/4 cup melted butter

1 cup Mexican blend cheeses, shredded

Lettuce, tomatoes, onions

Ranch dressing, prepared

Fresh lime wedges, for garnish

Instructions:

Preheat oven to 425°. Spray a 9”x13” baking dish with nonstick oil. Set aside. In a large skillet, combine shredded pork tenderloin, picante sauce, green onion, ground cumin, dried oregano, and sea salt. Simmer 5 minutes to heat through and allow most of the liquid to evaporate. Remove from heat. Brush both sides of a flour tortilla with melted butter. Spoon 1/3 cup meat mixture into the center; top with 2 tablespoons Mexican blend cheese. Fold 2 sides over filling; fold ends down. Place seam side down in prepared baking dish. Repeat with remaining ingredients. Bake 15 minutes or until crisp and golden brown. Serve lettuce fixings drizzled with ranch dressing. Garnish with lime wedges.

What’s Cooking in Gail’s Kitchen? Waste Not, Want Not: BBQ Pork Nachos! Mealtime can be hectic for this reason or that. I admit, some days I am not in the mood for a lavish meal. Perhaps you feel the same way and need a shortcut now and then. That’s when I go to the freezer to pull out fully cooked products, like smoked barbecue pork. When buying, always check the ingredient list for additives. From my experience, it’s the sauce that makes the dish.

BBQ PORK NACHOS

Ingredients:

11-ounce bag tortilla corn chips

1 pound container bbq pork, fully cooked

1/2 cup Queso cheese dip, store-bought

1 tomato, chopped

1 teaspoon red pepper flakes

6 sprigs cilantro, leaves removed

1 bottle Heinz Hawaii sweet and fruity bbq sauce, to taste*

Instructions:

Preheat oven to 400°. Spray a baking sheet with nonstick oil. Places tortilla chips in a single layer on the baking sheet. Randomly drop bbq pork onto chips using a fork. Next spoon prepared queso dip around the pork. It will melt as it bakes. Scatter chopped tomatoes over all. Sprinkle with red pepper flakes, to taste. Bake nachos for 15 minutes. Remove from oven. Garnish with fresh cilantro. Drizzle barbecue sauce over top. Serve immediately.

Forget about the “loaded” tortilla shells you may be familiar with, or even default to when making Mexican food at home. This handheld taco steps “outside the box”. The ingredients are fewer, yet focus on freshness. For those who appreciate it, cilantro is a star attraction. Roasted meat, shredded into small pieces, and chopped red onions with a squeeze of lime wedge create a flavor explosion that, honestly, will pull you back enough to slow down and savor every bite. Perhaps you may even chew your food 20 or 30 times before swallowing to appreciate this virtual trip to a seldom-traveled Mexican village.

RED ONION MEXICAN STREET TACOS

Ingredients:

24-count street-size corn tortillas

1 pound seasoned shredded turkey or pork carnitas

1 red onion, chopped

1 bunch fresh cilantro, chopped

2 limes, cut into wedges

Jalisco Pico de Gallo*

Instructions:

Warm shredded carnita meat in a microwave-proof covered casserole dish until steamy and heated through. Set aside. To warm street-size corn tortillas, place a dry iron skillet on the stove top over medium heat. Cook tortillas 30 seconds per side. Wrap a stack of five or six in aluminum foil to keep warm in a 200° preheated oven. When ready to assemble, place a portion of carnitas on each corn tortilla. Layer with chopped cilantro and red onions. Squeeze a lime wedge over all. Top with Jalisco Pico de Gallo.

Take southern pulled pork, usually served on a toasted bun, lose the bread, and spread the pork over pizza crust instead. Tangy barbecue sauce is used in lieu of marinara, providing just enough zing to alert the taste buds. Since barbecue sauces come in a multitude of options from hickory smoke to brown sugar sweet, you may want to blend two flavors together like I’ve done here. The results will astound you.

PULLED PORK BBQ PIZZA

Ingredients:

1 prepared pizza crust

1-2 tablespoons olive oil

1/8 teaspoon garlic powder

1 tablespoon cornmeal

3/4 cup barbecue sauce

1/4 cup chili cocktail sauce

1 cup pulled pork

2 cups mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Rub both sides of prepared pizza crust with olive oil. Season bottom with garlic powder. Sprinkle cornmeal over the bottom side. Bake on a pizza stone for 5 minutes. Remove from oven. Combine barbecue sauce and chili cocktail sauce. Mix well. Spoon onto pizza dough. Top with pulled pork and mozzarella cheese. Return to oven and bake 15-20 minutes until cheese is melted and crust is golden brown.
