What’s Cooking in Gail’s Kitchen? All the Buzz: Zillions of Zoodles! Anyone who owns a KitchenAid stand mixer will tell you they know all about the Spiralizer. I know it may sound like a super-hero with super-powers, but in many ways it is….for foodies, in my opinion. A Spiralizer is an attachment that can peel and slice vegetables into a uniform spiral making the vegetables look like noodles. This is a great tool for those going Paleo or living gluten-free. In mere seconds any vegetable, like zucchini, can be transformed into an abundant bowl of Zoodles. Think about the options for yellow squash, cucumbers, carrots, and potatoes! Move over, Pasta, there’s a new sheriff in town!
ZILLIONS OF ZOODLES 
Ingredients:

1-2 zucchini, spiralized 

1-2 tablespoons olive oil

8 ounces shrimp, precooked

1/8 teaspoon dill weed

1/8 teaspoon red pepper flakes

1/4 teaspoon sea salt

1/2 cup sun-dried tomatoes, chopped

1/2 cup Greek olive mix

3 tablespoons basil pesto

Fresh parsley, for garnish 
Instructions:

Spiralize zucchini zoodles into a bowl. Discard spiral stems. In a large skillet, heat olive oil to sauté shrimp sprinkled with dill weed, sea salt, and red pepper flakes. Remove from pan; keep drippings. Reduce heat and toss zoodles in reserve oil to coat. Add sun-dried tomatoes and olives. Stir in basil pesto. Toss gently. Heat zoodles no longer than 3-4 minutes. Remove and serve with sautéed shrimp. Garnish with fresh parsley.

What’s Cooking in Gail’s Kitchen? All the Buzz: Whitewashed Egg Pizza! Putting an egg on pizza? Seriously? I know this might sound a little weird, but take a baby step out of your comfort zone. The first time I saw fried egg on a pizza, I was visiting the south of France. It’s really quite common there. In fact, you’re the fortunate one if you get the egg on your slice at a takeaway stand. You really must give it a whirl. I find as long as I bake in stages, the end result is a crispy crust with an egg over easy. Just imagine how fun it will be to pop the egg yolk and spread it around so everyone gets a taste. 
WHITEWASHED EGG PIZZA
Ingredients:

1 naan

2 tablespoons olive oil

1/8 teaspoon garlic powder 

4 tablespoons chunky pasta sauce 

1 tablespoon fresh basil, chopped

3/4 cup gruyere cheese, shredded 

2 onion rings, nested

1 egg

1/3 cup mozzarella cheese

2-3 tablespoons Greek yogurt

1/8 teaspoon sea salt

Dash of pepper

2 tablespoons fresh basil, for garnish
Instructions:

Preheat oven to 425°. Set oven rack on middle setting. (For the last step you will raise it up one setting.) Rub olive oil over surface of naan. Sprinkle with garlic powder. Bake 5 minutes. Remove from oven. Spoon chunky pasta sauce evenly over naan. Use 1 tablespoon fresh basil over sauce. Sprinkle with gruyere cheese. Bake 5 minutes until slightly melted. Remove from oven. Raise the oven rack up one setting. Place the nested onions on a flat portion of the crust. Gently crack an egg into the center of the onion rings. Distribute the mozzarella cheese over the pizza, excluding the egg area. Dollop the Greek yogurt over the cheese. Season with salt and pepper. Bake 5 minutes longer or until egg is set. If the crust becomes too brown, cover it with foil, leaving the egg portion uncovered. When cheese is gooey and egg is cooked, remove from oven. Garnish with fresh basil.

What’s Cooking in Gail’s Kitchen? All the Buzz: Mandarin Orange Side Salad! Whenever I serve this colorful side salad to my guests, they rave about the dressing. I create my own version of infused garlic oil, but it can be purchased at your local grocery. Dark, leafy watercress can also be found at the area Farmers Market this time of year. A little bit goes a long way in adding a surprisingly light peppery taste. When partnered with oranges and tomatoes, it refreshes the palate for the next course. If you like a tastier and fresher alternative to an ordinary garden salad, give this one a whirl. 
MANDARIN ORANGE SIDE SALAD
Ingredients:

1/2 head romaine lettuce, torn into bite-size pieces

1/2 cup watercress

8 cherry tomatoes, halved

18 mandarin orange segments 

1/4 cup bacon pieces

1/4 cup almonds, sliced

1/2 cup Parmesan cheese, shaved
Instructions:

Divide the romaine lettuce, watercress, cherry tomatoes, mandarin oranges, bacon, almonds, and cheese evenly between 6 salad bowls. Serve chilled with dressing. (See dressing recipe below.)
Dressing Ingredients:

1/2 cup garlic vegetable oil

3 tablespoons wine vinegar 

1 tablespoon lemon juice

2 tablespoons sugar

1/2 teaspoon sea salt

1/2 teaspoon dry mustard 

1/4 cup red onion, chopped
Instructions:

Combine garlic vegetable oil, wine vinegar, lemon juice, sugar, sea salt, dry mustard, and onion. Whisk well until blended. Refrigerate one hour before serving.

What’s Cooking in Gail’s Kitchen? All the Buzz: Asparagus Shrimp Linguine! Whether you scour the ditches and railroad tracks, visit the local Farmers Market, or drop by your favorite grocers, the growing season of asparagus is upon us. Now is the time to take full advantage of its abundance. Look for signs of firm, tight buds for tender morsels. The delicate purplish tips are the best of the stalk. Indulge thy self. Permission granted. 
ASPARAGUS SHRIMP LINGUINE 
Ingredients:

3 ounces lemon pepper linguine

1/4 teaspoon sea salt

2 tablespoons lemon olive oil

1/2 pound shrimp, precooked 

8-10 asparagus spears, cut-up

8 cherry tomatoes, cut in half

1/4 teaspoon seasoned salt

1/8 teaspoon red pepper flakes

1/8 teaspoon herb and garlic seasoning 

1/4 teaspoon marjoram 

1/4 teaspoon basil

1 tablespoon nonpareil capers

1/4 cup Parmesan cheese, shaved
Instructions:

Cook lemon pepper pasta with sea salt according to package directions. Drain. Set aside. In a large saucepan, heat lemon olive oil on medium. Add shrimp, asparagus, and tomatoes. Sprinkle with seasoned salt, red pepper flakes, herb and garlic seasoning, marjoram, and basil. Fry shrimp and vegetables until crisp and tender, 4-5 minutes. Add linguine and cook until heated through. Swirl to toss gently. Sprinkle with Parmesan cheese shavings. Garnish with capers.

What’s Cooking in Gail’s Kitchen? Food Junkie Favorites: Potato Chip Potluck! This one-dish wonder is so yummy, it can be packed in a picnic basket and taken along on your next adventure. With the double crunch of water chestnuts and potato chips, it almost seems like a party dip. Wrap it in foil and you’re good-to-go. Kids love the salty chips and adults appreciate the herbed chicken chunks. 
POTATO CHIP POTLUCK 
Ingredients:

3 cups chicken, cooked and cubed

1/2 cup mayonnaise 

3 green onions, snipped

8-ounce can water chestnuts, drained and chopped

1 tablespoon lemon juice

1/4 teaspoon celery seeds

2 tablespoons chopped tarragon leaves

Sea salt to taste

Dash of pepper

1 cup extra sharp cheese, sliced or shredded

1-2 tomatoes, sliced

1 cup potato chips, crushed
Instructions:

Preheat oven to 350°. Combine chicken, mayonnaise, onions, water chestnuts, lemon juice, celery seed, tarragon leaves, salt, pepper, and half the cheese. Mix lightly. Spoon into a casserole dish. Layer with sliced tomatoes. Bake for 20 minutes. Top with remaining cheese and potato chips. Bake another 5 minutes or until cheese is melted.

What’s Cooking in Gail’s Kitchen? Take a Seat at the Table: Veal Parmesan! Actually, this recipe works really well with chicken, if you choose to substitute. Either way, it’s a gourmet dinner entrée that deserves a friendly nod of approval. By first browning the coated veal in a skillet, the crust seals in the rustic Italian flavor. Top it with Muenster cheese instead of mozzarella for a tangy smooth complement to the savory tomato sauce. 
VEAL PARMESAN 
Ingredients:

1 pound veal cutlets or chicken breasts

1/3 cup Italian dry bread crumbs

1/3 cup Panko seasoned dry bread crumbs

1/3 cup Parmesan cheese, grated

1 egg, beaten

2 tablespoons milk

1/4 cup vegetable oil

2 cups Italian tomato pasta sauce, chunky

2 cups Muenster cheese, sliced
Instructions:

Preheat oven to 350°. Between plastic wrap, flatten each cutlet to a disc. In a shallow dish, whisk egg and milk together to blend. On a sheet of waxed paper, combine Italian bread crumbs, Panko bread crumbs, and Parmesan cheese. Dip veal into egg mixture, then coat with bread crumb mixture. Heat vegetable oil in a large skillet over medium heat. Cook the veal 4-5 minutes per side until golden brown. Drain on paper towels. In a greased baking dish spoon half the pasta sauce on the bottom. Next layer the veal cutlets. Spoon remaining sauce over veal. Top with Muenster cheese overlapping the meat. Bake uncovered for 25 minutes until sauce is bubbly and cheese is golden brown in spots. Garnish with fresh basil.

What’s Cooking in Gail’s Kitchen? Appetizers to Desserts: Fried Green Tomatoes! The key to success is using solid, firm green tomatoes. Ripe ones will turn mushy and very disappointing. Even if you don’t live in the South, everyone can enjoy these crisp and juicy medallions. The seasoned cornmeal crust will have you resurrecting a southern drawl that sounds as authentic as a waitress in a country café. Try the first one with a fork and then have seconds as a sandwich. 
FRIED GREEN TOMATOES 
Ingredients:

2 green tomatoes, sliced with skin on

1/4 cup flour

1/4 cup cornmeal

1/4 cup panko breadcrumbs

1/4 cup Italian seasoned breadcrumbs 

2 tablespoons grated Parmesan cheese

1 teaspoon seasoned salt

1/8 teaspoon black pepper 

1 large egg, beaten

2 tablespoons milk

1/4 cup vegetable oil
Instructions:

On a sheet of waxed paper, combine flour, cornmeal, breadcrumbs, cheese, seasoned salt, and pepper. Blend with a fork. In a shallow bowl, mix egg and milk. Dip a green tomato slice in the egg mixture then coat with breadcrumb mixture. Repeat. Set aside. Continue until all slices have been coated. In a deep skillet on medium-high heat add vegetable oil for frying. Place tomatoes in a single layer. Do not crowd. Fry each side 3 minutes until golden brown. Turn over and fry the other side. Remove and place on a wire rack to remove excess oil. Repeat until all green tomato slices are used. Serve hot. Garnish with a dollop of wasabi aioli.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Hacienda Taco Salad Bowls! It’s okay to indulge in those fast-food cravings. Everyone does now and then. When I get the urge to succumb to the temptation, I begin to turn things around in my own kitchen. Take, for example, the glorious Taco Salad with the edible crispy flour shell bowl. It can be made for half the cost at home, leaving extra money in your wallet for something like…oh I don’t know…SHOES! Make this guilt-free version at home. 
HACIENDA TACO SALAD BOWLS
Ingredients:

6 flour tortillas

1 pound lean ground beef

1/4 teaspoon sea salt

1/8 teaspoon black pepper

1/8 teaspoon garlic powder

1 teaspoon cumin powder

Romaine lettuce leaves, torn

2 tomatoes, diced

1 cup extra sharp cheddar cheese, finely shredded

2 green onions, snipped

1/4 cup black olives, sliced

1/4 cup jalapeño peppers, sliced

1/4 cup Greek yogurt

1/2 cup salsa
Directions:

Preheat oven to 375°. Using nonstick spray oil, coat the inside of oven-safe bowls. Gently mold the flour tortilla inside to form a bowl. Bake 15-20 minutes until golden brown and crisp. Remove from oven and cool before transferring to wire rack. Meanwhile, brown ground beef and drain. Add salt, pepper, garlic powder, and cumin. Mix well. Assemble hacienda bowls by filling with remaining ingredients, per taste. Top with Greek yogurt and salsa.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Southern-Style Sausage Gravy and Biscuits! Some call it “comfort food”, others say it reminds them of Home. Whether you’re from the southern states or not, this meal is a hardy choice for an early breakfast, mid-day brunch, or late-night dinner. Add a side of tomatoes, eggs, cheese, or grits and you’ll soon have another family favorite. 
SOUTHERN-STYLE SAUSAGE GRAVY AND BISCUITS
Ingredients:

12-ounces of bulk pork sausage

1/8 teaspoon cracked black pepper

1/4 teaspoon seasoned salt

1/8 teaspoon crushed red pepper flakes

1/4 cup butter 

1/4 cup flour

2 cups milk

1 tube buttermilk biscuits
Instructions:

In a large skillet over medium heat, brown sausage with black pepper, 1/8 teaspoon seasoned salt, and red pepper flakes, stirring occasionally. It will be crumbly when cooked through. Set aside. In a 2-quart pan, melt butter and remaining 1/8 teaspoon seasoned salt over medium-low heat, being careful not to scorch. Add flour all at once into the butter to make a roux. Whisk vigorously for about one minute. The mixture will thin and begin to bubble. Reduce heat to low and let it cook for two minutes more, stirring occasionally. Continue whisking and gradually pour the milk into the mixture, eliminating any lumps. Bring the gravy to a boil, stirring often. Lower the heat and gently simmer for two minutes longer or until thickened. Using a slotted spoon, transfer sausage to the gravy, reserving 1/3 cup for garnish. Meanwhile, bake biscuits according to package directions. Remove from oven. 

Split biscuits in half and top with sausage gravy. Sprinkle crumbled sausage over all and serve immediately.
