What’s Cooking in Gail’s Kitchen? Yankee Potato Salad! The new red potatoes at the market right now make the best-tasting side dish for all your casual meals. Wash them thoroughly so you can leave the skins on.  
YANKEE POTATO SALAD
Ingredients:

10 new red potatoes, small 

2 green onions 

3 ounces of hickory-smoked bacon bits

1 tablespoon fresh dill

1 cup real mayonnaise 
Instructions:

Quarter the red potatoes and put into a pot with enough water to cover. Bring to a boil, then reduce to medium heat and cook for 15-20 minutes. Drain. In a large bowl, add cooled potatoes, bacon bits, cut-up green onions. Mix in mayonnaise to blend well. (For a moist salad, add more.) Finally, gently fold in the fresh cut dill. Refrigerate 1-2 hours for best flavor.

This little number boasts an international flavor with an Italian influence. Right now fresh tomatoes-on-the-vine are available at the market. Hand-pick them in any size cluster you desire. All natural mozzarella makes all the difference, especially when surrounded by this season’s basil leaves. Pluck the basil from your window herb garden or go straight to the organic produce section of your favorite grocers. As you dive in to this crispy salad, notice the colors of the flag of Italy. Grazie, grazie molto!
CAPRESE SALAD
Ingredients:

4-6 Roma Tomatoes 

16 oz. Marinated Mozzarella*

24 Fresh Basil Leaves

2 tablespoons Red Onion, slivered

Herbed Extra-Virgin Olive Oil

Garlic Wine Vinegar 
Directions:

Cut the tomatoes into wedges. Add the mozzarella cheese, onion, and basil. Gently toss with drizzled olive oil and vinegar to taste.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Xigua Watermelon Salad! With seasonal changes, there may be days that feel more like Summer than Autumn. At those times, I roll back the calendar by serving a light meal with a couple of cool melons. The natural sweetness of watermelon and honeydew are complimented by the smoky saltiness of thinly sliced prosciutto. When drizzled with a homemade vinaigrette, it works beautifully to balance the fresh fruit and mixed greens with the aged cheese. Take advantage of watermelon salad’s one final “hurrah” before it’s gone. 
XIGUA WATERMELON SALAD
Ingredients:

1 cup watermelon, cut into chunks and seeded

1 cup honeydew melon, cut into chunks and seeded

1/4 cup red onion, sliced thin

1/3 cup mandarin oranges

1/4 teaspoon kosher salt

3 tablespoons fresh lemon juice 

2 tablespoons lemon olive oil

1 1/2 tablespoons natural honey

2 cups arugula 

2 tablespoons fresh mint leaves, torn

3-4 slices prosciutto 

1/4 cup Romano cheese, shaved
Instructions:

Combine watermelon, honeydew melon, red onion, mandarin oranges, and kosher salt. Gently toss. To make the dressing, in a small bowl whisk lemon juice, lemon olive oil, and natural honey. Drizzle over fruit mixture. Divide arugula and mint between chilled salad plates. Top with fruit mixture. Add prosciutto. Garnish with shaved Romano cheese. Serve chilled.

For the weight-conscious, opt out for a lighter version of mayonnaise or substitute using plain Greek yogurt instead. The tomato contains a high water content, plus the fiber will provide a feeling of fullness. That being said, go stuff yourself. Permission granted. 
STUFFED TOMATO TUNA SALAD
Ingredients:

6 ounce can tuna in water, drained and flaked

1 teaspoon lemon juice

1/3 cup mayonnaise 

1/4 teaspoon sea salt

1/8 teaspoon celery seed

1/4 cup celery, chopped

1 tablespoon dill pickle relish

2 tomatoes, cored 

1 tablespoon walnuts, chopped

Fresh lemon tarragon 

Romaine lettuce leaves

Lemon halves 
Instructions:

Chill two luncheon plates. Place flaked tuna in a bowl. Sprinkle with lemon juice. Add mayonnaise, sea salt, celery seed, chopped celery, and dill pickle relish. Mix well. Chill. Cut tomatoes into 8 segments without slicing the bottom portion. Place one or two romaine lettuce leaves on a chilled plate. Transfer one tomato. Open it like a pinwheel. Spoon tuna salad into the tomato, filling it with half the portion. Garnish with walnuts, lemon tarragon, and a lemon slice. Repeat with second serving.

Indulging in the sweet tangy taste of a ripe, plump peach mixed with the nutty crunch of sugared pecans wrapped around medallions of earthy herbed goat cheese is like taking a bath in a tub of dairy rich cream. At first bite, you won’t mind being pampered. The fresh mint leaf garnish is like icing on a cake. 
MINT LEAF PEACH SALAD
Ingredients:

1 ripe peach, sliced with pit removed

4-6 cherry tomatoes; halved

2 ounces creamy goat cheese

1/4 cup sugared pecans, crushed

Fresh mint leaves
Instructions:

Cut ripe peach into 7-8 slices. Arrange in a pinwheel design on a salad plate. Cut cherry tomatoes and place seed side up around the peach slices. Crush sugared pecans on a sheet of waxed paper. Take a goat cheese slice and roll in nut mixture to coat; repeat. Arrange medallions on salad plate around the peaches. Garnish with fresh mint leaves.

Indulge in a bountiful salad of artisan bread, juicy tomatoes, sweet onions, and green bell peppers. Appreciate the herbs de Provence perfectly blended with garlic wine vinegar whisked in extra-virgin olive oil. It’s enough to make you swoon. The ingredients are very forgiving. Tomatoes a little soft? Has the bread gone stale? No worries. This classic Italian meal was originally meant to be eaten that way. It’s truly amazing!
ITALIAN BREAD SALAD
Ingredients:

1-pound loaf artisan bread

2 tablespoons olive oil

1 teaspoon Herbs de Provence, crushed

8 Roma tomatoes, sliced

1 medium green bell pepper, cut into strips

1/2 Vidalia onion, chopped

1/2 cup olive oil

1/4 cup red wine garlic vinegar

1/2 teaspoon sea salt

1/2 cup fresh basil, thinly sliced

Cracked black pepper to taste
Instructions:

Preheat the oven to 300°. Slice and cube the bread in bite-size pieces, leaving crusts on. Spray a baking sheet with nonstick oil. Form a single layer of bread cubes. Drizzle with 2 tablespoons olive oil and sprinkle with Herbs de Provence. Bake 10 minutes; flip over and bake 10 minutes longer. Cool. For dressing, whisk together olive oil, red wine garlic vinegar, and sea salt. In a large salad bowl, combine bread with tomatoes, green pepper, and onion. Pour vinaigrette over all and toss to coat. Refrigerate for one hour before serving. Stir occasionally to blend flavors. Just before serving, gently toss with fresh basil. Add cracked black pepper to taste.
* Serving suggestion: Italian Bread Salad is best eaten the day it is made.

ZITI GREEN BEAN SALAD
Ingredients:

16 ounces whole wheat ziti pasta

8 ounces fresh green beans, cut into 1 inch pieces

16 ounces cherry tomatoes, halved

1/4 cup fresh parsley, chopped
3/4 cup Lemon Citrus Vinaigrette (recipe follows)
Instructions:

Cook pasta according to package directions, adding green beans to boiling water during the last two minutes of cooking time; drain. Rinse pasta mixture under cold running water until cool; drain again. Combine pasta mixture, tomatoes, and vinaigrette. Toss to coat. Cover and chill overnight. Just before serving, gently fold in minced parsley. 
LEMON CITRUS VINAIGRETTE 

Ingredients:

1/4 cup fresh lemon juice

1 minced shallot

1/2 cup olive oil

1/8 cup fresh parsley, minced

1/2 tablespoon natural honey

1/2 tablespoon whole grain Dijon mustard
Instructions:

Combine lemon juice and minced shallot. Set aside for 5 minutes. Add olive oil, fresh parsley, natural honey, and Dijon mustard. Whisk together to blend. Store in refrigerator.

I mean, they’re really cute; the size of an index finger. And they’re seedless! What a great addition to a relish plate. Today’s Chinese version of marinated cucumbers will kick-start any meal. It offers enough heat and spice from chile peppers along with the full-bodied taste of fried garlic to transport you to a country in Southeast Asia. No worries, the rice vinegar and natural honey make it easier on the stomach. 
XINJIANG MINI CUKES
Ingredients:

4-6 mini seedless cucumbers 

1/2 teaspoon kosher salt

1 teaspoon red pepper flakes

1 tablespoon fried garlic

1 tablespoon rice vinegar

2 teaspoons sesame oil

1/2 tablespoon natural honey

1 tablespoon Golden Mountain sauce

1 tablespoon chili paste
Instructions:

Cut cucumbers in half lengthwise; then slice in half to make four quarters. Place cucumbers in a bowl and sprinkle with kosher salt. Set aside for 30 minutes. Drain excess water from cucumbers. Using a mortar and pestle, pumice red pepper flakes and fried garlic. Add rice vinegar, sesame oil, natural honey, Golden Mountain sauce, and chili paste. Mix well. Serve as a dipping sauce for mini cucumber appetizer OR pour over cucumbers; toss to coat and marinate in refrigerator for one hour or overnight.

What’s Cooking in Gail’s Kitchen? Be Our Guest: Unconventional Peach Side Salad! What a blessing to partake in the abundance of plump and juicy peaches. The options are endless. For instance, I like to substitute tomatoes for fresh peaches in a side salad. By adding the buttery taste of Gorgonzola cheese, it creates a robust flavor that easily compliments the sweetness of the peach. Just thinking about it makes my mouth water. Oh my!
UNCONVENTIONAL PEACH SIDE SALAD
Ingredients:

1-2 fresh peaches, washed and skin on

2 cups organic salad greens

1/3 cup Gorgonzola cheese, crumbled

2 tablespoons pecan bits

2 tablespoons lemon olive oil

2 tablespoons pomegranate balsamic reduction 

Croutons for garnish
Instructions:

Cut peaches into wedges. Divide organic salad greens into shallow serving dishes. Distribute peach slices. Sprinkle with crumbled Gorgonzola cheese and pecan bits. Drizzle lemon olive oil and pomegranate balsamic reduction sauce over all. Garnish with toasted croutons.
