After the Holidays

Now that the period of time from Thanksgiving until New Year’s Day is in the rear view mirror, everyone can take a deep sigh of relief to figure out what to do with the abundance of leftovers as well as homemade sweets we’ve accumulated. Let’s approach the days ahead with the clear vision of waste not, want not. I’m the first to admit I limit trips to the grocery store, during the current pandemic, in order to be proactive about my health. Thankfully, I have extra freezer space which keeps my husband and me from eating the same meals over and over until it’s finally gone. I’ve found a few minutes of planning works as a productive strategy to keep foods from going to waste. Perhaps that is also the secret to offer balance, color, texture, and food presentation. After all, isn’t that what the pros do? Clean Eating

Welcome to the world of buzz words. Some call this a lifestyle change, others refer to it as common sense. First of all “Clean Eating” doesn’t mean wash your fruits and vegetables, and yet I suspect you already knew that. Essentially, it means choosing foods that have been minimally processed with natural nutrients being at the forefront. It involves limiting artificial foods as much as you can. Check the ingredient list for added sugars (high fructose corn syrup is a well-known culprit) as well as unhealthy fats (like palm oil). Foods may be craftily disguised as “all-natural” but still contain growth hormones. It’s exhausting. The bottom line? Learn to pay attention to your body’s reaction. It goes a long way to help with weight control and a positive attitude. You can do this! It’s true that every living thing needs food in order to thrive. Perhaps that is my justification for being a foodie. I actually “like” planning, cooking, and serving food in wonderful ways. I believe if something looks appealing on the plate, well it kinda has to taste good, doesn’t it? After all, we devour food first with our eyes. Start Smart

The secret to a good cook is pretty basic. Look to their kitchen for essential tools and you will discover why food preparation comes as naturally as breathing. Start Smart. For instance, a chef’s knife makes short work for cutting and chopping. Wooden spoons are perfect for stirring and mixing, plus they look great in a counter caddy. My son recently introduced me to the handy-dandy fat separator for making unbelievable lump-free gravy. How did I not know of this? It’s pure genius! I could go on and on about food processors, dutch ovens, spiralizers, and rice cookers, but you get the idea. Recently I froze some Farmers Market corn by removing the kernels from the cob with my corn peeler. (There really is such a thing.) Now you know…anyone can be a gourmet chef…like me. lol. Meeting Chef Michelle Tribble

On a recent trip to Las Vegas, Nevada, I knew there was one place that was definitely on my Bucket List: Hell’s Kitchen at Caesars Palace along the Las Vegas Strip. If you’re familiar with the reality cooking series, Hell’s Kitchen, I don’t need to tell you Michelle Tribble was the winner of Season 17. She was awarded the position of head chef for this Vegas hotspot by owner, Gordon Ramsey. And this is the second time I’ve met her. No matter how busy the kitchen staff is, on a full-scale stage for all to see, excited patrons as well as Instagram enthusiasts stop by to pose for selfies. Chef Michelle, keeping one eye on the crew as she circles the dining area checking out the food, continuously greets curiosity seekers for feedback and photo ops. She really is down-to-earth, very personable, and pays great attention to detail. No wonder it was a privilege to meet her.
