The next time you’re in a group, pose the simple question: “Do you eat watermelon WITH or WITHOUT a sprinkling of salt?” Then stand clear and let the debate begin. Some insist that a pinch of salt awakens the taste buds. Others believe it interferes with the natural sweetness. Me? I gotta tell you, I kinda prefer the whole sweet & salty thing. Like mixing buttered movie popcorn with kettle corn. But that’s another story. 
WATERMELON SALSA
Ingredients:

1/4 pound seedless watermelon, rind removed and cut into chunks

1 ripe peach, peeled, pit removed, and cut into chunks

1/4 cup red onion, chopped

1/4 cup cilantro, chopped 

1-2 jalapeño peppers, stem removed, finely diced

Juice of 1 fresh lime

Raspberry Chipotle seasoned salt (optional)
Instructions:

Combine watermelon, peach, red onion, cilantro, and jalapeño peppers. Gently toss all ingredients together. Squeeze fresh lime juice over all. Chill one hour. Before serving add a sprinkling of raspberry chipotle seasoned salt or have the shaker available as an option.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Onion Broccoli Florets! Sweet onions, whether they are Vidalias grown in Georgia or Walla Wallas grown in Washington, are mild-tasting onions that fans wait all year to magically appear in the produce aisle. Combine them with the natural sweetness of raisins, the crunch of honey-roasted sunflower seeds, the earthiness of broccoli florets, and the smoky taste of bacon. Then watch it totally disappear at the next family reunion.
ONION BROCCOLI FLORETS
Ingredients: 

1 stalk broccoli 

2.5 ounce package real bacon bits

1/2 sweet onion, chopped

1/2 cup raisins 

3/4 cup honey roasted sunflower seeds

1 cup mayonnaise 

2 tablespoons vinegar 

1/2 cup sugar
Instructions:

Cut the stalk off a head of broccoli high enough so the florets fall away. Discard stalk. Cut each floret in half or quarters. In a large bowl, combine florets, real bacon bits, sweet onion, raisins, and honey-roasted sunflower seeds. Mix well. In a small bowl, whisk together mayonnaise, vinegar, and sugar until blended. Add dressing to broccoli salad one hour before serving.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: New Potato Salad! If I said it once, I’ve said it a hundred times: the French have it going on! The more I explore their recipes, the more I feel like a gourmet chef. You can, too. Trust me. When I tell you I’m going to have you make potato salad by skipping the mayo, just pretend you didn’t hear me and forge ahead. The results are worth it. Don’t make a big deal when you serve it as a side dish. You’re husband will do that for you. Husband-tested, rave reviews!
NEW POTATO SALAD 
1 pound red-skinned new potatoes 

1 teaspoon sea salt

3 tablespoons olive oil

2 tablespoons garlic red wine vinegar 

1 tablespoon Dijon mustard

1/2 teaspoon kosher salt

Cracked black pepper, to taste

1/2 cup celery hearts, thinly sliced

1/4 cup fresh chervil, coarsely chopped 
Instructions: 

Place quartered potatoes, skin on, in a large saucepan with enough water to cover. Add sea salt. Bring to a boil over high heat, reduce to medium-low, and simmer until potatoes are tender when pierced with a knife, about 15-20 minutes. For dressing, combine olive oil, garlic red wine vinegar, Dijon mustard, kosher salt, and cracked black pepper. Whisk until blended. When potatoes are cooked, drain well. Transfer them to a bowl to cool. Pour the dressing over the potatoes. Add celery and chervil, gently folding to blend flavors. Serve warm or at room temperature.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Antipasto Salad! This recipe is for those of you, like me, who choose a zesty salad every time they visit a Deli. In a few simple steps, you can throw this together and let it marinate in your own refrigerator. Make it the night before, or first thing in the morning. By the time you’re ready for the next meal, it’s done. The flavors blend so well when refrigerated, you’ll think it was store-bought instead. Be kind to yourself. Permission granted. 
ANTIPASTO SALAD
Ingredients for Pasta:

1 cup dry rigatoni 

1 Roma tomatoes, quartered 

6 slices Italian salami, quartered 

2 orange sweet mini-peppers, seeded and sliced

1/3 cup pimento-stuffed olives 

4 pepperoncini, whole stemmed

3 basil leaves, chopped
For Dressing:

1/4 cup olive oil

1 teaspoon Italian seasoning dry mix

1 tablespoon Parmesan cheese, grated

1 teaspoon balsamic vinegar

 

Bibb lettuce leaves

Garnish with shaved Parmesan cheese
Instructions:

Cook pasta in a pot of boiling salted water, according to package directions. Drain pasta; rinse with cold water and set aside. Combine pasta, Roma tomatoes, Italian salami, sweet mini peppers, olives, pepperoncini, and basil. Toss to mix. In a measuring bowl, whisk together olive oil, Italian seasoning mix, grated Parmesan cheese, and balsamic vinegar. Drizzle over pasta mixture. Spoon into Bibb lettuce leaves. Garnish with shaved Parmesan cheese.

What’s Cooking in Gail’s Kitchen? Simple Sensations: Tarragon Chicken Salad. If you’re tired of the same thing, here’s a gourmet twist on an old favorite. It can be served on a buttery croissant, a bed of mixed greens, or a wedge of sweet cantaloupe. You decide. 
TARRAGON CHICKEN SALAD
Ingredients:

1 10-ounce can of Premium Chicken Breast in Lemon Pepper sauce 

1/4 cup mayonnaise 

1/2 cup seedless red grapes, halved

1/4 cup celery, chopped

1/4 cup sliced almonds

Fresh Tarragon 
Instructions:

In a large bowl, combine chicken, celery, grapes, nuts, and mayonnaise. Gently fold in snipped tarragon leaves. Refrigerate until ready to use. Top with crunchy garlic croutons.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Pulled Pork BBQ Flatbread! I love prepared flatbreads. In fact, I always pick up a couple from my grocer’s deli to keep on hand. The possibilities are endless for a quick meal without scrambling for the fast-food drive-through. I freeze containers of leftover meats that were slow-cooked earlier, so as to have healthy options at home, such as today’s pork tenderloin. If need be, there are prepackaged resources at your local grocery store as well. Being flexible with time-saving choices is always a “Win”, in my opinion. 
PULLED PORK BBQ FLATBREAD 
Ingredients:

1 prepared flatbread

2 tablespoons olive oil

1 tablespoon cornmeal

1/2 cup BBQ sauce, any variety

1 pound pork tenderloin, cooked and shredded

2 eggs

1/8 teaspoon seasoned salt

Dash of white pepper

1/2 cup Spring Mix, chopped

1 green onion, snipped
Instructions:

Preheat oven to 400°. Brush flatbread with olive oil on both sides; sprinkle bottom with cornmeal. Bake 5 minutes. Remove from oven. Spoon BBQ sauce evenly over flatbread. Cover all with shredded pork. Create a “well” for each egg. Gently crack an egg into each “well”. Sprinkle eggs with seasoned salt and white pepper. Bake 8-10 minutes until eggs are set. If the crust becomes too brown, cover it with foil, leaving the egg portion uncovered. When eggs are cooked, remove from oven. Add chopped Spring Mix and green onion snips.

What’s Cooking in Gail’s Kitchen? Sunshine Eats: Cobb Salad! Some days the dinner option is as plain as the nose on my face. Leftover rotisserie chicken becomes the star attraction. Using seven of your favorite ingredients, which you probably already have on hand, this time-saving classic is the perfect solution to that mundane question, “What’s for dinner?” Go easy on yourself and build a Cobb Salad on a platter for show-stopping presentation. 
COBB SALAD
Ingredients:

Bag of Spring Mix Salad Greens

3 cups chicken, precooked and shredded

3 eggs, hard-boiled and chopped

6 slices bacon, crispy and crumbled

1-2 avocados, peeled, pitted, and diced

8 ounces cherry tomatoes, halved

3/4 cup Bleu cheese crumbles

Salad Dressings of choice
Instructions:

Choose individual salad plates or a serving platter. Arrange salad greens as the base. Working from the left side of the plate to the right, arrange shredded chicken from top to bottom. Next arrange chopped egg, crumbled bacon, diced avocado, and tomato halves, ending with Bleu cheese crumbles. Drizzle with salad dressing of choice and serve.

What’s Cooking in Gail’s Kitchen? Something to Savor: Ham Salad Spread! Tired of ho-hum tuna salad or egg salad sandwiches? Think all-natural applewood smoked ham with no artificial ingredients. When you begin with quality, the results are astounding. Add sweet pickle relish, chopped celery, and fresh horseradish. The biggest challenge is deciding if you wish to smear it on rye bread, add a dollop over wheat crackers, or simply scoop it onto a Bibb lettuce leaf. Skip the Deli-made and crank out a batch at home. It’s easier than you think. In no time at all, you’ll have a party favorite or lunchtime energy boost. 
HAM SALAD SPREAD
Ingredients:

2 cups applewood smoked ham chunks

4 stalks celery, chopped

2 eggs, hard-boiled and chopped

3 green onions, snipped

3 tablespoons sweet pickle relish 

1 teaspoon creamy horseradish 

1/2 cup mayonnaise 
Instructions:

Place ham chunks in a food processor. Pulse in batches until finely chopped. Transfer to a mixing bowl. Place celery in the food processor and Pulse until chopped. Add to bowl. Repeat with hard-boiled eggs. Add to bowl. Stir to mix. Add green onion snips, sweet pickle relish, horseradish, and mayonnaise. Mix well. Refrigerate until ready to serve.

What’s Cooking in Gail’s Kitchen? Something to Savor: Beet Bacon Bleu Salad! Remember when you were a kid and your mother made you eat beets? And you hated them? Well, thank goodness as we age, our taste buds change. Perhaps it’s time to give them a second chance. I did and the results made me wonder why I waited so long. 
BEET BACON BLEU SALAD
Ingredients:

15-ounce can sliced beets, drained

3 tablespoons lemon olive oil

1/8 teaspoon seasoned salt

1 teaspoon Herbes de Provence 

2 cups mixed salad greens

1 egg, hard-cooked and sliced

3 slices applewood bacon, cooked crispy and crumbled

1/4 cup bleu cheese, crumbled 

2 tablespoons balsamic reduction 

Garnish with croutons
Instructions:

In a shallow dish, combine lemon olive oil, seasoned salt, and Herbes de Provence. Add sliced beets. Marinate 10 minutes, turn and marinate 10 minutes longer. Arrange salad greens in a bowl. Add beets, reserving marinade. Arrange egg slices on greens. Top with bacon pieces. Sprinkle with bleu cheese crumbles. Drizzle all with reserve marinade plus balsamic reduction. Garnish with croutons.
