Manchester-by-the-Sea is a Charmer

You probably know the Massachusetts village by an Oscar-winning film of the same name that awakened the rest of the world to this sleepy little fishing community. But Manchester-by-the-Sea has been around since 1645. Located along the north shore of Massachusetts Bay, where quaint summer cottages become the coveted home-away-from-home for a season, history is still being made. Such notables include a poet, author, actor, politician, comedian, professional golfer, radio talk show host, and more. The town has several points of interest, like Singing Beach, that adds enough allure to keep people flocking back. Unless of course, you’re one of the fortunate ones who get to live there.

What’s Cooking in Gail’s Kitchen? Simple Sensations: Kalua Pork Roast! This special blend of herbs is a tribute to warm, tropical summer nights. The term, “Kalua”, is Hawaiian for slow cooked. I have put this frozen roast in the oven and let flavors blend all day long for an exotic taste that will have your senses wondering if you’ve been transported to a private paradise. The extra meals provided are a bonus that will have others showering you with praise in the days following. 
KALUA PORK ROAST
Ingredients:

4 pound boneless pork butt roast

1 tablespoon Red Hawaiian Alaea Sea Salt*

1 teaspoon Mrs. Dash garlic and herb seasoning 

2 cups apple juice

2 cups apple cider vinegar 

1 tablespoon liquid smoke

1 bottle beer
Instructions:

Set oven to 275°. Place frozen pork roast in a covered roaster, fat side up. Pour apple juice and apple cider vinegar over roast. Next apply liquid smoke. Finish by sprinkling the Alaea sea salt and Mrs. Dash herb blend over the pork. Make sure the lid is on securely. You will begin to smell the heavenly aroma as it slowly cooks. Five hours later, check the roast, as the liquid will absorb. I discovered some roasters allow the liquid to evaporate a little sooner than I expected. I have found Le Creuset to be very reliable. If the roast needs more liquid, pour a bottle of beer over it. Keep it covered and slowly cook it at least another three hours. I have let it cook for ten hours total without a problem. It is so fork-tender you will be amazed. And the drippings can be used for gravy or barbecue sauce.

If Chihuahuas Could Talk

Just like people, I suspect not every dog automatically loves the beach. Take a chihuahua, for instance. Typically, they enjoy being cuddled, carried around in the crook of a young lady’s arm, or nestled in a canvas bag above the crosswalk of heavy footsteps. While rambling barefoot along the oceanfront this morning, I passed a gal sunbathing on a blue striped towel. She didn’t seem to mind reclining close to the shoreline beyond the reach of crashing waves. Like a sleep number bed, the sandy beach conformed to her body shape. The Winter sun was brightly shining. Although the temperature was rising, the cooling sea breezes felt refreshing. About six feet away the tiny brown dog was sitting with a look of displeasure on its face. One paw was raised above the beach as if to keep the fine, loose grains from getting between its toes. It slowly turned in my direction, blinked its eyes, and shifted uncomfortably as though a few light brownish pebbles had already lodged into the derrière folds of its short fur bottom. I could practically read the chihuahua’s thoughts:”This is ridiculous!”

“How much longer are we going to be here?”

“I’m thirsty and this ocean water tastes like salt.”

“I have sand in my ears.”

“I have sand between my toes.”

“I have sand in my butt cheeks.”

“And I want to go home!”

If only chihuahuas could talk. 

On Golden Pond: The Nā Pali Coast

For the biggest white gold sandy beach in Kauai, offering a panoramic view from sea to coast, you must be determined to make the road trip real. Everything is fine until you hit the state park sign at the end of Highway 50. The arrow points west and promises to be nothing less than tough for another four miles. I have witnessed discouraged tourists reverse direction and head back to solid ground. I have also witnessed rental cars broken down. The old sugar cane road is unpaved, extremely bumpy with deep ruts, and a single lane trail of sand at best. And that’s if it hasn’t rained in awhile. But the adventurous spirit must know no bounds. You know you have arrived when the landscape beyond the windshield joins mountain and beach in an unforgettable breath-taking view. Forget cell phone coverage. Radio station signals are nil. And unless you park at the end, beyond Queen’s Pond, no facilities are available. On the endlessly long and wide beach, sweeping sand dunes and clusters of lava rock, are washed with powerful white-capped waves that roar like a coalition of male lions. And this is Paradise. You have arrived!
