What’s Cooking in Gail’s Kitchen? Timeless Classics: Tex-Mex Tortilla Soup! One thing I love about Fall is the convenience of crockpot meals. Throw all the ingredients together, stir, and then forget about it for a few hours. Do something fun……and I don’t mean raking leaves or shelling walnuts. Take a nature walk, visit an apple orchard, choose a mum plant for your front door, photograph colorful pumpkins and gourds. You get the idea. Don’t let the season pass you by. Autumn is in full swing and Mother Earth has splattered the landscape with vibrant colors.

What’s Cooking in Gail’s Kitchen? Timeless Classics: Stuffed Tomato Tuna Salad! Pat yourself on the back for choosing today’s recipe as a rich source of omega-3 fatty acids. For the weight-conscious, opt out for a lighter version of mayonnaise or substitute using plain Greek yogurt instead. The tomato contains a high water content, plus the fiber will provide a feeling of fullness. That being said, go stuff yourself. Permission granted.
STUFFED TOMATO TUNA SALAD

6 ounce can tuna in water, drained and flaked

1 teaspoon lemon juice

1/3 cup mayonnaise

1/4 teaspoon sea salt

1/8 teaspoon celery seed

1 tablespoon dill pickle relish

2 tomatoes, cored

1 tablespoon walnuts, chopped

Cut tomatoes into 8 segments without slicing the bottom portion. Place one or two romaine lettuce leaves on a chilled plate. Transfer one tomato. Open it like a pinwheel. Spoon tuna salad into the tomato, filling it with half the portion. Garnish with walnuts, lemon tarragon, and a lemon slice. Repeat with second serving.

What’s Cooking in Gail’s Kitchen? Eat More: Gyro-mania! The debate continues…do you pronounce the sandwich like the Greeks, “(h)year-oh”, or the American standby, “Jai-roh”? Either way, it’s a taste sensation. Think about it: rotisserie meat crispy shaved into strips wrapped into a soft pita pocket topped with onion, tomato, cucumber, feta cheese, and tzatziki sauce. The bold foodie will pick it up with both hands and devour it until not a crumb remains. Others may eat it with a fork. Whatever you choose, with Eastern Mediterranean spices, this sandwich is not for the meek.

1/3 cup Greek yogurt

Watercress sprig, for garnish

Remove and set aside. Add gyro slices of meat to skillet. Heat both sides on medium heat for 20 seconds per side. In a small bowl, mix Greek yogurt with tzatziki sauce. Stir until creamy. What’s Cooking in Gail’s Kitchen? All the Buzz: Fabulous Fruit Dip! Recently I served a delightful fruit cup for breakfast when family came to visit. Because it is made with Greek yogurt and nutmeg, it’s an impressive alternative to ordinary yogurt. Think of it as Summer-in-a-Cup. Whether you decide to arrange a generous fruit platter for a crowd or scale it down to individual portions, the results are the same: heavenly delicious!
FABULOUS FRUIT DIP

1/4 cup Greek yogurt

1 teaspoon orange extract

1/8 teaspoon orange zest

Smidgen nutmeg

Assorted fresh fruits

Mint Sprig for Garnish
Instructions:

Cut 1/3 off the top of the orange to create a “bowl”. Carefully run a sharp knife around the inside. Do not cut through the peel. Gently scoop out the fruit. Set aside. In a medium bowl, mix together Neufchâtel cheese and marshmallow creme. Beat until smooth. Fold in Greek yogurt. Make the zest by using the top portion of the orange peel. Add orange extract, zest, and nutmeg. Blend thoroughly. Chill one hour. Scoop into the orange “bowl” before serving. Garnish with fresh mint sprig. Place on a serving platter surrounded by fresh fruit.
* For individual servings, choose four small navel oranges.
