What’s Cooking in Gail’s Kitchen? Bright Ideas: Fabulous Seafood Lasagna! Because I really like seafood, and for the first time in my life I have access to it, I decided to think “outside the box” for a new dinner idea. Combining pasta and seafood seemed like a nice transition. To keep the cost down, I did end up substituting imitation crabmeat, but of course you may use the real deal, especially if you have connections with a fisherman. I’m working on that.

FABULOUS SEAFOOD LASAGNA

Ingredients:

9 uncooked lasagna noodles

1/4 cup butter

1/2 cup sweet onion, chopped

2 cloves garlic, minced

1/4 cup flour

2 cups light cream

1 cup chicken broth

1/3 cup dry sherry

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 egg, slightly beaten

1/2 cup parmesan cheese, grated

15-ounce container ricotta cheese

1 tablespoon dried parsley

16 ounces imitation crabmeat, salad-style, drained, and chopped

8 ounces precooked salad shrimp, drained

3 cups mozzarella cheese, shredded

Freshly grated parmesan cheese, for garnish

Instructions:

Preheat oven to 350°. Spray a 9”x13” glass baking dish with nonstick oil. Cook lasagna noodles as directed on package. Set aside. In a 4-quart pan, warm butter over medium heat. Add chopped onion and minced garlic. Cook 3 minutes, stirring occasionally, until onions are tender. Gradually add flour, stirring constantly. Cook and stir until bubbly. Slowly stir in the light cream, chicken broth, dry sherry, sea salt, and black pepper. Heat to boiling, stirring constantly. Boil and stir for one minute longer. Do not scorch. Remove white sauce from heat and set aside. In a bowl, combine beaten egg, parmesan cheese, ricotta cheese, and dried parsley. Mix well; set aside. Drain lasagna noodles. Spread 3/4 cup white sauce in the bottom of the baking dish. Top with 3 lasagna noodles. Layer half the crabmeat and half the shrimp over the noodles. Add another 3/4 cup white sauce over seafood. Sprinkle one cup mozzarella cheese on top. Next, add a layer of 3 lasagna noodles. Spread ricotta mixture over noodles. Add 3/4 cup white sauce. Sprinkle with one cup mozzarella cheese; layer with 3 lasagna noodles. Spread the remaining seafood and sauce over all. Sprinkle with the last cup of mozzarella cheese. Bake 40-45 minutes, or until cheese is light golden brown. Let stand 15 minutes before cutting. Sprinkle with freshly grated parmesan cheese. Serve immediately.

They do offer American fare that satisfies the burger-and-fries crowd. This cozy sports bar hangout seems to attract the “regulars” for their favorite brew as well as social connections for casual encounters. Face it, people enjoy small talk while viewing a game. It’s relaxing and comfortable. It’s actually fun to watch the bartender create drinks or talk about her current sunburn or newest tattoo. Alcohol can be a perk, and the comfort food is a bonus. Plus, a pause in the day has advantages. Attitude adjustments come free. If you drive by a place and see a row of cars and trucks in the parking lot, odds are it’s probably a pretty decent place and worth checking out. I did.

That’s right, whole dill pickles. For Free. Whether you slide onto a stool along the bar, a seat near the window where dappled sunlight pours in, or a cafe table on the lush patio overlooking the sidewalk foot traffic… every spot has a jar of pickles within reach. Enjoy the relaxed feeling of an aged pub as you glance around at the historical memorabilia, including a wooden upright piano in the corner. This is definitely Old Naples. The menu has enough to satisfy every mood, especially if you’re hungry. It’s easy to see why stopping by is a favorite among locals and tourists alike.

For New England-style seafood in an unpretentious setting, it always helps to get a tip about where the locals go for incredible clam chowder with a side of fried clam strips and hush puppies. The menu offers way more than steamed scallops, sautéed shrimp, fried clams, blackened fish, and lobster tails. Unfortunately, I can’t get past the taste of my favorite combination enough to find out how delicious everything else is. What I can confirm, is that people stand in line or meander around the busy strip mall to wait for a table inside or out. It feels like family the way the staff interacts with customers. When you get the craving, remember Steamers for outstanding seafood at a pretty decent price.

Dining Outside the Home: The Dock at Crayton Cove in Naples, Florida! Open waterfront dining has been drawing people like a moth to flame since 1976. Could it be the tropical paradise setting? Or the splash of a wave against the floating dock stretching out into Naples Bay? What about the low hum of the motor on a distant yacht? It’s not hard to imagine when you are seated at the open-air restaurant sipping on a refreshing cocktail basking in the afternoon breeze. Order a Crayton Cove Cobb Salad. Enjoy it as served or add lump lobster meat for a taste extravaganza. Afterwards take a nice long walk around this “Back Bay” area. It’s seeped in history for the early pioneers as well as the fishing community.
