Number One, it’s healthy. Number Two, it makes the soup creamier, which is always a plus in my opinion. Number Three, Greek yogurt has twice as much protein as regular yogurt. And, Number Four, it has about half as many carbs, if that’s something that is important to you. All together, that makes it a Superfood. Yada-yada-yada. In the end, what it all comes down to is flavor. Tomatoes can be sweet, so the yogurt adds a little tang, which goes well with a dab of butter. Add herbs and cheese with a slice of garlic toast and you have the “pièce de résistance”. Nicely done.

YOGURT TOMATO BISQUE

Ingredients:

10-12 plum tomatoes, cut in half

1 sweet onion, chopped

2 tablespoons olive oil

1/8 teaspoon black pepper

1/4 teaspoon sea salt

1/4 teaspoon basil

1/4 teaspoon oregano

1/4 teaspoon garlic powder

2 cups vegetable broth

1 cup Greek yogurt

Dab of butter

Colby cheese, finely shredded

1/4 teaspoon marjoram

Instructions:

Preheat oven to 400°. Place plum tomatoes and chopped onions in a large bowl. Drizzle with olive oil to coat. Sprinkle with black pepper, sea salt, basil, oregano, and garlic powder. Spread onto a baking sheet that has been sprayed with nonstick oil. Roast 30 minutes until browned. Remove from oven. Cool slightly. Transfer roasted vegetables to a food processor to purée. In a stock pot, combine vegetable broth and puréed tomatoes. Stir well. Bring to a boil. Reduce heat and simmer for 10 minutes, stirring occasionally. Remove from heat. Gently fold in Greek yogurt. Divide into soup bowls. Garnish with a dab of butter and finely shredded Colby cheese. Sprinkle with marjoram. Serve with garlic toast.

Keto focuses on fat, carbs, and protein without grains or breads. Paleo avoids most dairy, legumes, and grains. And gluten-free basically means you’ve given up wheat, rye, and barley. So you can be on a gluten-free diet and still be keto-friendly. What I’ve done today is eliminate the crust in the traditional quiche making it similar to an omelette, only thicker. No worries. You won’t miss the crust because the ham and cheese filling is worth the trade-off.

QUICHE KETO-FRIENDLY

Ingredients:

8 eggs

1/2 cup milk

1/2 cup Greek yogurt

1/2 teaspoon seasoned salt

1 cup ham chunks

1 cup cheddar cheddar, shredded

1 tablespoon onion, minced

Instructions:

Preheat oven to 325°. Beat eggs, milk, Greek yogurt, and seasoned salt. Add ham chunks into egg mixture; stir to combine. Fold in shredded cheese and minced onion. Pour into a greased loaf pan. Bake uncovered 40-45 minutes until set. Top should appear golden brown.

The waitress at the Mexican restaurant recommended the full bodied taste of Green Chile Soup. It hit the spot. From the first tangy spoonful of mild green chiles to the gentle creaminess on my tongue, I knew this wasn’t your typical soup. It may have been a regional delicacy, but by making it at home, I saved myself a round trip ticket to Colorado.

GREEN CHILE SOUP

Ingredients:

20 green chiles, large

1 yellow onion, chopped

1 tablespoon butter

1/2 teaspoon sea salt

1/4 teaspoon garlic powder

3 cups chicken broth

1 cup heavy cream

1/3 cup Greek yogurt

Monterey Jack cheese and cilantro, for garnish

Instructions:

Place green chiles on a wire rack over a foil-lined baking sheet. Roast on Broil until blistered and charred. Remove from oven. Cool. Discard stems and seeds. In a large pan, warm butter over medium heat. Add chopped onion. Sprinkle with sea salt and garlic powder. Cook until soft. Add roasted chiles and chicken broth. Reduce heat and simmer for 20 minutes. Transfer to a food processor and blend until smooth. Transfer mixture back to pan. Stir in cream and Greek yogurt. Pita bread is definitely enhanced by all the ingredients stuffed into it. Naan, on the other hand, is made with egg and yogurt-instead of water-which are typically fermented (or rested) in the dough before baking in a clay oven, which makes it chewy and delicious. UFF-DA BREAD TACOS

Ingredients:

4 single-serving naan bread slices

2 tablespoons vegetable oil

1 pound ground chorizo

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon dried oregano

1/4 teaspoon black pepper

1 cup picante sauce, divided

1 cup romaine lettuce, gently torn

1 cup pinto beans, drained

1 cup Mexican blend cheeses, finely shredded

1/2 red onion, thinly sliced

1/4 cup black olives, sliced

1/2 cup sour cream

Fresh cilantro, for garnish

Instructions:

In a skillet over medium-high heat, cook chorizo. Break apart the meat as it cooks. Drain off excess grease. Reduce heat to low; sprinkle in the chili powder, ground cumin, dried oregano, and black pepper. Mix well. Simmer 2 minutes. Keep warm. Warm grill pan, over medium-high heat; brush pan with vegetable oil. Use remaining vegetable oil to lightly coat naan on both sides. Place naan slices on pan for 1 minute; flip and repeat for one minute longer. Naan will be slightly charred, soft, and pliable. Remove pan from heat. Set aside. To assemble bread tacos, spoon picante sauce on each naan. Layer with romaine lettuce leaves, pinto beans, crumbled chorizo, Mexican blend cheeses, red onion slices, and black olives. Top with a dollop of sour cream and the remaining picante sauce. Garnish with fresh cilantro. Serve immediately.

It also cooks in half the time, making it less labor-intensive. Somehow that doesn’t sound near as exciting as a French quiche. Yet, it is because the filling ends up being light, fluffy, and savory. The feta cheese is a crowning point with its rich tangy flavor. And the next time you need something versatile for leftover lunch the next day, think frittata. Even at room temperature, it tastes amazing.

OVEN SPINACH FRITTATA

Ingredients:

4 eggs

1 tablespoon Greek yogurt

1/2 teaspoon kosher salt

1/8 teaspoon red pepper flakes

1 tablespoon olive oil

1 green onion, chopped

1 strip bacon, cooked and crumbled

1/2 cup cherrywood deli ham, sliced

1/4 cup baby spinach leaves

2 ounces feta cheese, crumbled

Italian dried herbs, for garnish

Instructions:

Preheat oven to 350°. In a bowl, whisk together eggs, Greek yogurt, kosher salt, and red pepper flakes until combined. In an iron skillet over medium heat, warm olive oil. Sooo, what is the difference, you wonder. The secret is in the name. It’s made with butter! The tomatoes, coconut milk, and seasonings are cooked slow enough to transform the sauce into a gravy-like consistency with a nice kick of flavor. Also, by slow-cooking the chicken, it becomes fork tender and juicy. Ahhh, now I have your attention. Sounds like a grocery list is in order. Bravo. Your family will thank you.

BUTTER CHICKEN

Ingredients:

2 pounds chicken breasts, skinless and cut into chunks

1/2 sweet onion, chopped

1 jalapeño, seeds removed and diced

1/2 teaspoon garlic powder

2 tablespoons unsalted butter

1 tablespoon curry powder

2 teaspoons garam masala

1/2 teaspoon turmeric

1 teaspoon chili powder

1/2 teaspoon ground ginger

1/4 teaspoon cayenne pepper

14.5 ounce can coconut milk

6 ounce can tomato paste

Fresh cilantro, for garnish

Dollop of Greek yogurt, for garnish

Instructions:

In a slow cooker, add chicken chunks, chopped onion, diced jalapeño, and garlic powder. Stir to combine. Dot with cubes of butter. In a medium bowl, stir together curry powder, garam masala, turmeric, chili powder, ground ginger, and cayenne pepper. Add coconut milk and tomato paste. Whisk to combine. Pour over chicken mixture. Once I’ve have my fill of guacamole, I turn to other creative ways to produce a nutritional boost to the menu. Although stuffed avocados can be baked or grilled, sometimes it’s a real treat to prepare them this way. Some might call it a light lunch, simply because it satisfies the appetite as a filling meal.

AVOCADO ONION DIP

Ingredients:

8 ounce Neufchâtel cheese, softened

1/2 cup Greek yogurt

2 tablespoons capers, chopped

1/8 teaspoon cayenne pepper

1 cup crispy-fried onions, slightly crushed

2-3 ripe avocados, halved and pits removed

1 tablespoon lime juice

1/8 teaspoon sea salt

1/8 teaspoon garlic powder

Green onion snips, for garnish

Whole celery seed, for garnish

Instructions:

Using an electric mixer, beat together softened cream cheese, Greek yogurt, chopped capers, and cayenne pepper until blended. Fold in crushed crispy-fried onions until combined. Transfer to a covered bowl. Refrigerate for one hour. Prepare avocado halves. Brush with lime juice; sprinkle with sea salt and garlic powder. When ready to serve, scoop onion dip into each avocado half. Garnish with green onion snips, chopped capers, and a sprinkling of whole celery seed. Serve immediately.

They are not only refreshing, colorful, and bursting with flavor, but look appealing in glass jars…making them incredibly portable. Choose single-size portions or larger quantities. How fun is that? Southwest corn offers the extra kick of poblano and red peppers. Pair it with natural sweet corn for amazing seasoning. Top everything off with the crunch of chili cheese corn chips. Toss a bag in the picnic basket since you only crush them and sprinkle them on before serving. Nibbling is allowed.

ZAPATA MEXICAN CORN SALAD

Ingredients:

15-ounce can Southwest Corn with poblanos and red peppers, whole kernel and drained

15-ounce can natural sweet corn, whole kernel and drained

2 radishes, chopped

1 green onion, chopped

1/2 red onion, diced

1 jalapeño, chopped

2/3 cup mayonnaise

1/3 cup Greek yogurt

8 ounces cheddar cheese, shredded

9.75-ounce bag chili cheese corn chips

Cilantro for garnish

Instructions:

Combine southwest corn, sweet corn, radishes, green onion, red onion, and jalapeño. Mix well. Stir in mayonnaise and Greek yogurt. Fold in cheddar cheese. Stir well. Transfer to covered container. Refrigerate one hour. Before serving, crush chili cheese corn chips. Sprinkle on top. Garnish with fresh cilantro. Serve immediately.

Xiangjiao Banana Bread

What’s Cooking in Gail’s Kitchen? The Color of Food: Xiangjiao Banana Bread! How’s this for a fancy word? For those who haven’t a clue, “xiangjiao” is actually Chinese for banana. And who doesn’t love bananas? A few years ago my grandson came to my house for a sleepover. I had been to the grocery store to get some of his favorite foods, in addition to a couple of new choices. Imagine my surprise when I presented him with a half-peeled yellow banana. He got a puzzled look on his face as he eagerly grabbed it and said, “Nana. Ba-Nana?” I smiled and gave him a giant hug before the air exploded into peals of laughter. There’s nothing sweeter than a toddler’s giggle.

XIANGJIAO BANANA BREAD

Ingredients:

1/2 cup butter, room temperature

1 cup sugar

2 eggs

1/4 cup Greek yogurt

1 teaspoon vanilla extract

3 ripe bananas, peeled and crushed

2 cups flour

1/2 teaspoon baking powder

1 teaspoon baking soda

1/8 teaspoon sea salt

1/4 cup pecans, chopped

Topping: (optional)

1 ripe banana, sliced lengthwise

1 tablespoon chopped pecans

Instructions:

Preheat oven to 350°. Spray a loaf pan with a nonstick oil containing flour. Set aside. Cream together butter and sugar. Add eggs, Greek yogurt, vanilla extract, and crushed bananas. Mix well. Combine flour, baking powder, baking soda, and sea salt. Add to the creamed mixture. Stir just until batter is combined. Do not over mix. Fold in chopped pecans. Pour into prepared pan. For topping, place the two halves of a ripe banana on top of the batter. Sprinkle with remaining chopped pecans. Bake one hour or until tester comes out clean. Cool 5 minutes and then remove banana bread from loaf pan. Cool longer on a wire rack.
