Ingredients: 

28-ounce can pork and beans

6 pieces bacon, baked and crumbled

1/4 cup onion, chopped

1 tablespoon honey

1 tablespoon ketchup

1/3 cup brown sugar

2 tablespoons Jack Daniel’s whiskey

1/8 teaspoon garlic powder

1/8 teaspoon black pepper 

Instructions: 

Preheat oven to 350°. In a large bowl, combine pork and beans, crumbled bacon, chopped onion, honey, ketchup, brown sugar, Jack Daniel’s whiskey, garlic powder, and black pepper. Stir until completely combined. Transfer to an ovenproof casserole dish. Bake one hour, uncovered. Serve.

Although now there are a bazillion variations of the traditional Polish snack originally sold by street vendors, this recipe serves as a starting point for something new and different. Sauces may range from tomato ketchup to spicy sriracha to garlic mayo. It’s all about the cravings of the moment.

ZAPIEKANKA POLISH PIZZA

Ingredients:

1 baguette, sliced lengthwise

8 ounces button mushrooms, chopped

1 onion, peeled and chopped

2 tablespoons olive oil

1 teaspoon seasoned salt

1/4 teaspoon black pepper

4 ounces provolone cheese, sliced

4 ounces sharp cheddar cheese, sliced

2 tablespoons tomato ketchup

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Place baguettes on baking sheet. Scoop out a well in each baguette slice; discard filling. Set aside. In a large skillet, warm olive oil. Sauté chopped mushrooms and onions for 10 minutes, until browned. Sprinkle with seasoned salt and black pepper. Layer the provolone and sharp cheddar cheeses over baguettes. Arrange the sautéed mushrooms and onions over top. Bake 10 minutes, or until cheese is melted and bread is golden brown. Drizzle tomato ketchup over all. Serve hot.

You control the heat; you control the spice. Always begin with a little horseradish so your guests don’t end up red-faced, sneezing, or tears running down their cheeks. The unexpected rush of heat that horseradish can produce can be somewhat unpleasant or highly addictive. Serve it wisely.

JUMBO SHRIMP COCKTAIL

Ingredients:

2 pounds jumbo shrimp, precooked with tail on

1/2 cup ketchup

1/2 cup chili sauce

2 tablespoons prepared horseradish

1 tablespoon lemon juice

2 teaspoons Worcestershire sauce

1/2 teaspoon wasabi paste

Mixed greens

Instructions:

Rinse and drain the shrimp. Pat dry with a paper towel. Set aside. To make the cocktail sauce, combine ketchup, chili sauce, prepared horseradish, lemon juice, Worcestershire sauce, and wasabi paste. Mix well. Pour cocktail sauce into a serving dish. To assemble the shrimp cocktail, fill the bottom of a large bowl with ice cubes. Add a layer of mixed greens. Arrange the jumbo shrimp onto the mixed greens. Serve chilled with the cocktail sauce.

It’s important to use a cooking oil that can handle high heat without smoking, so leave the olive oil on the shelf. Canola and vegetable oil are workhorses that not only have a high smoking point, but also have a neutral taste, which is why it was chosen here. Be sure to prepare ingredients in advance, including side dishes. Once the stir-fry is ready, it’s time to eat.

XIA CHINESE SHRIMP

Ingredients:

1/4 cup ketchup

2 tablespoons rice wine vinegar

1 tablespoon soy sauce

1 tablespoon mirin

1 tablespoon agave nectar

2 tablespoons vegetable oil

1 tablespoon ginger, minced

3 scallions, roughly chopped

1 pound jumbo shrimp, shelled and deveined

Green onions, for garnish

Instructions:

Whisk together ketchup, rice wine vinegar, soy sauce, mirin, and agave nectar in a small bowl. Set aside. Warm vegetable oil in a shallow skillet over medium-high heat. Add minced ginger and chopped scallions. Cook until fragrant, stirring constantly for one minute. Add shrimp. Cook about 2 minutes, turning over and over. Shrimp will change to pink in color. Add prepared sauce. Cook for one minute until thick, stirring often. Remove from heat. Divide between dinner plates. Garnish with green onion snips. Serve immediately over cooked rice, if desired.

Anyone who is a beef-eater understands that when meat has a high level of marbling, it keeps it moist for longer when cooking. Why is marbling important, you wonder? Because the fat ratio is scattered throughout creating juicy, tender, and more flavorful results. Long story, short, angus beef means better burger. No one wants a hockey puck for a hamburger. Right? Although it may cost a little more per pound, the end results are worth it.

ANGUS BEEF BURGER

Ingredients:

1 pound Angus beef, ground

1 teaspoon sea salt

1/8 teaspoon black pepper

1 tablespoon olive oil

4 hamburger buns, split and toasted

Lettuce, tomato, bacon and condiments as desired

Instructions:

Preheat a gas grill on High temperature. Form the ground beef into four equal portions. Season both sides of each patty with sea salt and black pepper. Brush the burgers with olive oil. Grill the burgers for 3 minutes until brown and slightly charred. Flip over. Do not press down to release juices! Cook 4 minutes longer, for medium rare, until golden and charred. Grill longer for desired results. Assemble the burgers on toasted buns. Add fixings and condiments to taste. Serve immediately.

What’s Cooking in Gail’s Kitchen? Enjoyable Eats: Mexican Shrimp Cocktail! One bite, one little taste, will leave you wondering how you didn’t know about this version of an old classic. So what’s the difference, you ask. Actually, quite a bit. But I’m not gonna lie to you. If you’ve been following my blog, you can often see there’s a method to my madness. One recipe can be a critical ingredient to another dish. Like today. Recently I featured Jalisco Pico de Gallo. I’m gonna tell you it is a key ingredient in my Mexican Shrimp Cocktail, slightly tweaked. On the upside, it makes preparation a snap. Read on and you’ll see what I mean.

MEXICAN SHRIMP COCKTAIL

1 1/2 cups Jalisco Pico de Gallo*

1/2 cup Clamato Tomato Cocktail**

1/2 cup ketchup

1 pound jumbo shrimp, precooked but chilled

1 avocado, cut into medium chunks

Fresh cilantro, for garnish

Instructions:

In a bowl, combine Jalisco Pico de Gallo, Clamato Tomato Cocktail, and ketchup. Mix well. Take at least half the shrimp, discard tails, and cut into chunks. Add the shrimp chunks to the sauce mixture. The remaining whole shrimp will be used for dipping. Gently fold in avocado chunks. To serve, divide shrimp cocktail into parfait glasses. Arrange whole shrimp on the edge of the glass. Garnish with fresh cilantro.

For those who truly appreciate knowing exactly what’s in the food they eat, here is a novel recipe for homemade ketchup without high fructose corn syrup and extra preservatives. It’s incredibly simple to make and can be prepared in about 30 minutes. The taste, you ask? OMG! I never thought I’d actually consider ketchup a veggie, but now I do. Enough said.

KETCHUP FROM SCRATCH

Ingredients:

1 tablespoon olive oil

1 medium onion, chopped

2 garlic cloves, chopped

1 teaspoon ginger, peeled and chopped

1/2 teaspoon crushed red pepper flakes

1/4 teaspoon ground allspice

2 tablespoons tomato paste

28-ounce can whole Italian Roma tomatoes in juice

1/3 cup brown sugar, packed

1/4 cup apple cider vinegar

Sea salt and ground black pepper, to taste

Instructions:

Warm olive oil in large skillet over medium heat. Add chopped onions. Cook until softened and lightly browned, about 8 minutes. Add chopped garlic, chopped ginger, red pepper flakes, and allspice. Cook, stirring often, for 2 minutes. Add tomato paste; stir for 2 minutes. Add the Italian Roma tomatoes in juice, brown sugar, apple cider vinegar, sea salt, and black pepper. Bring to a simmer, stirring occasionally, for 20 minutes. The ketchup will thicken and appear shiny. Remove from heat. Blend until smooth. Cool to room temperature and then store in the refrigerator.

After all, Pizza checks the right boxes in the following food group categories: grain, milk, meat, and vegetable. What I like about this kid-friendly recipe is the fact that adults control the quality of ingredients. Plus, by involving the youngsters you’re feeding, they can feel good about making healthy choices. For instance, substitute plain white bread with crusty artisan varieties. Choose 90% lean meat. Nix the high fructose corn syrup brand of ketchup for the organic one. Try pimentos for natural sweetness. The opportunities are endless.

KID-FRIENDLY PIZZA TOAST

Ingredients:

1 pound ground beef sirloin

1 teaspoon sea salt

1 cup tomato ketchup

2 tablespoons lemon juice

2 tablespoons vinegar

1 tablespoon brown sugar

1 teaspoon yellow mustard

1/2 yellow onion, chopped

1/2 green pepper, chopped

1/4 cup diced pimentos

6 slices artisan bread

3 tablespoons butter

1 cup mozzarella cheese, shredded

Instructions:

In a large skillet over medium-high heat, brown ground beef until cooked and crumbled. Drain excess liquid. Reduce heat to low. Add sea salt, ketchup, lemon juice, vinegar, brown sugar, and mustard. Stir well. Add chopped yellow onions, green peppers, and diced pimentos. Mix well. Cover and simmer for 30 minutes. Preheat oven to 400°. Butter one side of artisan bread. Place buttered side down on a baking sheet. Top with spoonfuls of pizza mixture. Sprinkle on mozzarella cheese. Bake 15 minutes until cheese melts and toast is crunchy. Bada-bing-bada-boom!
