ZUPPA TOSCANA

Ingredients:

1 pound Italian sausage, ground

1 sweet onion, chopped

1/4 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes

2 potatoes, washed with peel on and cut into chunks

14-ounce can chicken broth

1 1/2 cups water

2 teaspoons flour

1 cup heavy cream

2 ounces diced pimentos

2 cups kale, gently torn

4 strips of thick-sliced bacon, cooked and crumbled

Instructions:

In a skillet over medium heat, brown Italian sausage until fully cooked and crumbled. Add onion, garlic powder, sea salt, black pepper, and red pepper flakes. Stir and continue cooking until onions are soft. Reduce heat to keep warm. In a 2-quart pan, add potato chunks, chicken broth, and water. Bring to a boil; reduce heat to medium and cook until potatoes are tender, about 20 minutes. Blend flour with enough water to make a paste. Slowly add flour mixture to potatoes, stirring constantly to avoid lumps. Add sausage mixture. Stir to combine. Simmer 15 minutes. Reduce heat to low; add heavy cream, diced pimentos, torn kale, and crumbled bacon. Heat through. Ladle into soup bowls. Serve with breadsticks or focaccia bread.

RELISH CHARCUTERIE

Ingredients:

1 head celery, with stalks and ribs

3 large carrots, cut into strips

7 ounces pimento stuffed queen olives

10 ounces grape tomatoes

1 pint sweet gherkins

8 ounces wild caper berries

6 ounces Kalamata olives, pitted

12 ounces imported pepperoncinis

1 bunch garden radishes

1 red onion, thinly sliced

Pickled garlic

Instructions:

Wash all fresh vegetables in cold water. Pat dry on paper towels. Chop and slice as needed in unique shapes. Use small dip bowls for height and color. Arrange ingredients on a nice platter so designs are appealing to the eye. It is better to keep it looking full by switching around shapes and color. Small plates and toothpicks or skewers encourage snacking.

This one, in particular, is packed with protein and fiber, plus non-GMO red lentils. You don’t need to have allergic restrictions to appreciate its natural goodness. The texture is firm while providing an amazing taste sensation. Eat it cold or warmed up a bit. You decide. Either way, the health benefits will have you patting yourself on the back for making such a healthy choice.

ORGANIC RED LENTIL PASTA SALAD

Ingredients:

8 ounces organic red lentil pasta

1 cup broccoli florets

1 cup cauliflower florets

1/3 cup red onions, sliced

1 tablespoon pimento, diced

1/3 cup Kalamata olives, pitted

1/4 cup garlic wine vinegar

1/4 cup olive oil

1 tablespoon dry Italian dressing and seasoning mix

1 tablespoon Dijon mustard

1 tablespoon natural honey

Sea salt and pepper, to taste

Instructions:

Cook red lentil pasta 8-10 minutes, according to package directions. Water will turn cloudy and foam up, so be sure to use enough water. Remove from heat. Drain, rinse, and set aside. To make dressing, combine garlic wine vinegar, olive oil, Italian seasoning mix, Dijon mustard, and natural honey. Whisk together until nicely blended. Fill a large bowl with pasta, broccoli florets, cauliflower florets, red onion slices, diced pimento, and Kalamata olives. Pour dressing over all. Toss gently to coat ingredients. Serve cold.

What’s Cooking in Gail’s Kitchen? Foodstuff Redefined: Lo Mein Made Simple! Do you ever go to the refrigerator and wonder what to make for dinner? I do. Recently my leftovers consisted of a couple of pork tenderloin fillets, grilled over the weekend, plus some veggies in the produce bin. Not quite enough. Unless you throw them all together in an amazing sauce. I didn’t exactly have Lo Mein egg noodles, but I did have some dried pasta on hand. Who doesn’t? The results were mouth-watering!

LO MEIN MADE SIMPLE

Ingredients:

8 ounces angel hair pasta

1 tablespoon olive oil

2 cups fresh mushrooms, sliced

1/4 teaspoon garlic powder

8 baby carrots, julienned

1/2 cup fresh snow peas

1 cup baby spinach

1 tablespoon pimento, sliced

2 pork fillets, grilled and cut up

Toasted sesame seeds for garnish

Green onion snips for garnish

Ingredients for sauce:

2 tablespoons soy sauce

2 teaspoons agave nectar

1 teaspoon sesame oil

1/2 teaspoon ground ginger

1/2 teaspoon sriracha hot sauce

1/8 teaspoon crushed red pepper flakes (optional)

Instructions:

In a 2-quart pan of boiling water, cook pasta according to package directions. Drain well. In a small bowl, whisk together soy sauce, agave nectar, sesame oil, ground ginger, sriracha, and red pepper flakes. Set aside. In a large skillet over medium-high heat, add olive oil, sliced mushrooms, garlic powder, and carrot strips. Cook 3-4 minutes until tender, stirring frequently. Add snow peas, baby spinach, and pimento slices. Stir until spinach has wilted. Add pork fillet chunks. Heat through. Add cooked pasta and soy sauce mixture. Gently toss to combine. Garnish with toasted sesame seeds and green onion snips. Serve immediately.

Instructions:

Seafood can be my obsession and I’m not afraid to be a glutton of it, especially if I’m visiting a locale that is a coastal destination. In my defense, how can anyone resist signs and billboards openly declaring “Best Seafood in Town!”? But eventually one returns home to a land-locked State where seafood is as scarce as hen’s teeth. So when the cravings continue, I head over to the local supermarket in search of a packaged substitute. Maybe it’s the succulent crabmeat or perhaps it’s the French butter, but I have to admit this recipe isn’t half bad.

MEALTIME CRAB COCOTTES

Ingredients:

1 cup mayonnaise

3/4 cup parmesan cheese, grated

1 1/4 teaspoon seafood seasoning

1/2 teaspoon garlic powder

1/4 teaspoon sea salt

1/8 teaspoon black pepper

8 ounces jumbo lump crabmeat

8 ounces imitation crabmeat, flaked

1 tablespoon pimento, diced

1/2 cup Panko bread crumbs

1 teaspoon ground paprika

1-2 tablespoons French butter, melted

Instructions:

Preheat oven to 350°. Coat bottoms and edges of two ramekins with nonstick oil. Set aside. In a large bowl, combine mayonnaise, parmesan cheese, seafood seasoning, garlic powder, sea salt, and black pepper. Mix well. Gently fold in lump crabmeat, imitation flaked crabmeat, and diced pimento. Divide crabmeat mixture evenly between ramekins. Top with Panko breadcrumbs. Sprinkle paprika over all. Drizzle melted butter on top. Bake uncovered for 25 minutes, or until lightly browned and bubbly. Serve with artisan bread and side salad.

What’s Cooking in Gail’s Kitchen? Eat More: X-traordinary Pesto Pepperoni Pita! When there’s nothing in the house for lunch, take stock of leftovers in your refrigerator. Transform that last pita pocket into a personal pizza with basil pesto, sliced pepperoni, a dollop of tomato sauce, and a handful of mozzarella cheese. That’s what I did. Suddenly, it’s an appealing alternative to a peanut butter and jelly sandwich.

X-TRAORDINARY PESTO PEPPERONI PITA

Ingredients:

1 pita bread

1 tablespoon olive oil

2 tablespoons tomato sauce

2 tablespoons basil pesto

3-5 slices pepperoni

1/4 cup mozzarella cheese, shredded

1 tablespoon black olives

1 teaspoon pimento

Instructions:

Spread olive oil evenly over one side of pita bread. Warm pita bread in an iron skillet over medium heat for one minute. Press to flatten. Next build the pizza. Spread with tomato sauce and basil pesto. Layer pepperoni over sauces. Sprinkle with mozzarella cheese. Top with black olives and pimento. Reduce heat to low. Cover skillet to allow cheese to melt. For a crispy crust, remove lid and raise the heat back to medium. Do not burn. Serve whole with salad greens.

What’s Cooking in Gail’s Kitchen? The Joy of Eating: Xtreme Sloppy Joes! Some days you crave a sweet and savory warm sandwich over a lunchbox ham and cheese on wheat. Sure, it can be a little messy, but pile it high anyway and add a mound of shredded cheese. Then watch things melt together.

XTREME SLOPPY JOES

Ingredients:

2 pounds lean ground beef

1/2 cup onion, chopped

1/3 cup green pepper, chopped

1 teaspoon sea salt

1/8 teaspoon black pepper

1/8 teaspoon garlic powder

2 tablespoons pimento, diced

1/4 cup vinegar

1/4 cup lemon juice

1/4 cup brown sugar

1 tablespoon mustard

2 cups ketchup

Instructions:

Preheat oven to 325°. In a large skillet over medium heat, brown ground beef, onion, and green pepper seasoned with salt, pepper, and garlic powder. Cook until meat is in crumbles. Reduce heat. Add diced pimento. Stir in vinegar, lemon juice, brown sugar, mustard, and ketchup. Mix well. Transfer to an ovenproof covered dish and bake in the oven for one hour.
