Eating My Way Through the Alphabet-Home Cooking! The response continues to amaze me on this journey of the palate. Thanks very much to all of my followers on snapshotsincursive.com for your support and encouragement. What’s cooking in Gail’s Kitchen?  Stay tuned and you’ll see more. It’s as simple as A-B-C.  One of my passions is being at home in my own country kitchen.   I love to cook, and my husband loves that I do it often.  Now more than ever, since I am retired, I relish the thought of creating something delicious from scratch.  I adore time-honored traditions using tried-and-true recipes. Yet, I often never think twice about tweaking old favorites or modifying others to suit the inner craving of the moment.  Most of the recipes serve 2-4 people, but can be altered in any direction.  The leftovers are golden morsels to be eaten again later or shared with others.  And I love to share.  To me, seeing a smile in gratitude is thanks enough. Fabulous Fixings

Has anyone else noticed fluctuations in your daily appetite? Some days I’m perfectly happy with an appetizer-portioned meal versus a full-course dinner at the end of the day. I’ve never really been one to eat cereal for supper, but I suppose there are those who do it. Since moving to Florida, where the balmy weather resembles a tropical climate, I just don’t have the same food cravings I had up north. In retrospect, I don’t neglect my daily water intake since hydration is key. That takes priority, for sure. I guess if I had to self-diagnose my issues, I could blame “senioritis” for my waning appetite since I definitely expend less energy than I did when holding down two jobs and/or raising children. Make sense? Since I admit to a less robust appetite, a few of these recipes may seem normal to you, too. That’s okay. Let’s chalk it up to “less food means less fat.” That’s my story and I’m sticking to it. Graze or Gobble

Are you a slow eater or a fast eater? Depends on the day. Is Time a factor that makes you practically inhale a plate of food on your way from one commitment to another? Maybe you planted yourself in front of the tv to stream the latest season of a popular series and before you knew it, dinner was gone. (Some blame it on the dog.) Me? I say, if the food didn’t look so appealing, I wouldn’t devour it. On the other hand, as a grazer, I’ve been known to be “Chatty McChat Chat” in conversation lingering over a meal. It’s a tipsy-turvy world. We all have those days when we eat too quickly. Sooooo, the next collection of recipes gives you the opportunity to graze or gobble. Only you can decide. Food With Soul

Everyone has an idea of foods that satisfy inner feelings. Some cultivate fulfillment; others promote happiness. Take coffee, for instance. I look forward to my morning cuppa joe. Coffee does make me happy. I begin every day with a cold double espresso, slightly sweetened and creamy followed by a flavorful espresso shot. Then I’m done. Don’t ask me to give up my Nespresso machine because that’s not going to happen. When my husband and I lived in a hotel for nine months while our new home was being built, the Nespresso machine was my daily companion. Sure, the hotel offered a complimentary breakfast, but come on……don’t ask me to give up my soulful morning espresso. Would you? This round of recipes might give you ways to substitute foods and ingredients that appeal to your soulful lifestyle and palate. It’s all about the possibilities, ideas, and balance. Cheerful Choices

Escape the pandemic for a taste of cheerful choices that can be prepared with basic kitchen cookware and family-friendly ingredients. After all, you have enough rules to follow once you leave the house. Find your spotlight in the power of food. As your body calls out for comfort in the foods that trigger feel-good chemicals, let go of the guilty feelings society labels “taboo”. No one knows you or your family better than you do. It’s what makes you their favorite.

Country Casual Cravings

Going through a kitchen remodel has to be one of the most challenging home improvements ever. Symmetry and balance are important. Changing the layout was not an option since it remains functional as an open-ended galley kitchen including a central corridor. In fact, it all began being a simple goal to modernize the kitchen cabinets from 1970s dark wood to the bright airiness of antique white. As often happens, one thing leads to another. Before long we were updating stainless steel appliances, replacing countertops, leaving the double sink behind in lieu of a large single basin, choosing black matte cabinet pulls with copper accents, and more. One constant remained: the authentic dark hardwood flooring. To this day, it endures as the solid foundation from the time it was installed. Now that the kitchen remodel is complete, is it a state-of-the-art gourmet kitchen, you wonder. Not at all. But it has been designed around my needs, which makes it perfect. Start Smart

The secret to a good cook is pretty basic. Look to their kitchen for essential tools and you will discover why food preparation comes as naturally as breathing. Start Smart. For instance, a chef’s knife makes short work for cutting and chopping. Wooden spoons are perfect for stirring and mixing, plus they look great in a counter caddy. My son recently introduced me to the handy-dandy fat separator for making unbelievable lump-free gravy. How did I not know of this? It’s pure genius! I could go on and on about food processors, dutch ovens, spiralizers, and rice cookers, but you get the idea. Recently I froze some Farmers Market corn by removing the kernels from the cob with my corn peeler. (There really is such a thing.) Now you know…anyone can be a gourmet chef…like me. lol.
