What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Mediterranean Salad! I was asked to provide a salad on short notice for a gathering recently, so it seemed like a no-brainer to share the bounty of my garden. The abundance of ripe tomatoes practically transformed my platter into a work of art. Anyone can do the same. All you need is a few ingredients and two different size platters. 
MEDITERRANEAN SALAD
Ingredients:

4-5 medium tomatoes, sliced

3-4 small tomatoes, sliced

1 pound fresh mozzarella, sliced

1/3 cup olive oil

1/8 teaspoon dried basil

1/8 teaspoon dried marjoram 

1/8 teaspoon dried oregano 

2 mozzarella sticks string cheese, sliced

1 small green pepper

1/2 cup pitted black olives

1/2 cup fresh basil leaves

2-3 tablespoons balsamic reduction sauce
Instructions:

Choose tomatoes that are uniform in size. This will enhance the pinwheel effect when complete. Slice the tomatoes, discarding the end pieces. Place on paper towels to avoid too much juice on the platter. In a shallow dish combine sliced mozzarella, olive oil, dried basil, oregano, and marjoram. Try to coat the cheese evenly. Set aside to marinate. Meanwhile, take the green pepper and cut across the top to remove the stem portion. Hollow out the pepper and rinse. Turn upside down so no water remains inside. This pepper will be placed in the center as the focal point to hold the black olives. To assemble platter, begin by placing the smaller plate inside the platter. Place the green pepper in the center of the small plate. Arrange the small tomatoes and sliced string cheese around the green pepper. Next take the medium tomato slices and alternate with the marinated mozzarella slices until the outer area of the large platter is filled. Take the fresh basil and arrange the leaves throughout. Some may remain whole while others may be snips of basil. Drizzle reserve olive oil being careful not to drench. You may not need much. Drizzle balsamic reduction sauce over all. Garnish olives with colorful picks.

What’s Cooking in Gail’s Kitchen? A Burst of Flavor: Giddyup Gazpacho! Yee-haw! Get set to gather the bounty of your garden because this dish has quite a variety of appetizing vegetables! You’ll experience an explosion of flavor in every mouthful. Gazpacho is one of those mysterious soups that is meant to be eaten COLD. Sound bizarre? I know, right! Trust me, the fusion of wholesome produce is unsurpassed. And the temperature is perfectly refreshing this time of year. 
GIDDYUP GAZPACHO 
Ingredients:

4 large ripe tomatoes, chopped 

1 small sweet onion, finely chopped

2 stalks of celery, diced

1 small green pepper, diced

1/2 cup baby carrots, finely chopped

2 cloves garlic, minced

1 medium cucumber, peeled, seeded, and diced

1/4 cup olive oil

2 tablespoons garlic vinegar 

1 teaspoon sea salt

1/8 teaspoon cracked black pepper

1 teaspoon sriracha hot chili sauce (optional)

2 cups 100% vegetable juice, low sodium
Instructions:

In a large mixing bowl add all the ingredients from the top of the list to the bottom. Stir well. The vegetable juice is added last so you can determine the consistency of the soup. Cover the bowl and refrigerate for at least one hour before serving.

What’s Cooking in Gail’s Kitchen? The Daily Special: Zippy Stuffed Peppers! I can hardly wait for my garden peppers to grow large enough for this tasty Italian-style meal. It is traditional, yet impressive, when serving to our dinner guests. And the presentation is phenomenal. When serving, place each stuffed pepper in a shallow bowl with a side of buttery bicolor sweet corn, cobs removed. Add crusty bread and everyone will sing your praises thinking you slaved all day to make such a five-star entrée. Live it up!
ZIPPY STUFFED PEPPERS
Ingredients:

6 large green bell peppers

1 pound Italian sausage, ground

2 tablespoons olive oil

2 tablespoons onion, chopped 

1 garlic clove, minced

1 teaspoon sea salt

I teaspoon fennel

1/8 teaspoon oregano 

1/8 teaspoon basil

1/8 teaspoon marjoram

1/8 teaspoon crushed red pepper flakes (optional)

1 cup cooked brown rice

1/4 cup corn

1 1/2 cups diced tomatoes in sauce 

3/4 cup mozzarella cheese, shredded
Instructions:

Preheat the oven to 350°. Cut off the top of each pepper and remove the insides. Rinse and drain. Brown the Italian sausage, garlic, and onion in olive oil. Drain and stir in the spices. Add cooked rice, corn, and half the tomatoes. Mix gently and heat through. Stand peppers upright in ungreased baking dish. Put a scant spoonful of sauce in the bottom of each pepper. Sprinkle in a little cheese. Then stuff each pepper with the meat mixture. Pour remaining sauce over stuffed peppers. Cover with foil and bake for 45 minutes. Remove foil, sprinkle with cheese, and bake 15 minutes longer.

What’s Cooking in Gail’s Kitchen? The Daily Special: Uptown Burrata Masterpiece Salad! I stumbled onto this decadent cheese with the soft creamy center at first bite when my husband and I visited Little Italy in Boston. Hearing the excitement in the voice of our waiter piqued my interest. Oh my, this has to be the best cheese ever! The easiest way to describe it is to say that it’s a type of fresh mozzarella cheese with a hollow center filled with thick cream that boasts of a rich buttery taste. Make sense? It’s meant to be eaten at room temperature, so don’t waste your money melting it on a pizza.
UPTOWN BURRATA MASTERPIECE SALAD
Ingredients:

1 bunch fresh arugula leaves

3-4 Campari tomatoes, quartered

6-ounces artichoke hearts, marinated

6-ounces Burrata mozzarella cheese

Balsamic Reduction 

Cracked black pepper to taste
Instructions:

Arrange arugula leaves in a shallow bowl. Place tomatoes and artichokes around decoratively. Place a portion of the Burrata mozzarella at center stage. Drizzle balsamic reduction sauce over all. Garnish with cracked peppercorns to taste. Yes, please!

What’s Cooking in Gail’s Kitchen? The Daily Special: Noodle Rigatoni! When time is of the essence, and you need a fulfilling meal, this dish can be made in minutes. While the wine is slightly chilling, and you wish to keep the kitchen cool, everything works together between stovetop and microwave. Your tastebuds will be satisfied without salad or bread as well since this meal-in-a-bowl hits the spot. 
NOODLE RIGATONI
Ingredients:

1 pound Italian sausage, ground

1/8 teaspoon garlic powder

1/8 teaspoon cracked black pepper

1/4 teaspoon sea salt

1/4 teaspoon fennel

1/4 teaspoon oregano 

1/4 teaspoon basil 

1/8 teaspoon red pepper flakes

1/8 teaspoon marjoram

1 8-ounce jar marinated artichoke hearts, cut-up

2 cups of Italian Roma tomatoes in sauce, cut-up

1/4 cup feta cheese, crumbled

16 ounces rigatoni noodles
Instructions:

In a large skillet, brown Italian sausage until crumbled and cooked through. Drain and add garlic powder, pepper, salt, fennel, oregano, basil, red pepper flakes, and marjoram. Keep warm over low heat, stirring occasionally. Warm separately the cut up tomatoes and the marinated artichoke hearts. Keep warm. Meanwhile, bring a 4-quart pan of salted water to a boil. Cook pasta until tender; about 10 minutes. Stir often. It should be firm. Drain pasta. Place portions of rigatoni in individual serving bowls. Spoon tomatoes in sauce over noodles. Arrange artichoke hearts around edges. Lastly add crumbled Italian sausage over top. Garnish with feta cheese.

What’s Cooking in Gail’s Kitchen? A Second Helping of Xnipec Salsa, which translates to “smoking HOT” because it’s made with habanero chile peppers popular in the Yucatan region. I was pretty cautious in making this by first roasting the habaneros in the oven and then scraping out all the seeds. (Warning: Be sure to wear gloves when handling habanero peppers!) I served this salsa with the Zesty Fish Tacos coming up in Letter Z. 
XNIPEC SALSA

Ingredients:

1/3 cup Vidalia onion, chopped

1 clove garlic, peeled and minced

4-6 plum tomatoes, cut-up with juice

2 tablespoons orange juice

2 tablespoons lime juice 

Salt to taste 

2 Habanero peppers

3 tablespoons cilantro, chopped

Instructions:

Mix together onions, garlic, tomatoes, salt, lime juice, and orange juice. Set aside. The salt will make the tomatoes very juicy, which releases the flavor, in my opinion. If you prefer a thicker, chunkier sauce, do not add salt until ready to serve. 
Roast the habaneros in the oven at 400° until charred. Broil if necessary. Watch! Slice in half and remove stems. Scrape out all the seeds. Then dice the peppers. Combine with the onion/tomato mixture. Add chopped cilantro. Toss gently. Marinate salsa for one hour prior to serving.

What’s Cooking in Gail’s Kitchen? A Second Helping of Nacho Macho Supreme! Get ready for the most amazing loaded nacho platter for those warm summer nights on the back porch. The music is playing, the conversation is flowing, and the margaritas are going down real slow. These are the nights that are made for us.  
NACHO MACHO SUPREME 
Ingredients:

1 large bag of corn tortilla chips, café style

1 pound ground Mexican chorizo 

1/8 teaspoon garlic powder

1/4 teaspoon cumin powder

1/2 cup frozen sweet corn, thawed

1/2 cup black beans, drained

1/4 cup sliced jalapeño peppers 

4 green onions, sliced

2 tomatoes, diced

2 cups sharp cheddar cheese, shredded 

1 cup mozzarella cheese, shredded

1 cup salsa

1 cup sour cream
Instructions:

Preheat oven to 400°. Spray a pizza pan with nonstick oil. Lightly salt. Set aside. 

In a shallow skillet, cook chorizo, garlic, and cumin until meat is brown. Drain on paper towels. Assemble nachos by dividing into three or more layers to form a pyramid—chips, chorizo, corn, beans, jalapeños, green onion, tomatoes, cheddar cheese, and mozzarella cheese. Bake for 15-20 minutes. Watch! Serve with salsa, sour cream, and cilantro garnish.

What’s Cooking in Gail’s Kitchen?  Italian Pasta Mediterranean!  This exotic colorful pasta dish will have you rolling your eyes in satisfaction over the hearty gourmet intensity. Its blend of gastronomic flavor tempts the taste buds to have a second helping of this culinary delight. 

ITALIAN PASTA MEDITERRANEAN 
Ingredients:
8 ounces penne pasta
Salt to taste
1/2 pound Italian salami, thinly sliced
1/2 pound asparagus spears
1/2 cup diced sun-dried tomatoes 
3 tablespoons olive oil
1 teaspoon oregano
1 teaspoon basil
1 teaspoon marjoram 
1/8 teaspoon garlic powder
1/2 teaspoon crushed red pepper flakes 
1/4 cup pine nuts, toasted
Parsley Sprig for garnish 
Instructions:
Bring a large pot of water to a boil. Add salt. Add penne pasta and cook until al dente. Drain the pasta and transfer it to a large pasta bowl. 
Next to steam asparagus, place water in the bottom half of a steamer pan set. Bring to boil. Trim ends off the asparagus. Cut into quarters. Place in top half of steamer pan set. Steam for 5 minutes until tender. 
For dressing, mix olive oil, oregano, basil, marjoram, garlic powder, and red pepper flakes in small bowl. 
Combine penne pasta, asparagus pieces, diced sun-dried tomatoes, and salami rounds. Pour olive oil dressing over all. Gently mix. Add pine nuts. Garnish with fresh parsley sprig. Serve warm with garlic toast. This is an excellent side dish to Chicken Cacciatore.
