It’s basically a ham and cheese sandwich stepped up a notch.

JAMBON DE BAYONNE BAGUETTE

Ingredients:

1 baguette, cut in half (serves 2)

2 tablespoons Dijon mustard

2 tablespoons olive oil

1/4 teaspoon Herbs de Provence

1-2 Roma tomatoes, sliced

3 ounces Jambon de Bayonne, or aged prosciutto

2 romaine lettuce leaves

2 slices espresso/lavender rubbed cheese

8 cornichon gherkins

Instructions:

Slice baguette lengthwise, without cutting all the way through to create a submarine sandwich. Spread a fine layer of Dijon mustard over each baguette half. In a small bowl, combine olive oil and herbs de Provence. Add slices tomatoes to coat, reserving olive oil mixture. Place one layer of tomatoes in each baguette. Next divide prosciutto, romaine lettuce, and gourmet cheese between baguette sandwiches. Top with cornichon gherkins. Drizzle with remaining herbed olive oil. Close and serve. Bon Appétit!

What’s Cooking in Gail’s Kitchen? Eat More: Philly Cheesesteak Bolillo! While at the local bakery, I couldn’t help but choose these nicely shaped oval bolillo rolls. Their lack of crunchy outer crust, like the baguette, made them more appealing for the cheese-laden spicy shredded beef I planned as a main course. Don’t you just love it when you get extra servings from another day’s roast sirloin? The opportunities are endless. This time around the onions, green peppers, red peppers, and mozzarella cheese all team together for that infamous cheesesteak sandwich to die for. Add a slice of tomato and a couple sweet gherkin pickles to punch up the taste buds. Any takers?

PHILLY CHEESESTEAK BOLILLO

Ingredients:

1 pound roast sirloin, cooked and shredded

1/2 green pepper, chopped

1/2 yellow onion, chopped

1/2 red pepper, chopped

1/4 cup Worcestershire sauce

1/4 cup soy sauce

2 teaspoons lemon juice

2 teaspoons vinegar

1-2 tablespoons honey

1 tablespoon whole grain mustard

1 teaspoon fennel

1/2 teaspoon seasoned salt

1/8 teaspoon black pepper

1/2 teaspoon red pepper flakes

2 bolillo sub rolls, halved

2 tablespoons butter

1/8 teaspoon garlic powder

1 cup mozzarella cheese, shredded

Instructions:

In a large skillet over medium heat, add shredded sirloin beef, green pepper, onion, and red pepper. Combine Worcestershire sauce, soy sauce, lemon juice, vinegar, honey, and whole grain mustard. Stir well. Pour over meat and vegetables. Add seasoned salt, black pepper, and red pepper flakes. Heat to boiling, then reduce heat to low; simmer until almost all liquid is absorbed and meat is tender, approximately 20 minutes. Preheat oven to Broil. Cut bolillo subs in half lengthwise and scoop out the centers to make a well. Butter the faces generously. Sprinkle with garlic powder. Broil on high until the tops are golden, 2-3 minutes. Spoon meat mixture onto each half. Divide cheese over all. Return to broiler to melt the cheese. Watch carefully. Remove from oven and match the sandwich sides together to form a sandwich.

Add a sprig of dill, sprinkled with tiny thyme leaves to crown things off. The results may find you believing you embarked on a journey through the charming countryside of Tuscany.

CUCUMBER STRAWBERRY SANDWICH

Ingredients:

8 ounces Neufchâtel cheese, room temperature

3 tablespoons sea salt butter, softened

1/4 cup Greek yogurt

1 teaspoon Italian seasoning

1/4 teaspoon dill weed

1 large cucumber, sliced

1 pint strawberries, stems removed and halved

2-4 slices rye bread, toasted

Fresh dill sprig, for garnish

Fresh thyme leaves, for garnish

Instructions:

Cream together Neufchâtel cheese, butter, and yogurt until smooth. Fold in Italian seasoning and dill to blend. Refrigerate one hour. Slice cucumber; halve strawberries. Toast rye bread; slather with seasoned cheese spread. Top with cucumber slices and strawberries. Add dill sprig and thyme leaves for garnish.

Did you know that cocoa powder is responsible for this transformation? Truth. Another little secret about marble rye is when eaten for breakfast, it actually keeps hunger pangs at bay for the rest of the morning. I like that idea, which is why an egg salad sandwich on rye is often my choice. The next time you pass by the deli, pick up a loaf of bakery fresh marble rye bread.

MARBLE RYE DELI CLASSIC

Ingredients:

4 slices marble rye bread

1 tablespoon butter

4 hard boiled eggs, peeled and chopped

1/4 cup mayonnaise

1/4 teaspoon celery seed

Salt and pepper to taste

2 slices red onion

Curly endive lettuce

Instructions:

Toast and butter the marble rye bread. Set aside. Using a mini chopper, pulse the eggs to bite size crumbles. Mix together the chopped egg and mayonnaise. Fold in celery seed. Sprinkle with salt and pepper. To assemble sandwich, place the lettuce on the rye bread. Next spread the egg salad. Layer with red onion slices. Top with another slice of buttered marble rye bread. Voilà! A Deli-style egg salad sandwich.

What’s Cooking in Gail’s Kitchen? The Food Whisperer: X-cellent Egg Salad Sliders! Have you noticed more and more farm-to-table cafés are featuring egg salad sandwiches on the menu? I get crazy happy when I discover it, as someone who loves home-cooking. Not only are there a dozen variations on egg salad, but each seems to add a unique twist. This recipe is pretty basic so you can get creative from here. Think avocado, dill, bacon, or red pepper flakes. Looks like I need to buy more eggs. Happy Boiling!

X-CELLENT EGG SALAD SLIDERS

Ingredients:

8 eggs, hard boiled and peeled

1/4 cup mayonnaise

1/4 cup dill pickle relish

1 tablespoon red onion, diced

1 tablespoon yellow mustard

1/4 teaspoon sea salt

8 slider buns

4 romaine lettuce leaves

2 tomatoes, sliced

1 tablespoon Everything But Bagel seasoning

Instructions:

In a medium bowl, whisk together mayonnaise, dill pickle relish, red onion, yellow mustard, and sea salt. Chop the eggs and add to the bowl. Stir gently until well blended. Cover and chill in the refrigerator one hour. Assemble sliders using the buns, egg salad, romaine lettuce leaves, and tomato slices. Sprinkle with Everything But Bagel seasoning. Serve.

Havarti Habanero Handful

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Havarti Habanero Handful! You’re probably thinking, “Not another grilled cheese sandwich!” Anyone who knows me understands I can’t leave well enough alone. So…when I came across this “heated” rich, semi-soft version of havarti cheese, I knew I had to have it. Habaneros, as you may recall, are like dynamite in your mouth. The cheese itself is creamy and mild which makes it a perfect match for the testy habanero pepper, or orange lantern as some people call them. When layered with cherrywood smoked ham and grilled artisan bread, the end result is nothing short of Fire and Ice. Are you up for the challenge?

HAVARTI HABANERO HANDFUL

Ingredients:

4 thick slices of artisan bread

3 tablespoons butter

8 ounces cherrywood smoked ham, deli sliced

4 ounces havarti habanero cheese, sliced

Instructions:

Preheat an iron skillet over medium low heat. Butter one side of each slice of bread. Place two slices in skillet, buttered side down. Divide cherrywood smoked ham between them. Replace tops, buttered side up. Heat sandwiches until bread is lightly browned, then carefully flip over. Layer havarti habanero cheese over toasted tops of sandwiches. Reduce heat to low setting. Place a glass lid over the pan so the cheese will melt as the bottoms turn golden brown, approximately 2-3 minutes. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Xtreme Sloppy Joes! Some days you crave a sweet and savory warm sandwich over a lunchbox ham and cheese on wheat. Sure, it can be a little messy, but pile it high anyway and add a mound of shredded cheese. Then watch things melt together.

XTREME SLOPPY JOES

Ingredients:

2 pounds lean ground beef

1/2 cup onion, chopped

1/3 cup green pepper, chopped

1 teaspoon sea salt

1/8 teaspoon black pepper

1/8 teaspoon garlic powder

2 tablespoons pimento, diced

1/4 cup vinegar

1/4 cup lemon juice

1/4 cup brown sugar

1 tablespoon mustard

2 cups ketchup

Instructions:

Preheat oven to 325°. In a large skillet over medium heat, brown ground beef, onion, and green pepper seasoned with salt, pepper, and garlic powder. Cook until meat is in crumbles. Reduce heat. Add diced pimento. Stir in vinegar, lemon juice, brown sugar, mustard, and ketchup. Mix well. Transfer to an ovenproof covered dish and bake in the oven for one hour.
