Eating My Way Through the Holidays! Yuletide Favs: Fabulous Fruit Dip! Recently I served a delightful fruit cup for breakfast when family came to visit. Because it is made with Greek yogurt and nutmeg, it’s an impressive alternative to ordinary yogurt. Think of it as Fabulous-in-a-Cup. Whether you decide to arrange a generous fruit platter for a crowd or scale it down to individual portions, the results are the same: heavenly delicious!

FABULOUS FRUIT DIP

Ingredients:

1 large orange*

8 ounces of Neufchâtel cheese, room temperature

4 ounces marshmallow Creme

1/4 cup Greek yogurt

1 teaspoon orange extract

1/8 teaspoon orange zest

Smidgen nutmeg

Assorted fresh fruits

Mint Sprig for Garnish

Instructions:

Cut 1/3 off the top of the orange to create a “bowl”. Carefully run a sharp knife around the inside. Do not cut through the peel. Gently scoop out the fruit. Set aside. In a medium bowl, mix together Neufchâtel cheese and marshmallow creme. Beat until smooth. Fold in Greek yogurt. Make the zest by using the top portion of the orange peel. Add orange extract, zest, and nutmeg. Blend thoroughly. Chill one hour. Scoop into the orange “bowl” before serving. Garnish with fresh mint sprig. Place on a serving platter surrounded by fresh fruit.

* For individual servings, choose four small navel oranges.

Eating My Way Through the Holidays! Yuletide Favs: Easy Energy Balls! Do you ever get those mid-morning blahs where all you want to do is go back to bed? Well, here’s a way to get a tasty boost of energy without the guilt of a candy bar. By choosing pure and organic ingredients, you not only reap the health benefits, but you also gain the satisfaction your tummy needs in order to feel full. Make up a batch in minutes, store in the refrigerator, then Grab and Go!

EASY ENERGY BALLS

Ingredients:

1 cup organic creamy dark roasted peanut butter

2/3 cup pure honey

2 cups flaked coconut

2 cups old fashioned whole grain oats

1 cup organic flaxseed

1 cup dark chocolate chips

2 teaspoons vanilla extract

1 teaspoon ground cinnamon

1/2 cup ground nuts

Instructions:

Warm peanut butter just enough to blend well with the honey. Remove from heat and add coconut, oats, flaxseed, and chocolate chips. Mix well. Sprinkle in cinnamon and vanilla extract. Mix thoroughly. Roll into 30 bite-size balls, coat in ground nuts, and store in the refrigerator in a sealed container.

What’s Cooking in Gail’s Kitchen? The Chow Down: Positively Popular Poutine! While traveling to Canada recently, I was taken aback by a friendly waitress who recommended a very popular dish on the menu made with crispy French fries, fresh cheese curds, and rich brown gravy. She called it Poutine. Like a deer in the headlights, I was completely frozen at the thought. So I shook my head no, thanked her, and ordered my fries plain. By the end of the meal I was convinced I had missed out on something spectacular. Practically every restaurant listed Poutine as their specialty. Some Poutine platters were loaded with bacon, others chunk lobster, beef brisket, jerk chicken, or sautéed veggies. One place even boasted “Award Winning Poutine” and stayed open til 4:00 a.m. just to meet the late-night cravings of college students. Maybe this dish will catch on, after all. 
POSITIVELY POPULAR POUTINE 
Ingredients:

2 pound bag of frozen extra crispy seasoned crinkle fries

Sea salt and black pepper, to taste

2 cups cheddar cheese curds, white and yellow 

1-2 tablespoons butter

2 tablespoons cornstarch 

1/4 cup cold water

2 cups beef broth 

Fresh parsley to garnish 
Instructions:

Preheat oven to 425°. Arrange frozen French fries in a single layer on a baking sheet. Bake 25-30 minutes until golden brown. Season with sea salt and black pepper, to taste. For the gravy, melt butter in a saucepan over medium heat. Do not scorch. Whisk together cornstarch and cold water until no lumps remain. Add cornstarch mixture to melted butter, stirring constantly. Gradually add beef broth, continuing to stir until all broth is used. Bring gravy to a boil, as you stir. Allow gravy to boil at least one minute to dissolve thickener. Reduce heat to low, stirring occasionally. Divide the crinkle fries among serving bowls. Cover each bowl with cheese curds. Ladle rich brown gravy over each portion. Garnish with fresh parsley. Serve immediately.

What’s Cooking in Gail’s Kitchen? The Chow Down: Focaccia Herb Bread! I love bread. Don’t hate me. Besides, if the Italians and the French can make it a guilt-free pleasure, that’s good enough for me. Focaccia Bread is a flatter version than a loaf and actually resembles the texture of pizza dough and breadsticks. Are you with me now? At first glance you may think there is too much olive oil in this recipe. Not true. Actually, that is the secret to keeping the bread soft or preventing it from drying out. Feel free to begin imagining focaccia bread as an appetizer, sandwich bread, or healthy snack. Permission granted. 
FOCACCIA HERB BREAD
Ingredients:

1 cup water

4 tablespoons olive oil, divided

1 teaspoon sea salt

3 cups bread flour

1/4 cup sugar

2 1/2 teaspoons active dry yeast

1 tablespoon fresh rosemary, chopped

1-2 tablespoons parmesan cheese, grated

Dipping Olive Oil
Instructions: 

Using a bread machine, follow this order: add water, 2 tablespoons olive oil, sea salt, bread flour, and sugar. Make a small well in the dry ingredients. Pour the active dry yeast in the well. Select Dough/Manual cycle. When cycle is complete, coat a 10”x15” baking pan with 2 tablespoons olive oil. This will make the bottom crispy. Press the dough into the pan, stretching it to fit the pan. Be sure to turn the dough over to coat both sides with olive oil. Once the dough is stretched, take a wooden spoon and press it, handle side down, to make impressions in the dough, similar to dimples. Be careful. DO NOT make holes in the dough. Cover the pan with plastic wrap and place in a warm area, free of drafts. Let the dough rise for one hour. Preheat the oven to 400°. Remove the plastic wrap and discard. Sprinkle the top of the focaccia dough with rosemary leaves and parmesan cheese. Drizzle enough olive oil to pool in the indentations. Bake until golden brown, 18-20 minutes. Remove the focaccia bread and let it cool on a wire rack for 10 minutes. Cut into squares. Serve with herbed olive oil or enjoy as is.

What’s Cooking in Gail’s Kitchen? Front-Runner Favs: Banana Toffee Pops! It’s no secret kids love bananas. Adults do, too. With the dog days of summer upon us, make a treat with frozen bananas. Turn them into tasty pops covered in sprinkles or throw them in the blender for a refreshing smoothie. Can’t make up your mind? Do both! 🐵Question: How do you get a monkey down the stairs? 🐒Answer: Have it slide down the banana-ster! 🍌🍌🍌Have a great day!
BANANA TOFFEE POPS
Ingredients:

3 firm bananas, peeled and cut in half

6 popsicle sticks

8 ounces Greek yogurt 

1/3 cup toffee pieces, slightly crushed

1/3 cup mini chocolate chips
Instructions:

Place a sheet of wax paper on a baking sheet. Set aside. Combine toffee pieces and mini chocolate chips. Sprinkle onto a sheet of wax paper. Once the banana is coated in yogurt, you will roll the banana in the toppings before placing on the wax paper-lined baking sheet. Peel bananas. Slice each banana in half. Insert one stick into the bottom end of a banana segment. Working one at a time, spread yogurt all over the banana until it is completely covered. Coat in candy pieces. Place on the baking sheet. Repeat. When all six are complete, place baking sheet in the freezer. Freeze 4 hours or overnight. Keep treats frozen in storage bags until ready to serve.*
*Serving Suggestion: For smaller portions, slice bananas into 2″ chunks.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: USA Happy Snack! Did I ever tell you I spent my childhood surrounded by apple trees? It’s one of my favorite memories, growing up in the Midwest. If I was in a feisty mood, I’d nibble on sour green apples. Forget that my impatience may have caused a tart pursing of the lips and a slight ache in the stomach. As the apples ripened, I’d pluck the prettiest one off the tree, rub it against my knee for a mirrored sheen, and admire its beauty. Sometimes I’d twist the stem until it broke, reciting my ABCs. Whatever letter I was on when the stem splintered away became the name of my next boyfriend. But not if it matched my brothers’ names. That didn’t count. Here’s to all-American healthy food wrapped up in a little nostalgia. 
USA HAPPY SNACK 
Ingredients:

1 Gala apple, cored and sliced

1 tablespoon lemon juice

3 slices smoked Virginia ham

4 ounces extra sharp cheddar cheese, sliced thick

Fresh mint
Instructions:

Brush the sliced apples with lemon juice to prevent browning. Cut the ham slices in half. Take one apple slice and place it on top of a piece of cheddar cheese. Wrap them with one piece of ham, seam side down. Tuck a sprig of fresh mint into the snack. Enjoy!

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Kabob Brownie Bites! This recipe seems like a no-brainer. It’s that simple. Strawberries + Marshmallow + Brownie Bites = Dessert Kabobs! Talk about a foodie’s favorite. This no-fuss festive platter will make a melody in your heart. If you like continuous joy, and a dessert that will draw raves, treat everyone to this explosion of sweetness. (As a time-saver, you may substitute package brownie bites instead of homemade.)
KABOB BROWNIE BITES
Ingredients:

1 Fudge Brownie Mix

1 pound fresh strawberries 

8 ounces large marshmallows 

1/2 cup semi sweet chocolate chips

Skewers
Instructions;

Using a mini-muffin tin, prepare Fudge Brownie mix according to package directions. Bake. Cool on a wire rack. Clean and dry strawberries. Cut them in half to have a flat end. Beginning with a strawberry cap, skewer it so the greens are on the top. Add a marshmallow, one brownie, and the other half of the strawberry so the point is on the bottom of the kabob. Place on a foil-lined baking sheet. For toasted marshmallows, use a kitchen torch. One at a time, carefully “roast the marshmallow” over a low flame. Do not burn. Return kabob to baking sheet. Repeat until all are toasted. Melt the chocolate chips in a microwave-safe bowl for 30 seconds on High. Stir and repeat until chocolate is completely melted. Transfer melted chocolate to a squeeze bottle or ziplock bag with the corner snipped off. Drizzle chocolate over the kabobs. Refrigerate until chocolate ready to serve.

What’s Cooking in Gail’s Kitchen? Simple Sensations: Yogurt Cups! Talk about healthy, nutritious, calcium-rich, and yummy! The best part is you create the parfait of flavors bursting in every spoonful. Will you make it Raspberry-White Chocolate? Strawberry-Kiwi? Banana-Chocolate Chip? Or Pineapple-Macadamia Nut? I chose four different combinations. The possibilities are endless. 
YOGURT CUPS
Ingredients:

1 16-ounce carton of Greek yogurt 

Assorted Fruit (blueberries, peaches, mandarin oranges, and Rainier cherries)

Mini marshmallows 

Dried cranberries

Toasted Coconut Flakes

Almond Slivers

Cinnamon Powder
Instructions:

Divide yogurt into individual servings. (If you like fruit on the bottom, layer some first.) Then assemble combined flavors together. Shown in photo from the top and going clockwise are:

What’s Cooking in Gail’s Kitchen? Simple Sensations: Rainbow Cookies! Wouldn’t it be nice to tap your ruby slippers together and have a super-easy delicious dessert? You can. Even Dorothy and her friends would find these yummy morsels “no-place-like-home” irresistible. What a great kid-friendly recipe when school’s out for summer!
RAINBOW COOKIES 
Ingredients:

1 box yellow cake mix

2 eggs

1/2 cup vegetable oil

12-ounce bag of mini M&M candies

15.6-ounce can Buttercream icing
Instructions:

Preheat oven to 350°. In a large bowl, mix together the cake mix, eggs, and oil until moistened. Reserve 1/2 cup M&M candies for decorating. Then gently fold in remaining mini morsels. Form little balls with the dough and place 2-inches apart on ungreased cookie sheet. Bake 5-8 minutes until edges are lightly golden. Remove from cookie sheet and cool slightly on wire racks. Spread frosting over warm cookies and immediately sprinkle each cookie with remaining mini M&M candies.
