In this case I already had seasoned Italian sausage, but you could certainly switch things up with pepperoni or sun-dried tomatoes. That’s the beauty of cooking at home. The results bring satisfaction. Just be careful of those piping hot stretchy cheese pulls.

MARINATED MOZZARELLA FLATBREAD

Ingredients:

1 prepared naan flatbread

2 tablespoons olive oil

1 tablespoon cornmeal

1 cup cooked and crumbled Italian sausage

16 ounces marinated mozzarella slices

Crushed basil leaves

Red pepper flakes, to taste

Instructions:

Preheat oven to 400°. Rub 1 tablespoon of olive oil on the bottom of the flatbread. Sprinkle with cornmeal. Carefully flip it over onto a pizza stone. Rub the remaining olive oil onto the top of the crust. Make a layer with the crumbled Italian sausage. Arrange marinated mozzarella slices over meat. Bake for 15 -20 minutes for a crispy crust. The longer it bakes, the more gooey the cheese becomes. When finished, remove from the oven and garnish with crushed basil and red pepper flakes.

By adding cheese and pepperoni slices, you can turn the rotini spirals into an Italian favorite. Pizza Pasta. Spice things up with red pepper flakes, garlic, and oregano. Now you’re talking. Serve in individual baking dishes for extra special treatment. You may even have the kids asking for it again.

LENTIL ROTINI PIZZA PASTA

Ingredients:

12-ounce box of organic red lentil rotini

1 1/2 cups prepared marinara sauce

1/4 teaspoon garlic powder

1/2 teaspoon red pepper flakes

1/2 teaspoon oregano

1/2 cup pepperoni slices, divided

2 cups mozzarella cheese, shredded

Crushed basil for garnish

Instructions:

Bring a large pot of salted water to a boil. Add rotini. Cook until tender, stirring occasionally, 8-10 minutes. Caution: Watch carefully as the lentils will foam up to overflowing. You may have to reduce heat to a Simmer. Drain well. In a large bowl, combine marinara sauce, garlic powder, red pepper flakes, and oregano. Add rotini; stir to coat. Fold in 3/4 of the pepperoni and half the mozzarella cheese. Divide into individual broiler-proof baking dishes. Top with remaining pepperoni and shredded mozzarella cheese. Adjust oven rack to at least 4” away from broiler coils. Preheat broiler on High setting. Arrange individual casseroles on a baking sheet. Transfer sheet to oven. Cook until cheese is melted and slightly brown. Garnish with crushed basil. Serve with garlic bread.

Jalapeño poppers, with a bacon twist! These fiery devils will awaken your taste buds, so it’s a good idea to cool things down a bit with dairy products. Hence the need for a melted cheese filling and a yogurt-ranch dipping sauce. My husband and I feasted on a plate of these one night, so you can too—-if you dare!

CHEESE-STUFFED JALAPEÑO PIGGIES

Ingredients:

12-14 jalapeño peppers, red or green

2 tablespoons olive oil

1/8 teaspoon garlic powder

1/8 teaspoon seasoned salt

1/2 cup cheddar cheese, shredded

3-4 mozzarella string cheese sticks

2 slices bacon, precooked and crumbled

Crushed tortilla chips

Cilantro for garnish

Instructions:

Preheat oven to 400°. Line a baking sheet with foil. Spray a wire rack with nonstick oil and place on the baking sheet. Set aside. Wash the jalapeño peppers. Pat dry. Wearing gloves, slice the top of each jalapeño vertically, removing a small section to create a well. Remove seeds and ribs. Discard. Brush each jalapeño pepper with olive oil. Sprinkle on seasonings. Place jalapeños on the wire rack with cut side down. Bake 10 minutes; then set broiler to High and broil 2-3 minutes until peppers are slightly charred. Remove from oven. Cool slightly. Using a tongs, flip them over. Divide the cheddar cheese between the jalapeño peppers. Using a kitchen shears, cut the string cheese into strips. Layer over cheddar cheese. Sprinkle the bacon crumbles over the cheese-filled jalapeños. Top with crushed tortilla chips. Broil stuffed “piggies” on High another 2-3 minutes or until the cheese is melted. Remove pan from oven and let cool slightly before transferring stuffed jalapeños to a platter. Serve with ranch salad dressing that has a dollop of Greek yogurt mixed in. Garnish with fresh cilantro.

Tangy barbecue sauce is used in lieu of marinara, providing just enough zing to alert the taste buds. Since barbecue sauces come in a multitude of options from hickory smoke to brown sugar sweet, you may want to blend two flavors together like I’ve done here. The results will astound you.

PULLED PORK BBQ PIZZA

Ingredients:

1 prepared pizza crust

1-2 tablespoons olive oil

1/8 teaspoon garlic powder

1 tablespoon cornmeal

3/4 cup barbecue sauce

1/4 cup chili cocktail sauce

1 cup pulled pork

2 cups mozzarella cheese, shredded

Instructions:

Preheat oven to 400°. Rub both sides of prepared pizza crust with olive oil. Season bottom with garlic powder. Sprinkle cornmeal over the bottom side. Bake on a pizza stone for 5 minutes. Remove from oven. Combine barbecue sauce and chili cocktail sauce. Mix well. Spoon onto pizza dough. Top with pulled pork and mozzarella cheese. Return to oven and bake 15-20 minutes until cheese is melted and crust is golden brown.

Ingredients:

One prepared naan crust

1-2 tablespoons olive oil

1 tablespoon cornmeal

1/4 teaspoon garlic powder

3 Campari tomatoes, sliced

5 grape tomatoes, sliced

1/2 teaspoon sea salt

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

8 ounces fresh mozzarella, sliced

1/8 teaspoon red pepper flakes

1/4 cup parmesan cheese, shaved

Instructions:

Preheat oven to 400°. Spread olive oil on both sides of naan bread. Sprinkle cornmeal over bottom crust. Sprinkle garlic powder over top crust. Place cornmeal side down on a pizza stone. Bake for 5 minutes. Meanwhile, slice tomatoes on a cutting board. Sprinkle tomatoes with sea salt, oregano, basil, and marjoram. Remove naan from oven. Carefully layer mozzarella cheese over crust. Within 15 minutes, I had several frantic texts asking me to clarify the type of tomatoes I needed him to buy. Perhaps you can understand his quandary. Years ago, a shopper had their choice of garden tomatoes or cherry tomatoes. Nowadays, you practically need an Old Farmer’s Almanac to clarify all the different varieties like Cherry, Grape, Green, Roma, Beefsteak, Campari, Cocktail, San Marzano, and Vine-Ripened tomatoes. Sheesh! All I really wanted were fresh tomatoes.

TOMATO HERB CHEESE NAAN

Ingredients:

1 prepared naan, store bought

1 tablespoon olive oil

1 tablespoon cornmeal

6-8 cocktail tomatoes, sliced

1 teaspoon kosher salt

8 ounces fresh mozzarella, sliced

1/4 teaspoon garlic powder

1/8 teaspoon oregano

1/8 teaspoon basil

1/8 teaspoon marjoram

Fresh oregano leaves, for garnish

Instructions:

Preheat oven 400°. Spray a baking sheet with nonstick oil. Set aside. Brush the bottom of the naan. Sprinkle with cornmeal. Transfer naan to the baking sheet, bottom side down. Bake 5 minutes. Remove pan and set aside. Meanwhile, to prepare tomatoes, arrange sliced cocktail tomatoes on a cutting board; sprinkle with kosher sea salt. Allow to rest for 5 minutes. Arrange sliced fresh mozzarella over naan. Layer with cocktail tomatoes. Sprinkle with garlic powder, oregano, basil, and marjoram. Bake 15 minutes longer, or until cheese is melted and golden. Cool slightly, cut into portions. Garnish with fresh oregano leaves. Serve warm.

What’s Cooking in Gail’s Kitchen? Country Casual Cravings: Spinach Ricotta Flatbread! Savory flatbreads have to be on my Top 10 list of foods to make. Growing up as a child of the ‘60s, Sunday nights were the night for pizza. Because my mother cooked well-balanced meals all week, she boldly declared Sundays “Pizza Night”. Back then it still meant she made homemade pizza because we lived in the country and, to my knowledge, there was no such thing as pizza delivery. Years later, while raising my own children, I adopted her “modus operandi” and to this day I still honor it. Sometimes I make the dough from scratch, and other times I take a shortcut by using prepackaged flatbreads found in the bakery department of the grocery store. The toppings change according to the mood of the day and the ingredients in the kitchen. So far, no complaints from the husb.

SPINACH RICOTTA FLATBREAD

Ingredients:

1 flatbread, prepackaged

1 tablespoon olive oil

1 tablespoon cornmeal

1/2 cup marinara sauce

3/4 cup ricotta

1 cup grilled chicken, precooked and cubed

1 cup baby spinach leaves, stems trimmed

1/3 cup mozzarella cheese, shredded

2 tablespoons parmesan cheese, grated

1/4 teaspoon dried oregano

1/8 teaspoon red pepper flakes

Instructions:

Preheat oven to 400°. Line a baking sheet with parchment paper. Brush both sides of flatbread with olive oil. Sprinkle bottom side with cornmeal. Place flatbread, bottom side down, on the prepared baking sheet. Spread marinara sauce evenly over top of flatbread. Place dollops of ricotta cheese over marinara sauce, leaving 1/2” perimeter around the edge. Arrange grilled chicken and baby spinach leaves as the next layer. Sprinkle mozzarella and parmesan cheeses over top. Garnish with dried oregano and red pepper flakes. Bake for 20 minutes until the cheese is melted and slightly gooey. Remove flatbread from oven. Allow to cool for 2 minutes before cutting into slices. Serve warm with extra marinara sauce for dipping.

What’s Cooking in Gail’s Kitchen? The Food Whisperer: Uber Hasselback Caprese Salad! Want to do something fancy-schmancy? Take ordinary garden Roma tomatoes (the oval kind) and cut them in such a way that they fan out a little bit like an accordion. Then, using your fingers, tuck slices of cheese and fresh herbs in between. It’s so simple, yet looks incredibly delish as a side salad. This is why we like food so much. It becomes a dining experience versus chowing down.

UBER HASSELBACK CAPRESE SALAD

Ingredients:

3 Roma tomatoes

3 ounces fresh mozzarella cheese, sliced

13-16 fresh basil leaves

1/2 teaspoon Everything But Bagel seasoning

2 tablespoons olive oil

1 tablespoon balsamic vinaigrette

Instructions:

Judging by the size of each tomato, make 4-5 slices, stopping before the knife cuts completely through. Transfer tomatoes to a serving dish. Fill each slit with a mozzarella slice. Tuck in spaces with fresh basil leaves. Sprinkle Everything But Bagel seasoning over all. Drizzle with olive oil and balsamic vinaigrette.
